Christmas Cake Recipe Method 1. Mix the fruit in a large bowl and add the brandy. Allow to soak overnight. 2. Preheat oven to 160ºC. 3. Line a deep 23cm round cake tin with a double layer of baking paper. 4. Mix the sugar, butter and vanilla until creamy. Add the eggs one at a time, beating well. 5. Stir the fruit into the mix and ensure thoroughly mixed. 6. Melt the chocolate over simmering water. Stir the apricot stir well. jam and nectar into the chocolate. Pour over the fruit mixture and mix into the tin 7. Add all the flours and cinnamon to the mix. Fold in well. Pour the top with a wet hand. and spread evenly. Tap the tin to settle the contents. Smooth the Test with a skewer to ensure baked, 8. Place tin onto middle rack of the oven. Bake for 2½ to 3 hours. towels and leave overnight. then remove from oven.
