T

empura asparagus tacos with won bok slaw and chipotle miso-glazed black cod may sound like culinary specialties that grace the menus of New York or San Francisco’s finest conceptfocused eateries, but they are in fact the food stuffs of Denver. Today I am speaking with celebrity chef and restaurateur, Richard Sandoval, owner of popular Colorado foodie favorites: Tamayo, Zengo and La Biblioteca in Denver; La Sandia in Stapleton and the Park Meadows Mall; Venga Venga in Snowmass; and MAYA in Beaver Creek, Vail. To this culinary master of pan-Latin/mixedconcept cuisine, lunch means business. Sandoval’s culinary vision stems from his roots growing up in Mexico City, a metropolis of sizzling, flavorful, and ingredient-rich specialties. His technique was learned table-side, watching his grandmother prepare traditional Mexican dishes, and his business prowess was inherited from his brass tacks, nononsense restaurateur father, who was known to portion out every morsel in his kitchen and keep count of each napkin under his restaurant’s roof. After a brief stint as a professional tennis player, Sandoval enrolled in the Culinary Institute of America, where he transitioned more quickly than most from student to master chef. Known as a pioneer of modern Mexican cuisine in America, Sandoval was approached by Larimer Associates, a venture investment and management company that was looking to invigorate Larimer Square by attracting chef-driven

restaurants to the block. He was just the type of chef they were looking for, with his proven success in the New York dining scene. In 2001, he opened Denver’s eyes to his new take on the hot stuff with the opening of Tamayo on Larimer Square. Opening a high-end modern Mexican restaurant in Denver, however, didn’t come without its challenges. “We opened MAYA in New York City 20 plus years ago, and it was an instant success. When we opened Tamayo in Denver, it was a different story,” said Sandoval. “Everyone thought of Mexican food as fast-causal, tacos. It was challenging opening a restaurant at a higher price point—until I asked people to make a comparison. Don’t compare us to small mom and pop Mexican restaurants; compare us to the French and Italian restaurants you are used to going to.” To Sandoval, more important than ingredients themselves, are what you

do with them. “You are seeing a lot of Colorado-based chefs that are Frenchtrained, but are using cilantro. You are seeing more acceptance of global cuisine,” said Sandoval. With over 35 restaurants, spanning the world from Denver to Dubai, to his latest venture—opening two new restaurants in Saudi Arabia, Sandoval has seen a shift in global food trends over the past 20 years. “I think globally you are seeing the farm to table concept—using local ingredients, organic. People are conscience about what they eat, where it’s coming from. I see this across the country—it’s what I call the ‘American diner ’, a combination of all foods under one restaurant.” Some of Colorado’s most famed chefs are taking notice of the trend, and implementing it in their own eateries. “Take for example, Frank Bonanno (Mizuna, Luca, Osteria Marco, Bones, Lou’s Food Bar, Russell’s Smokehouse, Wednesday’s Pie, and Salt & Grinder), or Jennifer Jasinski (Rioja, Bistro Vendome, Euclid Hall, and Stoic & Genuine),” said Sandoval. “A lot of cool chefs are traveling, researching and bringing their culinary discoveries home.” In 2010, Sandoval moved his corporate headquarters from New York City to Denver, and recently, in May 2015, made Denver his home base. “Denver is very central for me, since we have restaurants from California to New York; it makes sense for me to be centrally located. The heart of the company is in Denver, but I also really love Colorado. People here like what I do, and I like to be in places where I’m liked.”

Sandoval enjoys spending time on the mountains in Colorado skiing with his son, who will enter Colorado State University in the fall, and has not shied away from introducing his restaurant concepts to even the most fickle of dining destinations, the Colorado ski town. “I think Mexican food goes very well with après skiing. Margaritas, the heat. After hitting the slopes, people flock to Mexican food,” said Sandoval, on the reason why he cracked into Colorado’s resort market. “Every year MAYA and Venga Venga are up about 15%. The only problem is that the mountains are very challenging in that you go from 10 miles-per-hour to 300 milesper-hour overnight. With urban restaurants you know what to expect. But in the mountains it’s like re-opening a new restaurant with every season.” Another opportunity Sandoval has grasped is introducing the trend of mixed concept cuisine to the Denver restaurant scene. “Zengo is Latin Asian, Tamayo is modern Mexican, and La Sandia is more traditional Mexican. We are more Mexican than we are Latin Asian. But Zengo is one of my favorites because you are combining ingredients from such different cultures. The acids, the chilies, it’s combining ingredients that are truly unique.” Sandoval crosses ingredients just about as often as he does continents as he tends to his different culinary ventures. Having just returned from cheffing the US Open in New York, Sandoval has just four days home at his Riverfront Park residence in Denver, nearby to Zengo, before duty calls at the Fairmont Mayakoba in Mexico, where he is opening a restaurant. Book signings, television appearances and celebrity status among high-ranking foodies sound glamorous, but the 47-year-old considers himself a regular Colorado guy.

“When I wake up I try and go for a bike ride, or get in a good tennis match. I’ll hit my corporate office for meetings, and then I’ll start to visit the restaurants. Two nights I’ll usually go out to the restaurants, but the rest of the time I’ll just stay at my house. I’ll go to the Highland farmers market, buy some nice vegetables, fruit, eat something light, and just relax.” As the award-winning chef settles into life in Denver, aside from just being hub to his culinary mainstays, he reflects on the early dining scene in Denver, and like the seasons, how it’s changed. “The dining scene is very evolved over what it was when I opened Tamayo almost 20 years ago,” said Sandoval. “When I opened Tamayo, we had white tablecloths. You would never see that today. In order to stay relevant, you have to keep evolving. You’re seeing organic urban restaurants, no tablecloths, very comfortable, using ingredients from around the world.” And despite Sandoval’s dynamic success, he’ll never forget the simplicity of cuisine from his Latin roots.“It’s crazy. Today, you go to any kind of restaurant and you’ll find a taco on the menu. Whether it’s Asian, French—you would have never seen that 20 years ago. Latin, specifically Mexican, is here to stay.”

Like Denver’s cityscape, contemporary interior design is continuously evolving. Unlike modern design, which refers to a design style that was created in the 1920’s–1950’s, contemporary design, with its focus on softened and curved lines, and interiors that feature tone-ontone color palettes, is ‘of the moment’. And at this moment, there is an increased demand for contemporary interior design in Denver. There is no better way to experience the latest trends of clean and functional contemporary interior design than by taking a look inside the fall 2015 Denver Designer Show House, a LIV Sotheby’s International Realty signature design event, where 18 of Denver’s top interior designers were given carte blanche to completely transform a home, showcasing the very best in contemporary interior design. The Show House featured a pair of modern attached townhomes. The catch? Both sides of the three-story townhomes were to be designed in opposite themes. One adhering to strict neutral tones, while the other to feature a colorful palette. Each designer or design firm was responsible for one room from either the neutral or color side of the townhomes, setting the stage to test their skills working within varying color mediums, while simultaneously designing with a contemporary style. Simplicity, texture, subtle sophistication, and cleans lines set the tone of the 2015 Denver Designer Show House, and the jaw-dropping results proved that showcasing space, rather than things, is most important when designing with a contemporary style.

NO LIMITS In a show house, the personal nature of designing a room poses both challenges and freedoms. With no client to please, it is refreshing for a designer to have total creative freedom within their design space. However, limitless options can make design choices challenging. Vail and Denver-based design firm, Casey St. John (CSJ), comprised of three principals, Amy Casey, Courtney St.John and Joanne Brutsch, embraced this opportunity and challenge head-on at the Show House. Working to design a small third floor room on the color side of the Show Home, the trio at CSJ knew they must stay true to the contemporary style of the home, while working within the confines of a very small space. CSJ’s design projects always begin with a face to face consultation to scope the project and map out the projected design style, whether it be for a project in the mountains with clients designing their second, third or even fourth home, or on the Front Range to design a client’s primary residence. Only at the fall Show House, there was no client to consult. “We came up with the idea of a mock client for the space,” said principal, Brutsch, of CSJ. “We imagined the client to be a young professional couple, and the room we were designing would be a multi-functional space, instead of just another bedroom. We thought they could use a home office with a day bed so it could be used as overflow for a guest.” With a space so small that accommodating a twin bed posed a challenge, the team at CSJ employed several interior design tactics to make the space appear larger. “We used a commercial grade, high-gloss paint finish to reflect the natural light and make the space seem large and bright,” said Brutsch. “We floated an acrylic desk in front of an almost floor-to-ceiling window. almost see-through piece of furniture in front of a large picture window, it made the desk appear to be floating and the space, larger.” Staying true to their colorful palette choice, the CSJ team accentuated the room by adding pops of color through art, accessories and other finishes, giving life to the small space. For those seeking to make design changes within a small or challenging space, Brutsch offered the following advice. “Even if you can’t afford to hire a designer, so many showrooms have people that will help you,” said Brutsch. “Do a lot of measuring at home, tape things out with blue tape, and make a mock up of the fixture you intend to add to a room and hold it up in your space.” To Casey St. John, show homes pose a welcome challenge because they are a total transformation. “I love the beginning of a project when you are pulling all the initial finishes, fabrics, and furnishings, and then the installation, where you get to see it all come to life,” said Brutch. “Interior design is ever-changing. Every project is new and different and inspiring, especially with contemporary design.”

ADAPTABILITY While the 2015 Designer Show House may have been a first for 23-year-old, Joshua Bodjanac, principal of JB Noble Interiors, the upand-coming designer is no stranger to incorporating outside trends into his projects, and executing quick and accurate decisions required by contemporary interior design. page 12

“I’m finding the Denver crowd is very well traveled,” said Bodjanac. “They’ve been spending time in Europe, and are wanting to adapt outside influences into their contemporary interiors.” Bodjanac has noticed an increasing demand from younger clients, ages 30 to 50, to incorporate influences from their travels into their space. “In Italy, they’re using leathers mixed with metals, really clean-lined pieces. In France, the design is leaning toward a new take on traditional design; taking traditional patterns and either re-coloring them, or simplifying and enlarging them. In America, what I’ve noticed is that people are reaching back into history. People are using mixed use materials. They’ll have sleek, contemporary cabinetry, and then the countertop will have reclaimed barn wood. They’re mixing old and new in a unique way.” Bodjanac had to mix materials of his own when he faced an unforeseen obstacle at the Show House. “I was originally going to upholster the whole headboard wall in a chocolate Mohair,” said Bodjanac, who designed the small, third floor room on the neutral side of the show house, opposite Casey St. John. “But, as I began the installation, I noticed there were imperfections in the fabric. I had to look for an alternate choice.” Bodjanac had a surplus of white-gold shimmery cut velvet, which he was originally going to use to upholster the cornice board above the window. He had to make a decision. “What was going to be the cornice, became the wall,” said Bodjanac. “A design decision of that magnitude could have caused conflict if there livsothebysrealty.com

were clients involved. You’d have to get that approved. But, because it was the Show House, and it’s just me making the decision, it was a two-second decision, and it turned out beautifully.” In contemporary interior design, it is important to be flexible, and also confident in decision making. “Client decisions are important, but it is the designer who must serve as the ultimate guide,” said Bodjanac. “You are driving the ship. The overall decision of the room falls on you, and that’s why you’re hired.”

CONTEMPORARY ACCENTS Decorating with contemporary art (roughly anything created from 1947 to present), is intimidating because of the misconception that art is expensive and galleries are impenetrable by the average person. To 2015 Denver Designer Show House art curator, Ann Benson Reidy, the fall Show House served as the perfect medium for people to experience first-hand the way contemporary art can 303.893.3200


realistically work within a home, as opposed to viewing it in a gallery. “People are realizing that they want to be surrounded by something that speaks to them within the home,” said Reidy. “It’s not about a certain genre, but rather having art around them that makes people feel good about their space. What’s trending in art, is that people are buying it, and the Show House provides a perfect backdrop to witness that.” Reidy sourced art mainly from Colorado, most notably, the Robischon Art Gallery, William Havu Gallery, and Goodwin Fine Art. “Jim Robischon has been bringing national and international art to Denver for over 35 years,” said Reidy. “Tina Goodwin, Goodwin Fine Art director, is about supporting emerging and mid-career arts, and Bill Havu just has an incredibly diverse stable of artists.” Keeping in line with the contemporary nature of the side by side townhomes, Reidy began the Show House’s art curation by reaching out to all of the designers and viewing their image boards to get a feel for their individual colors and aesthetic. Reidy noted that what set the townhomes used in the Show House apart was that they in themselves were examples of contemporary architecture. “So, I stuck with all current,

contemporary artists, which complemented the homes architecture. There are no lovely serene landscapes or portraiture here,” said Reidy. Reidy encouraged the designers to focus on soft goods and fabrics, and then, she accentuated and married artwork to their aesthetic. “Each designer was so different, I had to grab different looks for the various contemporary spaces. They told me, ‘I want figurative, I want black and white, I want all nudes,’ sure I can get you all nudes, I said.’ That’s the beauty of it. I love being the resource that goes out, searches, hunts and finds what each person is looking for.” For Reidy, working within the color and neutral palette of the Show Home was most rewarding, and the willingness of the designers to experiment with innovative art choices surprised her. “Nadia Watts [Nadia Watts Interior Design] was open to me bringing in decor that was totally out of her wheelhouse from what she traditionally uses for her clients,” said Reidy, “She was fearless in her art selection.” Watts’ basement-level, color palette-themed space, included artwork from leading abstract expressionist, Dale Chisman, mid-career artist, Katy Stone, represented by Robischon Art Gallery, emerging artist, Tyler Beard, and

New York based artist, Bob Knox, represented by Bill Havu, resulting in a bold mix of artists, old and new. “Casey St. John made their space feel cool and light and joyful and vibrant,” said Reidy. “They weren’t afraid to go with a big painting, a Kate Petley, in a tiny room. They have a Lourdes Sanchez and a Scott Davis sculpture. They had to be creative in their space, which was pretty limiting, and they worked to make it feel big.” Some designers selected simple, straightforward, art to tie together their design vision. Carolyn Alvarez (Alvarez Morris, main floor family room, color) stayed true to her theme. “She wanted Californiainspired, bohemian, organic, chic,” said Reidy. “She utilized Chinese artist, Chi Peng, local artist, Ian Fisher, blue chip artist Tom Lieber, sculptor, Scott Davis, and international artist, Sami Al Kairm. It’s hard to believe that this art is all in Denver.” Reidy reminds us that acquiring contemporary art is completely attainable by keeping size, education and budget in mind. “Using galleries and artists as a resource is something people are just afraid to do, but they are just normal people,” said Reidy. “You can find art from $250 to $250,000, and it adds so much depth to a contemporary space.”

MASTER OF TEXTURE

THE END PRODUCT

With contemporary interior design, incorporating texture provides visual interest, while simultaneously keeping things balanced. Texture is particularly important when working within a particular color palette where the shades are very similar, in this case, the neutral palette of the fall Show House. “The trick to a contemporary, neutral scheme is definitely a mix of textures,” said Mikhail Dantes, principal of D+D Interiors. “This is my palette. Being just a shade off could ruin it. You have to be very careful of your choices. Contemporary accents should be carefully picked, and if done properly, will stand on their own.” Dantes incorporated textured silks, linens, and wools into a simple, rather austere space on the main floor neutral side of the Show House, resulting in a slightly Asian-inspired feel, in tune with the contemporary nature of the home. “Even though there are aluminum windows and stainless steel, I still chose to go with bronzes and golds. The bronze and gold colors warm up the space,” said Dantes. By combining textured fabrics and visually stimulating art, accented with black sand and metallics, he created a level of richness and sophistication out of a relatively simple design. Master texture and you have mastered contemporary interior design.

Experiencing the best of Denver’s contemporary interior design talent in one place is remarkable. Regardless of art choice and color palette, each participant in the 2015 Denver Designer Show House demonstrated intense choreography, taciturn skill, and a passion for transformation. Each designer hoped to inspire creativity in the visitors to the Show House, and encourage them to bring contemporary design to their own lives and spaces.

Children’s Hospital Colorado served as the beneficiary of the 2015 Denver Designer Show House. In total, the art Ann Benson Reidy curated for the event is worth over $500K, with 10% of all art proceeds generated from the Show House to benefit Children’s Hospital Colorado, and the rest to support the local gallery community.
