Los Cabos Magazine says goodbye to the 2019 year with a great deal of challenges met, as we celebrate 25 years in existence; solidifying ourselves as the longest-running magazine promoting the very best of Los Cabos. It was certainly a year full of success for us and we are happy to usher the new year in, because there are 366 opportunities that this 2020 year offers us, in which we wish everyone a year of great health, peace, love, and prosperity. Hoping everything that everyone dreams, they achieve. We reiterate our great commitment to our business partners and readers as we continue promoting the best of the Los Cabos region, and I accept the challenge as Director of Los Cabos Magazine to further continue the legacy of our unique and vital magazine and I commit to give my very best, promoting the best of our community, city, and its surrounding areas. Safety First Los Cabos’ mayor reflects on her first 100 days By Fernando Rodríguez
Los Cabos remains one of the safest cities in the world.
At the press conference marking her 100th day in office, Castro Guzmán reflected on what has been accomplished so far: the activation of treatment plants expanding access to water, increased collection of waste, a plan to rid the municipality of potholes, and 30 percent reduction in city spending. The reduced spending was a result, her office says, of the decision to reduce government office leasing, eliminate computer equipment purchases in the administration’s first year, and for the mayor, as well as her trustees and staff, to donate 10 percent of their salaries toward administration spending. Safety has also been a top priority for the mayor in her first months as mayor: A life insurance policy is now in place to help families of police officers killed in the line of duty, and a domestic violence unit was created to better serve Los Cabos residents. But public safety does not end there. To mark her first 100 days in office, Castro Guzmán issued an exclusive statement to Los Cabos Magazine: 8

The beginning of the “Safe City” model that we have implemented in Los Cabos arose from the need to unite the three levels of government leadership together. And of course, when we talk about leaders, we are also talking about all the business men and women who have made this great touristic development possible. The key word of our safety model is coordination. Safety cannot have different colors, different agendas, different themes or different plans. We must be blind to the different political parties within our city and state. We must all share this great responsibility to ensure the safety of all our citizens. We are currently using a ‘’Safe City” model that we have at the municipal level as an example to each of the municipalities that are tourist destinations with beaches. We have so far, implemented that model in three of 15 cities that meet this tourist beach destination criteria. What is our intention? Our plan is to talk about what we have done well. We have to set aside political differences and use the need and the will to work in coordination. When I talk about the magic word “coor-

S A F E T Y dination,” I say it because if we, as government leaders, maintain ourselves in a permanent dialogue on the subject of security with the business community, then everyone is seated at the same table. What happens if we do not comply with our promises as politicians or as government leaders? Obviously, the community will see this as an instable city. The founders of this city who have economically supported this area from the beginning, see when we have not done a good job of governing, and to them and every one of our citizens, safety and security are very important. The business leaders’ support has been at the heart of the expenses they have assumed in an effort to keep Los Cabos safe for everyone. The businessmen and women of Los Cabos have worked in longstanding coordination with the other branches of government that we can count on today with the navy corps’ presence.

When we speak of a safe municipality, we are talking about a municipality that is ready to receive tourists but is also ensuring the safety of its citizens. We cannot believe that the city’s security only concerns the beautiful areas of the Los Cabos, because security involves everyone within our city limits. When my husband and I arrived in Los Cabos, we joined an effort that was providing results in terms of city-wide safety.
A “Safe City” model in which we all are seated at the same table. A safe city model in which the military presence will be here, in which the federal police will arrive, as well as Acedena, and the navy personnel that are already here. Our plan is to create a containment barrier in which we can help reduce delinquency.
At the moment, the director of public safety security is a former navy officer. He is not someone I put in that government position, nor is he someone I named to that office of public safety, nor is he someone I recommended. He is currently carrying out the rules and guidelines of public safety in coordination and at the discretion of our state level of government.
Thanks to all of our protective agencies of our “Safe City” municipal model. A great municipal model that guarantees both citizens and visitors a city on permanent safety alert because crime does not disappear, and we need to be ready and waiting for it. Why? because by permanently working to maintain a safe and secure city, from dusk to dawn, we can achieve our safe and secure city goals with the help of the navy, Acedena, federal police, PFR, and of course our local police officers.
What do we want? When we say we want a safe municipality of peace, we are saying that we are going to do everything in our power to make it so. When talk about having a safe and secure city, we are talking about a “Safe City” model that we have implemented during the last year that we have been in office.
What do we have to do? Work on prevention and in order to do so, is why we are investing much of the budget towards the comforting tranquility of a safe and peaceful city. Working around the clock towards the prevention of crime. Y

We have to work together because Cabo requires about a 1,000-member police force and right now we only have 500 officers. We are expecting another 18 policemen by April 30, and we plan to incorporate a tourist police force that is badly needed right now.

Sabor A Cabo Rural 2019 was held at the Sol de Mayo Ecological Ranch on December 8, 2019. Sol de Mayo Ecological Ranch is located in the mountainous area pueblo of Santiago, an hour and a half or 62 miles away from Cabo San Lucas. ‘’It is a lively cultural event, with historical tradition and original local products, techniques and procedures based on corn, chili and beans. Mexico is one of the few centers for cultivated plants, of which there are only eight in the entire planet. About 600 different dishes have been documented using corn in Mexico.’’ said Carmen Carbajal, founding partner of Sabor A Cabo and president of Sabor A Cabo Rural. The territory of Baja California Sur is characterized as a coastal territory, with products from the sea as the favorites to use in the preparation of different recipes. Each area 18

hen Chef Denis Gabriel arrived in Cabo San Lucas during 1995, he had little more in his pockets than spare change and a dream in his heart to make this vacation paradise his final home after traveling Europe fine tuning his extraordinary skills as an International Chef. The savvy and culinary talented chef from France, soon started cooking for his neighbors in the upscale Pedregal residential gated community, which in turn, led to his catering parties, anniversaries, weddings and corporate events. Their jewelry pieces tell stories, and express feelings of places that are located in this region, that have been described as rare, unique and distinct. ‘’We have clients who always come back and ask whats new?,’’ mentioned Indira while describing the jewelry they alone manufacture. ‘’We try and suit jewelry to their likes and personalize them for each customer. Every creation has its own history and value,’’ added Indira. ‘’What we are working on now, is what we call the skin collection, which is what my husband took with him to the prestigious New York Fashion Show. We went through various trial and error until we were satisfied with the finished product; which varies and comes in shades of blue and gray. The men’s bracelets are very masculine of silver and leather colors that are reflective of what best suits the buyer.’’ And while Indira was unable to accompany her husband Isidro on his dream come true voyage to the New York Fashion Show, she is expecting to go this 2020 year to a different fashion show in the Big Apple City of New York, New York. 30

‘’It was a blessing going to New York, this past 2019 year, in which we learned how to dream big and realize our goals and both understand it’s important that I share in these moments,’’ commented Indira, adding that, ‘’We have worked very well with Designer Wilfredo Gerardo and have a good relationship with him since our first meeting.’’ The Sanchez couple have achieved international recognition by reaching one of the largest catwalks in the United States and the world. ‘’I had the opportunity to work with more than 50 Couture designers from all over the world; and getting to New York, is the dream of any artist,’’ added Isidro. ‘’My wife Indira and I have been making jewelry for 19 years. We have always made pieces that are different from the rest.’’ Their creative jewelry design hopes to honor the Pericue Natives that first inhabited the Baja California Sur land which became La Paz, Todos Santos, East Cape and Los Cabos. Offering a unique collection that pays tribute to the Calafia Queen. ‘’I didn’t know how to create designs, but over time I learned how to design. ‘’I enjoy looking for the stones that artisans present me from which we can create something dynamic and unique that is ours,’’ explained Indira. One of the regular places Indira travels for their jewelry design and manufacturing business brand is Tasco, Guerrero, the capitol silver mining city in which 99% of the country purchases their silver. “We have made many friends over the years in Tasco, and while everyone gets their silver there, we strive to continue creating our unique designs.’’ Indira and Isidro’s Jewelry can be found in several hotels in Los Cabos, and the couple have come to accept having their designs copied as a natural part of their growth and success. The attractive and sweet Indira, and equally pleasant and friendly Isidro, have continued building the relationships and camara32

The creative jewelry manufacturing designing husband and wife duo first started placing their jewelry on social media via Instagram and Facebook aside from their website https://www. indirandisidro.com/, and have learned how to best photograph their designs with proper lighting and share them online. Indira and Isidro Sanchez have also had the opportunity of making some jewelry for Jennifer Lopez, not with J-LO personally, but indirectly through her friend who informed Indira she wanted a cross necklace. Indira also had the distinguished honor and good fortune of designing something for someone who is not quite the celebrity like Jennifer Lopez, but a professional corporate manager gentleman from Nieman Markus.

hale watching season in Los Cabos officially begins in December. That cool winter time of year when those enormous visitors return to their annual place of giving birth, is quite possibly the 3rd biggest attraction to this Southern Baja California region of year round summer paradise, behind the sport fishing tournaments and golf. The Sperm and Humpback whales who venture this way year after year, generally spend a good part of about five to six months in Cabo San Lucas during this life-giving time and visitors from all regions of the United States and Canada make their way in Los Cabos and not see--but be a part---of this magical whale watching time of year.

The gray whale (Eschirichtius robustus), performs one of the longest migrations among mammals, every year it travels between 15 and 20 thousand kilometers round trip from the icy seas between Alaska and Russia, to the waters of Baja California Sur.

Marine mammals are so charismatic that they cause us a lot of curiosity, a special place to observe them is the Gulf of California and the Pacific Ocean, these animals belonging to the group of mammals share certain characteristics with humans such as maintaining a constant body temperature, they have lungs, which makes it necessary for them to often come to the surface to breathe (every 15-20 minutes) and at some stage of their development they have hair, the young are breastfed at birth.

It can measure up to 15 meters long and weigh 35 tons, the skin is gray, with white spots that allow each individual to differentiate. The body is covered with barnacles, scales or lice. They have several protuberances, but they lack a true dorsal fin, it remains close to the coast, at a maximum distance of 20 kilometers. It inhabits two areas in the world: the coasts of Asia (from Russia to China) and the coasts that go from Alaska to Baja California Sur, in Mexico

You will also observe the humpback whales (Megaptera novaegliae) in the Gulf of California and on the Pacific Ocean side, in Baja California Sur from Los Cabos to the Marietas Islands, it is one of the most admired whales for the acrobatics it performs, they have pectoral fins very long that cover approximately a quarter of the total of its body, the caudal fin is an icon of beauty as well as a fingerprint, because in each of them the marks and colors they present make them unique. Humpback whales sing and emit sounds that last up to 30 minutes, it is very likely that the song is for mating and is more noticeable in males, although it could also be a form of communication between members of a group some other type of social behavior.

hen we hear the word “Nicksan” what pops immediately into our mind are three things: Japanese cuisine with mexican ingredients, iconic restaurant in Los Cabos and of course it’s star chef Ángel Carbajal. Very few people know that at the beginning of Nicksan’s creation, there was a person trained hands-on by Ángel Carbajal. As of today, he has continued to show dedication to one of the most importanat restaurants in our destination. Edgar, better known as “Edie” Carbajal has been present since the adventure started. But who is Edie? And for him, what is Nicksan? Edie is Nicksan’s executive chef! He still remembers his first performance as part of the service team and how little by little one day, he entered to the kitchen and knives world.

He describes the restaurant with a certain sparkle in his eyes; it’s a place of timeless harmony, customers will enjoy a private moment or quite the opposite a unique gastronomic show! He strongly believes that the relationship between kitchen, ambience and customer service will always be the key for success; it will forever cause magic! What he likes the most about Palmilla’s location is the breathtaking panoramic view of the ocean; his favorite thing about Nicksan Cabo is its casual atmosphere that fills the room with laughter, fun and desire to spend an amazing time.

That feeling when he enters into the kitchen and becomes the person in charge; the most important thing for Edie is the client satisfaction after tasting Nicksan’s memorable dishes, that’s his inspiration fuel for constant creation. Good communication between the team members is an essential tool to achieve and maintain our legendary Nicksan quote “Exceeding your expecations”. Family is his biggest inspiration! In his spare time, he enjoys exploring Los Cabos. But, when he enters the kitchen he let’s his mind blow. For Edie working with Ángel represents a challenge and a degree of perfection, he has a huge motivation to grow as a chef and balance will allow him to keep that culinary show.

he newest dining entrepreneur in the restaurant neighborhood of Miguel Hidalgo Street in Cabo San Lucas, is Doña Gloria by Mama’s Royal Cafe, which opened for business during dinner hours on October 1st, 2019. Once their 68
kitchen was up and running, Doña Gloria’s offered their available yearround two for one pasta specials, and scrumptious combination plates that included salad, Rib-eye, lobster and shrimp, and T-bone, lobster and shrimp with salad. For Thanksgiving, Doña Gloria’s, offered guests an

amazing $21 USD traditional turkey dinner with all the fixings, and during Christmas; continued extending dinner specials with 15-20 % off everything on their affordably priced menu. The succulent appetizer selections at Doña Gloria include her to hard to find Sope’s, that

are served 10 per order, as are the 10-piece fried quesadillas, and 10 mixed tacos plate. The restaurant’s traditional Mexican entree’s feature shredded beef, shrimp or lobster enchiladas coverd in a savory red sauce, chiles relleno, Fajitas, and crunchy chicken flautas taquitos; all served with rice, beans and freshly cut and prepared avocado guacamole. The Molcajete Mexicano, is the single block gray stone bowl used as far back by pre-Hispanic Meso-American cultures, including the Aztec and Maya, which arrives sizzling hot, filled with carne asada beef, shrimp, chorizo, cheese, nopales cactus, onions, Mexican salsa, and is accompanied with rice and beans. Other delicious dish selections include the Arrachera steak, rib eye, pork ribs, T-bone, and chicken with mushroom cream sauce. One of two Doña Gloria’s Mexican combination plates consists of a Chile relleno, enchilada, quesadilla, a sope, and guacamole, with rice and beans. Their kids menu includes the standard hamburger and french fries, chicken or fish sticks, along with a spaghetti with meatballs option. The seafood options at Doña Gloria are limited to the tasty shrimp cooked however anyone chooses, and the breaded fish served with rice and vegetables, along with the roasted Huachinango zarandeado; known in English as the Northern California red snapper, cooked to perfection. During the winter and spring months, the Viva My Plaza art and music festivities occur every Friday evening in front of and along the street of Doña Gloria’s dining establishment, and only serves to add a refreshing vibe to an already enjoyable and fantastic dinner, at 15% off; where the friendly service is always, attentive and professional in both English and Spanish. ancho’s, is one of downtown Cabo San Lucas oldest restaurants, which was founded in 1989. Located along Miguel Hidalgo Street’s restaurant row, Pancho’s reddish pink arch facade distinguishes itself as an individually unique Mexican cuisine dining establishment. Adorned on their walls are paintings of Pancho Villa and Frida Kahlo. Recently renovated to allow seating for up to 150 people in its main open air dining room, with A/C installed in their cozy private

enclosed patio for them hot, sizzling summer humid days of July-August-September. Pancho’s continues offering its long-standing Mexican traditional entree favorites, like their chicken mole’, pork ribs, Imperial shrimp, tortilla soup, and the Maria Special, which is an Arrachera beef flank with chicken, rice, beans, and guacamole. The reasonably priced menu choices at Pancho’s offers a little bit of everything Mexican for everyone. The New York steak, Rib-eye steak, and Filet Mignon are other savory

choices, as well as their combination plates. For early morning starters the breakfast menu is available from 8:00 AM - 12:00 Noon and features a savory fruit plate, Pancho’s French toast, classic French toast, banana pancakes, waffles, eggs sunny-side up or scrambled, and either sunny-side up Rancheros style or scrambled spicy Mexican style. Chilaquiles are also available in a green sauce or served with beef strips. The omelette plates, served with beans and country potatoes consist of the following choices; shrimp, vegetarian, American style and chorizo with cheese. Aside from their traditional Mexican dishes, the lunch menu is quite the alternative with a mid-day line-up that is as American as apple pie; beginning with a their 1/4 lb sirloin beef cheeseburger and fries, to their chicken burger, and either fish sandwich or club sandwich selections. The lunch choices from Mexico include chicken strip tostadas, chicken enchiladas in green sauce, quesadillas, and Chimichangas; accompanied with rice and beans. Panchos Restaurant and Tequila Bar has also been recipient of the Tripadvisor certificate of excellence in 2016 and ‘17. And part of that well deserved excellence can be attributed to the Pancho’s wait staff and restaurant personnel who do a tremendously great job in being attentive freidnly, funny and exceedingly professional in a Spanish or Bilingual English kind of way. San Jose del Cabo’s Mi Casa Restaurant open air patio setting is harmonious of the Spanish colonial downtown neighborhood decor where it is located.
