The Good Old Ways. Don Gambero was established in 2015, but in four short years it has inherited and successfully passed on the long tradition of Sicily’s sailors and fishermen. Don Gambero tells a story of love and respect for Sicily, its land and waters. The central characters in this story are real people, who have always handed down the tradition of an authentic, responsible model of fishing. The story of Don Gambero has many nuances, but just one colour.

A contemporary tradition. We are from Mazara del Vallo, a fishing village that embodies the identity of Sicily in a product found nowhere else in the world, which has, over time, become an icon of authentic flavour: the Mazara Red Prawn. Here, we have inherited this dish as an art form to be defended and handed down to future generations.

In Japanese, “umami” means “savoury” and is one of the five fundamental tastes perceived by receptor cells in the tongue. Umami actually indicates the flavour of glutamate, which is particularly concentrated in foods such as meat, cheese and other protein-rich ingredients. Glutamic acid is believed to be involved in cognitive functions such as learning and memory.
Umami from Sicily. One distinctive characteristic of Mazara del Vallo Red Prawns is that the eggs are in the head, and not in the belly. What was once considered a flaw has over the decades revealed itself to be the true winning feature of this delicious product. Our prawn is a rare experience for the palate, to be enjoyed “raw�.
A veritable explosion of taste and that primordial flavour of the sea that extends far beyond the Mediterranean to reach the Far East, earning itself the title of UMAMI of Sicily. When it is cooked, however, magic happens: the black head full of eggs takes on a fluorescent red hue.
