Oven Baked Cherry Tomatoes Take a humble cherry tomato and roast with herbs for a simple dish with loads of avour

Ingredients

Method

2 tablespoons olive oil 6 cloves garlic 8-10 sprigs of fresh thyme a few springs of fresh rosemary salt and freshly cracked pepper 450g cherry tomatoes

Preheat oven to 165ÂşC. Pour the olive oil into a shallow baking dish and add one clove of sliced garlic, thyme, rosemary, salt and pepper. Cut the remaining cloves of garlic in half and add to dish.

100g soft fetta cheese

Toss the whole tomatoes with the oil and seasonings and bake for 1 hour, or until the tomatoes are completely softened and start to wrinkle. Sprinkle with additional herbs and crumbled fetta. Serves 4
