Prawn Rice Paper Rolls Quick, tasty and incredibly healthy, these wrapped Oriental rolls are perfect for lunches or entertaining.

Ingredients

Method

18 x 22cm rice paper rounds 400g small cooked prawns, peeled and deveined, halved lengthways 1 small Lebanese cucumber, cut into thin sticks 1 cup bean sprouts 1 cup mint leaves 1 cup coriander leaves

To make dipping sauce, combine soy sauce, vinegar, lime juice and sugar in a bowl and set aside.

Dipping sauce 2 tsp soy sauce 2 tsp rice wine vinegar 2 tsp freshly squeezed lime juice 1 tsp sugar

Fill a large bowl with warm water. Take 1 rice paper round and immerse in water for about 5 seconds to soften. Remove and lay on a at surface. Cut 6 rice paper rounds in half with a sharp knife. Take 1 half rice paper round and immerse in the water for 5 seconds. Remove and lay it along centre of whole rice paper round. Makes 12 rolls

Layer 5 or 6 prawn halves along centre of prepared rice paper round. Top with cucumber, bean sprouts and herbs, be careful not to overfill. Fold in sides and roll up tightly to enclose filling. Put on a serving plate and cover with a damp piece of paper towel. Repeat with remaining rice paper rounds and fillings. Serve with the dipping sauce.
