Beef Bourguignon
Served on a bed of creamy mashed potato this quick and simple version of a French classic is simply divine. Ingredients
Method
8 eschalots 2 tablespoons olive oil 20g unsalted butter 500g beef eye fillet, cut into 4cm pieces 4 thick slices flat pancetta, rind removed, chopped 250g small Swiss brown mushrooms 2 garlic cloves, crushed 2 bay leaves 2 fresh thyme sprigs, chopped 2 teaspoons tomato paste 2 teaspoons plain flour 1/2 cup (125ml) red wine 1 1/2 cups (375ml) beef stock Mashed potato and lettuce leaves, to serve
Fill a saucepan with water and bring to the boil over high heat. Blanch the eschalots for 5 mins or until just tender, then drain. Heat 1 tablespoon oil in a large deep frypan over mediumhigh heat. Cook the eschalots, turning, for 2-3 mins until golden. Remove from pan and set aside. Add the butter and remaining 1 tablespoon oil to the pan. Add the beef, in batches and cook, turning, for 3-4 mins until browned. Remove from pan and set aside.
Reduce heat to medium, add the pancetta, mushrooms, garlic, bay leaves and thyme, cook, stirring, for 5 mins. Add the tomato paste and cook, stirring, for 1 min, then add the flour and cook for a further 1 min or until combined. Stir in the wine and cook for 2 mins or until slightly thickened. Add the stock, whisking to combine, then return the eschalots to the pan. Cook for 6-8 mins until slightly reduced and thickened. Return the beef to the pan and simmer for a further 2 mins or until warmed through. Serve with mashed potato and garnished with lettuce leaves.

Coloured Sand Jars Things You’ll Need
Instructions
Sand Paper cups or small bowls Food colouring Plastic spoon Water Paper towels Glass jars or bottles with lids Ribbon or string to decorate
Divide your sand equally among the paper cups. Use one for every colour you want to make. Add water to each bowl until the sand is submerged. Start to add food colouring to each bowl. Adding a few drops at a time. Stir the mixture and check the colour before deciding if more food colouring is necessary. Allow the mixture to sit for at least one hour to absorb the colour. Allowing the mixture to sit for a longer time will result in a darker colour. Ounce your happy with the colour pour out the water and spread the sand onto a paper towel to dry completely. Fill glass jars or bottles with layers of different coloured sand. Rotating and tilting the bottles as you ďŹ ll them to make patterns. Finish off your bottles with coloured ribbons or string. These make great gifts.
