Spiced Plum

and Blueberry Jam

This fantastic combination of plums and blueberries is delicious spread thick on crusty toast.

Ingredients

Method

5 star anise 1 cinnamon quill 1 vanilla bean, split, seeds scraped 1kg caster sugar 1.75kg plums 250g blueberries 1 lemon, juiced

Place spices, vanilla bean and seeds, 500g sugar and 3 cups of water in a large saucepan. Bring to the boil over high heat, stirring until sugar dissolves, then simmer for 10 minutes to infuse. Meanwhile, halve and stone plums. Cut into quarters and place in a large bowl with blueberries, lemon juice and remaining 500g sugar. Pour syrup over fruit, then discard star anise and cinnamon. Stir to combine, then set aside for 10 minutes. Place 3 saucers in freezer to chill. Divide plum mixture between 2 Make 8 cups

large saucepans and bring both pans to the boil over high heat. Boil for 25 minutes or until mixtures reaches setting point. To test for setting point, place a small spoonful of jam on a chilled saucer. Return to freezer for 1 minute, then run a finger through jam; it should wrinkle slightly and the line should remain. If not, continue cooking and testing every 5 minutes. Cool for 15 minutes, then spoon into warm sterilised jars and seal while hot.
