Did you know… One in three mouthfuls of food we eat is produced with the help of bees. Oh hello there sweet, sweet honey! Rooftop Honey are a team of Beekeepers with a vision of bringing bees back to the city and the suburbs of Melbourne. The aim is to be part a global effort to help save the honey bee from the various threats of disease and human habitation. This project not only seeks to address issues of sustainability, it also aims to raise awareness of the importance of bees whilst creating delicious honey. By placing hives on the roof spaces of cafés, restaurants, hotels and individual's gardens in and around Melbourne they have reduced the distance from production to plate to mere metres. Since starting in November 2010, they have already received overwhelming support from the local community by numerous individuals and businesses. Their plan is to put beehives on rooftops (or gardens) in the City and each and every suburb of Melbourne. With your help, they will get there. We love what the team are doing and are thrilled to be including their test tube in this month’s box. Quinoa – Persian with Dates and Pistachio 225g
Oh my, is it time for lunch yet?! Simply add water to this flavoursome mix of quinoa and premium ingredients. Packed with protein, serve hot or cold. Jacqui Good is the brains, heart and soul behind Thistle Be Good. Jacqui left Scotland to travel the world in 1998. She stumbled upon and fell in love with South Australia and its people and has lived there ever since. In 2002, she established TBG in her small home kitchen in the beautiful McLaren Vale wine region, 45km south of Adelaide, and now operates from a commercial premises in Willunga. Jacqui is passionate about good quality ‘clean’ food, and uses only healthy recipes to produce her range of Dukkah, Quinoa, Risotto and Couscous. Cooking instructions Microwave This is based on an 1100 watt microwave – simply add the appropriate boiling water (450ml per 225g quinoa) to a large microwaveable container with a lid (it will boil up the sides). Stir until all seeds are covered in water, cover with lid and cook on high for 5 minutes, stir, then on 50% (or similar) for 10 minutes. Let it sit for a few minutes to finish cooking. Microwaves do vary in power so check what power yours has. Rice cooker Just the same way as rice – simply add the appropriate boiling water (450ml per 225g quinoa). Stir until all seeds are covered in water, and then start the cooker (as per manufacturer instructions). It will take approx. 18 mins to have beautifully cooked quinoa – just be careful, some rice cookers are known to stick! Unlike rice you can stir quinoa a few times while cooking to prevent burning in the bottom of the pan – you’ll know your rice cooker and its idiosyncrasies! Thermomix Simply add the appropriate boiling water (450ml per 225g quinoa). Stir until all seeds are covered in water, then 16 mins, 100 degrees, reverse soft stir will do the job. It is not as perfect as other methods of cooking due to the stirring motion but it’s easy!

The mousse flavours need a couple of hours to integrate, however it can be eaten straight away if you can’t wait. It can also be frozen and served as ice-cream or half frozen as an Italian style “Semi Fredo”
