It’s that time of year again: gym owners rub their hands together in glee as the entire world makes New Year resolutions to sort out their health, their fitness or their looks. But while many of those gym memberships will turn out to be expensive mistakes as the initial fervour fades, a few wellchosen gadgets could keep you on the right track all year round. Health and fitness tracking is huge in technology right now, largely because it’s still a relatively untapped market: even the bestknown fitness-tracking smartwatch, the Apple Watch, has only sold a few million units. That means there are plenty of firms hoping to win over everyone from casual dieters to mountain explorers.

The data recorded does vary from device to device and some are more practical than others - wearing a smartwatch in bed all night means you’ll have to charge it in the morning - but the insights can be useful. It seems you can barely pick up a magazine
without reading about another new skincare ‘miracle worker’, from skin softeners and beauty essences, to micellar water. Most of these are ‘nice to haves’ rather than essentials. If you are looking to up your skin care regime though, I’d recommend adding a serum. They’re more concentrated than a moisturiser, and designed to target specific concerns, from fine lines to blemishes. French brand Ekia’s Sérum Fermeté – Highly Active Firming Serum, is designed to tighten and lift skin. The ‘magic ingredient’, a tree extract called dragon’s blood sap, is said to help firm skin, smooth fine lines, increase moisture and aid skin renewal. It’s easy to get stuck in a perfume rut. Rather than play it safe with your favourite scent, why not head to a local perfume shop and try a few new ones? Ideally, spritz a perfume on a card first. If you like the scent immediately, and still do after half an hour, then try it directly on your skin. Fragrance is designed to change over time, so don’t just spray, sniff and buy. Give it time to show you what it’s made of. Van Cleef & Arpels So First (from £32) is a nice one to try. Light, fresh and feminine, it’s bursting with floral notes, such as freesia and frangipani, with a warm base of vanilla and sandalwood. Many of us are guilty of splashing out on top of the range hair straighteners and styling products, then throwing whatever shampoo and conditioner is on offer in our basket. My top hair care recommendation is to go for a gentler, decent shampoo and conditioner. Personally, I avoid any that contain sodium lauryl sulphate, as I find it leaves my hair dry and brittle. Listed by UNESCO and the New Seven Wonders of the World, Chichen Itza claims the largest Maya site on the Yucatan peninsula. From their mysterious origins around 3000 BC to the Spanish conquest in the early 1500s, the Maya were never an empire but a collection of autonomous city-states with a diverse culture and people who all left their mark across the ancient sites. Great architects, mathematicians and astrologers, skilled craftsmen, the Maya enjoyed their golden age during the classic era, around AD 250-900, though Chichen Itza continued to flourish into the next millennium and beyond as new settlers arrived. Named after the Itza tribe at the ‘the mouth of the well’, the stone city scatters its atmospheric remains deep in the rainforest. There’s much to see on its 15 square kilometres but the great stepped pyramid of Kukulcan casts its spell at first sight. Rising to a height of 24 metres, the four sides represent the cardinal points, each one with a stairway of 91 steps, the number of days between equinox and solstice. Add all the steps and one more to reach the top platform and that makes 365, the

solar year. But the magic doesn’t stop there. During the equinox, a strange zigzag shadow creeps down the north stairway and for the Maya, this was the ‘feathered serpent god’ slithering down from the sky. They were at ease with the duality of the world, life death, day night, earth sky, hence the feathered serpent and the carvings of birds alongside jaguars and snakes. ‘Clap your hands,’ suggest the guides and suddenly the echo turns into a spine-chilling squeak, the call of the quetzal, they say, the Maya’s sacred bird. The sound travels far and one can imagine the high priest invoking the gods from the pyramid, watched by the 20,000 strong crowd gathered below. But in the Maya world, religious rituals were not confined to the great pyramids. Chichen Itza boasts one of the largest surviving ball courts where warriors proved their worth, throwing heavy rubber balls through stone rings, eight metres above the ground, without using their hands. The rings were shaped like serpents, the high priest watched and on occasions, the winner would be sacrificed, for only the best should be offered to the gods. The sacred well had a similar use, a 60 metre wide
sacrificial sink hole said to be the ‘womb of Mother Earth’. The Maya’s written history was almost entirely destroyed by conquerors but stone friezes and carvings say it all. Among the many archaeological sites in this part of the world, Chichen Itza is unique for its similarities to Tula, the centre of the Toltec empire some 1,300 km away. The connection remains a mystery but both elements fuse beautifully, from the Temples of Warriors, Eagles, Venus and more to the striking complex of 1,000 pillars, the market where the slightest whisper can be heard across the square or the snailshaped observatory used to study the sky. By late morning, when day trippers arrive from Cancun, stall holders set up their colourful ware in the main alleyway, Mayan masks jostling with mini-pyramids, hammocks, silver bangles and toy jaguars which roar as you walk past. But on this vast enticing site, there’s always a quiet place where you can stretch out your hand and almost touch the past. There, nothing disturbs the peace but the occasional gust of wind or the distant call of jungle birds.

• 1 butternut squash, peeled and flesh diced • 1 onion, peeled and finely chopped • 2 garlic cloves, peeled and crushed • 1 tsp dried oregano • 3 tbsp olive oil • 200g baby spinach leaves • 250g pack fresh egg lasagne sheets • 250g ricotta cheese • 300g cottage cheese • 150g ready-grated mozzarella cheese • 25g pine nuts • Green salad, to serve
TIP Instead of the spinach you could use lightly fried slices of courgette or sliced beefsteak tomatoes.

Preheat the oven to 200C, Fan 180C, Gas Mark 6. Place the diced butternut squash, onion, garlic and oregano in a large roasting tin and drizzle over 2 tbsp of the olive oil. Season with salt and freshly ground black pepper and toss to mix. Roast in the oven for 20-25 minutes until the squash is very tender. Cool for 10 minutes. Transfer everything from the roasting tin (including any pan juices) to a food processor and process until smooth, adding a little hot water if needed to give the mixture a spreadable consistency. Steam the spinach for 1-2 minutes until just wilted. Place the lasagne sheets in a large shallow heatproof dish and cover with boiling water. Leave for 3-4 minutes to soften then lift out of the water and drain on kitchen paper. Mix together the ricotta and cottage cheeses in a bowl along with half the mozzarella cheese. Spread a third of the squash mixture in the base of a square medium-sized ovenproof dish. Top with a layer of wilted spinach followed by a layer of the cheese mixture and a layer of lasagne sheets, cutting them to fit if necessary. Repeat the layers two more times, finishing with lasagne sheets and a thin layer of the remaining cheese mixture. Scatter over the rest of the mozzarella cheese and the pine nuts, and drizzle over the rest of the olive oil. Bake for 25-30 minutes until the cheese topping is golden and bubbling. Serve with green salad.

• 140g porridge oats • 50g unsalted blanched peanuts • 25g pecans, roughly chopped • 25g pumpkin seeds • 20g sunflower seeds • 100g butter, plus extra for greasing • 80g light soft brown sugar • 3 tbsp runny honey • 75g sweetened dried cranberries or jumbo raisins • 2 tbsp sesame seeds
1. Preheat the oven to 160°C/Fan 140°C/Gas 3. Grease an 18cm square shallow cake tin and line the base and sides with baking parchment. 2. Spread the oats, nuts and seeds on a large baking tray and place in the preheated oven for 10-12 minutes until just lightly toasted, stirring once with a wooden spatula. 3. Place the butter, sugar and honey in a large saucepan and heat gently until the butter has melted. Tip the warm oat mixture into the pan and mix thoroughly, then stir in the cranberries or raisins and nearly all the sesame seeds. 4. Turn the mixture into the prepared tin and level with the back of a spoon, pressing down firmly. Scatter over the rest of the sesame seeds. 5. Bake in the oven for 25-30 minutes or until just pale golden around the edges. Leave to cool in the tin for 10 minutes, then use the tip of a knife to mark into 8 bars. Leave in the tin until cold then lift out, using the lining paper to help you. Peel away the paper and cut through the marks to make 8 bars.
TIP You can vary the nuts and fruit you add to these wholesome bars. Try different nuts, such as walnuts or hazelnuts and replace half the cranberries with goji berries or chopped dried apricots or dates.

Nature Focus In another of a new series of articles about our local environment, Helen Long writes about her observations of nature a bit further afield, outside Carryduff. This month Helen visits Ringhaddy.... Strangford lough is such a wonderful feature of our Ulster landscape that it deserves to be visited again and again. And as it is within easy reach, there’s nothing to stop us Duffers getting out there to sample its diverse delights! Let me tell you about a spectacle I witnessed, totally unintentionally, one afternoon last winter. I was heading once again to Islandhill, to walk the dogs and view the Brent geese. I was about half-way along the Ringhaddy Road, which leads directly there, when my eyes caught sight of some white shapes in a field. I realised exactly what they were, and quickly found a place to turn and park my car in safety. Then I got out, with my camera at the ready… What I had seen in the field was a large flock of about 50 Whooper swans! A real bonus, when I had only been expecting to see the Brent on the mud-flats. I went as near as I dared, but still had to use the zoom on the camera to get the photos. Any nearer and I might have scared them all away; for I had learnt my lesson from the Brent incident a couple of months earlier!!
This was a fabulous first for me, as I have never seen these birds on the ground or in the water. I have only heard their haunting calls and watched their echelons flying over, high above my head - a magnificent sight in itself! Gone are the days when I used to assume a swan is a swan is a swan! Not so. The familiar ones we see on our rivers and lakes all year are the Mute swans, with the black/red bills. These are another swan entirely, with yellow bills, every one marked slightly differently, just like our fingerprints! They are winter migrants to our shores, and fly the 800 miles from Iceland in late autumn, eventually spreading out across the waterways of Ireland, many of the Northern ones staying on Lough Neagh, near Toome. All the time I stood admiring them, they kept up a constant conversation among themselves. (If only I could interpret swan-speak, I might have learnt what they thought of Co Down!) Eagle-eyed readers looking at the group of four will have noticed that the two in the middle are juveniles (cygnets), and this must be a family group. They are very large birds compared to the dainty Brent geese! Swans figure prominently in Irish legend and folklore (cf The Children of Lir), and it’s easy to see why. They are at the very heart of WB Yeats’ nostalgic poem ‘The Wild Swans at Coole’: he described them as brilliant creatures…mysterious…beautiful. I would tend to agree!

ST JOSEPH’S PRIMARY SCHOOL Council met members of the Carryduff Regeneration Forum to hear about their plans for regeneration in Carryduff. The children were particularly interested in hearing about plans for a proposed greenway. This would result in opportunities for increased biodiversity as well as providing a safe route for children to walk or cycle to school. The members of the Regeneration Forum were keen to hear the children’s ideas on what they would like to see in the area and they were very impressed with the children’s suggestions. We look forward to continuing to work with the Regeneration Forum in order to bring about further enhancements to the local area.
McDonald’s Saintfield Road recently supported Road Safety Week by providing pupils at St Joseph’s Primary School in Carryduff with light reflectors for their school bags. Restaurant manager, Patrick Canavan commented, “Our restaurant is located along the busy Saintfield Road and we are keen to raise awareness of the importance of road safety, especially due to our close proximity to the local primary school. MILLENNIUM INTEGRATED PRIMARY SCHOOL Each child from P1 to P7 worked with our P4 teacher, Mrs Heatherington to create a self-portrait on a canvas puzzle piece. Each piece was then painted in acrylics and the puzzle was put back together. The finished wall hanging measures approx. 1.5m by 3m and has 280 individual pieces! It is now hanging in the entrance hall at Millennium. Can you spot anyone you know?!

Jack Hutching, one of our P4 pupils, recently took part in the Jaffa Cake Mini Mud Madness in Portadown. Jack ran a 1km obstacle course in the pouring rain through muddy ditches and other obstacles. Jack was trying to raise money for Action Cancer and was delighted to be able to present a cheque to them for over £500!! Jack’s mum Lisa has also being doing voluntary work with Action Cancer and is very proud of her son’s efforts. Jack says he decided to do the run for his mum who recently went through treatment for cancer. Well done Jack, we are all really proud of you at Millennium too!

CARRYDUFF KARATE-DO AT LOUGH MOSS Brunton Cup success for Lough Moss Karate-Do kids who lifted a total of five medals, including two golds, in this tournament. Of the numerous clubs competing in this NI Karate Board sponsored event for children under 13, Lough Moss was ranked third in the overall medal listings table. A fantastic achievement!
