Bacon, Leek & Potato Soup
A tasty Winter warmer or light lunch option. Served with a warmed buttered crusty bread roll.
Ingredients
Method
2 tbs butter
Heat oil in a large saucepan on medium heat. Add bacon, onions and leeks, cook gently until soft. Stir in flour, cook for two minutes.
1 large onion, chopped 4 rashers bacon, diced 2 leeks, chopped 2 tbs plain flour
1 litre chicken or vegetable stock
3 medium potatoes, peeled and diced Salt and pepper to taste
Gradually stir in stock. Add potatoes, bring to the boil, simmer gently until potatoes are soft.
1 cup skim milk

Stir in milk and seasonings. Puree soup in a blender or with a hand held blender. Serve into soup bowls, garnish with chopped chives.
