Joyeux Noël Swing Into the Holiday Season With These Festive Cocktail Recipes From Lillet

editor's note It’s personally my favorite time of year—when there seems to be a little extra spark of joy in the air. The days are shorter with cozy nights spent at home, warm coffee drinks sipped on cool mornings and time to reflect on the past year while looking ahead to the future. And yes, we all know, what a year it’s been. In this issue of LOCALE, we present to you A SoCal Wish List, chock-full of dreamy escapes so you can start planning your much-needed 2021 vacations, staycations and weekend getaways, all while browsing holiday gifts for everyone on your list. Whether you’re searching for a glamping experience at a National Park (pg. 48), an island adventure (pg. 56) or a quaint seaside getaway (pg. 44), you’ll be making your travel bucket list in no time. ‘Tis the season for all things merry and bright! We take a look at how

local restaurants have persevered and pivoted this year (pg. 81), how to make a few festive holiday cocktails (pg. 93) and what to order from this beloved Santa Monica restaurant (pg. 86). Our cover star, illusionist Zach King (who has the third-most followed account on TikTok!), discusses how he got his start—which may involve light sabers and kittens. He has a few tricks up his sleeve while talking imagination, content creation and the future of film (pg. 32). Zach King is a man of mystery. With a handful of illusions up his sleeve for the LOCALE cover shoot at Agua Caliente Resort Casino Spa Rancho Mirage, we weren’t sure what this digital creator would pull out of his metaphorical hat. Turns out, he truly is the “king” of illusions. Under the (Cocktail) Umbrella • The team decided to try to beat the Palm Springs heat by starting off at the pool. In bright green Mr. Turk trunks and a cashmere hoodie, King lounged around with a huge smile on his face and cocktail in hand. “The direction I got from the mood board, which I loved, was very colordriven,” says wardrobe stylist Neil Cohen. “The poolside look was too cool—the clothing gave it this youthful, playful and fun edge.” Mirror Mirror • Dressed in a GUCCI corduroy jacket, King played around with three different mirrors and thus, three different versions of himself. “Our favorite setup of the shoot was the cover shot with the three mirrors,” says co-photographer Joe Magnani. “We liked that it was not only a technical challenge to shoot, but that it was a chance for us to collaborate with Zach and the staff at LOCALE.” House of Cards • With picturesque views of the desert from King’s penthouse, the team set up for the last look of the day. Building a house from a deck of oversized cards, King posed in a purplehued suit. “The ‘side stripe’ by BJ Gray was by far my favorite look of the day. FOR ZACH KING , IT ALL STARTED WITH KITTENS WIELDING LIGHTSABERS. Before he rocketed to fame as an acclaimed Internet creator, a pioneer in the art of “digital sleight of hand” and the third-most-followed account on TikTok, King was creating tutorials for the editing software Final Cut Pro.

The year was 2011; King had managed to build a loyal following on YouTube, dispensing tips of the trade in the area of visual effects. “People started asking me to make little short films before my tutorials as a demo to see...the effect in context,” says King. This particular week, the lesson at hand was a lightsaber effect, and King saw an opportunity present itself in the form of a pair of kittens his roommate had recently adopted. He whipped up a 15-second video in which the two felines engaged in an acrobatic, Star Wars-inspired battle, titled it “Jedi Kitties,” and uploaded it to YouTube. The next morning, King was awoken by a call from his parents; the video had amassed over three million views and was being featured on “Good Morning America.” Zach King had officially gone viral—and it certainly wouldn’t be the last time.

Rewind to the mid-1990s, when King was growing up in Portland, Oregon. Born to a father of Chinese descent and a half-Austrian, halfNicaraguan mother, King and his three sisters were homeschooled and encouraged to follow their “extracurricular” passions from a young age. King developed an interest in filmmaking at the age of seven, inspired by making-of specials featured on his favorite VHS tapes. “I would watch how they made the dinosaurs in Jurassic Park or how they created E.T. via animatronics,” recalls King. “The fun of making movies was the tactile element. We had a farm to play on, and I’d do pyrotechnics and explosions for my little movies.” Enlisting his sisters to operate the cameras and boom, King continued his cinematic experiments until graduating high school. He applied to Biola University’s film school, only to be rejected. He sat in on classes but felt unchallenged and started posting on various filmmaking forums. Soon, he developed

a business model to create his tutorials, setting him on the path that led to the kittens, the lightsabers and, ultimately, success. Fast forward back to 2011, where an emboldened King was pondering his next move. “The question posed was: ‘Can I do this again?’” states King. “I got into a rhythm of making a video every Friday and... that launched me into my first YouTube career path.” By 2013, King’s videos were regularly racking up tens of millions of views on YouTube, and that’s when a new platform emerged, quickly developing an intensely passionate following—Vine. King was immediately taken with the nascent video app’s “categories” feature, which allowed him insight into which niche his content fit into. Says King, “I couldn’t do comedy or animals or crafts, but...I saw this tab that said visual effects and magic and thought, ‘I can do that.’” And that is precisely what King specializes in: a synthesis between filmmaking and magic with a focus on optical illusions, drawing inspiration from early silent filmmakers like George Méliès, Buster Keaton and Charlie Chaplin. King waxes: “They were doing mattes, clones, jump cuts... those early, short nickelodeons are reminiscent of the work I did on Vine.” Indeed, utilizing Vine’s six-second time limitation to his advantage, King honed his craft and pared down his content. “It forced me to sharpen the idea,” states King. “I challenged myself to create one video per day for 30 days, and by the end of that time...I had almost as many followers on Vine as I did on YouTube.” But just as King was hitting his stride on Vine, the platform flatlined, ultimately being discontinued by Twitter in late 2016. For King, however, this came as no surprise: “There was no way to monetize on Vine...and at the time, I was building my team and hiring a staff. Snapchat and Instagram were getting big at the time, so eventually the audience just wasn’t there anymore.”

AROUND THE WORLD •In 2016, King and wife Rachel Home competed in “The Amazing Race 28,” a season specifically featuring online creators. He placed sixth in the overall standings.

It was around this time that King signed up for a little-known app known as musical.ly, which was mostly home to lip-synching videos. Though King’s clever VFX illusions weren’t exactly a perfect fit for the new platform, he was charmed by how much fun its users appeared to be having. As the years went on, musical.ly rebranded as TikTok, and it eventually became a bonafide force to reckon with in the digital arena with King leading the charge as one of its most inventive personalities. “There’s a bit of ‘early adopter’ benefit there,” admits King. “But... TikTok’s algorithm is great for letting us know which content is interesting enough to go out to more people, then expanding it to a bigger audience.”

As with Vine, King came to relish the limitations imposed by TikTok’s 15-second time limit, and its reliance on timely trends. “Sometimes it’s good to be given boundaries,” muses King. “The theme you’re creating for can be a springboard for really fun ideas.” One of King’s personal favorites of his recent TikToks employed a “Narnia effect” to transport King, as well as his wife Rachel and their two children, seamlessly from one location to another. Per King, “We start off in the living room in a blanket fort, then I pull off the back sheet, and when we go through, we’re on this mountaintop in Lake Arrowhead.” Despite resembling an impressive digital effect, the teleportation was created practically, as King built an identical blanket fort set on top of the mountain to accomplish the uninterrupted match cut. King considers this brand of project to be an extension of filmmaking, but as someone who practiced magic in high school, he can also see tendrils of that discipline in his work. “The audience will sometimes call this magic,” says King, “but I don’t know if a kid today would be able to see the difference between what I do and what David Copperfield does. It’s about the sense of wonder they get out of it.” If it seems King is interested in the perspective of his youngest fans, it’s no coincidence, as he admits that his entire creative process was altered by the arrival of his kids. “At their ages now—three and a half and two and a half—they’re starting to become conscious, and they believe all these amazing,

crazy things,” he recalls. “I really want them to believe in themselves. That sense of imagination has translated into my videos... Early in the writing process, it’s easy to say ‘no, we can’t do this.’ But having kids has allowed me to say ‘yes’...and it’s led to some of my best ideas.” Clearly, King has found an incredible outlet for his creativity on TikTok, along with nearly 100 million other users in the United States. In recent months, however, the platform has become a lightning rod for controversy over the way its Chinese parent company, ByteDance, handled secure data. Citing privacy concerns, President Donald Trump ordered ByteDance to find a US-based buyer for TikTok or face being forcibly shut down. TikTok was then spared in the nick of time after entering a partnership with tech giant Oracle and Walmart. But amidst this chaos, King remains unhindered. “I see it with tunnel vision,” he reports. “I’ve seen apps go through these seasons of controversy...but as a creator, you find ways to connect with your audience in ways that aren’t dependent on any one app.” In recent years, King has also attempted to elevate other Asian voices in the online creator community. Early in his own journey, King was taken out for burritos by famed, “first-wave” YouTuber Freddie Wong, who offered some much-needed direction along the path to a sustainable career. “Since then, [I like] finding ways to mentor people with a similar cultural background and guiding the next generation of storytellers,” states King. But what’s next for King himself? When asked whether he’d consider moving into traditional models of media like feature films, he remains circumspect: “When I got out of film school, my dream was to make something for the big screen. Now I make things for the smallest screens...the goal then was to reach the largest possible audience, and that was how it was done. The model is evolving, but what I want to do as a filmmaker is still to connect with the viewer in an emotional way.” With TikTok’s future no longer in jeopardy, and King reaching the heights of his creative powers, it appears likely that the gatekeepers of the film industry may end up needing him more than he’ll ever need them.

A Family Affair •Rosenberg grew up eating deli dishes like the corned beef hash at Sunday brunch with his family, but he says the ingredients weren’t nearly as healthy back then.

Jerry’s Patio Cafe & Bar in Marina del Rey offers hearty deli favorites, such as corned beef and pastrami sandwiches, soups, salads and cocktails. There’s the option to enjoy your meal outdoors on the expansive patio, or you can order for takeout and delivery. One of the cafe’s signature dishes is the corned beef hash, and upon taking a bite, it’s no secret why this is a crowd favorite.

As the steam rises from the freshly prepared and well-paired potatoes and meat of the corned beef hash, it feels as if it’s personally inviting you to dig in with a strongly enticing and mouth-watering first bite. The first taste of this dish is robustly comforting across all of the senses. From the hearty, fragrant aroma of the tenderly textured and well-seasoned meat to the visual pop of color from the scallions and egg yolks, it’s clear that this dish is made with great care, passion and attention to detail. This is because the corned beef hash holds a special place in the heart of the classically trained onsite executive chef Jason Rosenberg. Rosenberg explains the culinary traditions behind this dish and the importance it has in his personal background. “We braise our corned beef as opposed to boiling it like most establishments because this slowly renders the meat better,” says Rosenberg of Jerry’s cooking practices. “Every Sunday growing up, I used to go to brunch at the deli with my family, cousins and grandma, and it was a big deal— corned beef hash was definitely one of the greatest hits and part of what I ate growing up. It’s an essential ‘deli’ breakfast.” Rosenberg attributes the success of this dish to Jerry’s use of cleaner and fresher ingredients, which help keep the flavors crisp and balanced. To start, Rosenberg combines the onions, peppers, and garlic and sweats in olive oil, which he cooks until they’re translucent. He

then adds in the corned beef and potato. After that, a dollop of ketchup is added to create depth within the dish. Rosenberg himself isn’t a ketchup fan but acknowledges its significance in creating the best corned beef hash dish. “It’s like a rug—it ties the room together,” he comments on the addition of ketchup. Finally, Rosenberg adds in the brisket au jus, which he labels as a “flavor bomb,” alongside veal stock that has been cooking onsite for two days. It’s purpose is to add more body to the dish. Just before plating, Rosenberg adds a sprinkle of scallions for a pop of green. His last step is to add the sunny-side-up eggs alongside the hash. “We use cage-free organic eggs from Chino and a tuft of arugula salad with a little bit of lemon to cut through the acid. The corned beef hash is served with a side of rye toast,” concludes the chef. Rosenberg and his team at Jerry’s aim to give each customer the best dining experience possible. “Hospitality is very important; it’s the name of the game. My wife and I love adventure, travel and discovering new places and cultures. Fortunately, we have visited dozens of countries around the globe over the past decade and typically spend our free time planning our next escape. We rented a car when we landed and made the 45-minute drive south through the desert to Downtown Cabo San Lucas. We had visited Cabo San Lucas many times before but had never stayed at the Waldorf Astoria Los Cabos Pedregal, where we would be staying for the next five nights. As we listened to our navigation, we were guided on a series of lefts and rights that took us through the heart of downtown. There were casinos and nightclubs (mostly closed) along with restaurants (mostly open),

We arrived at the resort’s gate and saw nothing but a mountain. Where was the hotel? The guard checked his list, found our name and instructed us to drive through the mountain. We drove hundreds of yards through a tunnel that was lit by dozens of chandeliers. It cut straight through the mountain, leaving the city noises behind and transporting us to a side of Cabo we did not know existed. In front of us was 24 acres of beachfront property framed by the Pacific’s beautifully blue waters. We had arrived.

We had booked the Estrella Suite on the fourth floor at Waldorf Astoria Los Cabos Pedregal. Before we could checkin, we secured our masks, had our temperatures checked and then were escorted to our room, which was sealed with a notice that it had been cleaned properly according to the Hilton CleanStay guidelines. Our host made sure to point out (without touching a thing) that all surfaces had been cleaned—from the TV remote to the light switches—immediately reassuring our safety and health.

The Estrella Suite has a living room, dining room, bedroom, an enormous bathroom with a soaking tub and a private dip pool. I knew by looking at my wife that she was thinking what I was thinking: we may not have to leave our room at all. Adding to this sentiment was the fact that they offered room service breakfast in the pool on a floating raft, supplied a new bottle of tequila each day, and you could see the waves breaking on the sand from every corner of our suite. We left feeling stressed and returned feeling blessed. After six months of solitude, the Waldorf Astoria Los Cabos Pedregal proved to be exactly what we needed. We felt safe during our entire trip, cared for by the staff and cannot wait to return. We are so happy to feel safe traveling again.

GAXIOLA PHOTOGRAPHED BY: NIKI CRAM Founded over 45 years ago, ARCHPOT is a family-owned small business behind the design and creation of breathtaking fire and water features and gorgeous pottery, found in a multitude of locations around the country. “Something a lot of people don’t know, being a smaller family business, is that we are in some pretty well-known hot spots. Some of these include Hotel Del Coronado in San Diego, The Hilton Waterfront in Huntington Beach and several Islands Restaurants in Orange County!” explains ARCHPOT’s General Manager Tim Hall. An Orange County local, Hall, reminisces of his humble beginnings, detailing how the company transformed from a wholesale nursery to a highly reputable manufacturer.

Thinking back to his childhood, Hall states, “I have always been creative and originally wanted to become an architect.” After Hall and his family moved from Mission Viejo to Tustin, he began to shadow his father, immersing himself in the art of pottery creation and familiarizing

himself with the challenges often faced when running a business. “The family business started off with plants—we were a wholesale nursery. Later came the marriage of plants and imported pottery, creating Architectural Pottery in 1989,” he says. Hall attributes a lot of his creativity to others’ creations on social media. “People inspire me. I like to see what is out there, and I ask myself how I can do better. How can I put a product out there that people will want in their home or business space?” In 2019, 30 successful years later, the family decided to rebrand the company, unveiling the name ARCHPOT. “Of course, in every family business, there are challenges. Any challenge we have had has resulted in growth,” explains Hall. With the continued expansion of the company, Hall and his team are able to focus on delivering products that truly distinguish themselves from others in the market. From the material and finish process to ARCHPOT’s utilization of high-tech and lightweight cement, the company is constantly striving to create products that exemplify expert craftsmanship. Overseas Inspiration • When Hall was just 17, he took a trip to Greece where he watched handthrown pottery being shaped. It was at that moment he realized the creation of pottery was indeed an art form. In the Works • Currently, ARCHPOT is working on custom Belize fire tables for the historic Hotel Del Coronado in San Diego. “We are taking such pride in this project because of the historic location.”
