Heat oil in a large saucepan on medium. Cook onion for 5 minutes until soft. Add seasoning and stir for 1 minute until fragrant. Add the mixed vegetables and cook for approximately 3–5 minutes until tender. Stir through rice, 1/4 cup of water, almonds and sultanas and cook for 1–2 minutes to heat through. Remove from heat and stir through the tomatoes. Serve pilaf in bowls topped with coriander and extra toasted almonds.
