Picnic

Rice Salad

Looking for something different to take to the family picnic? Try this super easy spicy rice salad which looks as good as it tastes.

Ingredients

Method

2 cups cooked long grain rice, chilled 1 apple, peeled, cored, chopped 1 red onion, finely chopped 1 green capsicum, diced 1/3 cup raisins 1/3 cup fresh parsley, chopped

Place rice into a large bowl. Add apple, onion, capsicum, raisins and parsley. Toss gently to combine.

Dressing: 1/4 cup olive oil 1/3 cup white vinegar 2 teaspoons curry powder 1 tablespoon caster sugar 1 garlic clove, crushed

Compliments barbecued or grilled meat, chicken or fish.

Next make the dressing, combine all ingredients plus salt and pepper, in a screw-top jar. Shake well to combine. Pour dressing over salad. Toss gently to coat.
