Editor’s Letter WITH all this depressing talk of the Credit Crunch and Swine Flu, we need a good laugh to cheer us up. And if you’re looking to exercise your chuckle muscles then you’ve come to the right place. Liverpool is revered (and sometimes even feared) for its comedy prowess spawning a wealth of famous funnymen and women from Arthur Askey and Ken Dodd to Alexei Sayle. In our second edition of Best of Liverpool we celebrate that great Scouse humour with a look at what’s on at our fantastic comedy clubs and venues in the city. We interview the fabulously funny Scouser Michael Starkey who’s starring in Our Day Out written by another homegrown talent, Willy Russell. We catch up with Neil Fitzmaurice, who shows he’s got many strings to his bow with a number of projects on the go from writing and directing to producing. Neil recently took his film Charlie Noades R.I.P. to Cannes and even finds time to be a radio presenter and throw in a bit of stand-up inbetween. And we challenge our office joker, Dave Brown, to get up there and have a go at stand-up himself. As well as a bit of light relief, we bring you the latest French inspired fashions, have treated ourselves to a spot of pampering at Spire (oh, the perks of the job...), and we come over all romantic with our misty-eyed wedding special. We get that back to school feeling and pack the kids off with some healthy and hearty lunches and check out what local delicacies you can find on the city’s menus. We’ve also found time to list the city’s top 10 Indian restaurants and threw in a trip on the Ferry ‘Cross the Mersey for good measure. We hope we’ve brightened your day! Keep laughing...

Michelle Rushton takes a look at what’s new in the city THE city has been a sizzling hot bed of activity this summer with a number of exciting new ventures springing up - defiantly laughing in the face of the Credit Crunch. So if you’ve been holidaying in the Seychelles and have missed out on the gossip, here’s a small taste of what’s set our tongues wagging at the Best of Liverpool. *Merseyside Maritime Museum has unveiled a breathtaking new restaurant and conference facility offering exceptional food and stunning views of the Albert and Canning Docks. *Fast Show star Charlie Higson will be signing copies

of his latest zombie book, The Enemy, at Waterstones on September 12. *Celebrating 25 years as one of the UK’s top training providers, Andrew Collinge, will open a cutting edge Graduates Salon on Bold Street this month which aims to be a hotbed of creativity for young dynamic stylists. The team will be led by creative director, Alfie Booth, a finalist in the 2009 UK Creative Head Magazine Award’s ‘One to Watch’ category. *We’re cooing with delight at the imminent birth of the Mamas & Papas store at Liverpool ONE. The designer nursery brand which is a hot favourite with celebrity mums will be opening this autumn.

*Resurrection Online- the popular Bold Street fashion store has launched its brand new and shiny all singing, all dancing website at www.resurrection-online.com with online discounts. *The Masque - is all shiny and new inside and ready to party again. The Liverpool music venue will be offering live music from up and coming local, national, and international talent as well as showcasing some of the world’s best DJs at the resident Circus and Chibuku club nights. *Ultra cool Danish furniture store, BoConcept will open its doors on Chapel Street this month.

SEPTEMBER 09 HOOKA’S BIRTHDAY BASH The night sky came alight with the flashes of cameras as paparazzis jostled to capture celebrities arriving at Hooka on Wood Street last month. Stars such as Big Brother’s Brian Belo, Mario and Lisa, Craig Phillips, Kris Donnelly and Corrie’s Brooke Vincent arrived looking as glam as ever to help owner Dion Padan to celebrate the salon’s third birthday. Revellers at the birthday bash, sponsored by VK Drinks, Icon Hair & Juice FM Liverpool, also toasted the fact that Dion has just been awarded the title The Nation’s Favourite Hairdresser by Head & Shoulders. Hooka has fast become one of the market leaders in male and female hair in Liverpool city centre, regularly attracting a celebrity clientele including Sophie Anderton, Michelle Heaton, Andy Scott Lee, Alex Wotherspoon, The Wombats, The Coral and other TV & music names.

Out and About

Guests were spoilt with champagne and chocolate coated strawberries and delights served by Café Rouge at the official launch party of Mococo in the Metquarter. They also got to buy exclusive jewellery brands such as Pandora and Thomas Sabo. The night didn’t stop there as guests then moved on to The Living Room, showing of their new sparkly jewellery whilst sipping cocktails. How decadent!

FANCY A BREW?

Over 40 guests gathered at acclaimed city restaurant 60 Hope Street earlier this week to take part in a very special Baltic Beer tasting event. Hosted by Simon Holt of the Baltic Fleet and Colin and Gary Manning, guests were treated to six different courses accompanied by The Baltic Fleet’s very own brews. The event comes as part of 60 Hope Street’s birthday celebrations – the restaurant turned 10 years old earlier this year.

URBAN BEACH

We do love to be beside the seaside even if we’re in the city centre! Sand castles, donkey rides, trampolines, hook a duck, deck chairs, and a surf simulator all came to Liverpool in August, as part of City Central BID’s summer programme of events. Williamson Square was transformed in to a beach and The Playhouse Theatre provided clothes chests full of costumes for kids to play dress up with.

QUEEN SQUARE GETS CRAFTY

There was somewhat of a creative explosion at Queen’s Square which recently hosted an art and artisan market. Part of a programme of free events across City Central, the retail and leisure heart of Liverpool city centre, 25 creative people, including artists, photographers and designers of jewellery, accessories, glass and unusual crafts exhibited selling their work at Queen Square. Budding artist Grace Ramsey, aged three, joined in by helping paint the superlambanana into a tiger to promote the year of the environment. Queens Square also had a sneaky visit from a small family of the Go Penguins who tapped their feet along to the beat of a samba band.

ROCK THE KASBAH

Entrepreneur Paul Adams celebrated his birthday with friends and family at a spectacular Moroccan-themed party at his lavish home. Adams, whose business ventures include The Vincent Hotel and Warehouse Brasserie welcomed guests including Alex Curran, Kenny and Marina Dalglish, and celebrity chef, Paul Heathcote. Guests took to the dancefloor in a Bedouin-style tent before relaxing in the outdoor chill out area complete with Hookah pipes and candle-lit storm lanterns. The Pretty Damn Hot dancers entertained the crowd with seductive belly dancing and there was music by stunning vocalist Diane O'Sullivan. Invites to the event were particularly sought after as all guests had been sent their own individual iPod, complete with a personal playlist of the birthday boy’s favourite songs.

BOYS’ TOYS

Top Gear’s James May came to Liverpool to construct a life sized Meccano bridge! The creation was part of the BBC2 series James May’s Toy Stories, where May takes iconic toys and does something huge and ambitious with them. The Liverpool project was possibly the most daring of them all with May taking his life into his own hands by walking across a 23 metre bridge constructed entirely from traditional Meccano at the newly developed Pier Head. This great construction, triumphantly celebrates bringing Meccano back to its native soil.

HE recent biopic Coco Before Chanel, tells of how the fashion designer started life in a poorhouse and went on to become one of the world's greatest style icons. Liberating women from the restraints of corsets, lace and padding, Coco Chanel’s designs were simple, understated and above all else - elegant. TREATMENT REVIEW HAVING never visited Spire before, a cosmetic and healthcare suite, I was slightly unsure of what to expect, but thankfully pleasantly surprised! It’s not the usual place to try out a treatment, and at 26 I didn’t quite feel ready for (or didn’t want to admit I might need) a touch of Botox, but a consultation to find the right skin cream for my face was right up my street. With the wide range of skin creams on our shelves, I’ve struggled to discover the best one for my skin, but Spire now sell the excellent Darphin selection, so a session with Greenbank Suite advisor, Jane Gavin, was ideal. The Greenbank Suite within Spire is the cosmetic part of the hospital, and on arrival it’s relaxed and informal, so with a cup of tea in-hand I take a seat and begin my consultation. Jane (pictured), who has been fully trained by Darphin experts, begins by using the specially designed chart which has three stages - repair, restore and replenish - to see what my skin needs. The first stage decides what serum I need, Hydraskin an intensive moisturiser as it turns out, repairs the skin going deep under the surface. It feels refreshing and light and surprisingly my skin seems already hydrated. The second stage of my mini ‘facial’ was to choose an essential oil which would restore my complexion. Unsure whether my skin was ‘thirsty’ or not, Jane advised smelling the aromatic oils was also a way of discovering what my skin wanted, so the delicate scent of Rose Aromatic Care was my next choice. Admittedly I wasn’t too confident in putting an oil on my face but Jane reassured me it soaked in well and would really moisturise my skin, and she was right, my skin was soft and not ‘thirsty’ at all! Finally, I chose a Matifying Fluid. It was light and perfect for my skin leaving a soft ‘velvety-smooth’ texture. I left with my skin feeling soft, smooth and hydrated – I’ll certainly be thinking about swapping my budget beauty buys for this luxury Darphin treat.

We teamed up with local make-up artist Shell Sullivan to find out. Having worked at high-profile shows such as London Fashion Week with up and coming designers such as Qasimi, William Tempest and Emma Bell, Shell knows exactly how to bring out the best in everyone. Although Shell has worked all over the country, one of her favourite shoots was in Liverpool recently at the Hard Days Night Hotel. “It was with Ian Cole, Liverpool-based fashion photographer, shot with male model Pawel Domalik, from Basic Model Management, New York, who is tipped as one to watch! Pawel’s New York agency arranged the shoot and the images where printed in Fashionmag.com, a US publication,” says Shell. As for this season’s make-up trends, here’s what Shell, fashion and photographic make-up artist, recommends:

1 SKIN

Think shape and structure with an nod to the 80s era with full on contouring – use caramel and antique gold to define and contour temples and cheekbones. Fashion designers have gone crazy for the blush creating striking contoured cheekbones, so think strong cheek make-up!

EYES Smokey eyes are always a must for the A/W season and this year there’s no exception. The shape however is a more almond/winged shape. Rim the eyes with Khol liner and emphasise the shaped curve with charcoals and blacks.

Rich hues and powerful shades. It’s all about making a bold statement so go full on with unapologetic shades of cherry and scarlet teamed with nude skin for a neutral base.

I

’M not a man who shaves mechanically every morning. There’s little enough time for sleep as it is. And when the beard begins to scratch urgently at my face, I prefer a quick trim with an electric jobbie, no pampered wet shave with gels and moisturisers for me. Well, not usually... Invited to sample the traditional wet shave at well-known city hairdresser Voodou’s Button Street salon, it was with slightly uncertain feet that I descended the steps of Voodou For Him and entered the cool, industrial atmosphere of this cathedral of male grooming. The luxurious basement barber shop incorporates the Shave Store and there’s a very modern, masculine feel inside. No grubby plastic chairs to perch upon while you wait for your appointment. Here you recline on leather couches with a refreshment of your choice in hand. Senior stylist in residence, Daniel Rawlinson, 29, treats me to Voodou’s full traditional wet shave experience. It takes about an hour and involves some serious preparation of the face, a combination of shaves, applications to the skin to stop irritation after the shave and then a wash and style of your hair to suit. Daniel explains the importance of properly preparing the face for a shave as he places hot towels upon my face. These towels have got their own little ovens and, as soon as they envelope your face, it is a relaxing, almost womb-like, place to be. A new towel is applied to the face after each shave – bliss! Later, Daniel applies a Nickel face scrub to exfoliate the skin, then a shave guard to protect from razor burn.

Finally the beard is lathered with Voodou’s own shave cream, chosen to suit your skin type. The application of the lather, Daniel explains, is with a badger-hair brush, starting slowly and softly then becoming a little more brusque in order to lift the hairs. Next comes the real grit of the traditional wet shave, the application of the razor. They don’t call them cut-throat razors anymore, rather the precision tool in Daniel’s hand is called an open razor and a new blade is attached for each new shave. Daniel’s technique is flawless though, and any fears over the reality of having a cut-throat razor applied to the skin are soon gone. After the second shave with the open razor, Nickel lubricating shave oils are added before clear menthol gel is applied to the skin and a more usual safety razor is used to get an even closer shave. Then the face is dried and talc is applied to show up any loose, missed or forgotten hairs. A final open blade shave is followed this time by a cold towel before a range of skin products is applied to create a facial mask to suit the client’s individual skin type. This is applied for 10 minutes and then a range of different moisturisers is massaged in to complete the shave. At this point I was transferred into the hands of young assistant Carl Foster for a hair wash and head massage, before heading back to Daniel where the hair is tidied up and styled to suit. For me, a quick shave sufficed. Then I’m ready to hit the street, my gleaming face smoother than its been in years. Daniel reckons a good wet shave treatment is one luxury every man should afford themselves at least once a month and I’ve come to agree with him. A lie-down, mixed with some pampering and a steel blade. What could be more manly?

DEAD FUNNY Neil Fitzmaurice shares his take on Liverpool life (and death!) with Peter Grant

F

ITZY simply doesn’t know where the days go. “They dissolve before my eyes,” says the actor, writerdirector, producer, stand-up, radio presenter – you name it – Neil Fitzmaurice has done it. He’s still doing it. Actor is the role he’s happy with. Charlie Noades R.I.P., is his latest work. A feel good family film, it’s a comedy about a family and group of friends struggling to keep a business and way of life afloat. Justin Moorehouse, Dave Spikey, Pauline Daniels, Micky Finn, John McArdle and Suzanne Collins were the all-star cast with Neil himself. Charlie Noades was also the first ‘non smoking film’ to be made in the North West. He took it to Cannes and it made its mark. Says Neil: “Cannes was very interesting because we were probably the only production company there that didn’t really care what happened. “My brother Tony, who co produced the film with me, decided on two screenings. “We hadn’t seen the film in its entirety till we sat down on the first one alongside the industry

buyers, which was either very brave or very stupid, but we really didn’t care. “The film looked great so the second screening became a matter of showing it to family, friends and investors as a way of thanking them for their belief in us.

“Steven Gerrard came over to support me and it became a media frenzy. We ended up doing an interview on CNN going out to 440 million homes across the world – it was crazy.”

Raising the finance for the film was, however, not so enjoyable. “The fact remains that we have no film industry in Liverpool (or the North West) so raising money for any project is a nightmare,” says Neil. “I would much rather come onto a project with finance already in place. It took us eight years of struggle to raise a pittance – things have to change . . . or film making will become impossible.” Neil now has several film scripts in the planning stages; one in particular is, he stresses, “very exciting and controversial.” Away from the stage and screen he loves LFC. “That club has made me laugh, cry and changed my outlook on life. “I worry about its present state of ownership but in the end the fans and club will win, we always do, WE ARE LIVERPOOL FC.” Future 'Premiere' acting projects include a new drama series called Paradox, with Tamzin Outhwaite. Series Six of Peepshow is in the can and there’s a 15 minute film 15 Minutes That Shook The World in which Neil plays Rafa Benitez, written by Liverpool writer, Dave Kirby.

And Neil hasn’t forsaken standup. “The comedy nights at the Slaughterhouse are great and selling out. I don’t travel any more, I just ‘hand pick’ where I want to play - so it’s perfect for me.” His first film, Going Off Big Time, had some enviable reviews. One major film magazine compared his writing to Tarrantino. “I hate the negative stuff though, because those critics haven’t got the talent to try it themselves and don’t know the struggle it took to get something made.” Although he has never wanted to pack it all in, his industry has some downsides. “I wish the acting world would go easy on me a bit. “I see so many people getting big projects and, to quote my dad, ‘they couldn’t act the bloody goat’. There aren’t too many actors who can rattle off my CV and write and star and produce two feature films and still have to schlep down to London every five minutes for jobs, but there are always people worse off so, hey ho!” Neil is now an accomplished radio star. “I’m really loving my radio jobs too. Now that I’m in

HE'S COMING HOME... control of the buttons I’m enjoying it immensely. “My Radio City Drive time and CityTalk Saturday breakfast jobs are great because they allow me to do what I love doing - talking to people.” Father-of-four Neil says his own mum gave him good advice. “She said ‘everything happens for the best’ and that has stood me in good stead so far.” And, he says, Liverpool is the best. “I love Liverpool with a passion. It's the greatest city in the world. I owe it everything. Everyone I love is here. It is my constant inspiration. “The contribution that Willy Russell and Alan Bleasdale have made to this city's growth is immeasurable. They are two geniuses in my eyes. “They wrote about beauty and hope when there was precious little of both and inspired people to create.” Neil says he was lucky to work on Alan's On the Ledge in 2008 and was blown away by Alan's sincerity and humanity. “He has a kind nature - a great man. “Liverpool is the best, too, because of the people and the humour and the general care that they show one another.” Oh, one last thing, Neil. After Charlie Noades R.I.P. What would your gravestone say? “Here Lies Neil Fitzmaurice…. Lived It…. Loved It!”

Sue Kelbrick catches up with local actor and all-round nice guy, Michael Starke

FROM Brookside Close to Coronation Street via Hollywood, Michael Starke has come a long way from his childhood roots in a deprived area of Liverpool. “In those days, there wasn’t the outlet that there is now for performing - it just wasn’t the done thing - so it was only when I discovered the Everyman theatre that I was able to indulge my passion for acting,” he recalls. It was through his work at the Everyman’s Liverpool Lunchtime Theatre in the 80s, that he met Ricky Tomlinson, who, in turn, introduced him to Jimmy McGovern. At the time, Jimmy was working on a little known Liverpool soap called Brookside which went on to become one of our most successful and much loved soaps. As soon as he saw Michael, Jimmy knew he had the perfect part for him. Sinbad the window cleaner was only ever meant to be in three episodes of the soap but he ended up being in it for 15 years and remains one of Brookside’s most enduring characters. Even though he left the show nearly 10 years ago, he still gets called ‘Sin’ by people on the street all the time, something he tolerates with good humour. “I have such fond memories of Brookside and it was a great programme to be involved with,” says Michael. “I think for me personally the highlight of my work was the Jordache storyline, which as an actor was a great challenge.” Humility is a virtue Michael seems to have been blessed with in spades and it is also something which has helped him become a hugely successful actor. “I’ve got no delusions about myself and I don’t mind playing similar characters,” he says. “I don’t worry about being typecast - I just worry about being cast at all! At the end of the day I’m never going to play Superman or Hamlet but at the same time, I’ve made a pretty good career for myself and for that I’m hugely grateful.” And even though Michael took a huge risk leaving Brookside, it seemed the gamble paid off, as he explains. “It was literally the day after I left Brookside that I got a call saying I’d got a part in the film, 51st State. I’d done a small piece to camera which the director, Ronnie Yu liked, and he even changed the

part to fit me which was really flattering!” Michael was soon back on the small screen again with roles in Casualty and The Royal, and latterly, as Jerry Morton in Coronation Street. But even though he seems to have rarely been off our screens for over 20 years, Michael has also built up an enviable reputation for his stage work, having performed in numerous productions throughout the country from Shakespeare to Alan Bleasdale and everything in between. “Theatre is still my first love. As an actor, theatre is the most rewarding and there is nothing like acting in front of a live audience.” And so Michael is coming back to both his acting roots, and his childhood roots in Liverpool, with his latest role in Willy Russell’s fantastic production of Our Day Out, which promises to bring this cult musical to a whole new audience at the Royal Court. “I love this play and it’s great to get to work with old mates like Willy and Andrew Schofield. There’s a great cast and the energy the kids bring to it is fantastic. WHETHER it’s Kenny Everett’s manic sketches that get you giggling, Ken Dodd and his infamous tickling stick, or Alexei Sayle’s politically aware cynicism, Liverpool has produced some iconic comedians over the years. The city has an impressive comedy legacy, and, with scousers famed for their sharp wit and sense of humour, it seems fitting that the region should have its very own comedy workshops to give would-be standups a chance to hone their skills with professionals, before putting their routines to the test in front of an audience. Based in the Royal Court Theatre, The Comedy Trust offers a number of comedy workshops including the Stand-Out comedy project for young people and Funny Business, a six-week course designed to teach wanna-be comics how to perform and write their own comedy routine as well as how to deal with hecklers. The Comedy Trust, which is the organisation behind the Liverpool Comedy Festival, runs three Funny Business courses a year, with the next course starting in September as part of Southport Comedy Festival. The workshops start on September 22 and culminate with a final

performance at Southport Arts Centre on October 28. Running in one form or another since 2003, Funny Business has been extremely successful. Over the past six years, the course has helped a number of local comics start their careers - indeed 10 Funny Business graduates have gone on to perform at this year’s Edinburgh Fringe Festival. Keen to put the course to the test, Best of Liverpool has challenged office joker, recruitment adviser Dave Brown, to try his hand at stand-up. Dave, who will take part in the September course, says: “I’m really excited to do it every time I think about it, my stomach flips - but I’m looking forward to it.” As well as helping to develop local comic talent, the course also equips participants with a range of transferrable skills, including improved presentation and public speaking skills, which is something Dave hopes will benefit him in his role. SUPER-SCHOOL AIMS HIGH Outstanding results

THE new North Liverpool Academy (NLA) super-school building opens to students this September in Heyworth Street, Everton. The Academy has specialisms in maths and computing as well as business and enterprise. It has been built at the highest point in Liverpool, looking out over the city and towards the world beyond, exemplifying the academy’s ambition for its students and the wider community. The Academy houses a purpose-built sixth form for 250 students which has a panoramic learning-resource centre with 360 degree views across Liverpool. The Liverpool Scholars scheme guarantees students an interview for the University of Liverpool with reduced A-level entry requirements. Every sixth form student at the Academy

is given their own laptop with wireless internet access. The futuristic Academy building has superb facilities with music recording studios, a radio station, and a television recording suite. Students are writing and performing their own TV soap. There are several football, rugby and cricket pitches with tennis courts, a flood-lit astro-turf pitch, a sports hall and fitness centre. Students can qualify as FA football coaches and work with Liverpool or Everton football clubs. There are 12 purpose-built science laboratories in which students will follow an investigative approach to learning biology, chemistry, physics, forensics, and medical sciences. Creative and performing arts are outstanding at the North Liverpool Academy with excellent resources that include a theatre, dance studio, drama studio, several music rooms, art and photography suites, media rooms and a recording studio.

The school’s A-level and GCSE results were outstanding in 2008 and even better in 2009 with 100% pass rate at A-level and the International Baccalaureate, and 92% of students achieving five or more A*-C GCSEs. The Ofsted report from July 2009 judged the North Liverpool Academy to be outstanding in 14 different areas including the sixth form, curriculum, and student behaviour. FOOD FOR THOUGHT Katie McLoughlin has got school lunches all wrapped up IT'S back to school for our little ones so give your children a head-start with tasty but nutritious packed lunches that provide them with all the energy they need for a busy day at school. Vary what you pack in the lunch box to stop kids from getting bored and include a healthy snack like fruit jellies, yogurt or homemade oat flapjacks to make the lunch appealing. A healthy lunch box should also include a drink to keep kids hydrated and aid concentration, two portions of youngster’s five-a-day plus fibre, calcium and a portion of protein.

A week’s worth of lunch box ideas: MONDAY:

Easy couscous salad (recipe and picture courtesy: Green Giant Sweetcorn). Serves four. 1. Put 200g couscous into a large bowl, add 270ml hot vegetable stock, cover and leave to soak for 10 minutes. 2. Mix four chopped tomatoes, a 340g can of Green Giant Sweetcorn (drained), 1/4 cucumber (chopped), one finely sliced small red onion and six chopped dried apricots in a bowl. Add two tbsp olive oil and the juice of half a lemon, season and mix together. 3. Use a fork to fluff up the couscous then add the vegetable mixture, two tbsp chopped parsley and two tbsp pumpkin/sunflower seeds. Toss together and serve.

TUESDAY:

Turkey pasta salad (recipe and picture courtesy: Bernard Matthews Farms). Serves two. 1. Cook 30g fusili pasta according to pack instructions. Drain and

WEDNESDAY:

Coronation chicken naan pocket (recipe and picture courtesy: Munch Bunch). Serves two. 1. Mix together three tbsp low fat mayonnaise, 1/2 tsp tikka masala curry paste and one tsp mango chutney. 2. Chop two cooked chicken breasts and add to the mixture. Stir to coat evenly. 3. Toast and open one end of a naan bread and fill with a little shredded lettuce and apricot pieces. 4. Spoon in the coronation chicken filling and wrap up tightly in cling film.

THURSDAY:

Edam and veggie bean wraps (recipe courtesy Dutch Edam). Serves six. 1. In a large bowl, mix together a small, diced red pepper, 160g can sweetcorn (drained) and 420g can mixed beans (drained and rinsed) with six tbsp tomato salsa. 2. Place six soft flour tortillas on a chopping board, arrange 125g shredded iceberg lettuce over the base of the tortillas. Spoon some of the bean mixture down the centre of each tortilla. 3. Top each tortilla with a handful of grated Edam and one tbsp of low-fat Greek-style yogurt. 4. Carefully roll up each tortilla, tucking the ends in as you go, to encase the filling. Cut each tortilla in half and wrap in cling-film.

Serves two. 1. Put two eggs in a saucepan of cold water and bring to the boil. Reduce heat and simmer for seven to eight minutes (the yolk should be solid). Drain and cool under cold water. Peel the eggs when cold. 2. Drain a 200g can of tuna in oil and mix with 100g sweetcorn, two tbsp mayonnaise, one tsp white wine vinegar, two chopped spring onions, salt and pepper, plus a few drops of Tabasco sauce. 3. Roughly chop the hard-boiled eggs and add to the tuna mix, along with salad cress (optional). Stir well. 4. Cut two pitta breads in half creating four pitta pockets and divide the mixture between them.

FROM FARM TO Fork Emma Thompson puts on her wellies to find out who's feeding Liverpool’s restaurants

– we're all guilty of nipping to the local supermarket for cheapness and convenience but sometimes we yearn to treat our tastebuds to something a little closer to home. The big wide city of Liverpool may not be synonymous with locally farmed food but you'd be surprised to find out that many homegrown delicacies are making their way onto menus at many an eaterie. To find out what's on our city's menus, I did a little digging around and found a number of restaurants that really do stay true to their roots by using homegrown produce grown right on our doorstep (well almost). Here's five local restaurants which are making the most of what's around them and with a little help from farmers, coming up with some locally-inspired dishes.

Almond NESTLED away in West Derby, Almond is the inspiration of owner Kate Ravenscroft who changes her menu with the growing seasons. “Staying local and seasonal helps to keep our costs down while still providing fresh, local produce,” reveals Kate. Staff buy all their vegetables, potatoes, eggs and Lancashire cheese from The Lemon Tree in Crosby, which sources all the best vegetables and ingredients from the local farms. Kate adds: “By using local produce I know where it has come from and been farmed, we're serving potatoes that were picked two days earlier. I know I prefer to eat food knowing where it has come from, so I’m sure my customers do too. “I get my meat from Hogans butchers in Huyton, which only has British meat for traceability, our chickens are bought in Lancashire, and we get our fish from C&G Neve in Fleetwood.”

2 London Carriage Works PASSIONATE, was the first word that came to mind after speaking with chef patron Paul Askew from Hope Street's The London Carriage Works. The restaurant has created a Miles Better menu combining ingredients traced within a 25 mile radius. “Traceability is a big factor for us, we like to know where our food has come from. We can get vegetables picked at 6am, in the restaurant by 10am and serve them for lunch – our food is that fresh,” says Paul. One of the eaterie’s main fruit and veg suppliers is Claremont Farm in Wirral. “If I have new ideas I’ll see if they’re able to grow us certain vegetables for the following season. “This year we asked Wirral Watercress to supply us with produce for micro salads." Other local suppliers include James Peet’s Southport Potted Shrimps, sustainable fish from Liverpool and Birkenhead Markets such as sea bass caught in Liverpool Bay, and a selection of top butchers. Paul adds: “Leahurst Farm supplies beautiful pork, Callum Edge & Sons in New Ferry provides succulent Barnston Beef and our free-range chickens from Heath Farm in Flint.”

West Tower HAVING reared their own sheep the team at the West Tower in Aughton couldn’t get their produce any closer to their doorstep! "We feel it's really important to support local farmers and suppliers and this is demonstrated through our strict buying policy, purchases within a 20-mile radius," says head chef, Neil Dempsey. "We've created a truly local menu and this has helped us to develop excellent relationships with producers in our area and maintain strong links with the community. “Our meals feature produce from across the region including Formby asparagus, potatoes from Hills of Longridge, Smithy’s wild mushrooms and Reg Johnson’s finest Goosnargh cuts,” he added. This year the West Tower's owner, who has his own farm, gave the restaurant staff the task of rearing lambs, to eventually serve. Neil added: “It was the first time any of the team had reared their own animals, but it is definitely something they and I want to continue.”

The V-Cafe team at the Vincent Hotel in Southport who source their produce within a 30 mile radius

Malmaison SET within the Malmaison boutique hotel on Princes Dock, this brasserie has a Homegrown & Local menu using suppliers within a 30 mile radius. Ingredients are sourced by executive chef, Donald McKins, then prepared by brasserie chef, Daniel Leah. “I believe nine out of 10 of our customers want to know that the food has been produced locally,” says Daniel. “We have always aimed to find and use local produce, one reason is because it gives the local suppliers business and keeps the trade within the area. Plus we know exactly what we’re buying and where it has come from, so we know the food is fresh,” Daniel adds. Some of the produce that the restaurant sources locally includes poultry from Goosnargh in Preston, fish from M&J in Warrington, vegetables and potatoes from Wirral and ‘scouse’ beetroot from Worthington Farm in Tarleton. Daniel reveals: “We serve roast garlic and potato soup with the ingredients from Wirral and we’ve also included ‘scouse’ on the menu with the lamb from Russell Hume butchers in Speke.”

5 The Stables Pub and Eatery FROM breakfast right through to your evening meal, The Stables in Garston serves traditional English and Mediterranean inspired dishes, all sourced within a 50 mile radius. Chef, Stewart St John has been working hard to find the best produce locally since opening in December. “Using local produce has been the ethos of The Stables since the owners first planned the new business and it’s something the staff, myself and the owners feel passionately about,” says Stewart. Even one of The Stables’ drink suppliers is the award-winning George Wright brewers in Rainford! Stewart adds: “Everything on the menu is created using local produce, such as potted duck with glazed figs and granary toast; or grilled native prawns with crisp summer vegetable salad. Home comforts include steak and kidney pudding with creamed mash and garden peas; or roast Goosnargh chicken with bubble and squeak.” The Stables source their potatoes and root vegetables from Hesketh Bank Farm; beef from farms in the Ribble Valley through butcher John Penny and cheeses from Mrs Kirkham in Lancashire.

Red Fort METHOD Use a pestle and mortar to make a paste with the oil garlic, coriander, ginger, lemon juice, black pepper, mustard seeds and spices. Keep one teaspoon of marinade to one side for the vegetables. Place the sea bass in the marinade for an hour. Stir-fry the asparagus, cherry tomatoes, French beans and lemon leaf in olive oil and the teaspoon of marinade, which was kept to one side. Heat the olive oil in another pan and pan-fry the sea bass. Plate with the fried vegetables and serve.

FERRY ‘CROSS THE Mersey Sarah Hooley embarks on The Big Mersey Adventure

W

HETHER it's my secret penchant for Gerry and the Pacemakers or happy memories of Fred and his weather map - I've long had a love affair with Liverpool's historic waterfront. So, it was with a rising feeling of shame that I found myself struggling to remember the last time I'd actually made the effort to really explore this part of the city. Six months ago? Two years? Whatever the answer, it was most definitely too long, and it was on somewhat of a mission that I set off with my fiancé to re-discover the city's waterscape. An intrinsic part of the city's charm, Liverpool's waterfront has undergone an impressive make over during the past couple of years. And from the Albert Dock and Echo Arena to the modern cruise liner facility and new-look Pier Head, the ever-changing waterfront is quite rightly one of the city's top attractions and pulls in tourists like shoppers at a half price sale in Primark. So where to start? With so much to see and do we decided to embark on Merseytravel's The Big Mersey Adventure and head to the new £10.5m Mersey Ferries’ terminal building at the Pier Head. Tucked away behind the might of the Three Graces, the stylish Pier Head is awash with eager visitors and locals alike, and after enjoying a quick snoop in the excellent gift shops we excitedly made our way to the Fab4D experience. One of the waterfront's newest attractions, Fab4D is a fantastic concoction of cutting edge 3D animation – mixed together with a host of 4D special effects, multi-sensory ‘surprises’ and fantastic soundtrack of Beatles music – and judging by the audience’s enthusiastic squeals of laughter it’s set to be a huge hit with kids and big kids alike. Still giggling, we exited the auditorium and duly handed our 3D specs to the friendly host before making our way to the moving and emotional White Feather: The Spirit of

Lennon to explore Lennon family life through the eyes of John's eldest son, Julian and first wife Cynthia. Next on our hit list is the world famous Mersey Ferry. Departing every hour throughout the day, the leisurely River Explorer Cruise is one of the city’s much-loved institutions and as we board the busy boat, I'm filled with a heady feeling of excitement and nostalgia. Just 30 minutes later, the ferry docks at Seacombe and we head to Alien Wars at Spaceport. A special attraction, Alien Wars (open every day from 2.30pm until September 6) is billed as a 'terrifying live reality experience' and as we nervously wait our turn to be shown Spaceport's live alien, my already strained nerves edge towards mild fear as we listen to the distant screams and mysterious bangs emanating from the group ahead. My fiancé pointedly gestures towards the long line of excited children waiting to go in (parents beware -Alien Wars is not suitable for those under eight), but as we descend into Spaceport’s pitch-black surroundings, it is not long before he’s unashamedly pushing past me in a bid to get out! Back outside and we catch the short 10 minute ferry journey to our last stop, the U-boat Story at Woodside. A fantastic, £5m attraction, the U-boat Story tells the mysterious tale of U-534, a German, World War II submarine and inside we quickly delve into the exhibit’s fantastic display of original artefacts and interactive displays. However, it’s the U-boat Story’s spell bindingly eerie, cross sections of the original U-534 that really wows, and with large viewing platforms for each part the U-boat Story offers a unique insight into life under the sea. Leaving the exhibition, we clamber on board the last of our ferries for the day and as we sink into our chairs we're already talking about returning to see more next weekend. After all, why should the tourists have all the fun?!

Aye Aye Captain! WE caught up with Mersey Ferries’ captain, Robbie Quinn, to talk celebrity guests and life on the ocean wave..... How long have you been a captain for Mersey Ferries? I have been a full time captain since last October, but I've been an acting captain for about 10 years. How did you get where you are today? I started here in 1977 as a deck boy – basically as a trainee lad – and then from there just worked my way up, through the deck, across the bridge and then to captain. What do you enjoy most about being captain? Having my own boat! Ever since I've been on here as a little boy, I thought 'wouldn't it be great to be a captain one day?' and I've been one of the lucky ones – I've made it. In what ways have you seen the waterfront change over the years? Well, there were only three buildings on the waterfront when I started working here - the Liver

Building, the Cunard Building and the Port of Liverpool Building - everything else was just derelict warehouses. And when you look over there now, we've got our new terminal building, the new museum and the canal at the Pier Head. It's brilliant and things can only get better. Have you ever had any celebrity guests onboard? How long's your note pad?! Last week we had John Prescott onboard who was filming a programme about Liverpool. We've also had lots of politicians including, Mo Mowlam and Margaret Thatcher, as well as Ian Botham and Cherie Blair. So if you want to come down celebrity spotting, you never know who you might meet! And finally...how many times do you think you've listened to Ferry Cross the Mersey?! I actually met Gerry Marsden a few years ago when he was playing a gig on the old Royal Iris....but that was before they started using Ferry Cross The Mersey here at the end of the cruises! I honestly couldn't count how many times I've heard it now. Everyone else loves it though!
