Lamb Rack Your gourmet backyard BBQ just stepped up a notch.

Ingredients

Method

2 x 8 cutlet, lamb racks, trimmed of fat

Mix garlic, oregano and lemon juice together in a small dish. Baste each lamb rack with the lemon mixture and a liberal grind of salt and pepper.

(4 cutlets per person) 1 tablespoon sea salt

1 tablespoon cracked pepper 1 tablespoon pressed garlic

2 tablespoons chopped fresh oregano Juice of one lemon, freshly squeezed Chopped rosemary as a garnish

Wrap bone ends with foil to prevent scorching. Interlock the bones of each rack so that the racks stand on their own and place in a hot barbeque for approximately 20 minutes.

Drizzle lamb with cold water to prevent drying out, and rotate once, throughout the cooking process. Slice each rack into 4 cutlet portions and serve with chopped rosemary.
