IT’S that time of year when no stage is complete without a celeb or two, a man in a dress and a few festive frolics. Yes panto season is here, oh yes it is! Merseyside has a sled-load of festive shows and pantos to get you into the spirit of the season, and on page 18, we take a look at some of the best. Plus, we speak to two of this year’s biggest panto stars. On page 17, we meet 21-year-old actress, Lizzie Warburton who’s starring in Snow White at the Royal Court. While on page 16, we talk to Francis Tucker, who’s starring as one half of the Ugly Sisters in Cinderella: Mop! In The Name Of Love at the Playhouse. No ordinary panto dame, Francis toured as a drummer with bands like Suede and Dodgy before he found his comic calling. Having been cast as a dame for seven years running, Francis is something of a panto veteran and, when he’s not treading the boards dressed in women’s clothing, the 41-yearold can be found performing as ‘François the Gypsy’ in the region’s comedy clubs. On page 25, we check out Santa’s diary and reveal where

youngsters can meet jolly old St Nick in the city. Plus, we find some man-size gifts for hard-to-buy-for blokes and perfect presents for women on pages 12-15. Christmas is all about razzle dazzle and this issue we have fabulous fashions Yule love on pages 6-8, put a pre-party pamper package to the test on page 10 and find out what’s cutting it in the world of male hair trends on page 9. Plus, to help you man-folk be groomed to perfection for party season, we take a look at the best beauty buys for blokes – from cooling eye gels to revive puffy, post-party peepers to seasonal skin saviours. December is a time to eat drink and be merry, so, on page 27 we put waterfront pan-Asian restaurant, Matou to the test and find Christmas gifts for foodies. While on page 29, we show you how to give your festive feast a local flavour and find a tasty way to use up leftover turkey. If that wasn’t enough, we have some cracking competitions on pages 22-23 to help you have the Best Christmas ever!

We’re loving THE CRYING TREE DECEMBER can be a cold old month, and we’re loving taking refuge from the chilly weather in The Crying Tree in Gateacre. Set in a Victorian manor house, this cosy, welcoming pub has no end of period charms and with good conversation, sports screenings, specialist beers and tasty food on offer, it’s not hard to see why it has a loyal band of regulars, including families and trendy suburbanites. Sweeping staircases and warm, mahogany bar-tops make for an atmospheric setting to drink and dine. And, when it comes to food, The Crying Tree serves simple, modern and eclectic cuisine with a regional influence. www.halewoodinns.info 0151 429 4865

IF there’s one thing every woman needs – it’s a knock-out party dress for Christmas. Be it the annual office knees-up, a night out with the girls or a family do, you’re social diary’s no doubt crammed with invites. And, if you’re stuck for style inspiration this party season, look no further! This year, as ever, glitz and glam will take centre stage with a bevvy of sequined dresses, embellished tops and sparkly skirts filling our shops. Shimmering metallics are another trend set to dazzle and are the perfect way to channel your inner rock chick. Vivid jewel shades like rubies, emeralds and sapphire blues are also in favour. Or for a quick figure-fixer, pleated dresses are a godsend. Opt for loose flowing materials that skim over

lumps and bumps and nip in at waists to highlight your curves. There’s good news for party-goers who fear flashing their flesh too. The trend for longer hemlines is still going strong and this year it’s easy to vamp up maxi skirts, midi-dresses or jumpsuits for the Yuletide. As for footwear, glittery platform courts and chunky heels are at the top of our Christmas wish list. But, if you can’t bear to tear yourself away from your winter boots, switch your prim and proper peep-toes for edgy ankle boots. They’ll add attitude to even the prettiest of party frocks. Last, but not least, wrap up warm with a statement coat – it’s a surefire way to make an entrance that’s remembered for all the right reasons.

THE days when blokes simply slicked on some cheap hair gel to achieve their desired ‘style’ are long gone. Male hair grooming is now big business, with the modern man willing to invest money and time in having a hair style that will stop traffic. Don’t take my word for it – just ask Mike Bennell, senior stylist at Zoo Salon on Hackins Hey, off Dale Street. Mike has 17 years’ hairdressing experience, in which time he’s worked as a platform artist for L’Oreal and artistic director for Liverpool Fashion Week, styled numerous celebrities, and been nominated at the British Hairdresser of the Year Awards. It’s safe to say that Mike knows his stuff, especially when it comes to styling the hair of Liverpool’s stylish blokes. “Guys no longer just wash and leave their hair,” says the Kent-born scissor-wizard. “Now it’s all about the styling. Men across the land can be found with a hairdryer and straighteners in their grooming tool kit, along with their favourite styling products. Male grooming is big business.” So, what’s hot at the moment? “There

has been a definite shift away from the over-waxed hair to a more natural, dryer looking hair finish,” commented Mike, who singles out the three current haircut trends as the sweep, preppy and the undercut. The sweep is a longer hair style, when the hair is over the ears with a long heavy fringe swept to the side, complete with choppy, textured layers through the top and sides. “This works really well on guys with thick hair,” says Mike. “It’s a versatile style too, as it can be flat through the day and ruffled up for a night out. Think a grown-up Justin Bieber.” Preppy is your short back and sides, blended into a slightly longer top section. Worn with a definite side parting, this can be either blow dried flat or quiffed up at the front for a more dramatic look. “Shine is the key to this look,” remarks Mike. “Think Joey Essex.” Finally, the undercut. Mike says: “This is the most versatile style, as the back and sides are cut short leaving the top section of hair longer and disconnected. “This can then be cut to any length the client wants. The hair on top can be

manipulated into any shape you desire. It can lay flat to one side like Joey Barton, be worn styled up like Olly Murs, or left longer for a more radical look.” Mike can be found at Zoo Salon in Liverpool city centre.

Where is it? Zoo Salon is in the heart of Liverpool on Hackins Hey, just off Dale Street.

What does it do? Zoo provides a full unisex haircut and colour service, as well as styling for those special occasions. It also sells a selection of Schwarzkopf and Bumble & Bumble hair products.

Contact: Telephone 0151 255 1001 to make an appointment with Mike, or visit Zoo Salon at 6 hackins Hey, Liverpool, L2 2AW.

Keep your peepers party perfect with this two-tone, MAC Club eyeshadow, from www.maccosmetics.co.uk

DECEMBER can be a busy old month and between buying mountains of presents, cramming in family visits and tackling an ever-expanding to do list, by the time party season arrives, I’m usually feeling less than festive. So, with time short and a party to attend, I headed to The House Beauty Spa in Allerton for a pre-party pamper. The busy girl’s way to go from frazzled to fabulous; the package includes a full set of individual lashes, a Shellac manicure, pedicure and party make-up. Having rushed straight from the office and got somewhat lost along the way, by the time I arrived at this plush beauty retreat (after two trains and a bus thanks to my complete inability to read a map or train timetable) it’s fair to say that I was looking a little frayed around the edges. The talented team quickly started to work their magic and after a full set of luscious lashes were applied; the pedicure began with a relaxing foot soak and, once my nails and cuticles had been treated to a little TLC, a callous peel skin softener was applied to my heels. A brand new treatment, the peel effectively removes dry, hard skin and it’s so good that The House Beauty Spa’s considering including it in all of their pedicures. Now, call me a cynic, but having tried everything from fish spas to foot files in a bid for beautifully soft feet, I was a little sceptical. But the peel really does work, and

after it had been left on for 20 minutes, my soles were soft, supple and smooth – happy feet indeed! To complete the pedicure, a nourishing foot cream was slathered on and after ogling the beauty spa’s 700 shades of OPI polish, I eventually plumped for a deep shade of red for my tootsies. A Shellac manicure followed then we move on to the main event – the party make-up. Reflecting fashion’s current love of all things sparkling, metallic smoky eyes are one of the key beauty trends for Christmas and after a consultation, make-up artist, Louisa Forrest suggested I go for smoky eyes with metallic green tones to match my dress for the evening. A former Merchant Taylors’ pupil, Louisa trained at London’s prestigious Academy of Freelance Make-up and when it comes to catwalk beauty trends, she certainly knows her stuff. She preps my skin with a light moisturiser, then expertly applies Chanel Vitalumiere Acqua foundation to give flawless, glowing skin. Foundation that appears natural yet conceals imperfections is the Holy Grail of make-up and Louisa swears by this Chanel classic, as it gives good coverage but a natural, dewy finish. For the smoky eyes, Louisa smudges black kohl liner across my lids and blends a black metallic shadow over the top before layering on MAC Club eyeshadow. A two-tone, metallic green shade, MAC Club

is one of Louisa’s favourite products this season and it’s a great way to add another dimension to a classic smoky eye. Next, she subtly contours my rather ample hamster cheeks, adds just a touch of neutral lip colour and lines the inside of my eyes with a flesh coloured Nars liner – her top trick for brightening tired looking peepers. The finished make-up is dramatic without being over-the-top and lasts all night. If only Louisa could do my make-up every day.

The BIG interview Photos: James Maloney

FROM ROCK to frock Sarah Hooley talks to Francis Tucker, star of this year’s Playhouse panto Cinderella: Mop! In the Name of Love, about dresses, drums and being a dad... WITH dark brown hair, twinkly eyes and rather rugged good looks, it’s fair to say that Francis Tucker doesn’t look like your average panto dame. But, with seven performances as a dame under his belt, the 41-year-old actor is something of a crossdressing veteran and can’t wait to get back on stage. “I’m quietly confident that this year is going to be an amazing show,” says Francis, who’s starring as one half of the Ugly Sisters in Cinderella: Mop! In the Name of Love at the Playhouse theatre. He continues: “We’ve got an incredible cast and the youngsters this year are absolutely amazing.” This year the panto is being held at the Playhouse while the Everyman undergoes its £28m redevelopment. How will that affect the show? “It’s obviously going to be a different dynamic at the Playhouse, but the rehearsals have been so much fun,” Francis explains excitedly. “We’ve just been concentrating on creating the same intimacy and anarchic performance that we had at the Everyman which I really think we’ve done – and there’ll still be a lot of audience participation!” Originally born in Manchester, the actor now lives with his partner and two-year-old son in Aigburth and has notched up 12 performances in the rock and roll panto. With the last seven spent playing one of the show’s mayhem-inducing dames. “It’s really strange, the first time I did the Everyman panto I never thought: ‘I’m going to do this for the next

16

BEST OF LIVERPOOL

12 years’, it just happened,” he happily explains. It’s not just panto that the actor’s famed for though and his credits include Brick Up The Mersey Tunnels, 15 Minutes That Shook The World, Coronation Street, Casualty and Cutting It. More recently, he’s also starred as Lord Capulet in a production of Romeo and Juliet at St George’s Hall, and has performed as ‘François the Gypsy’ in a number of comedy clubs.

“This year is the first time that my son’s coming to see me in a dress... I think when he gets to junior school I’ll have to stop playing women though!” As if that wasn’t impressive enough, Francis is also an accomplished drummer and at the tender age of 16 toured the world with bands like Suede and Dodgy. “It was amazing. I went to America and Japan – my mum and dad had to sign a consent form and their little boy went off with a bunch of 20-year-olds. We toured for six years before I decided to go back to college and I kind of fell into drama.”

Even at drama college, however, Francis says comedy was never on his radar. “When I left drama school I used to play quite serious characters but one of my teachers said: ‘Do comedy, that’s where you’re going to make your money’. I could never see it but, eventually, I just kind of fell into doing comedies and pantos.” Almost two decades later and Francis is one of the panto’s longest-running performers. So what keeps him coming back for more? “I think it’s a strange cocktail of working with Mark Chatterton [director and co-writer] and my love for his writing. It’s half traditional and half Spike Milligan and I like that mix. I also love the audiences. The show has this bizarre appeal where people book 40 seats and the whole street comes to watch. There’s this street off Aigburth Road and more than 55 people from there came to see it last year.” Francis is also relishing the chance to work with his “best mate” and fellow panto dame, Adam Keast, again. “Adam and I have worked together for about seven years now and we’re really good friends. We’re a comedy partnership and almost know what each other’s thinking. I’m basically getting paid to be on stage with my mate, have a laugh and squirt people with water!” An added appeal of performing in the panto is the special place that it has in the city’s heart. “There was a lady I always picked on, I used to call Nana. She was in her 80s and would come to all of the shows dressed as a fairy, but then a few years ago her family got in touch with me as she’d fallen ill and I went to see her in hospital,” he remembers. “Last year all she wanted to do was come to the last panto at the Everyman, even though she was about 90 I think. She sadly passed away in March and I went to the funeral. I think it shows how special the panto is. “It is such a magical event for families, and as actors we have a responsibility to deliver every year.” Something Francis confesses he’s about to discover more than-ever. He adds with a laugh: “This year is the first time that my son’s coming to see his father in a dress, so it’s going to be quite a big moment for me. “I think when he gets to junior school I’ll have to stop playing women though!” Cinderella: Mop! In the Name of Love is at the Playhouse from December 3 until January 21, 2012. To book tickets call 0151 709 4776 or at www.everymanplayhouse.com

A DREAM

COME TRUE Snow White may get Prince Charming but panto star, Lizzie Warburton got the part that every girl dreams of playing. Katie McLoughlin meets the young actress as she prepares to tread the boards at the Royal Court...

AS first professional roles go, landing the lead part in a star-studded panto is pretty impressive by anyone’s standards and for actress Lizzie Warburton, it’s a dream come true. Fresh from graduating from a musical theatre course, the 21-year-old from Lydiate is preparing to star alongside some of Liverpool’s biggest names in the Royal Court’s family panto, Snow White & The Seven Dwarfs. The former Loretta Legge Theatre School pupil beat off competition from 50 other hopefuls when the Royal Court held open auditions for the role of Snow White. “The audition was really hard. It wasn’t how I was expecting an audition to be because usually you go in one at a time, but we had to get up on stage and sing in front of everybody for this. I had like over a hundred people in there watching, so it was really nerve-racking,” says Lizzie. “They cut the group down, then we had to improvise at being Snow White lost in the woods. Then they cut us down again and asked us to sing Somewhere over the Rainbow, so if you didn’t know the song you were stuck!” A traditional family panto with sparkling sets, lavish costumes and a star-studded cast, Snow White stars some of Liverpool’s biggest names. So how does it feel to work with the likes of Tina Malone, Leanne Campbell, Mickey Finn and Pete Price in your first-ever

show? “It’s amazing – especially with it being my first job,” says Lizzie. “I feel really lucky to be working with such talented people. Tina Malone is amazing, she’s so funny, she’s hilarious.” The show starts on December 9 and runs until January 8, which means Lizzie, who moved to London after graduating, gets to be home for the festive season. “At the moment I’m in London because my agency’s there and I’m doing auditions for various roles after the panto. I was lucky with this being in Liverpool – it means I get to stay at home for Christmas.” Rehearsals started in late November, so how has the young actress been preparing for the part? “Well, I watched the video obviously,” she laughs. “We get two weeks to rehearse, so it’s pretty intense. Two weeks to learn everything – the songs, all the different scenes, dances, everything.” Two weeks doesn’t sound like a long time to prepare, but Lizzie is taking it all in her stride and being able to sing, dance and act all in her first-ever professional show is a dream come true for the 21-year-old. She says: “Getting up on stage and being able to do all three – singing, dancing and acting – is the best thing. I love it!” Snow White and The Seven Dwarfs is at the Royal Court Theatre on Roe Street from December 9 until January 8. For tickets call the booking hotline on 0870 787 1866 or visit the website www.royalcourtliverpool.co.uk

This December, The Magnet has a jam-packed calendar of events for your aural pleasure, including Skream on December 5, Craig Charles on December 10, Azari & III on December 11 and DJ Hype on December 12. Highlight of the month is undoubtedly The Rebel Agency presents Robert James (Crosstown Rebels), Richy Ahmed (Hot Creations) and Lewis Boardman (Circus) on December 16. Plus, on December 26, the Hardman Street club will host Circus’ Boxing Day after-party. With events of this calibre, there’s sure to be something pretty special in-store on New Year’s Eve too, details of which are still to be announced.

GARLANDS NEW Year’s Eve will be an all white affair at Garlands this year as the Eberle Street club is hosting The Ultimate White Party. The club will be transformed for the glitzy white ball and clubbers must wear something white to get in. And, because no-one really starts their New Year’s resolutions until January 2, Bedlam will be open from the early hours on New Year’s Day for those keen to carry the party on.

CREAM’S BOXING NIGHT SPECIAL FOLLOWING his spell-binding residency for Cream in Ibiza this summer, Laidback Luke will be leading the festive cheer in the Main Room for Cream’s Boxing Night Special at Nation. While Cream favourite, Eddie Halliwell will take the helm in the Courtyard, with his ED-IT live show. The line-up also includes Alesso, who’ll be making his Cream debut; Kim Fai and DJ/production duo Sunnery James and Ryan Marciano in the Main Room, with Funkagenda, Third Party, Gareth Wyn and Michael Woods in the Courtyard. Plus, residents Anthony Probyn, Andy Mac, Jemmy, Rob Harnetty and Lee Ellis will be in the Annex. Cream is at Nation, Wolstenholme Square on Monday, December 26, 10pm-6am (last entry 1am). Tickets are priced at £30 plus booking fee, available from www.ticketline.co.uk (tel: 0844 888 4401) and www.ticketmaster.co.uk (tel: 0844 847 2448).

FROM Lisa Snowdon to Frank Lampard, everyone seems to be a fan of pan-Asian food. Except that is, for me. Tempura, pak choi, wasabi. You name it, I don’t like it. Or, at least, I didn’t think I did – until I visited Matou last month. A relative newcomer on the city’s dining scene, Matou is an uber-stylish and sophisticated pan-Asian restaurant. It’s setting – perched on the second floor of the new Pier Head Ferry Terminal building – is one of the best in the city and gives diners open views across the River Mersey. It also has a striking interior, alfresco terrace, cocktail bar and criticallyacclaimed cuisine. No wonder then that many of my friends were already singing its praises. As it was a nice evening, my husband and I decided to make our way to the restaurant on foot, strolling past the Three Graces and canal to the side entrance of the modern building. And, inside, we were immediately impressed. Our table was seated in front of the floor-to-ceiling windows and gave us mesmerising views (despite the grey weather) over the waterfront. The plush décor was equally opulent. In the centre of the restaurant lay an open kitchen and soft amber lighting, dark wood tables and shimmering pillars covered in mosaic tiles gave the space a warm and relaxing feel. A friendly waiter promptly brought over two menus and service was quick – despite the restaurant being almost full. To start, I ordered Malaysian Lamb Satay Skewers (£7.90) with peanut sauce. The succulent tenderloin of lamb was chargrilled to a T and the four skewers were ample enough to share (if you can bring yourself to). My other half opted for Sui Mai (£5.90) and they didn’t disappoint. The delicate dumplings were filled with juicy prawns and minced pork, complemented by a sweet chilli oil dip that gave them that extra kick. The menu was extensive and offered a fusion of dishes from the Far East, including Thai, Malaysian, Japanese, Chinese and Singaporean cuisine. For the main course there are seven sections (Matou Wok, Curries, Grill, Fish, Salads, Noodles and Fried Rice) to choose between, and after much umming and ah-

hing I opted for the Three Delicacies in Garlic and Wine Sauce (£11.90). The generous dish is a mix of stir-fried chicken, beef and king prawns all cooked to perfection and served on a delicious bed of asparagus, mange-tout and sweetcorn. My husband, who fancies himself as a bit of a curry-connoisseur, ordered the Panang Beef Curry (£12.90) and looked like the cat who had got the cream when it arrived at our table. The tender beef had been cut into chunky strips and smothered in a generous serving of creamy sauce with coconut milk, panang spices, lime leaf, sweet basil and red chilli. To accompany our main course we also ordered two side portions of Egg Fried Rice (£3.50). Like most people, it’s a dish that we’ve sampled many times before, but we couldn’t believe how rich the flavour was, and after a few forkfuls, we were both hooked. On to dessert, and while I do admittedly have a sweet tooth, I’ll be honest – I wasn’t sure if I’d like pan-Asian puddings. Again, however, I couldn’t have been more wrong. I ordered the Deep-Fried Ice-Cream (£6.50) and as soon as it was brought to our table, I knew I’d made the right choice. A generous scoop of coconut ice-cream sat in the centre of the plate, covered in a delicious thick, crispy coating that tasted like hot, freshly made doughnuts. If heaven could come on a plate – this would undoubtedly be it. My husband was equally delighted with his choice, Banana Fritters with Chocolate Sauce and Ice-Cream (£5.95). The light batter and bananas melted in the mouth and the combination of cold ice cream with the warm bananas was pudding perfection. For the entire evening the service was exemplary with attentive waiters, a lively atmosphere and exquisite food. It really was a lesson in everything that first-class dining should be and, quite simply, Matou is now one of our favourite restaurants in the city. To find out more, visit www.matou.co.uk or call 0151 236 2928 to reserve a table.

HOME-GROWN AND HEARTY

BOXING DAY SPICED TURKEY AND POTATO CAKES THIS is a special recipe from celebrity chef Cyrus Todiwala for Port Sunlight’s Christmas Food Fayre, December 3-4. These delicious potato cakes, filled with finely chopped, spiced turkey are a great way of using up your leftover turkey, vegetables and cranberry sauce from Christmas Day. The delightful morsels can be shaped into canapé size patties to make the perfect addition to your Boxing Day buffet.

The region boasts many excellent food and drink suppliers. Paul Baker checks out the best local fayre for your Christmas table... LOCAL food shops and suppliers can often provide that something extra and are great places to stock up on Christmas food and drink. If it’s quality and freshness you are looking for then your local greengrocer, butcher and farm store specialises in providing this. By choosing local producers and suppliers you are helping to keep this vital local industry alive and well. You can get something fresh and perhaps that little bit different, meaning your Christmas table can be even more fun and original as ever. That said, local suppliers can also help you have the most traditional of celebrations – it’s up to you! And smaller, local shops will be more likely to sell local

produce. This is important in that it helps support the local agriculture and community. Local food should be fresher and you should notice this in the taste. You’ll also be doing your bit for the environment because if you buy seasonal produce, grown locally, then you do not have to worry about the damage done by your food having to be unnecessarily flown in from abroad and then transported long distances by road to supermarkets. If you buy locally, the food will have been grown, picked and sold within just a few miles. And, if you do have a big Christmas produce shopping list, make sure you make your order in good time, as demand is going to be high at this time of year.

In fact, each bird even comes with its own thermometer! Don’t forget to try the local geese from Ormskirk, too. Orders for Christmas must be placed by December 14. Visit The Farm Larder, Worrall House Farm (Farmer Ted’s), Flatmans Lane, Downholland, L39 7HW, 0151 527 1210, www.farmlarder.co.uk

CLAREMOUNT FARM

THE FARM LARDER THE Farm Larder is a fantastic supplier of delicious, locally reared meat and so much more, perfect for a Christmas feast to remember. Worrall House Farm is the location of The Farm Larder, but you might know it better as Farmer Ted’s. There’s home reared beef, local pork, chicken and lamb, plus there’s bacon, gammon, sausages and burgers fresh from the farm. Order your farm fresh turkey now. The Farm Larder stocks Kelly Bronze turkeys, reared in nearby Hightown and recognised as a bird of excellent quality and flavour. There are leaflets in the shop giving advice on cooking your turkey and the bird will be nicely prepared and packaged for you.

LIVERPOOL CHEESE COMPANY RIND washed in Wapping Ale at the Baltic Fleet micro brewery, near the banks of the Mersey, Baltic is an unusual British cheese being semisoft with a strong, robust flavour. It makes for a great addition to any Christmas cheese board – £2.18/100g. Salisbury Dairy, 29a Woolton Street, Woolton Village, L25 5NH, 0151 428 3942, www.liverpoolcheesecompany.co.uk

PEERLESS BREWING COMPANY FOR potatoes you can’t go far wrong with the maritima variety – the pick of the winter crop at Claremont Farm in Bebington. Perfect for creating fluffy, delicious roasties that will have everyone going for seconds on Christmas Day! Pick them up for 60p a kilo in the Claremont Farm Shop, par boil and give them a good bash about before roasting in olive oil, salt, pepper and rosemary. Visit Claremont Farm, Old Clatterbridge Road, Bebington, CH63 4JB, 0151 346 1796, www.claremontfarm.co.uk

BEER is an increasingly popular drink to accompany Christmas dinners and there are many fine, locally brewed ales to adorn your seasonal table. Red Rocks is a strong, ruby ale named after the famous sandstone point in Hoylake, Wirral. Whipped up by Birkenhead-based Peerless Brewing Company, the rich, malty favours are balanced with the fruity undertones of the hops to make a true winter brew – £2.80 a bottle or £28 for a case of 12. The Brewery, 8 Pool Street, Birkenhead, CH41 3NL, 0151 647 7688, www.peerlessbrewing.co.uk

Ingredients (to make 24 potato cakes): 1/2 kg turkey, finely chopped 1.5kg cold mashed potato (without cream or butter) 1 large onion, finely chopped 1 tbsp freshly grated ginger 2 cloves of garlic, finely chopped 1/2 tsp cumin seeds 2 tbsp freshly chopped coriander 1 tbsp freshly chopped mint 2 green chillies, finely chopped Juice of 1 lime 2 tbsp cooking oil and extra to fry Salt and pepper to taste Flour for dusting

Method: 1. Heat the oil in a heavy bottomed pan. 2. Add the cumin seeds first, followed by the ginger, garlic and chilli. 3. When the garlic begins to colour, add the onion and cook until they start to soften. 4. Add the turkey and lightly fry for 1-2 minutes, stirring continuously until any liquid has evaporated. 5. Remove from heat and add the chopped coriander and mint. Mix well and season before adding a dash or two of lime juice. Allow to cool. 6. To make the cakes, roll mashed potato balls the size of golf balls in your hands. 7. Gently flatten each ball in the palm of your hand and add 1 tbsp of the turkey mixture into the middle. 8. Fold the potato around the turkey mixture and press gently to seal the outer layer. 9. Dust each potato cake lightly with flour and gently pan fry until golden. 10. Sit on kitchen roll to drain excess oil and serve on a bed of leaves with a cranberry sauce dip. Tuck in!

TOP TIP:

Instead of mashed potato, you could use leftover roasted vegetables from Christmas dinner. Why not try mashed roasted parsnip or carrot?

Emma Thompson shows you how to make your table a feast for the eyes ... CHRISTMAS dinner is the one meal of the year that everybody looks forward too, so make sure your dining table décor doesn’t let you down! Classic themes work well each year, with glittering golds and shimmering silvers always a popular choice. Or, for something less traditional, why not give your table a chic, Scandinavian feel with the latest Nordic-style decorations? To really make a style statement, opt for a classic red and white colour scheme teamed with quirky reindeer candle holders and snowflake place settings. If you fancy a variety of colour though don’t fret, as bold blues, purples and greens are also on-trend options for your festive table. So, whether you want your table to sparkle with gold or brighten up with Nordic red there’s plenty of choice on the menu!
