The 1,000 Steps Kokoda rack Memorial

Walk is a unique tourist spot located in the Dandenong Ranges National Park. The track was created in the early 1900’s made from the trunks of tree ferns laid along the wetter areas of the track to make the climb a little easier. These were replaced by wooden palings before the more permanent concrete steps were installed in 1950.

Fig and Blue Cheese Crostini Get ready to fall in love with this delectable combination of Italian-style bread topped with creamy blue cheese, slices of salty prosciutto and sweet fresh figs.

Ingredients

Method

6 large ripe figs, cut into 2mm slices 12 thin slices quality prosciutto 1/2 cup crumbled blue cheese Crostini, sliced Extra virgin olive oil Freshly ground black pepper

Preheat oven to 180ยบC. Placed sliced crostini on a baking tray and drizzle with olive oil. Grill crostini for 1-2 minutes, or until golden brown. Remove from oven and spread each hot crostini with crumbled blue cheese and season as desired. Layer with a slice of prosciutto and pieces of fig. Garnish with capers and a sprinkling of fresh thyme. Serves 12
