Sicilian Cherry Tomato Sauce with Fresh Basil 330g We discovered this delicious Sicilian Sauce at the Teneriffe Festival, Brisbane and were hooked. Sortino, found in South East Sicily, is known for its very low acid, sweet, fruity flavoured cherry tomatoes and Benfatti have bottled them up and brought them to Australia (thank you!). We particularly love that this product is preservative free with no added sugar – all natural tomato goodness with nothing to feel guilty about! Benfatti Sicilian Cherry Tomato Sauce is made by the Santo family who handle the entire production of this delicious sauce onsite at their farm. Within only 24 hours from picking, the family cooks down their ripe cherry tomatoes adding their family grown fresh basil, a splash of their very own extra virgin olive oil and a pinch of Sicilian sea salt. This home style production takes a lot of time and requires a lot of love to perfect the sauce. The result is a natural garden fresh flavour that large producers can simply not replicate.

The low acidity of the cherry tomato means the family does not need to add any sugar in the production process which is a common technique used by larger producers to equal out the acidity of most other tomato varieties.
For an easy and extremely tasty traditional Italian recipe, simply fry a clove of garlic or onion in a pan, cook your favourite pasta, drain and add the pasta to the pan, then stir through the cherry tomato sauce and serve with some grated parmesan cheese. Combine Cherry Tomato Sauce with chopped garlic, then spread over pizza bases leaving a 2cm border. Divide the bocconcini between bases, then scatter with parmesan and cherry tomatoes (cutside up).

Drizzle with olive oil and bake for 8-10 minutes until cheese has melted and the pizza bases are crisp and lightly golden around the edges. Drizzle the pizzas with a little more olive oil, garnish with small basil leaves then serve immediately.
