"They throw the fish onto the beach where they're picked up, gutted and slapped straight onto BBQs. They're the best tasting, freshest fish I've ever had, and perfect to eat on a beach with a cold beer, looking out over the sea as the sun sets.” SERVING TIPS: Preparation is key. Marinade meat overnight, prepare vegetables and make dressings beforehand, and always keep raw meats separate from cooked meats. "I use large decorative jugs to add colour to a table, which is simply dressed with a cotton cloth," he says.
