Me trying to make pizza for the first time. My mom at the phone was begging me not to make a mess in her kitchen.

Since I have always been better at telling the story of me making pizza than actually making it I decided to put it into a sort of proper book. Trough these illustration, pages, and detailed explanation I hope you can learn how to make a great pizza or at least how to show off your fake skills at parties. Now open a beer and start making your first pizza!

SHOPPING LIST

Oil 3 teaspoon Salt 1 teaspon Flour 400 gr Instant yeast Passata 1 Can Mozzarella 300gr Warm water 250 ml Oregan your choice Basil a few leafs

IMPASTARE LA PASTA

Add a bit of water and start making tiny circles with one finger inside the crater. The flour will start to fall into the water. Keep adding water and mix until the flour is completely soaked. Try to use all the 250ml of water. Once there is no more powder on the table and your hands are stuck into a “scary blob� keep mooving untill it gets friendlier.

Find a flat, smooth, empty space: Imagine you are scientist making a experiment. Start mixing one teaspoon of salt and a package of yeast in 250 ml of warm water. Place the glass in a safe place and prepare a little vulcano out of flour. Fill it with oil.

WORKING THE DOUGH

The moovement is simple: push with your strong hand, shape it back as a ball and repeat. Keep going until the dough doesn’t seem so stiky anymore. Now spread a bit of flour in a bowl and place your ball inside of it. Cover with a towel and leave it rest in a warm place for at least one hour.

The more you work it, the better will taste. If you ask my grandmother how long she does that she will look somewere up looking for a clock saying -Eh, more than fourty minutes! -. 8


A cut over dough surfaces will show how the leavening process is going. Someone says that it is just to make yeast work better and someone says that it is to bless the bread.

TOPPINGS

Potatos can be boiled and they will get a nice crust in the oven. I love fried zucchini on my Margherita. Fishes needs to be killed if you want them to stay on the pizza. “Touch“ broccoli with boiling water.

Cook it first! As you will see pizza cooks pretty fast and most of the toppings would be raw if you don’t cook them before. 10

MARGHERITA

Cherry tomatoes needs to be fried gently for about 20 min with garlic and oregan. Cooking they will lose part of the water and be ready to be put on a pizza without soaking the tike. 12


Cutting cherry tomatoes it’s a surprisingly popular topic over the internet.

Open the passata and put it in a bowl together with 2 spoons of oil and Oregan. Mix it untill it looks uniform. Cut the mozzarella and place it in a bowl.

Mozzarella is not a popular topic over the internet atm.

America eats 100 acres of pizza a day (e). Saturday night is the most popular time for pizza (c). In 1999 a popular pizza producer wanted to engrave his logo on moon’s surface (a). In Alaska exists a pizza place that delivers by plane (b). “Pepperoni” is the world most popular pizza. In italian pepperoni means pepper (d).

The word pizza exist since 997 DC! Omero talks about bread made dishes in his poem Iliade (f). These bread dishes were progenitors of the today’s pizza. Kids between 3 and 11 y/o prefer Pizza over every other food group (g). 14

Grab the dough, work it to make it compact again and divide it into three balls of the same size. Put a tiny bit of oil on a piece of baking paper and smash the first ball on top of it.

Press it from the center to the edges. Sometimes it takes a while because it seems like it refuses to lay down. Drop the passata and spread it making circles with a spoon. 17


THE OVEN

Unfortunately at home this is not possible. You can still make an amazing pizza though! Let your oven reach the maximum temperature available and cook the pizza for 8 mins in the middle. Take the pizza out, add mozzarella and put it back for 2/3 more minutes under the grill.

Almost half the weigh of the dough is water, which will leave the pizza during the cooking. The pizza you have at the restaurant cooks 4 minutes in a 460 C째 oven! At such high temperatures water turns into steam so fast that litterally inflate the pizza.

Stuff gets really hot, be careful!
