Tavern House Has the Perfect Chicken Pot Pie Recipe to Make This Weekend WRITTEN BY: DAVID WILHELM OF TAVERN HOUSE

H

Having spent 40 years in the restaurant business, I have experienced many economic downturns that have directly affected our industry, but none quite as earth shattering as the current pandemic. Having to temporarily close Tavern House has certainly been traumatic to our staff, ourselves and to our devoted Guests as we are forced to distance ourselves from each other and put our daily routines on hold.

When I saw this coming, I started thinking about finding a way of maintaining contact with our friends in some meaningful way. Not being able to serve our Guests at the restaurant, I thought about the next best thing and decided that, with everyone sheltering in their homes, even the most timid and inexperienced cooks might find themselves forced to do more cooking, either out of necessity or boredom or both. So, I am going to start posting some of my favorite ‘comfort food’ recipes simplified and designed for small batch preparation. I know not all of you will end up trying these, but for those that do, I am hopeful that you will be rewarded for your efforts. For those of you who don’t, tuck them away for the future and accept that this provides me with a chance to stay in touch with all of you until the time when we can re-open and see your smiling faces in person. Let’s all look to the time when, with a newly found appreciation for each other and for life in general, we can get back to celebrating the simple pleasures together each and every day. I thank you in advance for allowing me to come into your homes. 8 LOCALE MAGAZINE

Ingredients •1 tbs butter or olive oil •½ cup onions, diced finely •1 each large shallot, peeled and finely chopped •1 tbs. fresh thyme leaves (yes you can sub ½ tsp. dried thyme) •½ tsp. white pepper •1 tsp onion powder (don’t have it? don’t worry…) •2 tsp. kosher salt •½ cup cream sherry •4 cups chicken stock (canned works fine) •1 cup heavy cream •2 large carrots – diced into roughly ¼” pieces •2 cups cremini mushrooms, cut into quarters •2 cups frozen peas with pearl onions, defrosted •1 tbs melted butter or olive oil •1-1/2 pounds cooked chicken, cooled, diced ½” pieces •1 box frozen puff pastry, defrosted •2 each eggs, lightly beaten with 1 tbs water Directions: •First thing you want to do is make the sauce. Place butter or oil, onions and shallots in medium saucepan and sweat, stirring occasionally over medium-low heat for about 10 minutes until translucent. Add thyme, white pepper, onion powder, salt and sherry and cook until sherry is reduced by approximately half. I suggest you use a cream good sherry, not cooking sherry, as

this will ensure to impart a smooth and mellow flavor to the sauce. (I use Harvey’s Bristol Cream). Next add the chicken stock and cream, bring to boil and then, reduce heat and simmer for 15 minutes. The sauce will need to be thickened with a cornstarch slurry. Stir equal amounts of water and cornstarch together in a small bowl and slowly add to sauce while whisking. The thickness is a matter of personal preference but for this dish I would recommend making the sauce thicker than normal (think clam chowder consistency) as the vegetables and chicken will release juices as it bakes thinning the sauce somewhat. Adjust salt content to taste and set sauce aside too. •Bring a small saucepan of lightly salted water to boil and add carrots, cooking for 2-3 minutes until barely tender. Drain and reserve. Next you want to cook the mushrooms. I like tossing them in the melted butter, sprinkling with salt and pepper then roasting on a sheet pan in a 350 degree oven until lightly browned and soft. This roasting process intensifies the flavor of the mushrooms but if you’re in a rush you can simply cook them in a large saute pan tossing and stirring until browned. This Man’s Family Has Been in the Restaurant Business in SoCal Since 1923—Read His Unique Perspective A LETTER FROM RON SALISBURY

As someone whose first memories of the restaurant business date back to 1933 (yes, among those first snapshot memories, I fondly include El Cholo), who lived through all of the ups and downs that make up the rich tapestry of life, and who—until last Monday at the age of 87—was still thrilled to wake up each morning knowing the wonderful challenges of running restaurants lay before me, I suddenly found myself unemployed for the first time.

This is an extremely difficult time. Actually, the worst in my memory. But I began to reflect on other times that were also quite challenging, and perhaps sharing how I survived them and actually became stronger from those experiences will help us all realize that this too will pass…and in time, we again will grow and benefit from it. I was born in the Great Depression. I believe one-quarter of our population was without work. I learned a very

early important lesson by what my parents created at the little Mexican restaurant in a converted California bungalow on the outskirts of Los Angeles: serving the highest-quality product for only 65 cents would create long lines down the sidewalk on Western Ave every night but Monday (when we were closed). In later years, my dad, as he viewed society, would be prone to comment, “We need another depression.” As difficult as that sounded, I knew what he was referring to. One of the greatest gifts my parents gave me was how time molded them with its inherent values, which were then passed on to me. In 1943, my dad was inducted into the Army for World War ll. El Cholo closed even before that; my parents were unable to get the highly rationed products that El Cholo required, and rather than settle, they closed and lived of off very meager savings. Dad would never buy anything unless he could pay cash; their expenses were serviceable. Three years after the war, we reopened to the same long lines.

There’s no doubt that self-isolation has put a dent into our daily routines. While it’s imperative to practice social distancing right now, this can be difficult for those who seek support for their sobriety or mental health. Thanks to modern technology, there are ways to attend the meetings you need most—all while keeping yourself and loved ones healthy.

Maintain Your Mental Health • For those struggling with anxiety, depression and other mental health diagnoses, this can be a trying time. Not only are there 24/7 hotlines available for oneon-one communication, but there are online support groups as well. Depression and Bipolar Support Alliance (DBSA) offers a full schedule of online support groups for adults and young adults, and Turn2me.org is a non-political, non-religious and non-judgemental site for those seeking help with anxiety, stress management and general mental health issues. For those with eating disorders, the recent barren shelves in our grocery stores could be a trigger; fortunately, there are online eating disorder support groups like Eating Disorder Hope to help. There’s a multitude of other support channels out there, usually just a Google search away, so don’t be afraid to take a look.

Maintain Your Sobriety • Staying sober during a time like this can be extremely challenging, so don’t be afraid to seek individual or group support. Substance Abuse and Mental Health Services Administration (SAMSA) offers a 24/7 hotline for free, confidential help. If you are more interested in a virtual group setting, there are online Alcoholics Anonymous and Narcotics Anonymous meetings, among others. While you’re home, be sure that substances are removed from the space, and try to be isolated with someone (family member, partner, friend, etc) who supports your sobriety. Don’t forget to talk to your sponsor—it’s more important than ever to stay in touch.

Maintain Your Safety • While the idea of staying at home can be a comfort to some, to others, home is not always the safest place to be. If you are concerned about your safety or the safety of a loved one (two- or four-legged), call or text one of these secure hotlines for assistance:

Save Some $$$—Just Not Too Much, Our Local Businesses Need Us

[ Just by staying home every day (as long as you’re employed), you’re saving money! Think about it: you’re saving gas money by not having to drive to work, and you’re not tempted to go to lunch with coworkers––so you might as well make a PB&J at home. If we end up being isolated for a few weeks, we recommend supporting your favorite local

Whether you’re going solitaire or syncing up online with your gamer tag, there’s really no better way to pass the time than with a little friendly competition. Pour a glass of wine, put those favorite staple items in your cart and never look back. some inspiration by watching Tidying Up with Marie Kondo on Netflix, scrolling through The Home Edit’s Instagram feed or checking out the documentary Minimalism: A Documentary About the Important Things. Order bins, drawers and shoe racks to maximize space and help keep items all in one place. As you take on your closet, make piles of items that will either be donated or thrown away. Now is also the time to tackle those junk drawers, makeup cabinets and under the bathroom sink (all the areas you’ve been avoiding). Consider color coordinating your closet, books and other supplies for the ultimate aesthetic.

have some fun with your cleaning day! Blast some music, open your windows for fresh air, light a candle and put on your comfiest clothes. Start by cleaning those tough areas you don’t always reach on a weekly basis. Don’t forget the windows, cracks and crevices and inside kitchen appliances. Wash your rugs, dish towels and bedding while polishing your house!
