Editor’s Letter AH, the spicy aroma of mulled wine is wafting through the air, the Quality Street tins are half price and the office Christmas party posters are adorning every wall. Christmas is definitely on its way... Like a bunch of big kids, Best of Liverpool can’t help get excited at the prospect of what Santa might have in his sack. We’ve already started window shopping to get ideas of what to put on our lust-lists. And we bring you some great gift ideas for those who are hard to please. The city has pulled out all the stops to get us in the Christmas spirit, from the ice rink in Williamson Square to the twinkling lights over Church Street and the real reindeers in Clayton Square. Every inch is dripping with festiveness! And it looks like we could be blessed with a white Christmas, even though it’s a drag having to de-ice the car, it just helps to add to the magical ambience. Time to start planning what to wear at those Christmas parties. As we are all obsessed with the X-Factor, we will be taking inspiration from our very own Rebecca Ferguson. Talk of town

FRIENDS and artists who worked with the late, great John Lennon will come together for the first time in a historic memorial concert to commemorate 30 years since his untimely death. The one off concert entitled Lennon Remembered – The Nine Faces of John, is being held at Liverpool’s Echo Arena on Thursday, December 9 at 8pm and will present artists and friends who span the whole life and career of the ex-Beatle from Liverpool to New York. The CMP Entertainment and Cavern Club production will focus on the significance that Lennon believed the number nine had on his life. It will see nine periods of John’s life represented by those who were there, including John’s first band The Quarrymen and art school friend and editor of Mersey Beat, Bill Harry. Profits from the entire night are going to local charities Alder Hey Imagine Appeal, Radio City’s Cash For Kids and the Mathew Street Festival. Tickets cost £27.50. Prego, which serves modern Italian cuisine, is the second business venture for the Italian born restaurateur and has already proved a hit with one famous diner. Sex & the City star Kim Cattrall, who recently starred in ‘Antony and Cleopatra’ at Liverpool’s Playhouse, acquired a taste for Prego’s modern Italian cuisine, having not only visited the restaurant a number of times but also ordering her favourite dish of Linguine Vongole to enjoy directly on the set.

ALMA DE CUBA has teamed up with Orquesta Buenos Tiempos to release their first album, Plaza de la Revolución. Recorded live from the streets of Havana, Cuba, the album has been created by Alma de Cuba’s resident band 6ix Toys, under the working title Orquestra Buenos Tiempos. LOCAL man Tom Dowling, editor of a charity newspaper, has been named a national finalist in the 2010 Barclays Trading Places Awards, which recognises people who have beaten the odds to succeed in business. As a 20-year-old reporter Tom had the world at his feet until a horrific accident changed his life forever. 36-years-ago, Tom was returning from an overland journey to the Himalayas with three of his friends, when they became the victims of an armed robbery on the roadside in Iran. The bullet that ripped through Tom’s back left him permanently paralysed from the chest down and confined to a wheelchair. With support from friends and family, Tom picked up the pieces and rebuilt his life. He started a column in the Liverpool Echo in 1983 called I Can Do That! to address disability issues. Since then, Tom has launched a new charity called All Together Now! and produces a bi-monthly publication and on-line magazine covering health and disability

GLAD RAGS FOR CHILDREN IN NEED LAW firm, EAD Solicitors, raised nearly £7,000 for Children in Need through its glittering charity fashion show. The spectacular event at Circo, hosted by TV fashion presenter Chantelle Tagoe, was a sell-out thanks to the array of Liverpool designers involved and some stunning entertainment from bands Estrella and Vice, singer Chelcee Grimes and dance act MD Productions. THE city’s fashion crowd recently flocked to Cavern Walks for the opening of über cool menswear store, Weaver’s Door. Selling smart-casual wear from jeans and jackets to shoes, Weaver’s Door aims to source authentic heritage brands with cult appeal for the fashion conscious customer. LIVERPOOL Football Club has revolutionised its culinary offering with the opening of a restaurant at Anfield. The Boot Room Restaurant is named after the famous Boot Room at Anfield. It was in this room a tradition began from the start of Bill Shankly’s tenure as manager, for the coaching staff to gather after matches and training, to discuss the match, the team and football in general. The 230-cover eatery is situated under the iconic Kop stand and will be familyfriendly, serving favourites including steaks, burgers, stone-baked pizzas and pasta dishes. Youngsters are catered for with a special Mini Boot Room menu, which includes signature smoothies and fruit cocktails such as Gerrard’s Gold.

How to up the style factor Let your hair be your crowning glory this Christmas, says Katie McLoughlin WHEN you’ve got an occasion coming up or a Yuletide party to sparkle at, a chic updo never fails to impress. So with the festive party season now well and truly here, I headed to Cavern Hair Boutique in the city centre to find out what the best dressed tresses will be doing this Christmas. A favourite with celebs including Jennifer Ellison and Alex Curran, the sleek salon opened its doors in June 2007 and the talented team are experts at teasing tresses into stylish up-dos. “We get a lot of people asking for up-dos for Christmas nights out,” says style director, Rhianne Wilce, who has been at the city centre salon since it opened. “A lot of people tend to copy styles they see on shows like The X-Factor, which often work really well for Christmas party hair. Quite natural up-dos are very up-to-date too — people don’t want to look like their hair’s been fixed or too overly styled.” Curly blow dries are another on-trend

way to achieve an effortlessly elegant updo. “Curly blow dries are half the battle,” explains Rhianne. “If you’re putting your hair up yourself, have a good blow dry first because then you can pretty much pin the hair up anyway you want as it will have a curl.” To spruce up my locks for the party season, Rhianne quickly blow dried my hair to smooth it down before backcombing the roots in sections and pinning my top layers back to inject some much-need oomph into the crown. Next she backcombed the lower layers of my tresses, then expertly twisted and pinned small sections up so that the hair looked like it was folding up over itself. A few small tendrils were left loose to frame my face and, to finish the style, Rhianne slightly backcombed the roots of my side fringe to give it more shape. The result was an elegant but relaxed take on a classic updo with plenty of volume to ensure it was glam enough for any festive party.

F it’s your turn to cook the Christmas dinner this year, then no doubt you’ll want to dazzle your guests with your dining table decorations. Although the turkey takes centre stage, your table settings also play a part in setting the scene for great food, fun and the sharing of dodgy cracker jokes. Luckily, home furnishing stores are brimming with ideas to help even novices set a stunning scene on their tablecloths – whatever their budget. The main components of the Christmas dinner table are the tablecloth, table runner, napkins, crockery, cutlery and glasswear. Hot colour schemes for this year include bronze, olive, wine red,

dark ruby red, an amber colour and/or a deep blue-green. A table shimmering with gold is always a glamorous look for the festive season. Animal print optics as well as materials like velvet, embossed leather, feathers and wooden beads create lovely effects too. You will also need a stunning centre piece, before bringing out the turkey. Candles and candelabras look fantastic and add real drama. But if you’re looking for more simple and cheaper ways to decorate your table, fill a large bowl with clementines or pine cones scattered with fresh cranberries. Embroidered linen napkins look elegant, especially teamed with

jewelled napkin rings to add a little sparkle to the proceedings. Gary Bates, managing director of Heathcotes Outside, has some tips for a stylish table. “You can make it as simple or as elaborate as you want,” says Gary. “Traditionalists can use shades of green and gold or you can get a cleaner, more contemporary look by using winter whites and pale blues. Introduce some warmth by lighting candles. “To add to the theatre of the event, try a floral centrepiece by filling a large glass vase with your favourite flowers. “And if you want to go all out, add a liberal dollop of dry ice to release a smoking shroud over your dining table.”

On the pull CHRISTMAS just wouldn't be the same without the obligatory crackers which add a bit of sparkle and fun and help the day go with a bang. Here's our pick of the best:

The BIG interview

Love and laughter KEN Dodd runs his hands through his famous hair. He grins that toothy grin and stresses just one small but BIG thing: “Christmas means happiness.” That’s his message this Yuletide and New Year and for all of 2011. “Spread happiness to each other. Yes that’s what I want to happen – people sharing joy.” Ken Dodd, OBE (one boiled egg) is playing two shows at the Philharmonic Hall on December 28 and 29. It’s the annual Christmas Show and not for those who tire easily. He says he wouldn’t miss it for the world. Book now, but book your taxi. His mirth marathons last a long time. “I always make a personal point of playing the Phil,” says Ken. “It’s a real joy. I look forward to it every year. I always look ahead to playing my own Liverpool classical concert.” He is generous with his time. This year he has attended two

charity fundraisers for the Wirral Autistic Society and Liverpool Unites. His own charity, close to his heart, is the Good Turns Society, where he presides over a meal and introduces acts that keep entertainment alive. I remember the first review I ever did of this great Liverpool legend, now in his 80s, and he is as vibrant, naturally funny and quick-witted as when I first set eyes on him. My dad back in the 60s plonked me on the floor in front of the telly with a bag of sweets to look at the ‘funny man with the eyes and teeth.’ I later saw him – Doddy, not Dad – at the London Palladium, then at home at the Royal Court in Liverpool. I heard his pop records at the same time as he knocked The Beatles off the charts with Tears and I realised then, you can’t (you don’t) pigeon-hole Ken Dodd. Many years later, when I allegedly became an adult, I had the task of reviewing him on stage. It was at the Southport Theatre. I don’t drive so I got the train there from Liverpool. Then I watched five hours of wonderful whimsy; inspired madness – a Music Hall/ Vaudeville show I will never forget. I phoned over my critique at 11.30pm. The show started at 7.30pm and ended at 12.30am. Before the interval at 10.30pm (yes, dear reader) he said: “Ladies and gentlemen my shows are an education – you will walk away tonight (or with the milk float) thinking ‘well, that taught me a lesson’.” It was a master class in comedy. I simply couldn’t get home though. Desperately, I rang every mini cab firm I could in Sefton to take me back to Liverpool. I got paid £10 for the review and the taxi cost me £35. The cab driver said: “We love Ken Dodd he is the patron saint of taxi drivers.” I used that remark in my review. But that was 30 years ago. He told me in this brand new exclusive interview just for Best of Liverpool what makes him keep doing such a gruelling, onthe-road tour schedule. “It’s the laughter,” he

Funnyman Ken Dodd tells Peter Grant why he always comes home for Christmas

says. “Hearing laughter from 1,500 say, people in a theatre in Crewe or New Brighton who have come out to see you. “They’ve bought a ticket and want to laugh. That’s what it’s all about, that laughter and the happiness.” Thirty years after that first review I went back to see him at the Phil and made sure I got a ticket for the train. But at the interval I saw people queuing to buy his photo book, Look at It My Way, and his tickling stick. Two nuns were queuing to buy Doddy memorabilia. I tore my train ticket up. Christmas simply wasn’t Christmas without seeing Doddy ’til the bitter end. Now that for me sums up Ken Dodd. His

His heart has always been in Knotty Ash, in Liverpool... “I always come home for Christmas to Liverpool”, says the Squire. “I believe, I know it’s the BEST place to be. “You are home and everyone makes an effort to laugh – to let their hair down.” Now, celebrating 56 years in the business and at the top of the Tickle tree, he has no intention of slowing down. Don’t dare say the word ‘retirement.’ His website Kendoddshows.com illustrates his energy. A comedy calendar that, for now, runs from the New Year until June next year and the latter half is posted soon and you can bet the last two shows of any tour will be at the Phil. Doddy says being back at the Phil this month will be different and he is ready to sprinkle seasonal magic with a new show

specially done for a festive Liverpool and its audiences. Talent from The Liverpool Theatre School will include show girls, boy dancers, elves. And there’s a young man magic act (young Gary) and Diddy people. “It’s a big show. I can’t wait to unleash the goats. Oh, by Jove, there’s new material; new jokes and a lot of surprises. “I love it. I am home. It’s the best way to celebrate Christmas. Just ask anyone away from the city who comes back and sees family and friends, lovers, lodgers and cats – especially Tom cats – everyone is home. We are all home.” Doddy says the best thing about being back is he can have a truly plumptious, tattifilarious, discomnockerating festive time. I do a lot around this time of year because it is what I like to do. Christmas is a special time.” Doddy says that he has already mapped out next year’s Christmas Shows at the Phil. So what will be in that one, Ken? “By Jove, son, let me get this one over with first.” He says he has a message for all Best of Liverpool readers. “These are austere times. So I would say if you can’t afford a full Christmas dinner share a sprout. “If you can’t get a turkey then send a budgie around with a set of chest expanders.” And with a typical Doddy flourish he says: “May I wish every reader of Best of Liverpool and their families a wonderful, prosperous 2011. Sincere best wishes for health and happiness to you all.”

The art of making music Liverpool-based singer Steve MacFarlane and Scouse poet Peter Grant have teamed up to make their own album. Paul Baker caught up with these two local luminaries to see how it all came about ONE’S a successful journalist-cumpoet, the other’s a computer guru/professional singer. One sends his poems to the other via email, then the other takes the best and turns them into songs! This might not sound the most regular of songwriting partnerships, but when it works, it works. That it works is not in doubt – recently the fruits of their labours have been enjoyed and appreciated by the likes of Ken Dodd and Mr Neil Sedaka, ladies and gentlemen. The singer’s name is Steve Macfarlane and the lyricist is Peter Grant and the resulting album, ‘Happy Daze’, will be in the shops in time for Christmas. Peter’s a well-known name to people across the city thanks to his career as an Echo writer. He’s interviewed everyone from Margi Clarke to Paul McCartney in his time, but it was his friendship with the Mersey Poets – Roger McGough and Adrian Henri – that inspired him to start writing his own poetry. Steve, along with his partner Gary Millar, owns Parr St Studios. Steve is originally from Greenock in Scotland and came to Liverpool in 1981. “I fell in love with the city,” he says. Steve’s day job is within the IT industry where he works for CA Technologies. Nowadays, most of his spare time is spent performing, but it wasn’t always like that, not before he was egged on to make an impromptu performance at a party. “I’d always sang, but I only got into singing professionally when I was 51 years old. I was at a function and a friend said to me: ‘Why don’t you get up?’ So I did and that’s how it started. “I sing anything from a 1930s style, through jazz, Bacharach, The Beatles. I’ve got a passion for talented singersongwriters such as John Lennon, Stevie

Wonder, Jimmy Webb and Burt Bacharach. “I perform regularly in Studio 2 on Parr St, on the third Sunday of every month. It’s a lounge bar, voted one of the best. Billy Hui is my keyboard player, a very talented musician.” Peter first met Steve just over a year ago at a birthday party. “Steve was singing, he sounded just like Neil Sedaka,” says Peter. “It was Gary Millar, Steve’s partner and the album’s executive producer, who said ‘wouldn’t it be great to use my poems as lyrics?’” And so the album began to take shape, with Peter sending a selection of poems old and new over to Steve and from there the alchemical transformation of words on a page into music could begin. “I send him my poems via email,” says Peter. “I joke with him, comparing us to

There’s some modern ballad-types too.” One song is inspired by Edith Piaf, called Je Regrette Tous – I regret everything! Another piece, is called It’s cliche time, filled with all those popular songwriting cliches. “It’s very sardonic,” says Steve. “I was performing this song and Neil Sedaka was in the audience and there’s a line that goes: ‘Please tell Neil Sedaka, breaking up is very easy to do!’ Well, he just stood up and applauded.” With Neil Sedaka a fan, among other notable performers – Peter recalls: “When Ken Dodd heard it recently, he stopped in his tracks: ‘By jove – that’s amazing!’, he said,” – the forthcoming album is certainly promising much. “When I heard the results it really did move me,” says Peter. “From the poem on paper to people I didn’t know that well turning it into a song was truly a magical thing. “When I heard what they’d done with Cherry Blossom it knocked me out. TAKING inspiration from the US psychedelic West Coast explosion of 1967-1969 along with overtones of country, soul and 60s French pop, The Wicked Whispers bring a dark twist to the combining genres creating something altogether new and unique. The brainchild of one of Liverpool songwriter Michael Murphy, he spent the best part of 18 months preparing the group and made demos with local producer Steve Powell. If you’re into the likes of The Byrds, Love, The Doors and Buffalo Springfield, this band is for you. Michelle’s never been the same since meeting Marco

Michelle Rushton meets the Godfather of modern cookery, Marco Pierre White EMEMBERING Marco Pierre White’s fiery temper in Hell’s Kitchen, I have to admit I was a little nervous at meeting the Godfather himself. The celebrity chef was signing copies of his new cookbook at his restaurant, The Swan Inn in Aughton in November and I had been invited to join the press table. Enjoying a sumptuous three course lunch of goat’s cheese tortellini, beef wellington and treacle tart, I was feeling all jolly and woozy. Then I was called upon to interview the Michelin starred maestro and my legs turned to jelly. But I needn’t have worried. Reclining on a Chesterfield sofa, Marco seemed really chilled and I have to say, he was very pleasant. Greeting me with a warm handshake (lovely soft hands!) he invited me to join him and begin to explain about his new book, Marco Made Easy, which features lots of tasty, simple to make recipes using ingredients we can all find in our cupboards. He says: “There’s nothing technical. It’s just a guide. Recipes are not there to dictate, we need to learn to trust our palates.” Marco looks really at home in his eaterie which he opened at the beginning of this year and he admits, he’s really pleased with its progress. “I love The Swan. It’s a really nice environment. We are in the business of selling a great night out. But what is important is value for money – affordable glamour.” A proud Northerner, Marco hails from Leeds, he also raves about the quality of ingredients he gets to use. “There’s lots of clever butchers and cheesemakers in this region”, he reveals. “All my best chefs come from the North West.” Marco is also involved with a project to build a luxury hotel in Liverpool and says he was totally impressed with the city. “I was blown away. I could not believe how

beautiful and clean it was. The docks are magnificent. I’m really looking forward to visiting the Adelphi. My father was a second chef there.” Marco is classically trained in French cuisine, but when it comes to Christmas dinner, he admits, he has a penchant for the traditionally British turkey. “ I love a turkey with cranberry sauce and gravy, “ he enthused. “My mum is from Northern Italy where they have turkey everything - turkey schnitzels and turkey meatballs, crepes Alfredo... I applaud Bernard Matthews for making turkey affordable to people in Britain. “I would buy one no bigger than 10-12lb - take the legs off the crown. Put the stuffing on the under skin of thigh and cook for one hour and 15 minutes. Getting all excited, he grasps my writing hand and says: “Take this down, my recipe for the perfect turkey gravy!” (See recipe below). Whilst on the subject of Christmas dinner, Marco will be cooking a festive lunch at Claire House children’s hospice in Bebington, a place very close to his heart, where he has been helping to raise much needed funds. “It is without a doubt one of the most special places - visiting there is incredible moving and humbling and every time I leave I feel guilty for what I have been given,” he confides. See, I told you he was a nice guy!

Marco’s turkey gravy WHILE your bird rests, combine roasting juices with three pints of water. Add stock cubes to taste and gravy browning to create the colour of your choice, then bring to the boil. Thicken with cornflour. Pass through a sieve - get the gizzards and hearts and dice into chunks and whisk in then put in the turkey fat from the roasting tin, so there’s 4/5 gravy and 1/5 fat.

JAPANESE IF YOU PLEASE IF YOU’RE tired of turkey and fancy something a little different this year, try Sakura. One of the foodies’ favourite places to dine, the upmarket Japanese restaurant is located inside the prestigious Exchange Flags. The largest teppanyaki restaurant in the north of England, Sakura is popular with Liverpool’s business fraternity, style set, footballers and soap stars and is very much the place to eat, drink, and be seen. Best of Liverpool decided to get in the festive spirit by sampling Sakura’s Christmas menu. Entering the glamorous venue, we were greeted and seated around a traditional teppanyaki grill. Then the skilled chefs set to work cooking our food in front of us while entertaining us with their knife throwing skills and funny tricks – it had us all chuckling and looking forward to testing the five-course menu.

While the chef’s theatrical skills were impressive, the food was something else. We enjoyed red miso soup and teppan griddled sweet shrimp with lime and garlic to start. Then, as we couldn’t decide which main to choose as they all looked fabulous, the chef treated us to a bit of everything including beef sirloin with garlic and sweet potato, corn fed chicken with teriyaki and sesame, Scottish salmon with schichimi and Duke of Berkshire pork belly with garlic and wafu. We all agreed it was absolutely delicious but the dessert was to die for! We all raved about the green tea, ume and caramel sponge with chocolate fondant, pineapple and red bean and pear, lemon and kinome yuzo sorbet. Fabulous! Sakura's Xmas menu is £25 for five courses. Sarah Hooley discovers some cracking tips for the kitchen this Christmas.... FROM juicy pigs in blankets and crispy roast potatoes to a succulent turkey – there are few meals that most of us look forward to more than our Christmas dinner. Unfortunately we're not all blessed with Cordon Bleu cooking skills and if you need some festive inspiration, culinary genius, Gary Bates, has some top tips to get the most out of your kitchen this Christmas. One of the region's top chefs, Gary cofounded Heathcotes Outside together with celebrity chef Paul Heathcote in 1997. And as the caterers for the Echo Arena and Lancashire County Cricket Club — as well as Gary’s previous role

working at the Michelin-starred Sharrow Bay Hotel in the Lake District — he knows a thing or two about keeping your guests happy. Perhaps it's your first time cooking for the in-laws and you want to make a good impression? Or maybe you just want to try something new? If so, Gary says don't feel like you have to invoke the spirit of Heston Blumenthal to create a culinary masterpiece. He explains: “I'm a huge advocate of trying new concepts and ideas in the kitchen, but it's important to remember that your guests have certain expectations when it comes to Christmas dinner, so you don't need to go too far to

create the right impression. “Use the finest quality traditional ingredients but with innovative twists. For example, try barbecuing your turkey or using alternative seasoning such as Chinese five spice, cajun seasoning, all spice or cumin. “Something that's proved popular with us is an ice-cream bombe, made by layering Christmas pudding ice cream with panettone soaked in dessert wine. It's a simple assembly job which can be made in advance and stored in the freezer.” Not everyone has the space – let alone the time – to prepare an all singing, all dancing Christmas lunch however, and Gary suggests that a Christmas buffet can be equally impressive. “If you want to keep things a little more informal, use a table buffet as a centre piece,” he said. “We often do this as a substitute to plated starters and main courses. “The table buffet is a versatile concept and allows you to offer guests a diverse range of dishes from seafood platters to carved joints, cured meats, salads and terrines. It always goes down well and

Pop your cork this Christmas require simple easy drinking wines like a youthful Rioja or something from the New World.” He adds: “A celebration is rarely complete without a glass of bubbly and Prosecco, Cava and Champagne all fit the bill in different ways. A light refreshing Prosecco makes a great New Year toast whereas, Champagne brings elegance and sophistication, as well being the more food friendly fizz. “Mulled wine is very much a personal thing and needs time and gentle heat to fully develop. Recipes differ greatly but we at Vinea are not stingy on the cloves and like to use lots of orange peel!”

IF you can't tell your mulled wine from Merlot, don't worry as wine buff, Dan Harwood, from Vinea at the Albert Dock is on hand with some helpful hints for this Christmas... He says: “The basic idea behind food and wine matching is 'like for like'. Match the weight and intensity of the wine with that of the food. Another thing to consider is acidity in a wine which works well with salty and oily foods, whilst high levels of tannin require protein to soften out. “When it comes to Christmas dinner it becomes quite difficult to match one single wine due to the vast array of flavours on one plate. However, if there is a common theme to Christmas food it is indulgence with rich flavours and weighty textures. Mouth-filling, oaky whites and full bodied, fruity reds are best placed on the festive table. “Christmas parties and buffets are more relaxed affairs and

Christmas in a Glass IF you want to wow guests with an extra-special cocktail at this year's festive parties — look no further. We caught up with Gary McCarthy from Heathcotes Outside who's created a bespoke Christmas cocktail — exclusive to Best of Liverpool readers! Gary, who is event manager at the Echo Arena, is responsible for mixing bespoke cocktails for some of the world's biggest performers at the arena. He calls this latest creation 'Christmas in a Glass' and after an obligatory sampling session we can indeed confirm that it tastes exactly like a delicious liquid Christmas cake....yummy! Ingredients Equal measures (25ml) of: ● Dark rum ● Amaretto ● Cinnamon syrup ● Cola (to top up) ● Cinnamon stick as a stirrer/garnish Method 1. Pour the dark rum, amaretto and cinnamon syrup into a cocktail shaker, add six cubes of ice and shake thoroughly. 2. Pour the mixture from the cocktail shaker over three or four cubes of ice in a highball glass. 3. Breathe in the aromas from the mixture and you will find it reminiscent of traditional Christmas cake. 4. Top up to the brim with cola and add a fresh cinnamon stick both as a garnish and to use as a stirrer.

Ready to roast potatoes 320g, £1, from Tesco

Eggnog crème brûlée with fruit and nut shortbread HEAD chef at Blakes restaurant in the Hard Days Night Hotel, Andy Scott, 39, has been cooking since the tender age of 13 when he developed a passion and flair for working with food. Andy says: "The classic crème brûlée is such a versatile recipe. Here we have added nutmeg and brandy for a bit of Christmassy warmth, however you can adapt the recipe to include any ingredient that takes your fancy from strawberries and raspberries in the summer to white, dark or milk chocolate if you're feeling naughty! "On our current menu at Blakes we have a trio of brûlées including cappuccino, traditional vanilla and blackberry." Recipe serves six Ingredients ● 480ml double cream ● 1 vanilla pod ● 1 pinch cinnamon powder ● 1 pinch fresh nutmeg ● 2 tbsp brandy or rum ● 5 egg yolks ● 60g caster sugar (plus 4 tbsp for brûlée top) Method Pre heat oven to 140ºC. With a knife, split the vanilla pod lengthways and scrape out the seeds. In a pan put the cream, vanilla seeds, cinnamon and nutmeg, stirring bring to the boil and remove from heat. Whisk in the egg and sugar until its pale and thick (ribbon consistency). Pour the cream mix through a sieve over the egg mix and stir well, add the brandy or rum. Pour mix into six ramekins and place into a deep tray, half fill the tray with warm water (bain marie). Put into oven for 40 minutes, remove from oven and cool. Cover evenly with the remaining sugar and place under a hot grill until the sugar has completely melted to a caramel. For the shortbread Ingredients ● 60g caster sugar, plus a little for dusting ● 125g butter ● 200g flour ● 1 pinch cinnamon and 1 pinch ground ginger ● 1tsp hazelnuts, 1tsp sultanas, 1tsp mixed peel Method In a food processor mix together the flour, sugar, cinnamon, ginger and butter to form a stiff paste. Add the fruit and nuts and pulse for 20 to 30 seconds, leave the mix to rest for 20 minutes. Roll out the mix evenly on greaseproof paper in a shallow baking tray to about 1/2 cm thick, gently score the top with a knife into triangle shapes (careful not to cut through). Bake for 10 to 12 minutes or till golden brown dust with a little caster sugar and allow to cool. With a knife follow the scored shortbread and cut through.

Paul Baker heads over to HotWok to enjoy a big match day experience IF you have a sports mad relative or friend then a match day experience could be the perfect gift for them. Our local Liverpool clubs both offer the full executive treatment if you’re willing to splash out for food and drink, plus a chat from an ex-player. Now, if only there was somewhere that offered this sort of pre-match package but at a price that won’t scorch the pocket. Well, spotting just such a gap in the market, Hot Events at HotWok Liverpool have started offering a fantastic pre-match package before Liverpool games, offering great food and entertainment for just £20 a head (not including match ticket). The HotWok is a fantastic Chinese restaurant and take-away that opened recently just opposite the Dixie Dean statue by Goodison Park. I sampled the atmosphere before Liverpool’s recent firecracker against Chelsea. Some 55 reds supporters gathered within the plush setting of the HotWok and settled down to our three course Chinese set menu while LFC legend David Johnson discussed the match ahead, Liverpool’s up and down season, plus the form of Fernando Torres. The food itself was superb, with a choice of soups to start and then a combo platter to share with the likes of ribs, spring rolls and crispy seaweed. For the mains you can choose between beef green pepper and black bean sauce, crispy chilli chicken, king prawn Szechuan and char sui curry! I opted for the deliciously succulent Szechuan prawns. All the while you can soak up the atmosphere, chatting with fellow supporters and watching the prematch build up on the restaurant’s six flat screen televisions showing Sky Sports. What’s more you get a programme included on arrival and there’s entertainment from an adult comedian too. Once you’re well fed, entertained and watered, it’s just a short walk across Stanley Park to Anfield to watch the match.

The Philharmonic Hall is recreating an evening with Frank Sinatra, transforming itself into the famous Sands Hotel, Las Vegas. And don’t miss New Year’s Eve with The Beatles at The Cavern when The Beatles tribute show featuring The Blue Meanies comes to town. Meanwhile, the indie crowd will be heading over to the Bido Lito New Year’s party at Static Gallery – £5 entry! THE Christmas and New Year period always brings with it a slew of social engagements. Be it the work Christmas party, drinks with old friends, a Christmas Eve sesh or the New Year’s Eve blowout – I know from vivid experience the pain of the morning after the night before. According to statistics from Drinkaware, each festive season more than one in three Britons attends three or more parties, and during this time, we partying Brits will consume the equivalent of 265m pints, 602m shots of vodka or 286m glasses of mulled wine. For the majority of us, a couple of Paracetamol and a big fry up seem to be as sophisticated as our hangover remedies get. So I thought I’d give a natural remedy a shot, testing out a Milk Thistle supplement from mail order supplier, Health Plus. The reason Milk Thistle is so popular and apparently effective is that it contains an ingredient called Silymarin which helps to detoxify the liver. Now, I can’t show you any scientific research that proves it works but, for the good of the people of Liverpool, I selflessly decided to conduct my own research into the benefits of this natural remedy. This simple experiment involved taking a dose of the Milk Thistle supplement before and then after a night of drinking. Just to make sure I gave the remedy a proper workout I tested some red wine, bitter and also rum. After a pleasingly drowsy night’s rest I awoke to assess the relative merits of my Milk Thistle intake. I won’t vouch for the scientific veracity of these results but I did feel pretty good the next day. No headache to report and no grumbling in the stomach department. However, as it is recommended that you take the Milk Thistle supplement after food, I did combine this dose with a big plate of bacon, eggs and sausage. This may have skewed my findings rather... But as long as you’re not allergic to any of the ingredients, why not give it a try this Christmas and New Year. Even if it’s all in your head, at least you’ll feel like your hangover’s not so bad, and anything which helps the old liver out is certainly worth a try!
