White Chocolate & Cranberry Christmas Cake • 3 cups sweetened dried cranberries • 2 ½ cups pistachios • 1 ¼ cups brandy • 250g softened butter • 1 cup caster sugar • 1 Tbsp grated orange rind • 3 eggs • 1 ½ cups plain sifted flour • 3 ½ cups fresh breadcrumbs • ¾ cup milk • 360g white chocolate melted • Icing sugar

Preheat oven to 140Oc, grease and line a 24cm baking tin. Place cranberries & pistachios in a pot with 1 cup of the brandy over a medium heat. Stir for 8 minutes until fruit is plump. Beat butter, sugar & orange rind for 8-10 minutes or until pale & creamy – gradually add eggs and beat well. Mix to combine the fruit & flour in a separate bowl. Add butter mixture, breadcrumbs, milk & chocolate. Spoon mixture in to your tin and bake for 2 hours & 25 minutes or until cooked when tested with a skewer. Brush cake with remaining brandy and cool in tin. Dust with icing sugar to serve.
