1. Sift together flour, bicarbonate of soda and ginger. Add the butter and rub in until it's like fine breadcrumbs. Then Stir in the sugar. 2. In a small bowl beat together the syrup, egg and milk. Stir in the dry ingredients and mix to a dough, Put the mixture onto a floured surface and knead until smooth.

3. Roll the mixture out on a lightly floured surface to about 5mm / ¼ in thick and using a gingerbread cutter and cut out your gingerbread men then carefully place them on a baking tray lined with parchment paper. 4. Bake in a preheatedoven at 190°C/375°F/Gas 5 for12 15 minutes until golden. Allow to cool slightly and harden before your gingerbread men on a wire rack to cool off. 5. Finally dress your gingerbread men with some colourful icing!

450g / 1lb Tate & Lyle Demerara Cane Sugar 75g / 3oz butter 225g / 8oz Lyle’s Golden Syrup 150ml / ¼ pt water 10ml / 2tsp vinegar 8 medium apples
1. Place the sugar, butter, syrup, water and vinegar in a large non stick saucepan and heat gently for 5 minutes or until sugar has melted. 2. Using a clean pastry brush, brush the inside of the pan with cold water just above the level of the sugar syrup then bring to the boil. Boil for 5 10 minutes or until the temperature reaches the soft crack or 143°C/290°F stage. (See Cook’s note). 3. Meanwhile push a wooden stick into the centre of each apple then dip the apples very carefully into the toffee to coat well. Then twirl each around for a few seconds to allow the excess toffee to drip off and leave to cool and harden on a piece of parchment paper.

1.Grease three baking sheets and preheat the oven to 190°C/375°F/Gas 5. 2. Mix together the butter, sugar and syrup until the mixture is light and fluffy. 3.Beat in the egg and vanilla essence. 4. Sift the flour and salt together and lightly beat into the mixture. Then fold in the chocolate. 6. Place small spoonfuls of the mixture onto bakign sheets, allow plenty of room for them to spread. 7. Bake in the oven for about 15 mins, or until golden brown. Then allow them to cool before eating!
