Spiced Cauliflower Soup

Decadently creamy and topped with crispy croutons this Indian inspired vegetable soup is a great winter warmer.

Ingredients

Method

40g butter 1 brown onion, finely chopped 2 garlic cloves, crushed 1 tablespoon finely grated ginger 1 long green chilli, seeded, finely chopped 2 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon garam masala 1/2 teaspoon ground turmeric 1 large head cauliflower, cut into florets 1 large potato, peeled, coarsely chopped 4 cups (1L) vegetable stock 400ml can coconut milk

Heat half the butter in a large saucepan over medium heat. Add the onion and cook, stirring, for 5 mins or until onion softens. Add garlic, ginger, chilli, cumin, coriander, garam masala and turmeric. Cook, stirring, for 2 minutes or till fragrant. Add cauliflower, potato and stock to the onion mixture, bring to the boil. Reduce heat to low and cook, stirring occasionally, for 20 minutes or until cauliflower is tender. Reserve 2 tablespoons of the coconut milk. Serves 6

Add the remaining coconut milk to the cauliflower mixture and stir to combine. Set aside for 10 mins to cool slightly. Place the soup into a blender and blend until smooth. Season with salt and pepper. Return to the saucepan over low heat and cook until heated through. Divide soup among serving bowls or mugs. Drizzle with the reserved coconut milk and top with croutons.
