St. Patrick’s Day WE CELEBRATE ST PATRICK’S DAY WITH AN AFFECTIONATE LOOK AT THE IRISH
W
hile these days it’s considered politically incorrect to make fun of a particular nationality or ethnic section there is nevertheless still a great deal of affection for the Irish and the perceived levels of common sense normally encapsulated in stories that usually begin ‘there was this Irishman.....’ So, to celebrate their great day - St Patrick’s Day - we’ve found a few lovely little stories that define the concept perfectly and sincerely hope that since there is absolutely no offence intended that none is taken! Enjoy... Murphy opened the morning newspaper and was dumbfounded to read in the obituary column that he had died. He quickly phoned his best friend Patrick. “Did you see the paper?” asked Murphy. “They say I died!!” “Yes, I saw it!” replied Patrick. “Where are yer callin’ from?” Finnigan says, “My wife has a terrible habit of staying up ‘til two o’clock in the morning. I can’t break her out of it.” “What on earth is she doin’ up at that time?” replied Keenan. “Waiting’ for me to come home,” says Finnigan. Reilly was on trial for armed robbery and after a lengthy trial and a brilliant
performance from his barrister the foreman of the jury stood and announced him to be not guilty. ‘That’s wonderful,’ yelled Reilly. ‘Does this mean I can keep the money?’ Mary accompanied her husband, Paddy, to the doctor’s. After his check up, the doctor called Mary into his office alone. He said, “Your husband is suffering from a very severe stress disorder. If you don’t do the following, your husband will surely die. Each morning, fix him a healthy breakfast. Be pleasant at all times. For lunch make him a nutritious meal. For dinner prepare an especially nice meal for him. Don’t burden him with chores. Don’t discuss your problems with him, it will only make his stress worse, and

most importantly, no nagging. If you can do this for the next 10 months to a year, I think Paddy will regain his health completely.” On the way home, Paddy asked Mary. “What did the doctor say?” “He said you’re going to die,” she replied. When he opens the door, he encounters two policemen, one of whom asks if he is married and, if so, whether they can see a picture of the wife. The deputy looks carefully at the picture and then gravely says, “I’m sorry sir, but it looks like your wife’s been hit by a truck.” Paddy replies “I know, but she has a great personality, she’s an excellent cook, and she lets me play golf whenever I want!”

of herbaceous perennials such as hardy geraniums, heuchera, poppies etc. Have a continuous supply of flowers for cutting and bringing indoors by either planting suitable perennials such as lupins and delphiniums or by sowing annuals such as cosmos, gypsophila, nicotiana, helichrysum, etc. Pot up canna rhizomes in a warm, light position to flower in the summer. This is the best month for planting new roses but never plant a new rose in soil that has grown a rose previously as the new one will suffer from rose transplant sickness. If you must have a rose in a particular place then you will have to change the soil at least 3ft all around the planting hole and 3ft deep. Much easier to find a new home. Prune established bush and standard roses and add a rose fertiliser around the base of the plant. Prune summer flowering shrubs such as buddleia, lavatera, hardy fuchsia and perovskia. Remove any plain green stems from variegated shrubs otherwise they will eventually revert to all green. Cut off the heads only of daffodils that have finished flowering. Leave all the foliage in place for at least six weeks so that the bulb can renew its energy for flowering next year.

Fruit and Vegetables If you didn’t prune your autumn fruiting raspberries, gooseberries or blueberries there is still time to do it now. Mulch all fruit with your own compost or well rotted farm manure but make sure it does not actually touch the stems of each plant as this can cause them to rot. Place cloches or fleece over strawberry plants to bring them on for an earlier crop. Remove the forcing cover on rhubarb. If the weather is suitable you can sow beetroot, broad beans, carrots, leeks, lettuce and other salad leaves, onions, parsnips, peas, radish, spinach and summer cabbage and cauliflowers. Make sure the ground is friable and sow to the depth shown on the packets. If you have a frost free greenhouse you can sow aubergines, cucumbers, peppers and tomatoes. Plant onion sets, shallots and garlic. At the end of the month plant early chitted potatoes and put maincrop potatoes in trays or boxes to chit. Any vegetables still left from winter will need feeding with Growmore or any balanced fertiliser. Regularly hoe vegetable beds so that weeds are not taking any available moisture or nutrients.
Wildlife Buy nesting boxes to attract birds to your garden. Hang them on a wall rather than from trees if you have cats coming into your garden. Carry on putting food out for birds but make sure there are now no large pieces of food in case the mother bird feeds it to fledglings. If your wildlife pond does not have any frogspawn try to get some from another pond that has plenty. Keep the bird bath topped up with water.

Humour SENIOR CITIZENS INADVERTENTLY FUNNY!

s I get older, I find that some of the things my peers say and do to be both a little strange and also very funny. The most amusing aspect of that is that they don’t really mean their actions to be either of these things and that makes them even more enjoyable. Here are some great examples! To mark her hundredth birthday a lady was interviewed by a journalist from the local paper. ‘To what,’ he asked, ‘do you attribute your longevity?’ ‘Well,’ said the old lady, ‘I think it’s because I decided when I was very young to never get involved in any kind of argument and I’ve stuck to that ever since so I’ve never had any stress at all.’ The reporter was sceptical. ‘Surely there must be some other explanation,’ he said. ‘Exercise, sensible diet, genetics perhaps. I can’t believe you’ve lived to a hundred just by not arguing.’ ‘You know,’ said the old lady, you might just be right.’ An elderly man came back from the doctor looking worried. ‘What’s the matter pet?’ asked his wife. ‘Well,’ said her husband, ‘the doctor told me I had to take one of these pills every day for the rest of my life.’ ‘Well that’s not too bad,’ said the wife, trying to cheer him up. ‘It is,’ he replied. ‘The doctor only gave me 24.’

Healthy Eating SMOKY LENTIL & BEAN CHILLI
T
his recipe is a Mexican-inspired bean stew with added chocolate which sounds strange but it helps to balance the heat of the chilli. Full of beans and lentils, this stew has plenty of protein, is low fat and has lots of taste. Added onion, pepper and tomatoes provide you with vitamins & minerals. Serve it with grated cheese on top and either tortilla chips, flour torillas or rice.
Recipe 1 tablespoon olive oil; 1 large onion, diced; 1 green pepper diced; 4 cloves garlic finely chopped; 1 heaped teaspoon ground cumin; 1 teaspoon ground cinnamon; 1 teaspoon smoked paprika; 1 teaspoon chilli flakes or powder; 1 tablespoon tomato puree; 150g green or brown (puy) lentils; tin kidney beans drained; 200ml veg stock; 20g dark chocolate (70% cocoa solids) chopped
Put all the ingredients except the chocolate into a large pan. Stir, cover and cook for 1 hour. Before serving stir in the chocolate. Top with cheese. *Tip: You can buy smoked paprika from Polish food shops ‘Healthy Eating’ courtesy of Sue Lorrimer.

PEANUT BUTTER CUP BROWNIE BOTTOM CHEESECAKE (with Butterscotch) INGREDIENTS: BROWNIE CRUST 1 cup semi-sweet chocolate chips 1 cup peanut butter chip 6 tablespoons unsalted butter, melted 1 1/4 cups sugar 1 tablespoon vanilla extract 2 eggs 1 cup all-purpose flour 2 tablespoons all-purpose flour 1/3 cup unsweetened cocoa 1/2 teaspoon baking powder 1/2 teaspoon salt CHEESECAKE FILLING 2 lbs cream cheese, softened 5 eggs, at room temperature 1 1/2 cups firmly packed brown sugar
1 cup smooth peanut butter 1/2 cup whipping cream 1 tablespoon vanilla extract 6 peanut butter cups, cut into quarters Decoration 6 peanut butter cups, cut carefully in half 1/2 cup whipping cream 1 cup semi-sweet chocolate chips 1 cup peanut butter cup You can choose how much butterscotch you would like in this dessert. It can be added to the cheesecake mix (3 tbsp added to the mixture should do the job), or it can be poured over the top for decoration.

METHOD: 1. Heat oven to 180°c. Grease 9-inch springform pan with butter. 2. Stir together butter, sugar and vanilla in large bowl with spoon or wire whisk. Add eggs; stir until well blended. Stir in flour, cocoa, baking powder and salt; blend well. Spread in prepared pan. 3. Bake 25 to 30 minutes or until brownie begins to pull away from side of pan. Meanwhile make cheesecake layer (see next page). 4. Immediately after removing brownie from oven, sprinkle milk chocolate chips, peanut butter chips and peanut butter cups over brownie surface. 5. mixer until smooth. Add eggs, one at a time, beating well after each addition. 7. Add sugar, peanut butter and cream; mix until smooth. Stir in vanilla. 8. Pour filling into prepared crust. 9. Double-wrap springform pan with aluminum foil to prevent water seeping in. Place springform pan into a larger baking pan. Pour hot water into the larger pan so that the water comes 1 inch up the sides of the springform pan. 10. Bake at 170°c for one and a half hours, or until firm and lightly browned. 11. Remove from the oven and allow to cool on a wire rack for one hour. Run a knife along the edge of the cake to loosen it from the pan somewhat. Refrigerate for at least 4 hours before decorating. Decorate as desired, serve immediately and enjoy!
