Coconut-Crumbed Prawns with Lime Aioli Crunch, sizzle, zing.
Ingredients
Method
8 large green king prawns, peeled, deveined, tails intact 1/4 cup plain flour 1 egg 1/2 cup shredded coconut 1/2 cup panko breadcrumbs Vegetable oil, for shallow-frying
Using the palm of your hand, slightly flatten each prawn. Place flour in a bowl. Add prawns and toss to coat.
Heat oil in a large frying pan. Cook prawns for 2 minutes each side or until golden and cooked through.
Whisk egg and 2 tablespoons cold water together in a shallow bowl. Combine coconut and breadcrumbs on a plate. Dip 1 prawn in egg mixture, then breadcrumb mixture. Place on a plate. Repeat with remaining prawns, egg mixture and breadcrumb mixture.
Meanwhile, make the aioli. Place mayonnaise, garlic, lime rind and lime juice in a bowl. Stir to combine.
Lime aioli 1/4 cup whole-egg mayonnaise 1 small garlic clove, crushed 1/2 teaspoon finely grated lime rind 1 tablespoon lime juice

Instructions
1 cup table salt 2 cups plain flour 4 teaspoons cream of tartar 2 tablespoons cooking oil 2 cups water Food colouring Saucepan
Mix the flour, water, salt and cream of tartar in a saucepan over medium heat until thick. Allow the mixture to cool and then add the oil and knead well over a floured cutting board or similar. Divide evenly into as many colours as you’d like to make. Add food colouring to each ball until it is just the colour your child is looking for. Then sit back and let their imaginations go wild. When not in use store in an airtight container in the refrigerator. Mixture will last quite some time.
