Art enthusiasts gathered at the Conexus Arts Centre on May 15 for the first of three days of ReginArt. The event brought together eight internationally acclaimed Saskatchewan artists to showcase the diversity of their work. One of the objectives of the event was to actively engage the public, to open conversation between artists and those who may be considering an artistic career path. Artists were on hand to discuss income possibilities, the various forms of art being created and the personal fulfilment an art career has to offer. An edgy restaurant turns Regina dining on its head By Natascia Lypny Chef David Straub slides a plate onto the bar. It’s stacked with a chorizo, logo and tasso with corn tortilla chips, BBQ sauce, queso ... and crispy pig ear cracklings. His staff, two rows deep and shuffling to get a taste like eager animals, dive in. “It’s a tasting, not a feasting,” David has to remind them. On this recent Wednesday, Flip Eatery and Drink has closed early, its shades drawn across the floor-to-ceiling windows looking onto Hamilton Street. The team has assembled to salivate over a new menu’s fantastical, creative and obscure offerings. The menu changes with the seasons, challenging Regina’s relatively tame culinary scene every spring, summer, fall and winter since 2011. Behind the food is a Saskatchewan farm boy who, as one Flip owner described him, has a creative mind “bigger than the world.” ■ ■ ■ ■ Flip opens at 11 a.m. weekdays. By noon, the tables are buzzing with downtown Regina’s business crowd in suits and dresses, soaking up the scents emanating from the exposed kitchen behind the bar. Reservations are recommended. The open kitchen “keeps us honest,” David says. “It also keeps us accountable: you can’t swear; you can’t curse; you can’t throw things,” he jokes. As a customer, all the dishes you didn’t order slide past your nose, and you make a mental note to return — soon. In its short life, Flip has skyrocketing to the top of the most popular eateries in the Queen City. Even an E. coli outbreak in 2012 that shut it down for nine days didn’t scare people away for long. (The source was never determined.) The same year it won Prairie Dog’s best new restaurant award and last year added best business lunch, best meal presenta-

tion and best chef. Its menus have also netted David a spot in the illustrious Gold Medal Plates culinary competition in November. Flip’s conception was a case of the pieces just falling together. The owner of Avord Tower, whose
ground level houses Flip, Salt Food Boutique (a specialty grocer) and Atlantis Coffee, was looking for a business to fill an empty space on Hamilton Street. He sought advice from Tim Martin and Abbey Dolney, the couple behind the popular café.
Martin knew David was looking for an “appropriate outlet” for his cooking. Flip went through a handful of imagined incarnations before its doors opened. The name comes from an initial plan for a burger joint.

Then came the idea to “flip” the menu at night by offering entree versions of lunch items. It ended up serving what David calls North American comfort food, with a twist, of course — many of them.

■ ■ ■ ■ David, 35, was born in Pense, a village of 500 a half-hour drive west of Regina, on a grain farm that’s been in the family for generations. He is the second youngest in a family of four, all others sisters. As a child, he would play G.I. Joes with his “neighbour” — the kid living on the nearest farm some five kilometres away — then they would return to his place to bake cookies. David’s farm upbringing would seep its way into his approach to cooking. It would also threaten to wrench David away from his culinary career before it even began. ■ ■ ■ ■ Rabbit is the star of this menu, explains David, a self-labelled carnivore. It’s also the cutest of the meats, quips one of Flip’s 17 wait staff as their chef
whips out the next menu item for sampling: rabbit fricassee. Roasted rabbit saddle features as well. David strives to use every part of an animal in his menus, for sustainability reasons but also to lure people’s tastes away from the expected: the chicken breasts, the steaks, the fish filets. He’s also adamant about making all ingredients in-house (except for bacon, which requires too much space). Salt, a 400-square-foot boutique around the corner on Victoria Avenue, sells cured meats, pickled vegetables and condiments. It opened in June 2013 as a natural extension of Flip: eat at the restaurant, then find elements of your meal at Salt to enjoy at home. Its newest product, homemade ketchup, is sold in hexagonal bottles that will also appear on every Flip table. “I’m obsessed with making sure we make our own product,” says David. Continued on Page 8

As the new dishes trickle out from the kitchen, David walks his staff through every meal in minute detail, from the ingredients and possible dietary concerns to recommendations of how to tackle eating some of the messier concoctions, like a creamed corn on the cob. Staff have been provided with a packet of information to study (a quiz will take place a week later) that details, among many things, the health benefits of rabbit. “People are here because they’re interested in what we’re doing,” says Jackie Straub, David’s wife and business partner, “and they want to learn something new and something that they haven’t seen before.” As the long evening continues, the staff get distracted and weighed down by food. David tries to keep their attention with a stern but nonintimidating plea. “I give people chances and I’m a pretty easygoing boss,” he says. “I make it fun. I make them want to be here.” ■ ■ ■ ■ David’s first experience in a kitchen wasn’t whipping up dishes but washing them. In 1997, his parents insisted he get a “real job” during the farming off-season. One of his sisters was working at Danbury’s, a restaurant that occupied what is now Crave on Victoria Avenue, a hop and skip from where he would open Flip. “My first impression of him was that he probably shouldn’t be washing dishes,” said Jody Wolford, who worked there as the head chef. Wolford said David expressed an interest in the food side of the business from the get-go. It wasn’t long before he asked for a promotion to line cook. Midway through his time at Danbury’s, David enrolled in cooking school at Camosun College in Victoria, B.C., where he would pick up traditional French techniques. Back at Danbury’s, he absorbed leadership skills from Wolford — authoritarian yet relaxed. Despite his ambition, Wolford would lose David for months at a time when he returned to Pense to help during the planting and harvest
seasons. He was torn between the expectation that he would one day run the family farm and his passion for cooking. Four restaurants later, cooking triumphed. At 23 years old, David moved into a head chef position at Pasta Prima, which was opened by his friend John Kessler. It was there he would meet Martin, who was working as a waiter. Martin illustrates David’s cooking evolution over the dozen years he’s known him as the difference between chopping an onion for the first time to the umpteenth time. “You’re still cutting an onion but it becomes so much more refined.” Two-and-a-half years later, David opened Mojo, which allowed the fledgling chef to develop his own culinary style and to acquire business skills. “As a chef, you love and care what you do but as an owner there’s another level of responsibility that you have because it is your baby and you want to see your baby grow,” he says. That doesn’t mean David was cautious with his menu choices. He began curing and exploring different cuts of meat. He also pushed his diners to chow down on inventive fare. “I kind of had free reign on doing whatever I wanted to do and people were very receptive of it,” he says. “It was maybe a little ahead of its time for Regina, which I think is good.” But David would have to yank back on his adventurous taste when he reconnected with Kessler to open Bocados. Its family Italian restaurant vibe meant “You had to show a lot of restraint in making menus.” It did serve to bolster his managerial side and brought David one step closer to Flip. There, he met his future wife, who was working as a waitress. “He was always a good leader,” says Jackie. “You didn’t want to make a mistake, but it wasn’t because he was going to tear a strip out of you, it was because — well maybe in my case because I had a crush on him.” The pair tied the knot in July 2013. Jackie works as a business manager at Flip, and still crushes on the chef.

In Regina, where many meals are served on eyeball-popping-sized plates delivered to tables in booths, Flip’s three walls of windows and open layout initially caught people off-guard. “I think that was kind of a testament to how old-school the mentality of Regina was,” says Martin. One of the most frequent comments the restaurant receives is that clientele don’t feel like they’re in Regina when they eat there. That’s particularly true Thursday nights, when Flip is one of Regina’s few downtown establishments that’s open until late: food is
served until 1 a.m. and you’ll only be kicked out one hour later. As with its menus, Flip’s schedule is trying to reinvent what downtown Regina’s culinary scene could be. “We started a conversation, is what I think really happened,” says Martin who, like Wolford, paints Regina as a decade behind other Canadian cities in terms of culinary trends. He says Flip has brought Regina diners out of their comfort zone and raised their culinary expectations. “The more places that are doing their own thing the better and the stronger our culinary community is going to be,” agrees Jackie. The Flip team will be building that community in the fall, when the foursome plans to open a brew pub downtown. “Whether Regina was ready for it or not, we’re here,” says Martin, “and Dave’s in their face.” nlypny@leaderpost.com twitter.com/wordpuddle

A decade of fiddling
The Saskatoon Fiddle Orchestra’s 10th anniversary concert is May 24 at Saskatoon’s Broadway Theatre and will feature new songs, performances by fiddling legends and dancers. QC PHOTOS BY GORD WALDNER
By Sean Trembath It started with two friends who shared a love of fiddle music. Marielle Gauthier and Peggy Slater-Johnson were just looking for some other people to play with. Now the Saskatoon Fiddle Orchestra is gearing up for a celebration 10 years in the making. In early 2004, the two placed an ad in some local newspapers looking for fiddlers who might want to play in an orchestra. They invited anyone interested to come to a first practice in Peggy’s living room. “We had no idea what kind of pickup there would be. We said, ‘It’s just going to be you and I.’ Then we saw people coming in,” Marielle says. They drew a total of eight people to that first rehearsal. Experience levels varied, and at first, it was tough to even find things to play. “Even trying to find fiddle music for an orchestra to play was a challenge,” Peggy says. She managed to find a few pieces on the Internet, and they were off.
The Saskatoon Fiddle Orchestra was started by Marielle Gauthier and Peggy SlaterJohnson. It quickly grew to a large group.
The rehearsal went well. Within a few months, word of mouth had ballooned their numbers to 15 fiddlers. The living room wasn’t big enough any more. They even played a few shows that first year, although looking back, the two laugh about them. “We had no idea what the heck we
were doing,” Marielle says. Even so, they knew right away the orchestra was here to stay. “To me, it’s just great seeing people listening to the music, clapping along, maybe dancing,” Peggy says. Things have changed, and the group has evolved. As the years went on, the orchestra grew, their annual
showcase concert got better and better. They’re now up to 24 fiddlers and six backup musicians. “We raise the bar every year,” Marielle says. As they played for more and more people, and recruited new fiddlers, they saw firsthand the amount of love Saskatchewan has for the style of music. “Before we started the SFO, I didn’t really hear about fiddlers. I was not immersed in the fiddle world. But it exists,” Marielle says. For the 10th anniversary, they’re going bigger than ever before. The show, on May 24 at the Broadway Theatre, will feature Metis fiddling legend John Arcand, who was awarded the Order of Canada in 2008, and Everett Larson, a longtime fiddle player, composer and teacher. The program will feature some songs they’ve been playing for years and others that are brand new. “There’s certain core pieces that we always play, because we know they’re fiddle favourites. We try to
bring in some music some other cultures. Then we also try to bring in some music from other composers, that really aren’t as well known,” Peggy says. They’re also bringing in dancers from several local groups, something Marielle is especially excited about thanks to her experience in FrenchCanadian dance being what got her into fiddling in the first place. “I always thought they sounded so good, and I always said I wanted to learn how to play French-Canadian tunes on the fiddle,” she says. To top it off, the orchestra will be releasing their first ever album, a collection of recordings from their past three annual concerts. Keep your kids writing — and thinking — this summer (NC) — Earlier this year, a letter sent by a child to the LEGO toy company went viral. Seven-year-old Charlotte complained about the lack of opportunities for the LEGO girls available at her local toy store. She noticed that the girl figures only visit the beach and the shops, while LEGO boys have interesting jobs and even save lives. LEGO wrote back, adding to the story’s viral appeal and confirming for Charlotte that her questions were worthy of a response. Why are we so pleasantly surprised when a child chooses to speak out? Children have a built-in sense of what’s “fair” or “unfair.” Email, Twitter and Facebook provide endless opportunities for any child who can spell to ask questions of companies, organizations and governments. Here are five ways to get your children thinking (and writing) about fairness this summer. Help them feel heard: If a child feels something they see is unfair, encourage them to share more about their feelings. It doesn’t have to be global warming. Charlotte’s concern was simple, personal and right in front of her.
Ask them questions: Don’t end the conversation with “Yes, that’s sad.” There are many things to wonder about together. “I wonder who made the decision for this to happen?” or “Who do you think is hurt by this?” are great ways to keep them thinking. Encourage them to write: Some questions you can answer; others you can’t. Help your child figure out who would be best to write to. Is it a toy company, a company that’s polluting the lake, or your municipal government? Praise them for speaking up: Writing to a group of unknown adults can take courage, and your child deserves praise for taking the leap. Broaden their horizons: Share ageappropriate news stories and issues with them. They may develop an interest in helping threatened animals (www.worldwildlife.org) or children who work to make our clothes or chocolate (www.nochildforsale.ca). Decreasing family screen time (MS) — Smartphones and tablets appear to have staying power. The Pew Research Center confirms that smartphone penetration has surpassed the 50 per cent mark among mobile subscribers. Many others are routinely using tablets to access books, television shows, movies and magazines. In multi-screen homes, televisions are still king. According to a 2012 Nielsen report, the average American over the age of two spends more than 34 hours a week, or more than four hours per day, watching live television. Those findings should raise an eyebrow, as health experts warn that excessive screen time can be hazardous to one’s health. A sedentary lifestyle spent in front of computers and video game consoles contributes to poor health. Of the leading industrialized countries, the United States has the highest obesity statistics, and Canada is not far behind. Obesity can impact cholesterol, cardiovascular health, risk for Type 2 diabetes and risk for stroke. Excessive screen time can lead to sleep and eating disorders, interfere with a person’s ability to focus, and negatively affect a person’s performance at school or work. Getting a family active and reducing time spent in front of a screen can have profound effects, and reducing screen time doesn’t have to be difficult.
• Gradually implement changes. Families immersed
in electronic devices can cut down on screen time slowly and over the course of several weeks rather than tuning out cold turkey. Start by reducing time spent watching television or playing video games by one hour per week, and gradually reduce time spent devoted to such activities in the ensuing weeks.
• Hide devices. The mantra, “out of sight, out of mind”
can work with respect to digital devices. If tablets or smartphones are tucked away, family members may feel less inclined to reach for them at any given time. Just as you wouldn’t stock your pantry full of fattening foods while trying to lose weight, don’t make digital devices readily available throughout the day.
• Keep televisions out of the bedroom. Children who
have televisions in their bedrooms tend to watch an additional 90 minutes of programming per day than those who do not have televisions in their room. Keep the television in a shared area of the house so that time spent watching the TV can be monitored and adjusted.
• Establish guidelines. Set firm limits on how much
screen time will be allowed per day and stick with it. Adults can lead by example.
• Plan more family activities. Boredom can easily give
way to time spent fooling around on the Internet or channel surfing. Parents should have a cache of ideas at the ready that promote active family time. Neighbourhood walks or tossing around a baseball in the yard are enjoyable activities that cut back on time spent being sedentary. Encourage indoor activities, such as puzzles or board games, if the weather is not cooperating.
• Be steadfast. Do not throw in the towel too soon.
Families should stand their ground when attempting to decrease their screen time in favour of healthier activities.

First-time camping basics (MS) — The Outdoor Foundation reports that roughly 40 million Americans go camping in a given year. Typical campers go on five camping trips per year, travelling an average of 191 miles from their home to the campground. Campers include friends on their trips 70 per cent of the time, and hiking is the most popular camping trip activity. Camping is a popular activity, but many curious would-be campers do not know where to get started. It can be tempting to purchase all of the gear needed and trek out in the woods to give it a try. But if camping is not all you expected it to be, you have just made a costly investment in a lot of equipment you are unlikely to use again. Instead of jumping right in, first try to learn as much about camping as possible. Do your homework, learning about various camping styles and which ones you prefer. Does the idea of renting a recreational vehicle sound more inviting than sleeping in a tent? Would you prefer a campground with showers, toilets and other amenities, or is roughing it in the great outdoors more appealing? Once prospective campers are able to find their camping path, they can explore all of the possibilities and give it a trial run.
Test the waters There’s bound to be a camping enthusiast in your midst. Find a friend or family member who enjoys camping out and find out if you can join him or her on his or her next trip. Take advantage of this person’s supplies (you may need to purchase nominal equipment, such as a backpack and sleeping bag) and expertise. Such trips can provide some firsthand experience, and friends can offer advice on the keys to successful camping. It is generally easier to learn the ropes from someone who has experience choosing campsites and pitching tents, and this person also can offer suggestions about gear.
How rugged are you? The definition of camping varies from camper to camper. For some, camping must include sleeping on a bedroll strewn out under the stars, while others may appreciate a few more luxuries on their camping excursions, like the running water or equipment offered at a campsite or park. Still, others do not want to leave the perks of home at home, preferring the comfortable
living of a recreational vehicle. Nothing can end a camping excursion more quickly than discomfort and not enjoying the experience. It is better to figure out in advance just how rough you want things to be.
Rent before buying Rent camping equipment to test out the gear you have in mind. This will give you an idea of everything from the sizes of tents to the type of cookware you may need. Renting is a less expensive approach for those who plan to camp sparingly. If your first trip inspires a genuine love of camping, then you can purchase equipment. You can always begin with the basics and then expand as you find new gear that will enhance your camping experiences, asking camping enthusiasts and experts for recommendations on everything from gear to campsites and more.
Pointers for beginners The first time you go camping on your own you will likely be a bit nervous. When looking for a campsite, find a level ground that is high up. You do not want to be rolling down a slope or find that the tide has come in and you’re now floating inside your tent. But choose a spot with a nearby water supply, as well. You will need it for cooking and cleaning up. Water is heavy to carry, so you do not want to have to transport it too far.

Never light a fire inside of your tent. Keep the fire for cooking and warmth away from sleeping quarters for safety’s sake. Carbon monoxide can build up quickly, even inside a ventilated tent. Never leave a campfire burning unattended. A campsite with a mix of sun and shade will help you feel most comfortable. Spending several hours in the blazing sun can compromise your energy levels and put you at risk for dehydration. It is a good idea to have a way to get out of the hot sun. Overhanging tree limbs also may buffer the tent from rain. Food storage is another factor to consider when camping. You will be outdoors where wild animals reside, and a campsite can attract anything from small rodents to larger predators. Food should always be stored in insulated coolers that are not easily opened. Keep the food away from the tent so that animals will not rummage through sleeping quarters for snacks. Store garbage off the ground and out of reach of many animals. Dispose of garbage properly, ideally in covered trash receptacles. Animals accustomed to campsite food may be more daring than you would otherwise expect, so do not feed wildlife, and keep food and trash out of reach. Camping is a popular pastime and an activity tailor-made for warmer weather. But beginners should learn the ropes and test their equipment before investing too much time and money.

They will be able to find out which parks have campsites that are ideal for them.” Parks Canada also features a selection of practical videos that are easy to share on social media, where you can determine the equipment that will be necessary and the clothing recommended. You can also learn how to store your food to avoid night-time visits from small animals wanting to taste your latest culinary creation. On the topic of food, Learn to Camp offers full meal ideas that are as simple to prepare as they are delicious. “Since the launch of the app, our greatest success is undoubtedly the muffin cooked in an orange peel over a wood fire. Easy to prepare, it will appeal to children and will be a perfect snack for your hike,” added Tarasoff. How to increase cycling stamina (MS) — Cycling is a great recreational activity and a fun way to stay in shape. Some people bike to work to save money and reduce fuel consumption, while others ride to give their bodies a demanding cardiovascular workout. Whether a cyclist aspires to compete in the next Tour de France or wants to keep things a little more local, taking steps to improve stamina is a great way to make the most of a bike ride. Riders who improve their stamina will likely witness marked improvement in their cycling performance as time progresses. Stamina is the body’s ability to endure extended periods of exercise. For example, a person who is new to physical activity may tire after a relatively brief workout. However, the more that person exercises, the more he or she builds strength and stamina, which will lead to longer workouts. The same thing applies to cycling. At the beginning, cycling more than a certain number of miles may be difficult, and changes in terrain can make things even more challenging. By following a consistent training regimen that builds stamina, cyclists will refine their performance and push their bodies further. Increasing cycling stamina is not necessarily about making the legs stronger, although that will help. Increasing cycling stamina involves getting your body acclimated to regulating energy exertion so that it will not get fatigued early on. Anyone who has to exercise for long durations, whether hikers, marathon runners or triathletes, will train to develop stamina. For cyclists, here is how to begin.
• Throw in a long ride once a week. Schedule a weekly
long bike ride, perhaps two to three hours of sustained riding, to challenge your body. Concentrate on the time spent riding, not necessarily how fast or hard you’re riding. According to John Hughes, director of the Ultra Marathon Cycling Association, you can gradually add more long rides as you become more comfortable.
• Train with others. Riding with others can keep you
motivated and provide a healthy dose of competition to push you further.
• Take care of your body. Trevor Fenner, co-founder of
Road Bike City, says you must pay special attention to your dietary intake to improve stamina. You may need to increase carbohydrate intake, and staying hydrated is essential. Eating pieces of banana or energy bars while riding may also help sustain energy levels.
• Plan for rest. Injuries can result when you push your
body too far. Have days during the week when you rest and recuperate. If you ever are weak or in pain, stop cycling and take time to recover. These tips can be heeded by riders of varying abilities, whether you are training for a race or simply want to get more out of recreational cycling.

Make your next movie a comedy (NC) — Watching movies that make you laugh is actually good for you. Stress experts are chiming in on the positive health benefits of laughter – and as it turns out, a good two-hour movie, especially if you’re sharing the comedy with others, may be the most upbeat and enjoyable therapy yet. We all know how we feel after a good laugh. There’s the emotional pleasure of having fun, especially at someone else’s expense. Laughing also causes positive things to happen in our heads and bodies, such as reducing stress hormones and increasing our level of endorphins, which help build up immunity to disease. Funny moments are also worth sharing with friends and family. Putting everyone around you in a positive mood reduces their stress levels and creates an atmosphere that is friendly and enjoyable. You actually get a physical workout, as well, when you laugh. Not only do the muscles in your face get exercise,
but you’re also benefitting your heart and breathing. Laughter takes our minds off negative emotions – and it even gives our abs a workout. Did you know, however, that we don’t get enough laughter in our dayto-day lives? Researchers have found that an average adult laughs as little as 15 times a day, which is extremely low on the humour meter. Lost Math Skills This Summer? Don’t Count On It. Keep math skills sharp this summer with Oxford Learning
The concept of summer learning loss is not new— decades of research and studies have shown that students who don’t participate in some form of knowledge acquisition over the summer lose academic momentum and put themselves at risk of falling behind and widening the achievement gap. While summer learning loss has been shown to affect all areas, math skills are the hardest hit. For the most part, students will have some exposure to reading over the summer break, but not all students will have occasion to continue to develop their math skills. In Canada, math continues to be one of the toughest subjects for students and parents alike. International testing shows that Canadian math performance is dropping, and attempts to bolster students’ overall math scores with new approaches to curriculum are failing. Parents are signing petitions and spearheading campaigns to opt out of standardized math instruction and avoid the too-familiar math homework battles that affect households across the country. Math literacy (also called numeracy) is made up of many concepts, and it takes years to be able to understand and use these concepts effectively. If students are weak in

the basic concepts—addition, subtraction, multiplication, division—the chance of them becoming strong in the more complex concepts is very slim. Math is also cumulative: one skill building on the concepts of the previous one, so if students have a weak understanding of one concept, that uncertainty will follow them as new concepts are introduced. The summer break adds to the problem by causing students’ understanding of math concepts already understood to weaken. However, by simply maintaining academic momentum and continuing to develop math skills over the summer, students can easily reverse this problem. According to Janet Klassen of Oxford Learning Regina, students need to stop thinking of math as something that they will only use in the classroom. “Math is everywhere and it is used in everyday life from cooking, to fitness, home décor, landscaping, nursing, driving, even art.” She also recommends that students take a course over the summer months to help them maintain their skills and catch up, or get ahead for next year, while developing math literacy outside of a formal learning environment.

Painting, pottery, photography, glass blowing, metal sculpting, flame working, quilting, wood carving, dollmaking, stained glass and art restoration will all be represented. Weston says the on-site demonstrations offer educational opportunities for young and old alike. “It’s quite magical to watch glass blowers and sculptors at work, for instance.”

Buried secret can change relationship’s balance Q: We’ve been married for 18 years with one child. We’ve not had sex for 10 years. I’ve accepted her disinterest as low libido, which she doesn’t care to change. We’re otherwise a very normal couple, active in our own fields, and compatible together. My wife’s away for awhile, and I did some spring-cleaning. I stumbled upon explicit letters and cards she’d received when in a relationship 10 years ago. They were kept in an old shoebox in our attic. My heart wants to confront her when she returns. My head says to let it pass as I’ve seen no signs of that relationship continuing, and our life continues smoothly. Do I follow my heart or my head? Torn Inside Out A: Since you’ve managed without sex in your marriage, you may feel you can continue this way without further discussion. However, I doubt it’s possible, especially now that a whole new factor has emerged. Yet, as you likely suspect, confronting her will blow away the placid belief that this marriage is “very normal.” It’s not uncommon to have sexual issues in a long marriage, but it’s not healthy to bury them. Unless you’ve had affairs yourself, you’ve sacrificed having “normal” sex for years. Meanwhile, your wife has carried this secret and perhaps felt guilty about it all this time, causing her withdrawal from physical intimacy. Or, she has sacrificed too, and lived silently sad over something she couldn’t reveal, lest she hurt you and rock your mutually maintained stability. I believe you need to know the answer. If you do confront her (gently, and with compassion, since this is so long ago) and if you both still want to stay together, be prepared to seek marriage therapy to help you two adjust. There’s even the possibility that this buried past can bring you closer, through new understanding and honesty. Q: I’m a gay man, 53, with a partner of 12 years. For several years, our sex life’s been infrequent — he doesn’t appear interested, though I’ve asked for more frequency. A year ago, I received a thank-you on our jointly owned company Facebook page “for a great time.” Not recognizing the client, I inquired what he enjoyed the most. His reply: “Kissing you” and “your” great body (my partner has that). It was apparently a one-off between them. Recently, when home alone, a hand-written note appeared. The writer indicated he’d already visited our home and thoroughly enjoyed what transpired. He’d soon park nearby,

and if available “I” was to wave him in again. When I saw the note, no car was parked nearby. But he’d added he’d be parked there again at a specific time, and described the car. The following night, that car repeatedly cruised our house before driving off. My partner won’t discuss anything he refuses to deal with. I need more factual evidence before I jump to conclusions or instigate something I’ll later regret. Any advice? Confused and Hurt A: Decide ahead just what you want, e.g. to stay together even if he denies and cheating continues? Or, to break up unless he ends trysts with strangers (risking STI’s for you both)? Or, a better sexual relationship together, with no tolerance for straying? My point: If you don’t know what you can or can’t accept, you’ll get no satisfying response, just more hurt. Think it through, and then show him the note. Say what you want AND where you draw a line in the sand. Q: How do you know when it’s really love you’re feeling, or just the high of having great sex? Crazy For Him A: You can tell more about your own feelings when the “crazy” starts to normalize. That’s when you’re no longer in the early stages of passion — when you’re cancelling meetings, and friends you used to see, and rushing through work, just to be together to make love. Or, if it’s an illicit affair, you can weigh the difference more accurately when the newness of risk and excitement at getting away with it, calms down. That’s when you can take a hard look along with self-awareness to assess the connection between you two… is it escapism, love of danger, neediness, physical release, or deep intimacy beyond sex? Though frequent great sex can become “addictive” as the body/mind begs to keep feeling those happy-making endorphins, that’s not love. For enduring love, you need to also feel trust, respect, caring, and compassion. TIP OF THE DAY When a buried secret emerges, it changes the relationship’s balance but can bring new understanding.

Pirramirra the perfect modern cocktail wine By James Romanow One of the lesser known grapes of Bordeaux is Petit Verdot. It is added in very small quantities to the great blends of the French province to add a floral bouquet when the wine is mature, and for young fruit flavours, tannin and colour. However, like Malbec, it is a late ripening variety and these days you are more likely to find it in places like Australia, Argentina and Chile. This will change. The Bordelais are replanting varietals, such as Malbec, that they stopped using after the phylloxera plague (also known as the great French wine blight) in the late 1800s. There are two pure bottles on the shelf in Saskatchewan, Kingston Estate and Pirramimma. Both are worth drinking if you want to understand the varietal. If you’re just looking for a good drink, I recommend the Pirramimma. The fruit is huge, the tannins strong and the bouquet beautifully fruity, full of esters, smelling like banana. (A more sensitive nose will identify nail polish remover or gasoline.) It has enough residual sweetness to pair with modern cuisine from shrimp in coconut milk, to commercial barbecue sauces. The power of the wine is enough to keep the older generation drinking and enjoying themselves, while the sugar calms the palate for younger, more delicate tongues. Baking bread the old fashioned way By Jenn Sharp Bryn Rawlyk starts his day while the rest of the world is sleeping. He arrives at the bakery by 3 a.m. to build a fire in the brick oven he painstakingly built over the course of seven months. While the fire is heating the oven to a toasty 900 degrees, he forms loaves and pastries for the day. There’s a problem at the Night Oven Bakery this morning though, which he owns with his wife Beth Cote. After days of non-stop rain, the birch, delivered yesterday, is wet. Loud indie rock plays in the background. It helps Rawlyk relax as he works to get the fire hot enough to bake the day’s four types of bread. “Today might be a gong show,” he smiles wryly. That’s just the way it can go with artisan bread. Everything from the weather to the way the loaves are shaped can affect the final product. It’s a physically demanding job. Watching Rawlyk stoke the fire is enough to break out in a sweat. “I like work. It’s engaging,” he says. “We’re not a wholesale bakery. We’re looking to connect customers with the process of bread. Part of that is the baker being engaged.” A gauge beside the oven’s door tells Rawlyk each section’s temperature. He then moves the fire around to get a uniform heat. When the oven is ready, the top of the nine-foot dome turns white. “You can’t just throw bread in and take it out. You have to do it in a spiral pattern when you’re loading the bread,” explains Rawlyk. The process begins with the grain delivered by farmers to the Night Oven’s back door. Ancient heritage Red Fife wheat comes from Marc Loiselle, an organic farmer near Vonda. Rawlyk is almost finished building a large stone mill for the wheat. For now, a smaller mill is used for the wheat and other grains (rye, barley, spelt, kamut). The dough is fermented at least 12 hours, before Rawlyk hand shapes

each loaf. He sticks to the most basic ingredients in his artisan bread. “That’s my interpretation — if you’re not using things to condition the dough and you’re not using things to speed up the process — the bread comes out as the flour, water, salt and the environment will determine,” he explains. In a society where goods are expected around the clock, artisan bread’s unpredictability puts some off. It’s a one-man show at the Night Oven. Rawlyk will hire help in the future so the bread will be ready when the doors open at 7:30 a.m. For now though, it’s just him. “People get really angry when I don’t have bread on time,” he says with a chuckle. But there are also the majority, who are willing to wait until 9 a.m. for the first loaf.
His starter, wild yeast collected from flour, is a form of the first one he used 10 years ago. Every morning he feeds it and by noon, it’s ready to be used in the dough for the next day’s bread. “It’s a joy to bake with. It mixes really slowly, so for this style of bread it’s really nice to use.” And by the way, there are no gluten
