In The Garden

I

n frosty weather little can be done in the garden. The ground is too hard to dig or plant and the lawn should not be walked on. Although there is very little work to do, January ushers in the beginning of a new year that is full of promise in the garden. Despite the low temperatures and short daylight hours, there some useful tasks that can be done. If the weather is mild, you can still plant roses and bare rooted shrubs and trees. At this is time of year a heated greenhouse has great appeal, especially when the weather is too cold and wet to work outside. The warmth of a heated cold-frame or greenhouse or even a sunny indoor window enables you to sow annuals that need a long growing season and start of those early vegetable crops. Roots of favourite herbs, can also be lifted and brought indoors, to provide fresh shoots and leaves for winter flavour. Winter digging is necessary for beds and borders that need to be planted in early spring. The earlier this is done the better, allowing time for frosts to act and break down the soil. The longer any rough clods

of soil are exposed to frost, the easier it will be to get a fine tilth in spring. While digging, it is a good idea to work in plenty of well-rotted manure or garden compost at the same time, thus improving the soil’s texture and richness. If you have planted any trees or shrubs during the winter months, check that they haven’t been lifted by frost. Once lifted, they can rock in the wind and their roots will be slower to get established. Re-firm the plants by pressing down on the surrounding soil with your feet. You may also need to stake any tall or exposed plants to prevent further wind rock. If the surface of water features or a pond has frozen solid, and particularly if it contains fish, break the ice with care. If the ice is very thick, use a little boiling water rather than a hammer, to avoid shock waves which can kill the creatures beneath.

Planning Next Season’s Garden The long winter evenings provide plenty of time to browse through seed catalogues and plan new projects in the garden. Late January to early February is an ideal time to visit garden centres to buy seeds, tubers and bulbs for the coming season. If you are

LOCAL ANSWER ordering products from a seed catalogue, or over the internet, it should be done as early as possible or they may arrive too late for their proper sowing or planting dates.

Maintain and Check Garden Tools and Equipment Make sure that mechanical equipment such as mowers, rotovators, edgers, strimmers and hedge trimmers are in good working order. If any need repairing or sharpening, take them in for servicing by a professional.

hile these days it’s seen as politically incorrect to categorise certain nationalities we don’t think the Jewish community would be upset if we applauded their rather unique sense of humour. And while it’s impossible to recreate their way of actually saying things in print, it would help if you could imagine the following statements being uttered with a Yiddish accent! Very clever and very funny! ‘I just got back from a pleasure trip. I took my mother-in-law to the airport!’ ‘I’ve been in love with the same woman for forty years. SOME GREAT REASONS TO BELIEVE THE FUTURE’S BRIGHT AT BORO

W

ith early deadlines preventing me from writing this with the knowledge of anything that’s happened since our excellent win at Ipswich I’m instead concentrating on events so far that suggest we have a great deal to look forward to. Here are a few major reasons why we should all look to the future with huge optimism .... 1. While the Capital One Cup quarter final defeat at the hands of Everton was fairly comfortable for the visitors, the performances over the last eighteen months against Premiership giants Manchester City, Liverpool and Manchester United not only excited fans but showed them the potential that exists in this squad. OK, it may be different playing a one-off game to facing such mighty opposition week in, week out but we have certainly shown that if we do achieve our aim and reach the ‘promised land’ by the end of this season we don’t have a great deal to worry about. 2. Several of the grounds where we have traditionally suffered in the past have been visited and conquered this season. Sheffield Wednesday, Wolves, Nottingham Forest and Ipswich are all places where we have previously regularly floundered but the visits this time around were all successful. Karanka doesn’t believe in the concept of ‘unlucky’ grounds so neither should we.

3. After their first round European Cup performance against Stade De Reims where they came back from a deficit of 5-3 to win 6-5 on aggregate , ‘Boro’s under 19s excelled themselves with a thoroughly professional performance against Torino with a 6-3 triumph over the two legs. Harry Chapman’s wonder goal in the first leg was really special and gave ‘Boro fans hope that after creating an exceptional production line of high quality wingers the academy is now going to produce a genuine striker with great feet and an eye for goal. There haven’t been too many such home produced examples in the past so it’ll be great to eventually have one of our own scoring the goals! The great thing is that many of the players in the squad are local boys and that augers well for their future attitude towards the team they not only play for but also support! 4. At the time of writing we are the second top goal scorers in the league, yet Karanka is still checking on the availability of Patrick Bamford. Whether you agree with me that despite his goals last season he looked a bit weak at times, the fact that Karanka is still not satisfied with the squad he has and is always looking for improvements can only be a good thing. 5. The 31,000 plus for the Everton game is indicative of a gradually returning support. An average of over 20,000 this season in

LOCAL ANSWER comparison to most of last season’s gates of around 13,000 shows that many fans have already bought into the Karanka revival. The longer the team keeps producing great results - despite which I think most of us feel that they have not so far hit top gear this season yet are still up there - the more people will give their support. At a terribly difficult employment time for Teesside that is incredibly encouraging. So it’s all good news with one very sad exception..... Can I take this opportunity to wish ‘Mr ‘Boro - Alistair Brownlee - every success in his fight against ill health and hope with everyone else that his excitable and enjoyable broadcasting style is back and covering his beloved ‘Boro in the very near future. Thanks for your great commentaries so far Ally and let’s hope there are many more to come - in the Premiership, of course! And while we’re at it, let’s hope it turns out to be a Very Happy New Year for all of us.

Recipe

CHOCOLATE AND PEAR PUDDING INGREDIENTS Serves about 10 For the chocolate cake: 200 g / 7 oz dark chocolate 225 g / 8 oz unsalted butter 225 g / 8 castor sugar pinch of salt 5 eggs separated. 1 x 23 cm / 9 inch springform cake tin base and sides lined with baking parchment For the poached pears: 4 – 6 firm pears peeled 1 vanilla pod For the mascarpone cream: 2 egg yolks 4 tablespoons castor sugar 150 ml Marsala Wine 2 x 250 g tubs Mascarpone To finish: 85 g / 3 oz grated chocolate 5 tablespoons strong coffee a large glass bowl

METHOD To make the cake: Heat the oven to 150c / 130 fan / gas 2. Melt the chocolate and the butter together

in a bowl over a pan of simmering water. Take off the heat and allow to cool. Whisk the sugar and the eggs yolks together until thick, this could take 5 minutes. Fold in the chocolate mixture, using a metal spoon. Put the egg whites and the salt into another bowl and whisk till you get a medium peak, don’t let it go to dry. Fold the egg whites into the chocolate using the metal spoon. Spoon into the baking tin and bake for 1 1/2 hours. It will rise a lot then sink as it cools. Cook the pears: Put the pears and the vanilla pod into a pan that will hold them in a single layer with about 1 litre of water. Gently poach the pears for about 20 minutes until they are tender. Leave to cool in the syrup. For the mascarpone cream: In a bowl over simmering water place the egg yolks the sugar and 6 tablespoons of the marsala. Whisk for 5 minutes until the mixture is thick and leaving a trail. Put the mascarpone into another bowl and beat in 2 tablespoons marsala to loosen. Whisk in the egg mixture a little at a time until smooth. All this can be done the day before you want to serve.

LOCAL ANSWER To assemble: Spoon some of the mascarpone cream into the bottom of the bowl you are using to serve the pudding in. Cut the pears into eighths discarding the core, divide into three portions. Place one portion of pear onto of the cream layer and sprinkle with some of the grated chocolate. Cut the cake in half, it may well break up but don’t worry. It is a very gooey cake. Place one half on top of the pears, and spoon over some of the remaining marsala and a little of the coffee. Now spoon over more cream, top with another portion of pear and a grating of chocolate. Top with the second half of cake, use up any remaining marsala and coffee on the cake. Top with the remaining mascarpone cream, then with the remaining pears. Leave the remaining grated chocolate to once side to use just before serving. Cover with cling film and chill for at least 2 hours or up to 2 days. This pudding is a chocoholics dream - a great dish for a large party.
