Canning up a Storm!

Depending on when you planted your garden, summer 2014 proved to be a fairly successful growing year. Heavy rains lasted through June and July, washing out some gardens early in the growing season. However, gardens that were well-established were able to endure the heavy rains and most gardeners in the Ohio River Valley are reaping a bountiful harvest. While the majority of vegetable gardens have been able to survive 2014’s extreme weather patterns, certain fruits have not been as lucky. When severe cold lasted well into April this year, many perennial fruit bushes and trees, which continue to grow on during the winter months, were stunted and unable to recover in some parts of Ohio. The result of this late freeze was diminished yields for strawberries, blueberries and raspberries. It is yet to be seen whether this trend will extend to the apple crop as well. Whether you’re faced with a plentiful harvest or disappointing year, canning and preserving can help you get the most out of all the hard work you put into your gardening. From tomatoes to peaches, canning and preserving ensures you have delicious, garden-grown fruits and vegetables all through the winter months at a fraction of the cost of buying from the supermarket. When it comes to canning there are simple steps you can follow to ensure that you can safely and effectively. Any canning session must start by sterilizing and washing all equipment and your work surface. Running cans and their lids through the washing machine or dunking them in simmering water for 15 minutes is a good way to ensure any harmful bacteria has been destroyed. When it comes time to fill your canning jars make sure to leave the proper amount of space between the food and its lid. The amount of space required varies by recipe, so make sure to pay attention to your recipe book. 4 | all about home/september 2014 page
Generally speaking, you should leave 1-inch for low acid foods and a half-inch for acidic foods such as tomatoes or whole fruits. As you get ready to seal your jars, make sure there are no air bubbles by stirring the contents. When you put the lid on your jars makes sure to not to overtighten. As you go to boil, make sure the jars are submerged in at least one inch of water. Use a timer to keep track of the time each batch of jars spend in the boiling water. Again, make sure to check your recipe to see how long each fruit or vegetable takes. After you’ve boiled your canning jars, allow them ample time to cool. Listen for the telltale popping noise to make sure the jars have sealed. The lids should always sink inward in a concave
manner. If a jar does not seal you can always place it in the refrigerator and eat the contents soon. Lastly, make sure to label your jars with clear date and contents information. Freezing is another increasingly popular preservation option. However, according to a recent report by Capper’s, certain fruits and vegetable freeze better than others. Vegetables such as squash, peppers, spinach and corn all freeze well, as do fruits, such as berries. As with canning, the first step is to thoroughly clean fruits and vegetables. Most vegetables should be blanched for two to five minutes to preserve texture and flavor. You can freeze fruits and vegetables in just about any container but bags, jars, and other freezer safe containers usually work best.
Whatever container you choose to freeze your fruits and vegetable in, make sure to allow extra space in the container expansion takes place as they freeze. According to the National Center for Home Food Preservation, frozen foods will keep for 812 months if prepared properly. A less common method of food preservation is drying. Capper’s reports that just about any blanched vegetable can be dried, as can most fruits. To begin, slice food into small, uniform chunks. Next dip the pieces in an acidic solution or blanch them to preserve the quality and taste of the food. Lastly place the pieces in a windowsill or in the oven to dry until they are crisp. Store dried food by placing it in an airtight container.

KATIE WHITE | Morning Journal LISBON — A trend of using bright and even neon paint in home decor is catching on locally, but is so far contained mostly to children’s rooms. Those who may want to step into that trend for other parts their home can do so with a wide selection of colors available at most Columbiana County stores. Bob Bye, owner of Ace Hardware Bye and Bye in Lisbon said people are using the brighter colors offered there for accents in the home or for their children’s bedrooms. “We have been selling a lot of accent colors. There are a lot fuscia and real bright oranges and real true reds and purples and lavenders, and chartreuse and turquoise,” he said.

The store only recently began offering the brighter colors of paint last year and also has a new Ace paint studio. Customers are definitely moving away from the more muted colors, like mauve and others that were popular in the 1980s, he said. As for the children’s rooms, customers always opted for bright colors in some ways, but they have only recently begun buying paint for entire rooms. “The kids used to get black and accent with different colors, now the whole room is going to real bright colors,” he said. The store offers the Ace brand paints, which are Royal and Clark and Kensington, the latter of which contains a primer which customers seem to really like, he added. “It covers up a multitude of things with just one coat,” he said. The store also offers the latest Valspar brand that contains microbeads and does not wear away like other paints when rubbed in an attempt to clean off stains or other marks.
“We have had bright colors all along but I just think it’s trending now… if you look at the new house magazines they are going to these new colors,” he said. Customers can buy paint in quarts and gallon cans or can purchase a sample can for $4.99 if they aren’t sure they can commit to a brighter color just yet. A salesperson at Middleton Ace Hardware on Crestview Road said their store is also seeing an upswing in bright colors for children’s rooms. “We have gotten a new paint line in and there are a lot of different colors they have been mixing. It’s more of the kids that are doing the really bright things. We have been selling a lot of black too, for primitive furniture,” she said.
Shawn Cunningham, who mixes paint for the store said people are still opting for muted colors. The store offers Easy Care paint, a value line of Painter’s Select and Weatherall for the exterior. Exorust, which can be used on metal, is also offered. Should a customer decide to try out a bright or even neon color, they can simply bring in a sample for the store to match. “We can match any color paint and mix. We have a huge selection of chips to pick. We can just mix just about anything. If people bring us in something we can match it,” she said. kschwendeman@mojonews.com

CALCUTTA – Gardeners who look forward to a colorful spring garden need to prepare for that now by planting those flowers they hope to see bloom when winter is over. To ensure blooms by spring and summer, perennial plants should be planted now, according to those at Randy’s Raisings on Calcutta-Smith Ferry Road, where a host of favorite plants are available for gardeners. Employee Brenda Shaw said phlox is one early bloomer that must be planted in the fall in order to see its colorful flowers early in spring. Other popular spring flowers are lavender, forget-me-not, gloriosa daisy, coreopsis, coneflower, aster and catmint. But, she and James Delposen, whose son, Randy Delposen owns the popular garden center, said all perennials are favored by gardeners. The farm doesn’t 14 | all about home/september 2014 page
deal in bulbs, but for those gardeners who want to see tulips or daffodils, those, too, need to be planted in the fall.
Although actual commercial mulch can be purchased locally, Brenda said mulching does not have to be costly.
Shrubs and trees, on the other hand, should be planted in the spring.
“You can use straw, old leaves, actual mulch, even grass cuttings. They just still need to get air,” Shaw explained.
Delposen said perennials should be in the ground in this area before the end of October, when the weather begins to get cold. “You want to get them into the ground while it’s still warm,” Delposen emphasized, saying September through midOctober is ideal planting time for spring arrivals. “I wouldn’t advocate planting anything in late October,” Delposen cautioned. Once the flowers are planted, they should be covered with mulch of one sort or another. Mulch suppresses weeds and conserves moisture.
Most plants do not need cut back in the fall, Shaw and Delposen added. Some experts also recommend planting on an overcast day when rain is forecast rather than on a sunny day, which will allow for a thorough watering once the plants are in the ground. Choosing short, stocky plants with few flowers and no wilted or spotty leaves is best. Pinching off any flowers allows the plant to use its energy to grow a healthy root system instead of flowers. jgilbert@mojonews.com

THE IMPORTANCE OF INSULATION

STEPHEN HUBA | Staff Writer EAST LIVERPOOL—Although most people think of windows when they want to make their home more energy-efficient, Brian Ours has some news for them. Windows represent only 18 percent of a home’s potential energy loss. Air infiltration from the attic and basement, however, represents nearly 30 percent of a home’s energy loss, said Ours, founder of Green Star Energy in Calcutta. “Windows are important,” he said, “but if you’re going to put your money any place, put it into the top and bottom of the house—the attic and basement.” Then, if those heating and cooling bills are still too high, see if there are ways to improve the efficiency of the windows, Ours said. That may require simply sealing up the spaces between the window frame and the stud with spray foam insulation— not necessarily replacing the windows. 16 | all about home/september 2014 page
Ours is skeptical of window manufacturers who promise “up to” 50 percent savings in utility bills as a result of installing new windows. First of all, the house may not need new windows, and secondarily, “up to” may mean only a 1 percent savings, he said. “If people want to save money, they need to do it right,” he said. “A lot of this stuff they can do on their own.” Ours said a home energy “audit” is a good place to start because it identifies the trouble spots in the house—the places where the house is losing hot or cold air. “Your house is like a big chimney,” he said. “While it’s true that warm air rises, it’s more important to remember that warm air rises when surrounded by cold air.” Known as the stack effect, in the summer the phenomenon means that the heat from a poorly-insulated attic will be drawn down into the cooler basement, he explained. It will try to escape through the coolest part of the house, which can fool the
thermostat into thinking that the air conditioner should keep running, he said. The process is reversed in the winter time, he said. Ours uses a blower door and an infrared camera to identify leaks in the home and suggest solutions. Sometime a solution may be as simple as a do-ityourself window kit from Lowe’s. Other times, it may require something more extensive. The most common culprits in a house, in addition to doors and windows, are canister or recessed lights—the kind that are installed into a hollow opening in the ceiling, Ours said. Until about 10 years ago, contractors left about a foot of space around such lighting to eliminate fire hazards.
But that’s space where air can escape, he said. Now, such lights can be encased in a box so that insulation can fill the previously empty spaces. Ours also recommends the application of spray foam insulation between the overhead band joists in the basement. Foam insulation has a higher Rvalue—7 per inch—than fiber or cellulose insulation, he said. “The higher the R-value, the more protection you get,” he said. Ours even suggests placing fiberglass insulation over the foam insulation once it has had time to dry and expand. “Stuff it full,” he said. Get your garden ready for winter LARRY SHIELDS | Staff Writer SALEM — Helping garden plants get through winter is a fairly simple and straightforward procedure, according to Dan Culp, sales manager of the Busy Beaver store in the Salem Plaza. Culp said it will be another month or so before customers start zeroing in on getting their gardens ready for winter and figuring out what they want to do. “They start rolling in about then,” he said. Culp said burlap, the kind that potatoes are bagged and that is available in the lawn and garden section of Busy Beaver, is a standard fare in winter gardens. It is used around trees and shrubs, Culp said noting its called hardware cloth and it keeps animals and critters from gnawing on trees. There is deer matting and that protects plants and tree netting to protect bushes from birds and rabbits and the ever-present “critters.” There is also protection for ponds where people would have some valuable fish. Culp said plant areas should be cleared out of blackened stems and foliage from annual flowers and vegetables. “That will prevent the possibility of their harboring disease pathogens,” he said, “and insect eggs over the winter.”

He said that spreading new organic mulch for a thicker winter layer is a good idea to not only protect the plants but the soil too. “Not so much to keep the soil warm, but to keep is at an even temperature,” Culp said, adding that evergreens (broad -leaf types) should be screened from drying winter wind and snow by using burlap and staking it to the ground.

An ongoing part of protecting evergreens is knocking snow from the bottom branches and work up the prevent a snow build up on the branches. “If a branch is bowed by ice, let the branch thaw naturally,” he said, “to prevent breakage.” Young trees should be wrapped with wire to prevent animals from gnawing off the bark. Culp said that netting or a tack cloth is preferred. Shrub and perennial beds should be mulched with pine needles and chopped leaves while bulbs should be mulched with evergreen boughs to protect the soil from shifting or cracking. • 4 sirloin tip steaks ¼-inch thick • 4 slices of smoked bacon (diced) • 2 dill pickles cut into spears • 1 tablespoon mustard • salt, pepper • curry powder • 1 large onion, finely diced • 2 tablespoons flour • shortening for frying • 1 ½ cup of water or beef stock Take each slice of beef and sprinkle with salt and pepper and curry powder. Spread the mustard , diced onions and bacon on the slice of beef evenly, place the pickle spear in the middle. Roll beef slice tightly and tie with toothpicks or kitchen string. Dredge the beef roll in the flour. Melt shortening in a pan and brown all sides of the beef roll. Add water and cover the pan. Building a RING OF FIRE Maybe it appeals to your primal instinct, or you simply enjoy being outdoors. Maybe it’s even that you get better results for a variety of reasons, plus cleanup is easy. Whatever the case may be, everyone seems to love cooking outdoors. It seldom gets any better than firing up the grill and tossing on a couple of quality burgers or steaks and maybe roasting up some fresh veggies from the garden. Whatever your culinary passion, savory smoke and fresh air just seem to make food taste better. Many of us dream of adding to the tradition of charcoal or gas grill on the back patio, and taking it a step further by building an outdoor space where family and friends can gather, laugh, cook, eat and share. It may be as simple as a sturdy backyard fire pit for cooking hotdogs and s’mores and for warming the gathered bodies on cool fall evenings. Or you might be looking for the full accompaniment of grill, fireplace or pizza oven and outdoor dining area. Luckily you’re only limited by your imagination and willingness to do a little research and hard work. Design and build While you’re designing your outdoor fire-feature, think of how you want to be able to use it. If cooking is going to be a consideration, and really it should be,

then this is a good time to plan out how you will want to do that. As with campfires, there are a number of simple solutions available that can be placed over a pit to allow for grilling or cooking. Some are removable, others permanent and adjustable, but all should meet the requirements that you most commonly will be using them for. I always like to look into a recycled, reused or homemade option when I am planning a project like this. Frequently you can find used barbecues at thrift stores or in community bulletin boards online that come with perfectly serviceable cooking grates. With some simple modifications, these can make for perfect removable cook surfaces for a number of outdoor cooking applications.
If a fireplace is the option that youve chosen to go with, there are designs and products available that allow you to insert a grill for use in cooking that can be removed afterward to allow the fireplace to be used purely for ambience and enjoyment. You may even want to design your fireplace to be used more as a stone, brick or even clay oven for cooking pizza, breads or overnight slow cooking of meats or beans. Because these methods and materials have been in use for thousands of years, there is a wealth of information available for many methods of constructing them. These serve as a focal point of any backyard get-together and can easily be taken to the next level and become an enjoyable addition to an outdoor cooking area. Creating one can be as simple as repurposing an old cast-iron manhole

frame (I’ve done this, and it works wonderfully) or as elaborate as a masonry or slate pit with intricate designs; the details are limited only by your creativity. After determining what material you will use, you’ll naturally be guided to the correct way to begin your installation. Simple ring-over-earth fire pits like my manhole frame require little more than ensuring the ground is level and the site is a safe distance away from flammable objects. No special treatment is required of the ground beneath the fire area; it will essentially just become a permanent campfire of sorts and will require only the occasional shoveling out as ash begins to pile up. On the other hand, a brick, rock or paver type construction — because it is built from many pieces — requires a somewhat more intense approach to ensure that it is built on stable ground so it will last for many years to come. Much like laying pavers, you will want to trench out a ditch and line it with a course drainage grade rock. In this case, dig to approximately 12 inches deep and the width of your pavers or bricks, and then fill the bottom of the ditch with a good 6 inches of rock. This allows for drainage around the stone
base, preventing settling in rainy areas or winter heaving in cold climates, as well as giving you a stable base to build the first layer of bricks on below-ground level. This will help to maintain the form and shape of the pit or fireplace as you continue to build. You could also choose to pour a cement base rather than laying your first course of stone below ground level. This is generally a good guideline for starting most outdoor hardscape construction, but more detailed instructions can be found at your local hardware store or online - it all completely depends on your budget and skill. What if you dont have room for a large feature in your yard space, or you simply don’t want to dedicate the space you do have to something permanent, but you do want to take advantage of cooking outdoors or enjoying a fire with friends and family on occasion? There are always a number of portable fire pit options available for fairly reasonable prices. While they do easily solve the problem, all of the ones that I have come across are either lacking in size, durability or cooking fea-
tures. That said, there’s no reason you couldn’t build a temporary fire pit or outdoor cook area that could easily be stored until needed. Bricks can make great small, open fireplaces or fire pit rings by simply stacking them in a safe area. Even old 55-gallon drums can be cut down to 12 to 15 inches high, layered with brick or rock on the bottom, and used as temporary fire pits, and standard circular barbecue grills can easily be placed over the top to cook on. By elevating the ring on double bricks placed on three or four sides, you can even use it over your lawn with little if any damage to the grass. Watering the area below is a good idea as well to keep the ground from overheating. Ive even seen old wheelbarrows used as fire pits by placing a layer of bricks across the bottom (not recommended unless fixed to prevent tipping). Talk about multi-use! So as you can see, there are numerous ways to go with an outdoor fire feature: large or small, permanent or temporary, and limited only by your desire and creativity.

“Welcome pollinators into the garden,” Hartung said. “Invite animals that can do your pest management. That will actually increase your yields in many cases.”
But coexisting with wildlife in farm fields or gardens can be a winning proposition if you’re willing to alter your habitat. Even nuisance animals can become plant partners with a little planning.
Almost any wildlife species can become a nuisance, Pierce said. Canada goose droppings are messy and potential health hazards. Moles damage lawns. Squirrels eat freshly planted bulbs. Small rodents like voles will strip the bark from grapevines. Feral hogs damage pastures.
“You can steer your way around a lot of the usual wildlifeproperty owner confrontations,” said Robert Pierce, an extension fisheries and wildlife specialist with the University of Missouri. “Do some homework about animal behavior,” Pierce said. “Know where raccoons or deer traditionally utilize cover or use traffic lanes. It’s common sense that you wouldn’t want to plant gardens in those areas.” And sharing property with wild birds and animals doesn’t necessarily mean reducing the size of your harvest, said Tammi Hartung, author of the new “The Wildlife-Friendly Vegetable Gardener” (Storey Publishing).

“Tolerance levels vary,” Pierce said. “Lots of folks just enjoy wildlife and like having them around. Much depends upon whether you have the money to invest to keep them away from your plants.” The most benign ways to keep wildlife away from the garden include repellents, frightening techniques, rotating crops, decoy plants, fencing, netting and other barriers. Consider
— Being proactive. “Before the raspberries ripen, put up some tape or nets so the birds will never taste them and won’t know what they’re missing,” Hartung said.
— Modifying food and cover. “We have 30 deer coming through our property every day,” she said. “The deer wouldn’t leave my tulips alone, so I don’t grow tulips anymore. I grow (deer-resistant) daffodils instead.” — Distractions. “Parsley redirects rabbits from salad greens,” Hartung said. “Plant some sunflowers next to your berry patch. Many birds prefer their seeds to the fruit.” — Growing a surplus for sharing. Add hedgerows outside the garden that include fruiting trees and shrubs. — The hose. “We use a motion-detector apparatus that hooks up to a hose,” Hartung said. “It sprays water when it detects motion. When raccoons come at night, they get a hard spray of water. It doesn’t do them any harm but they stay away.” Wildlife-friendly gardening has its challenges, but you can co-exist for the most part, she said. “Something like a bear may show up and you’ll have to deal with it,” Hartung said. “Maybe then it’s as easy as picking up some fallen fruit and discarding it someplace else. “You don’t really need to trap animals, use toxic chemicals or shoot them,” she said. “You can find other solutions.” Online

Making the indoors safer for allergy sufferers KATHERINE ROTH | Associated Press
Although the thought of sleeping with millions of dust mites — microscopic arachnids that feast on flakes of skin — is just plain gross, it’s something most people can handle without worry. After all, our bodies are inhabited by multitudes of bacteria, to which we seldom give a thought. For the many people who suffer from allergies, though, the allergens in dustmite feces and body parts can lead to chronic sinus problems and coughing, among other symptoms. If gone untreated, the problem can escalate to eczema and asthma, particularly in children, according to James Sublett, president-elect of the American College of Allergy, Asthma and Immunology. “The sooner you intervene, the less likely the problems are to escalate,” he said. Luckily, homes can be made more livable for allergy-sufferers — and less amenable to dust mites — in just a few steps. About a quarter of Americans suffer from some sort of allergy and of those one-half to two-thirds are sensitive to dust-mite allergens, according to Sublett, making it one of the most common causes of allergies. “Around the world, dust mites are the most common indoor allergen,” said Robert Wood, director of the pediatric allergy and immunology division of Johns Hopkins University.
If dust-mite allergies are suspected, the first step is to get tested by an allergist. While periodically replacing all your bedding might seem to make sense, experts say it’s unnecessary for those without allergies and insufficient for allergy sufferers. Instead, these tips from allergists can help make any home friendlier to those with indoor allergies, dust mites included: 1. Keep It Dry. “One of the biggest and most common mistakes people make is to install vaporizers and humidifiers,” Sublett said. “Moisture can and does cause all kinds of problems.” Dust mites can’t survive in less than 50 percent humidity, so buy a humidity meter and, if needed, a dehumidifier to keep humidity to between 35 percent and 50 percent. “Just three hours above that level of humidity, though, is enough to keep the dust mites alive,” he said. 2. Rip out the rugs and ditch the drapes. Carpet and heavy drapes are a reservoir for allergens like dust mites and should be removed, particularly in bedrooms. If removing them isn’t an option, the American College of Allergy, Asthma and Immunology recommends frequent vacuuming using a HEPA (high-efficiency particulate air) filter. Those with allergies should stay away or wear an N95 particulate mask during and immediately after vacuuming, since particles can remain airborne for up to two hours. 3. Just Encase. All mattresses, box springs, pillows and comforters should be encased in well-sealed, tightly woven,
microfiber “mite-proof” covers from a reputable company, such as Mission: Allergy or National Allergy Supply, and linens and stuffed animals should be washed weekly, allergists say. “The temperatures and detergents used are much less important than the regularity of washing,” Sublett said. “Washing in any temperature dramatically reduces the level of allergens.” 4. Opt for smooth. Smooth surfaces that can be wiped clean are generally better for allergy-sufferers than more porous upholstered surfaces on couches, chairs and even car seats, Sublett said. 5. Clear and clean the air. To help keep indoor allergens of any kind at bay, homes should be smoke-free and pets should be kept out of the bedroom. For the very allergy-prone, use a HEPA air filter in the bedroom with a CADR (clean air delivery rate) adequate for the size of the room. Install MERV 11 or 12 disposable, high-efficiency filters in the furnace and air conditioning system that can be changed every few months, according to Sublett. But these steps are less important for those suffering solely from dustmite allergies, since dust mites burrow deep in bedding and dust-mite particles are generally not airborne, according to Wood. 6. Check the units. Allergists suggest that to minimize indoor allergens, heating and air conditioning units be cleaned and serviced every six months, and that gas appliances and fireplaces be vented to the outside and regularly maintained.

The dresser was stripped of the paint, revealing a quarter sawn oak veneer. Polyurethane was then used to seal it. ”Look how nice that is,” she said, admiring the dresser. When it comes to refinishing furniture, her opinion is that refinishing definitely hurts the value of antiques. As an alternative, she suggested using cleaners and products that can restore the original finish, such as Milsek or Restor-A-Finish. ”Antique dealers want the original,” she said. Jerry Smith, manager of Sherwin Williams on State Street in Salem, also talked about the surprise factor regarding stripping a piece of furniture down to its original finish. ”You never know. You can uncover a great piece of furniture,” he said. “If you get it for a good price, you can turn it into something nice.” He explained that there are a variety of products available for stripping furniture, including environmentally-friendly strippers like Peel Away or Strypeeze. Other stripping products which can dissolve the finish back to original may require precautions, such as wearing a mask, using in a well-ventilated area and wearing gloves.
Once the paint is stripped away, he said the furniture should be allowed to thoroughly dry before applying any finish or stain. The piece should also be sanded first. After the stain is applied, the piece should be sanded again before applying the protective finish. Some of the same methods can be used on wood floors, walls and trim. Smith stressed that patience is important — the process should not be rushed. A piece of furniture can be restored, giving the owner a brand new piece. If the intention is to refinish and perhaps make a newer piece look old, Smith said there are faux finishes available to give furniture or walls a crackle finish, leaf finish or even tissue paper finish. Avoid harsh solvents or steel wool. After the cleaner has evaporated, apply a thin coat of high-quality furniture paste wax. Wait about 10 minutes, or until the wax begins to harden, and buff vigorously with a clean, soft cloth,” the lesson under Wood 101 under the Decorating heading said. ”Paste wax creates a hard, thin shell of protection over an original finish and is universally accepted as a preservative by antiques collectors and museum curators.
