In The Garden

A

s Christmas approaches, our to-do lists don’t often contain gardening tasks at this time of year. Luckily, you can take it a little easier this month without any risk to your garden; maintenance is the most important thing until spring. Of course, if you are looking to keep up the pace of your gardening, don’t worry, there are still plenty of smaller jobs to do! Clearing borders of dead or dying plants helps create tidy displays, showing off those still in bloom. The spent debris makes a great soil improver for next year, so get it rotting down. Prune harshly to improve the shape of your trees and shrubs, look out for flaws such as split or broken branches, and make sure you cut them back so they are healthier next year. Don’t rely on bought garden compost; it’s the perfect time of year to create your own! Keep any plant cuttings and

kitchen scraps, mix them together and allow them to rot down ready to be used next spring. Leaves and manure are great for creating an alternative to compost; leaf mould can act as soil coverage during those harsh winter months and manure can be rotted down and used to rejuvenate your soil with nutrients. If you’re looking for something a little more natural, green manures like clover or rye are great for improving soil nature’s way! Mulch requires very little work, and is great for applying to the roots of established or flowering plants. Let earth worms do all the hard work; they will eventually drag and blend the mulch into top soil. Don’t let ivy be a pest; it may seem like any other climbing plant usefully covering your bare walls and fences. Unfortunately no matter how much you try and keep it in bounds, ivy

Healthy Eating

EASY HOME-MADE MINCE PIES

Method: Mix the apple, alcohol and mincemeat. Make the pastry: Cut the margarine into small cubes and put in a bowl. Add the flour and rub into the margarine until it resembles breadcrumbs. Try to bring it together into a ball. If it’s too dry, add a tiny bit of water but you shouldn’t need to (crumbly type pastry that just holds together enough to roll out is best). Heat your oven to Gas Mark 6/200c. Have a 12-hole cake tin ready. Roll out the pastry, use a pastry cutter or something round i.e. a cup to cut out circles that are wider than the cake tin holes. When you have 12, put them into the cake tin. Fill them with mincemeat, put plenty in.

The shops are full of mince pies, but none taste better than home-made ones eaten warm from the oven. The secret with making pastry is not to handle it too much, but if you like, you can use shop-bought shortcrust pastry. Instead of cream, serve with evaporated milk or soy cream which both contain less Next, roll out the rest of the pastry and cholesterol. cut into small rounds (the size of the tin Ingredients: holes). Dampen the edges of the pastry 400g or 1lb jar mincemeat and press the edges of the tops onto the edges of the filled pastry bottoms. Take 1 apple grated a knife and make a slit in the top of each Tablespoon of whisky, port or brandy pie. 200g Margarine (such as Cookeen or Brush the top of the pies with milk or Stork) or butter beaten egg. Cook for 20 minutes. Take out 350g flour of the oven and leave a few minutes to 1 egg or some milk cool then gently take pies out and put on Sugar or icing sugar to sprinkle on top a rack to cool. Seasonal Recipe

TROPICAL COCONUT CHRISTMAS CAKE

A

s with a traditional Christmas cake, you can use any fruits you’d like in this recipe. There are some great pre-mixes of tropical fruit out there that will save you buying them all separately, and the ginger can be omitted if you want.

INGREDIENTS CAKE: 600g mixed tropical dried fruit (Maybe a 200g mix of apricots, sultanas and apples, plus 400g mix of pineapple, papaya and mango) 50ml rum or other spirit (optional) 185g butter 185g golden caster or light brown sugar 3 eggs 225g plain flour 1 teaspoon baking powder 30g chopped crystallised ginger Spice blend as desired – Example: 1 teaspoon each of cinnamon and ginger and 1½ teaspoons of nutmeg

COCONUT ICING: 75g butter 150g icing sugar 200g desiccated coconut

METHOD If you’ve time, soak the dried fruit overnight in the rum, in a covered bowl. Beat together the sugar and butter until light and fluffy. Add the eggs, spices, baking powder and sieved flour, and beat again until smooth. Finally, add the dried fruit and ginger and mix well combined with an even distribution of fruit. Pour into a greased, lined tin – 7 inches round with high sides is perfect, but you could use a larger round, a square or even a novelty tin. Bake at 150 degrees for 2½ to 3 hours, until an inserted skewer comes out clean. Timing

PAGE 22 | Please mention ‘The Local Answer Ingleby Barwick’ when calling advertisers

See Page 30 for our Index of Advertisers will very much depend on your oven type, it would take 2½ hours in a fan oven. If the top is starting to brown then cover with tin foil for the remainder of the cooking time. Remove from the tin and leave to cool completely – overnight is ideal as you don’t want the icing to melt off! For the icing, simply beat together the butter and icing sugar until light and fluffy. If you have an electric stand mixer then leave it on for 4-5 minutes, the extra beating will lighten the mixture. Add the coconut and beat again until smooth, use a dash of milk if it’s a little too stiff. Use immediately as it will set hard – applying generously all over the cake, and smoothing with a palette knife dipped in hot water. Decorate as required and finish with a festive greeting!

WINTER TYRES ARE THEY WORTH THE BOTHER?

A

s soon as the temperature drops and there are signs of snow and frost a friend of ours books her car in to have winter tyres fitted. I have to admit to having strong reservations about the benefits of that, since this country - and last year was a great example - rarely has enough snow to create the kind of problems that would make the annual investment worthwhile. Or does it? We decided to investigate the pros and cons and are happy to pass on our findings. There’s no doubt it’s a debatable subject and therefore it’s actually worth examining what exactly is a ‘winter tyre’ and what are its benefits? In this country the type of tyre that can safely be used in winter is more accurately classed as a ‘cold weather’ tyre, recognisable by the snowflake symbol. They are manufactured from a tread rubber compound (high silica content) with a tread pattern specifically designed

to retain flexibility in low temperatures (below +7C) and give good braking and traction performance on snow and ice as well as on wet roads in cold conditions. These are produced using a softer compound than the ones we normally use which means that they still provide a grip in those temperatures below 7 degrees centigrade. Our every day tyres are of a harder construction and while that means they soften in higher temperatures and provide a good grip most of the time, once the temperature falls below the magic 7 degrees centigrade they provide less grip on the road. The way the tread patterns differ on the cold weather tyre is that fine grooves are cut into each tread block to enable the tyre to improve its bite into snow. But let’s be honest, in recent years we’ve hardly had any snow, so is it worth the expense to furnish your car with a whole new set of tyres just for the odd shower?

Perhaps the answer lies in the fact that these tyres are not just built for snow, but create a much safer grip in icy or cold, wet weather and during January and February we tend to get quite of few of those sort of conditions. Let’s also examine the expense involved. If you are using your winter tyres it obviously means your normal tyres are safely tucked up in the garage not being used and therefore not adding to their mileage. That means that both they - and obviously your winter tyres - will last twice as long anyway as they are only used for half the year. The only additional expense, therefore, is the initial cost of the winter tyres and the cost of having them changed twice a year. Why, you might ask, don’t the manufacturers come up with a tyre that can do both? Well, they do, actually, and this is called an ‘all season’ tyre. Its aim is to give you decent grip in all weathers but that would suggest that because it’s not built for specific climatic conditions it can’t possibly offer the best results for whatever the weather throws at you at any given time. That means that it isn’t as good as having two specialist tyres and switching between them from season to season because you are then giving yourself the perfect tyre for the time of year. We don’t really get the kind of extremes other countries have to endure, of course, but there are nevertheless times throughout the winter when you need all the road grip you can get! It’s really a matter of personal opinion and circumstances, but for anyone who relies on their car with high mileage throughout the year it seems to make sense to give yourselves the safest

possible conditions when you’re driving. The fact that winter tyres not only reduce stopping distances in snowy and icy conditions but also help with cornering and avoiding the skidding others cars experience is a pretty good reason why you should perhaps give it serious thought. Whatever your decision, though, do drive carefully this winter and stay safe regardless of the conditions!

A HUMOROUS LOOK AT CHRISTMAS & NEW YEAR

e know it’s the nicest and happiest time of the year, but Christmas and New Year also throw up some humorous little stories. Here are just a few for you to enjoy!

interest in Santa Claus, reminded the two-year-old that Santa was watching and he was unhappy when he saw children argue and fight. This had little impact on Daisy who really didn’t understand. ‘I’ll just have to tell Santa about your misbehaviour,’ It’s probably not true but there’s a story the mother said as she picked up going round that when Good King the phone and dialled. Daisy, now even more over and gave the doorbell a solid wide eyed, solemnly nodded to ring. And finally, some New Year’s Observations: 1. A New Year’s resolution is something that goes in one year and out the other. 2. My New Year’s resolution is to be more optimistic by keeping my cup half-full with either rum, vodka, or whiskey. 3. My New Year’s resolution is to stop hanging out with people who ask me about my New Year’s resolutions. 4. People treat New Year’s Eve like some sort of life-changing event, but it’s pretty certain to assume that if your life sucked last year, it’s probably still going to suck tomorrow. 5. May all your troubles last as long as your New Year resolutions..... 6. Again, Dear Lord, my prayer for 2021 is a FAT bank account and a THIN body. Please don’t mix it up again like you did this year. 7. Remember you don’t have to worry about initially breaking your New Year resolutions. You can re-set them on January 14th (Orthodox New Year) and February 12th (Chinese New Year). Have a wonderful Christmas and very best wishes for 2021.

Football - The ‘Boro

THE CROSSROADS HAS BEEN REACHED

A

fter what can be described as a relatively successful start to the season with only two undeserved defeats from the first twelve games it would be easy to fall into the trap of complacency because that kind of return means that safety and a top half finish would be pretty much guaranteed. But with just over a quarter of the season gone the most important statistic is that those twelve games have only included four wins which is obviously nowhere near enough to be able to mount a realistic promotion challenge. Neil Warnock’s pre-match press conference for the Norwich game suggested that this is a situation we should all be happy with and once again pointed to the thinness of the squad as a reason for ‘Boro fans not to get too ambitious with regards to the top two places. “I think it’s a little bit too early for us,” he said. “I think the main men are still the teams that came down and the ones with the big squads. I think there’s five or six above us really.” Having already played those ‘five or six’ I think it’s fair to say that we have more than matched every one of them and have – on no occasion this season – looked second best to anyone. That means we have now reached the crossroads where decisions have to be made and changes to the current format implemented if we are to demonstrate any kind of real ambition.

It’s all very well to point to the thinness of the squad if alternatives don’t exist, but what’s the point of having your most creative player sitting on the bench and – if his previous history is anything to go by – your quickest player, sitting with him. I can understand Neil Warnock wanting to play safety first against a very good team like Norwich, and had the unfortunate Marcus Tavernier not completely messed up his penalty the result might have been so different, but the reliance on soaking up pressure and hoping to get the odd goal from a breakaway is not going to get the goals that are so obviously lacking. Patrick Roberts was brought back from Manchester City with something of a Warnock fanfare, lauding him as the creative talent that the side needed. Five games on and he has yet to make any kind of contribution with a paltry ten minutes at the end of the Norwich game surely a sign of desperation. We have also signed Duncan Watmore with Warnock saying “he has been a breath of fresh air around the place, he’s quick and direct and has fitted in well. It’s a short term contract but he doesn’t have to do much to impress me if he carries on.” What he is going to have to do is play games, Neil, and that’s obviously up to you to give him the chance. While his Sunderland history was extremely fragmented thanks to

no-brainer. We’ve just seen that the players are there to use, though having had little game time so far they need to be given a run regardless of what happens. Counter-attacking with the hope of snatching a goal is all very well, but when you have two centre forwards who have already proved they can’t be relied on to take those few and far between chances it is a markedly flawed policy. So let’s go for it for a while because the current return isn’t going to get us into the top two, but in giving it a try we’d have nothing to lose. The tried and trusted method of ‘not losing games’ can always be re-instated should we find we still can’t win, but at least let’s give it a try. Otherwise the season is going to turn into a pretty uneventful bore! Goals are the lifeblood of the game and in our position we shouldn’t be the lowest scorers outside the bottom three teams. We are, though, and that has to change – and quickly!

a succession of injuries, Watmore proved with England under twenty one selection that he had something to offer. That ‘something’ was actually lightening pace, the attribute that no defender wants to come up against. Neil Warnock’s loyalty to the players who have so far performed admirably is understandable, and the likes of Tavernier and Johnston have performed to the best of their ability, but despite having played every game of the season Tavernier’s actual contribution has been a single assist in twelve games. As I write, however, Warnock has the perfect opportunity to change things around. Our next two games are against Derby and Huddersfield, neither of whom have had a particularly auspicious start to the season. Derby actually sit bottom with only one win and seventeen goals conceded. Huddersfield have already lost six games and have also conceded seventeen goals so surely a much more attacking approach and the inclusion of both pace and inventiveness should be a
