Pumpkin

and Chickpea Chilli Full of colour and amazing flavour, this Mexican inspired stew is sure to ignite those taste buds.

Ingredients

Method

1 onion, diced 2 cloves garlic, minced ½ green capsicum, diced 1 tablespoon olive oil 1 cup frozen or fresh corn 793g diced tomatoes 420g diced pumpkin 420g can chickpeas, drained 420g can kidney beans, drained 1-3 teaspoons chilli powder, to taste 2 teaspoons cumin 1 cup vegetable stock

In a large pot, over medium heat, sautĂŠ the onion, garlic and green capsicum in olive oil for about 10 to 15 minutes or onion and capsicum is tender. Add the remaining ingredients and stir. Increase the heat to high, and bring to a boil.

Once the liquid has boiled immediately reduce the heat to medium-low and simmer for 15 to 20 minutes until heated through. Serve in deep soup bowls with slices of toasted bread.
