Sausages and Puy Lentils Serves 4
Ready in 40 minutes
If you fancy a change from the usual sausage and mash why not go Continental? Tasty Toulouse sausages wrapped in pancetta and served on a bed of flavoursome puy lentils make the perfect mid-week meal.

Place the lentils in a pan and cover with water. Bring to the boil then reduce the heat and simmer for 10 minutes.

Meanwhile, heat the olive oil in a deep frying pan and fry the shallots for 5 minutes, stirring occasionally, until just starting to soften. Sprinkle over the brown sugar and cook for a further 8-10 minutes until the shallots are golden and caramelised.

Drain the lentils and add to the frying pan with the stock, vinegar and 2 tsp of the mustard. Simmer for about 15 minutes until the lentils are just tender. Stir occasionally and add a little more stock, if necessary.

While the lentils are cooking, wrap each sausage with a pancetta rasher. Cook under a medium-hot grill for 8-10 minutes, turning frequently until the sausages are almost cooked through. Mix together the rest of the mustard with the honey and brush over the sausages. Cook for a further 3-4 minutes until the pancetta is crisp and browned.

Stir half the parsley into the lentils and season to taste with salt and freshly ground black pepper. Serve the lentils and sausages on warmed plates garnished with the remaining parsley.
Ingredients: • 225g puy lentils • 225g shallots, peeled and halved • 1 tbsp olive oil • 1 tsp brown sugar • 150ml vegetable stock • 2 tbsp red wine vinegar • 1 tbsp Dijon mustard • 8 Toulouse or chunky pork sausages • 8 rashers pancetta or smoked streaky bacon, stretched with the back of a knife • 2 tsp clear honey • 3 tbsp chopped fresh flat leaf parsley
Tip Try your local butcher or deli or visit a farmers’ market to find the best quality Continental-style sausages. If you can’t find Toulouse sausages, Lincolnshire, Cumberland or pork and leek varieties will work just as well.

Focus on Movies

AT THE CINEMA: Saving Mr Banks PG (125mins) ‘You think she came to save the children, Mr Disney?’ scoffs P.L. Travers (Emma Thompson), author and creator of Mary Poppins, to a confused, albeit shrewd Walt Disney (Tom Hanks). The majority of the audience will fall into this category, but we would be wrong. Travers’ tale of a prim, Edwardian nanny who is ‘practically perfect in every way’ is rather, as the title suggests, about ‘saving Mr Banks’. The story follows Disney’s 20-year campaign to persuade Travers to sign over the movie rights to her beloved creation. This proves to be a far from easy task for Disney as we learn, through flashbacks, that Travers’ rigidity is a psychological by-product of her past. Will Disney ever get what he wants..? Of course he will, we have all seen the perennially uplifting 1964 Oscar-winning classic which resulted. But, like Titanic or Rush (see below), just because we all know the ending, the story to get there can still prove totally absorbing. And this is. Thompson and Hanks give sterling performances; their characters lock horns during the creative process, and even before. Travers’ thawing is gradual and utterly believable, while Disney caters to her every whim. Thompson’s performance hits the bull’s eye throughout, and, when the avuncular Walt cries on hearing ‘Feed the Birds’ for the first time, the whole audience blubbers along with him. Ruth Wilson and, in particular, Colin Farrell shine as Travers’ parents, who are only seen in sepiadrenched flashback. Each has a stark effect on the young author and it is startling how she is affected later in life, for example, her hated of pears. This is one of its few drawbacks, director John Lee Hancock overuses the flashback technique, which originally works very well, quickly becomes distracting, which is unfortunate, because it is otherwise beautifully made. 4 / 5
On DVD: Rush 15 (122 mins) Formula 1 racing is not the easiest sport to make exciting on film (Sylvester Stallone’s 2001 abomination Driven springs to mind). Unless you are a regular racing aficionado, it is highly unlikely that Rush will stimulate your inner Murray Walker. If it is a worthwhile movie, however, it can do so much more than appeal to racing fans, so how does it fare? Chris Hemsworth (Thor) and Daniel Bruhl (Ladies in Lavender) take on the roles of James Hunt and Niki Lauda respectively and each delivers a sterling performance in strikingly opposing ways. Hemsworth positively wallows in Hunt’s hedonistic excess yet it never becomes boring or repetitive, thanks largely to Hemsworth’s charisma. Hunt’s easy-going attitude towards life is sharply juxtaposed with Lauda’s regimented zeal for winning. Bruhl’s wonderfully understated performance means that Lauda’s often detached personality (look out for the most un-romantic marriage proposal ever to grace celluloid) is never off-putting or grating (in fact, I defy you not to root whole-heartedly for Lauda at the end). Director Ron Howard wrings every bit of excitement and tension from the minimal racing coverage by keeping it so short. When it appears, the audience knows it must be significant to the story. Instead the majority of the film analyses who these two men were; their similarities and some of their more subtle differences. Howard crafts a film which balances itself well. Despite focussing on his two lead characters’ performances, so much else is packed in here that it almost becomes an ensemble drama (Olivia Wilde as Hunt’s wife is particularly engrossing). Special effects and make-up take on key roles during and following a certain crash… It is a good story, breath-taking in places and highly recommended! 4/ 5 36

In another of our series of articles about our local environment, Helen Long writes about her observations of nature, right here in Carryduff
No winter scene on a card or picture can possibly match the reality of walking through a frosty landscape! Strolling in Lough Moss Park on one of those wonderfully magical mornings, you can almost feel as if you were treading through Narnia. Not only are the leaves (attached and detached) wearing frostings of ice, but the little silken threads that swathe the silent trees, or drip in silver strings, help to add an extra special ambiance. When a leaf falls, it makes a clatter, contributing even more to the strangely surreal atmosphere. I think the quality of light has something to do with it as well. This can feel at least as good as the best morning of high summer. It becomes much easier to spot the birds in winter, as the trees are bare. The ones that have intrigued me most recently are the Long-tailed-tits. I had never seen any until I started walking in Lough Moss Park, and now we have become almost like old friends! They live in small flocks, and that is how I have encountered them. They are easily distinguished from the other tits by their blunt little noses and, yes, their very long tails. Their call is a repeated, high-pitched peeping sound. A friend at the RSPB, where I volunteer, told me that they poke their beaks into tiny cracks in bark and branches, to pull out greenfly and other tiny insects. The flocks gradually work their way along the trees, feeding as they go. To my mind, they seem to have a terrific social life, as they are in constant friendly communication with each other, and the members of the group can all look out for one another if there is a predator around. By the way, their nests are beautiful bijou structures, made from cobwebs, lichen and feathers. Although great-tits are probably the commonest of the tit family in the Carryduff area, you should really keep a look-out for the Long-Tailed-Tits: these adorable little bundles of feathers are guaranteed to give your spirits a lift, especially on dark winter days. Millennium Integrated Primary School would like to say a huge ‘Thank You!’ to all the contributors to our collections and fundraisers over the Christmas period. We have raised a enormous amount for several charities through collections after our Christmas Carol concert and our P1, 2 and 3 Nativities, a ‘Crazy Hair’ competition during the school Christmas dinner and through Carol Singing at Dobbies in Lisburn and at Forestside Shopping Centre. Well done to all the children and staff for the hard work they put into these events. We raised £132.39 for Food for Thought Africa, £558.75 for Marie Curie, £115.57 for Barnardos and £1414.28 for the Integrated Education Fund. 40

Millennium Integrated Primary School We started the year with a very well attended open day for prospective P1 and Nursery parents. The visitors were entertained by our school choir prior to the Principal’s address. They were then shown around our Nursery and P1 classroom and outdoor play area. It was wonderful to see such interest in our school. P1 and Nursery recently had a visit from ‘World of Owls’. They got to see owls, snakes, lizards and a Madagascan hissing cockroach! The owl that came to visit was a very famous movie star owl that has appeared in Harry Potter, Narnia and Game of Thrones. The children were fascinated by the visitors and learned that the colour of an owl’s eyes tells us if it is nocturnal or not and that its ears are beside it eyes not on the top of its head. Some of the children even volunteered to hold the Madagascan hissing cockroach.

Carr Baptist Church Celebrations
It is with eager anticipation that the members and friends of Carr Baptist church look forward to the “Opening Celebrations” planned for Friday 28th February through to Sunday 2nd March DV. The weekend will mark the church’s official return to their home on the Comber Road where there has been a major building project taking place. The refurbishing of the present sanctuary and the removal of the church hall which was the original church meeting place has given way to a magnificent suite of halls, including a minor hall along with a larger hall to facilitate the children’s and youth activities in our weekly programme. One of the attractive features in the new facilities is the “meet and greet area” where in a relaxed and informal setting you will be able to enjoy some warm Carr hospitality. The Friday evening Opening Service commences at 7.30pm with Pastor Edwin Ewart [Principal of the Irish Baptist College] as the guest preacher, others will be taking part and there will also be special praise. We are all looking forward to the occasion. The next day on Saturday morning 1st March there will be an Open House between 10am and 12noon when the community will be welcomed for Coffee/Tea and some refreshments and a look around the new facilities. The Sunday Services are as follows - 11.00am & 6.30pm. Pastor Clifford Morrison will be the preacher at the morning service and Mr Billy Patterson a well known evangelist in the area will preach at our evening service. As we approach this significant date we want to look back and give thanks to God for His faithfulness and as we open a new chapter in the life of Carr Baptist Church we want to trust God for even greater things in the days that lie ahead of us.

Anti-Burglary Advice
On a Friday morning in January the St Joseph’s GAA quiz team went to compete against 19 other teams in the Down finals of the Cumann na mBunscol quiz. It took place in Castlewellan GAA Club, and the questions challenged all our knowledge of Down Gaelic games, the history and geography of Ireland and general knowledge.
A new anti-burglary advertising campaign has been launched in the Castlereagh area urging residents to reduce their risk of falling victim to a burglar by thinking like a burglar!
Our team worked really well together, and emerged joint 2nd place winners. We were awarded lovely individual trophies, and even better, a place to represent Down in the Ulster Final of Cumann na mBunscol. What a team! We are proud of you Niall, Conor, Niamh and Eoin.

Castlereagh Area Commander Chief Inspector Derek Martin explains, “In up to 50% of all break ins reported to police, entry to the property has been gained via an insecure door or window. Experience has taught us that burglars are opportunistic criminals and if given an opportunity to strike, they will do so. By leaving doors and windows open or unlocked householders are unwittingly making the job of the burglar that bit easier.” Advertising on local bus shelters reminds travellers that they can help prevent their home being targeted by ensuring it is secure at all times. This campaign seeks to raise general public awareness around issues of home security and thwart opportunistic criminals. By thinking like a burglar and identifying any possible home security
weaknesses, homeowners can help better protect themselves and their homes." PCSP Chair Cllr Cecil Hall said, “The Policing and Community Safety Partnership is pleased to support the Police Service of Northern Ireland in enhancing public awareness in respect of domestic burglary. Reducing the fear of burglary is a task for the police and local community working together. To ensure Castlereagh remains a safe Borough to live in, we need people who live, work or visit here to play their part in preventing and reducing this type of crime”.
