THE BEST OF THE BEST It’s time once again for our Readers’ Choice Awards! Hong Kong has seen a dramatic explosion in health and fitness since we launched in October 2015, and we have been so honoured to watch bold entrepreneurs and big brands alike turn their attention to wellness, not just for ourselves, but for our planet too. MACHU EAT YOU South American cuisine has been making a name for itself on Hong Kong’s F&B scene for a while now, with restaurants serving up diverse and authentic menus from across the continent. Fully opened just last month, ICHU Peru is an eatery looking to replicate the atmosphere of Lima’s local cevicherias with a no-fuss dining culture and sharing plates full of fresh ingredients and traditional flavours. The head chef, Virgilio Martinez Véliz, is well known for his use of modern cooking techniques using indigenous South American ingredients, but for his first foray in Hong Kong, he is out to show off his sophisticated knowledge of Peruvian cuisine. Carefully prepared ceviches of snapper or sea bass come paired with colourful accompaniments, and of course the humble avocado takes pride of place in several dishes. THE REJUVENATING POWER OF FITNESS We speak to Diana Purdy, founder of Ozone Fitness, about her mission to empower Hongkongers to embrace health at any age. Tell us about your fitness journey. I competed in gymnastics at school, but once I started university, exercise and sports took a backseat. As study, family and my career as a lawyer were all-consuming for me, finding the time to exercise was extremely challenging. It was really only in my forties, after going through my father’s death in 2009 and a divorce in 2010, that I decided to take control of my health. Being alive and healthy for my boys became my reason for getting fit again. I joined a big box gym, but found it intimidating. I had no idea how to use the machines or what I needed to do to get the best results. So I decided to invest in my health and paid for personal training sessions four times a week. Having a personal trainer helped me to stay committed to my training. I worked hard and started seeing visible results after about three months. Within a couple of years, I was in the best shape of my life. It was a total revelation when I saw my bone density increasing, my muscles growing, my metabolism rising and my fat dropping. I felt more energised, my health improved and people said I looked younger. Knowing that I could continue to get fit and healthy into my older years spurred me on to keep going and to share this “revelation” with others. I even became certified as an NASM Personal Trainer, to start developing my knowledge and training skills. ozonefitnesshongkong

Why did you found Ozone? The big box gym I joined (the now defunct California Fitness) was very aggressive in terms of sales, and not so much focused on taking care of its clients or staff. I had a dream of creating a gym where clients felt their interests were being served, that provided a warm and welcoming environment and where the staff had a sense of family and felt supported. With that in mind, we designed our memberships to include fitness assessments, tailored workout programs, and for members to receive free ad hoc guidance from our trainers if needed. We wanted to see our clients get results, without having to pay for one-on-one personal training sessions. We also wanted to ensure that none of our members felt intimidated about using the equipment, and that they could feel safe knowing that they were performing their workouts correctly. The tagline for our business is “Bringing Fitness Back Into Lifestyle,” and that’s exactly what we aim to achieve. What’s something you wished Hongkongers knew about fitness? It’s never too late to start getting fit. One of my friends who joined Ozone is getting fit for the first time at the age of 60, and our oldest client is 80 years old. Having said that, don’t put off getting fit until later. Exercise is beneficial for so many things, including energy levels, protection of your bones and joints, body composition and life expectancy. If you have difficulty getting started or being motivated, find your “reason why” and remind yourself of it daily.

Not your grandma’s traditional Cantonese teahouse (it has a killer cocktail menu), this 7,000-square-foot space takes inspiration from ingredients found along the Silk Road - think wagyu beef cheek with watermelon and Sichuan spices, or the razor clams with pickled peppercorn and white vinegar. But it’s not just roasted meats, dim sum and highly experimental dishes on offer here; sustainability is at the heart of this venture,

and the Maximal team has taken great care to source its produce as ethically as possible. Not only that, every detail - from the decor to menus - has been selected with the planet in mind. From recycled paper and upcycled ceramics to energy-efficient bulbs, bamboo decor, water-saving kitchen appliances and even a composting initiative for leftover food, every effort has been made to make this restaurant one of the greenest in town. However, it is definitely not an easy task to find the perfect qipao, especially at an accessible price point. Noticing the gap in the market, fashion buyer turned designer Julie Liu founded Hong Kong based qipao brand, Qipology in 2017. The brand specializes in custom made qipaos for the modern day bride by bringing the “cool” back into qipaos, reinventing them so they are contemporary, wearable and sexy at the same time. Each piece is tailor made based on the client’s preferences, needs and budgets. Prices begin from HKD 3,000 and the process usually takes around 1 - 2 months.

Kangaroo Jumps at XP Fitness Hub The Buzz: If you’re like us and are always looking to incorporate fun and variety into your fitness regime, here’s something for you. XP Fitness Hub, a new fitness studio in Central, is a haven for fitness enthusiasts of all levels looking to venture out and try something different. They offer a range of dance, fitness and yoga classes, and we were particularly keen to try Kangaroo Jumps, one of their +Elite classes. The Class: First, you strap on your kangaroo boots - think ski boots locked into a rebounder. It only took a few moments to the get the hang of them and before we knew it, we were strutting up and down the room and bouncing around to pop beats as we followed our instructor, Andrew, through the aerobic workout. Kangaroo jumping helps with spinal alignment, improves core strength and balance, and burns serious calories while reducing damage to your ankles, knees, hips and back. The Best Bit: The class was equal parts fun and

challenging. Plus, we burned 1,200 calories. Yeah! Cost: A trial class is $150 (valid for first-timers only).

CHARITY SPOTLIGHT:

Kirsten’s Zoo Founded in 2008, Kirsten’s Zoo is a volunteer-run animal welfare organisation that places dogs, cats and small animals in forever homes or with foster families, bypassing the need for a centralised shelter facility. Founder Kirsten Mitchell tells us about her mission, and offers advice to would-be adopters. By Tanya Hodgson

Q How did you come to found Kirsten’s Zoo? I am the co-founder of Hong Kong Dog Rescue, but left the organisation as their primary focus is on dogs, and I wanted to help out other animals. I have been working with animals for 20 years, and although it has been quite hard - it takes over your life - it’s a choice I had to make. If I didn’t do it, there are not many others who would step up. We have to be the voice that the animals do not have. Q Where do your animals come from? Are they strays? Abandoned? Surrendered by their owners? Sadly, all of the above. I have seen many horrors during my time: people tying their animals to lamp posts

and just abandoning them; leaving their pets in their apartments alone for hours on end. There are so many things that happen to animals on a daily basis in Hong Kong that no one knows about. You see a different side to people when they don’t want to responsible for an animal anymore. Q Fostering might be a good option for people who want to help care for an animal, but aren’t able to make a lifelong commitment. Can you tell us more? The reason we rely so heavily on fostering is that I do not believe that animals should be caged. In order to live a normal life, an animal must be integrated into the home to be rehabilitated and socialised.

There is a questionnaire available on our website that gives people an idea about what we expect from a potential foster parent. We also talk to them in order to truly understand whether or not an animal can be incorporated into their life. At the end of the day, if you’re out for 10 hours or more during the day, you would not be an ideal candidate to foster or adopt. Q Is there a way to be a responsible pet owner if you live in a high rise and work long hours? Get someone to help you! Even if someone pops in for an hour to take them out for a walk or to play with them, the animal will have a much happier day. I’d rather someone didn’t adopt one of our animals if their

plan is to leave them home alone and expect them to be happy by themselves all day. In my case, I work around my dogs; I don’t make my dogs fit around my work. There are people out there, such as dog walkers and dog sitters, who would be glad to spend time with your animal for a resaonable price. If you’re willing to spend money on having an animal, you need to be willing to spend time and attention in order for it to have a fulfilling life. At Kirsten’s Zoo, upon adoption we can tell you of people in your area who would be willing to spend time with your animal if need be, as well as give you some useful advice.

Q Besides fostering, what are some ways our readers can help your charity? As a small charity, funds are what we always need. If anyone is willing to create a fundraising event or campaign on our behalf we would be so grateful! We also have adoption days each Sunday, which is the most important day for animals to get adopted. We need volunteers to help out on adoption days and for other events. Q Do you have any advice for first-time adopters? Every animal will be nervous when you first bring it home. You definitely have to be prepared for that. Give your animal time to integrate into your household and get comfortable as it gets used to a whole new environment. We are always here to answer questions and make sure that each animal and each potential adopter are well matched. As well as this, we always hold a trial period in order to make sure that the animal finds its forever home.

Q What other information should people know with regards to keeping a pet in Hong Kong? First and foremost, find out whether or not your building allows you to have a pet. There have been times in which we go through all the paperwork and trials in order for the person to discover that their contract strictly says no animals - make sure to read your contract! As well as this, remember that if you are living in an apartment building you are sharing the space with others. A lot of people don’t like dogs because they are frightened of them, so be aware of how your neighbours respond. Q How has Typhoon Mangkhut affected you? Sadly, the typhoon hit on a Sunday which is our adoption day, meaning that we had to put on hold many animals who need to find a home. Missing one adoption day can make a huge difference as to whether or not a dog or cat finds its forever family.

Kombu-cured Red Seabream Max Levy, chef and owner, Okra Hong Kong. A perfect dinner party starter that’s as impressive as it is easy to make ahead of time, this high-protein, low-fat appetiser is made with insanely good-for-you kombu seaweed.

INGREDIENTS:

DIRECTIONS:

• 200g kombu

1. Air-dry the kombu so you have dry sheets. Meanwhile, dissolve the sea salt in the distilled water and add the fish. Refrigerate for 35 minutes. 2. Add the sake to the kombu to rehydrate the seaweed. 3. Remove the fish from the saltwater and pat dry. Wrap it tightly with the rehydrated kombu to form a flat parcel. Place between two plates and top with a 500g weight. 4. Refrigerate for three days, turning the plates over every 12 hours. 5. Remove the kombu and check the fish. It should be slightly sticky with a light green tinge. Cut into thin sashimi slices and serve.

Jaw-dropping national parks, geothermal springs and the occasional grizzly bear… Chaanah Crichton drives, hikes and rides through the rugged landscapes of Montana and Wyoming.

hile the Pacific Coast Highway along California’s western coast may be America’s most famous road trip, travelers looking to get up close and personal to the country’s impressive national parks will be richly rewarded with a journey through Montana and Wyoming. Known for its diverse topography from the Rocky Mountains to the Great Plains - the raw natural scenery of these two northwestern states have remained almost unchanged for thousands of years, and are perfect for exploring by car, on foot and on horseback, with plenty of kayaking, rock-climbing and white water rafting thrown in for good measure. If you have two weeks (or more!), this itinerary will allow you to see the best these spectacular parks have to offer.

GLACIER NATIONAL PARK, MONTANA With its pristine lakes and streams, dense forests and glacier-scoured mountains, Glacier National Park, part of the Rocky Mountain region, is the perfect starting point for your trip. Start your adventure by booking a flight to Glacier’s access point, Kalispell Airport, pick up a car and begin. Glacier National Park is divided between the East and the West, but I would recommend spending more time in the East, which has more hikes and better weather. Spend one day in the West to see Lake McDonald with its beautiful coloured pebbles and crystal water, before driving the “Going to the Sun Road” - the park’s most famous road - to spend three to four days in the East. Glacier National Park is a hikers’ paradise, either for backcountry hiking and camping trips, or for easier day hikes. If you want to go into the backcountry, be aware that Glacier has one of the largest bear populations in the USA, so you have to take a lot of precautions. At the very least, carry bear spray, be prepared to chat (or sing) loudly, and hike in a group. We were lucky enough to see four bears during our trip (including two

cubs), but thankfully both sightings were from the safety of our car. If you’re tired of hiking, Glacier National Park and the surrounding area also offers great kayaking, biking and white water rafting. Or just pick up a book, order a locally brewed Glacier Golden Ale and sit on the deck of the Many Glacier Hotel (www.usparklodging.com) for an afternoon in the sunshine. BOZEMAN, MONTANA Bozeman is primarily a university town, but its location between Glacier National Park and Yellowstone makes it the perfect stop-off point during your trip. If you want to stretch your legs while in Bozeman, hike the landmark 1.9-mile “M” trail, created by Montana State University students in 1915. Fill your bellies at Montana Ale Works (www.montanaaleworks.com), the town’s best-known watering hole, and sample the delicious Huckleberry beer. One night is all you need in Bozeman, but if you have the time, consider doing a day stop at Wade Lake on the way to Yellowstone National Park. With crystalclear water, this is one of America’s best canoeing spots. 39

YELLOWSTONE NATIONAL PARK Yellowstone is one of America’s most famous monuments, and the amazing geothermal features including geysers, hot springs, mud pots and steam vents - highlight why it was designated as the world’s first national park in 1872. Yellowstone is truly vast and so you will need time to explore it, get away from the crowds and find a quiet spot to enjoy the spectacular scenery. The best way to see the park is to break it up into areas and explore a different area each day so that you aren’t doing too much driving. Yellowstone has more than 1,000 miles of hiking trails, and as most people don’t leave their car on a trip to Yellowstone, this can be the perfect way to see the park without the crowds. Most of the park’s famous features are found between the West and North entrances, so staying in these areas is recommended if you only have a short amount of time. CODY, WYOMING Cody, just outside of Yellowstone’s East Entrance, is the quintessential “cowboy” town, with its pioneer and Cowboy and Western history obvious in the cultural events and activities in the area. Even if cowboys (and girls) aren’t your thing, it’s worth visiting Cody to stay at a “Dude ranch” - a cattle ranch converted to a resort for tourists - to do a full-day horse trek through the Shoshone National Forest and surrounding area. Aside from horse riding, the Shoshone River runs through town offering Class I-V kayaking and whitewater rafting, and there are also more than 300 rock climbing routes in the area. We did our horse trek through Double Diamond X Ranch (www.ddxranchwyoming.com) and stayed at River Bend Cabins (www.riverbendcabinscody.com), about 20 minutes outside of Cody. JACKSON HOLE, WYOMING If you are a keen skier, you might have heard of the town of Jackson and Jackson Hole, the valley that incorporates Jackson as well as the neighbouring towns of Moose, Teton Village and Wilson. While the area is famous for its world-class skiing, in my opinion, Jackson Hole in the summer months is just as lovely if not more so - than in the winter. The hikes in Jackson, set against the mountainous backdrop of Grand Teton National Park, are breathtaking, particularly in Spring when the wildflowers are blooming and covering the hillsides. 40

The diversity of the landscape was evident in one of our hikes, which started in bright sun-lit flower fields - a dramatic contrast to the summit of the mountain, where we found ourselves in the middle of a snow storm, beside a frozen lake! The Snake River threads through the entire valley from its headwater in Yellowstone in the north to the mouth of the Snake River Canyon at the southern tip of the valley, meaning there’s also great white water rafting and kayaking available. A popular activity in Jackson is biking, with more than 56 miles of paved pathways that link the town of Jackson to Teton Village and Grand Teton National Park, and over 115 miles of mountain bike trails. On top of this, there are great restaurants throughout the Valley. Check out Teton Thai, Lotus Organic or Pearl Street Bagels, just to name a few. As Jackson Hole is a popular holiday destination, the airport has non-stop flights from 13 destinations throughout the United States including New York, Chicago, and Los Angeles, making it the perfect end to your Northwest road trip.

TIPS: • Most national parks in Montana and Wyoming retain snow until late May or early June, and some (especially mountain passes) are snow-covered until late July. Take this into consideration when deciding when to travel. • Book early. Accommodation in and around national parks fill up in summer. • Avoid USA holidays as parks get very crowded. • Buy car insurance online or through your credit card company to avoid expensive rates charged by rental companies. • For hikes and camping, look on the national parks website (www.parktrust.org), where there is a wealth of information on what you need to do to prepare for hiking and camping in bear country. • Begin your hikes by stopping at a ranger station or visitor centre for information or updates on trail conditions and area closures. • Buy an “America the Beautiful” annual national park pass on your first park entry. This can be used throughout all of the national parks along the way. • Bring a portable phone charger or solar charger you will want to take a lot of photos and videos! 41

UNDER THE KNIFE For more than 2,000 years in Taiwan, monks have been using knife-based massages to boost “qi” - a principle in Traditional Chinese Medicine that refers to the flow of energy. Dubbed Dao Liao therapy, the ancient practice sees specialists rhythmically drum aching muscles with dulled cleavers to boost blood and lymphatic flow. Where can you try it? I had a chance to sample the practice at the Mandarin Oriental Spa, Hong Kong this summer thanks to French specialist Xavier Garnier, who travels the world spreading awareness about this practice. He has a home base at Hangzhou, with plans to return to Hong Kong later this year. But the best place to try it is in Taiwan, where dao liao still thrives, at spots such as Ancient Art of Knife Therapy Education Center. BOXING CLEVER Returning to Hong Kong for its 11th year this November is the Box of Hope campaign, during which children fill shoeboxes with practical gifts and fun goodies for distribution to underprivileged children throughout Asia. With an ambitious aim to collect 33,000 boxes in 2018, the campaign kicks off its collection in schools across Hong Kong between November 5-9. Children are strongly encouraged to get involved - the hotly contested annual box-decorating competition will run until November 15, with winners given the opportunity to accompany the BoH volunteers to hand out their box in person. One thing I always have in my gym bag: my yoga blocks and straps from Aumnie. When I conduct classes and workshops I love using props and isometric engagement to achieve optimal alignment and the perfect amount of resistance. My guilty pleasure: Lindt 70% dark chocolate. A bite of that after dinner and I’m a happy camper! What I'm reading right now: “The Power of your Subconscious Mind” by Dr Joseph Murphy is such an empowering book about how our mental patterns and beliefs sculpt our experiences.

Where I go for a healthy lunch: My meetings usually take place around Central and Maison Libanaise is one of my favorite spots for lunch. Their menu is packed with fresh ingredients and lots of flavor without compromising on nutrition. My favourite workout song: This might sound strange but I feel so inspired when I listen to “Hallelujah” by Pentatonix when I’m practicing yoga. It helps me connect to my inner strength and let go of my fears and doubts, especially if I’m working on inversions and arm balances. My beauty essential: Organic rosehip oil is one of Mother Nature’s secrets to an even complexion. It helps lighten sun spots and pigmentation and worked wonders in fading my stretch marks from pregnancy! My favourite workout gear: At the moment I like Under Armour’s leggings; they fit and move with me well. I also love organic cotton tops. They are so light, soft and breathable - perfect for active vinyasa or restorative yoga. On my bucket list: I would love to go on Safari in South Africa with my family. Camping out under the stars, spotting the big five and appreciating the vastness of savannah seems so far removed from the fast paced city life of Hong Kong! 50

What I always have in my fridge: Blueberries. Delicious, full of antioxidants and also said to increase short term memory. It’s a main component of my morning smoothie and my daughter’s snack pack at school. My one-year old son eats them by the handful and calls them “bluebabies!”
