A Taste of Nepal in Brambleton BY JAN MERCKER
In search of the perfect protein? 2022 might be the perfect year to give yak a try. A trio of seasoned DMV restaurateurs are serving up yak dishes and other Nepalese favorites at the Wild Himalayan Yak, which opened in Brambleton last week. Brambleton resident Dip Raj Jarga Magar runs the front of the house while his brother Keshar Jarga and their business partner Tuk Gurung are behind the restaurant’s kitchen and bar programs. Magar and Gurung have worked together for years and opened the popular Royal Nepal restaurant in Alexandria. When it was time to launch a new project, they wanted a bigger space. And Magar knew his own neighborhood 4
fit the bill perfectly. The partners found a twostory, 5,000-square-foot space in Brambleton Town Center, formerly the home to the Lost Rhino Retreat. “It’s a great location for us,” Magar said. The restaurant also fills a niche for Nepalese cuisine in Ashburn and, to Magar’s knowledge, is the only place in the county where diners can order yak, which he hopes will become the restaurant’s claim to fame. “Yak meat is the healthiest meat on the planet,” Magar said. Yaks, also called “mountain cows,” are known for their exceptionally lean meat. But it’s also high in Omega-3 oils, which keep it tender and juicy.

Yak meat is the healthiest meat on the planet TASTE OF NEPAL
Magar sources U.S.-raised yak from farms in several states. And a Pennsylvania yak farm was the source of the restaurant’s mascot: a towering taxidermized yak named Rocky. Magar is looking forward to introducing fellow Loudouners to cuisine from his native Nepal, a small mountain nation bordered by India to the south and China to the north. And there are influences from both cultures on Nepalese cuisine, he says. “We’re a very small country, and we’re heavily influenced by both sides.” Overall, Nepalese dishes are most similar to northern Indian cuisine, he adds, but a little lighter on the spice. In addition to 18-hour marinated braised yak, Wild Himalayan Yak offers a range of more familiar fare, including curries, butter chicken, biryani and fried rice. Magar also sources yak butter from Mongolia (very few farms in the U.S. are licensed to raise yaks for dairy products) to use in several signature dishes. The new restaurant is made for dining in, with a spacious bar and lounge area, craft and classic beers on tap, inviting wine and cocktail lists and photo ops with Rocky. Magar’s brother Keshar Jarga, who is trained as a chef and previously worked as a bartender at the Watergate Hotel, runs the bar program. Magar has also done sommelier classes and says there’s nothing like a robust Napa Valley cabernet to pair with a yak dish.

The partners opened the highly rated Royal Nepal in Alexandria in 2017. “I always had a dream to have my own restaurant featuring our Nepalese cuisine,” Magar said. Magar and Gurung sold their shares in Royal Nepal to launch the new venture. Opening a 5,000-square-foot restaurant during a pandemic is a gamble, Magar said, but it comes with the territory in the restaurant business. And he’s counting on Loudoun’s unquenchable curiosity and appetite for cool new cuisines. “Obviously the pandemic has been very challenging. But at the same time, I’m optimistic about the coming days,” he said. “We’ve been through most of the difficult times, and I’m very hopeful that it will be better.” Himalayan Wild Yak is located at 22885 Brambleton Plaza, Ashburn. The Vivid World of Deborah Morbeto Visit Loudoun Hosts Leesburg Artist’s Latest Show BY JAN MERCKER
A touch of whimsy, a splash of kitsch and plenty of heart and soul. Leesburg-based artist Deborah Morbeto has brought color, verve, and an eclectic style to the Loudoun arts scene for more than 20 years. A selection of Morbeto’s lighter fare, full of charming images and fun text, is on display at the Visit Loudoun visitors center in downtown Leesburg through the end of February. As the Visit Loudoun show went up, Morbeto was remembering her friend and mentor, the late Loudoun arts maven Gale Waldron, who died in 2018. “I didn’t really realize how much of an impact [Gale] had until much later. … She had been such a huge part of creating an art world in Loudoun. When she gave me the 10
encouragement she did, it helped me more than I realized.” Morbeto is part of a group of Leesburg artists working through the Friends of Leesburg Public Arts to cement the town’s growing reputation as an arts destination with hopes of recreating an “ArtSquare 2.0” modeled after Waldron’s beloved gallery, studio and teaching space. Morbeto grew up near Boston and credits her mother and her first art teacher for inspiring her artistic path. She was motivated by a private teacher who recognized her talent and had her painting in oils at age 11. Morbeto attended the Massachusetts College of Art and Design in Boston. Even then her interests were eclectic from film photography to ceramics to glass blowing and art history. And her passion for the Modern Art period of the late 19th and early 20th centuries shines through in her work. Art school was also where she established her ongoing commitment to making art every single day.

“I am body and soul dedicated to this practice on a daily basis,” Morbeto said. Morbeto’s work has shifted and matured over the years. She says she’s always thought of herself as a painter but in recent years has experimented with collage and mixed media, as showcased in the small-scale pieces at the Visit Loudoun show. Morbeto moved to Loudoun in the ’90s and worked in marketing and graphic design. She and her husband built their home in Leesburg in 1999. Morbeto shifted gears when her son, now in his 20s, was born, leaving her day job to focus on parenting and building a career as a working artist. “What changed during the pandemic was that I specifically challenged myself to learn to work with watercolors and to work with portraiture– two of my weak points.” Her focus on portraiture inspired a new series of colorful figurative pieces with abstract elements. “Out of that grew this incredible body of work that I didn’t expect. Like most art, it just happened. I didn’t push it or force it. … It’s turned into this whimsical series of characters.” Morbeto said she and her husband considered leaving Leesburg when their son left home. But she reflected on her network of friends and fellow artists and decided to stay and build on her artistic foundation. FEBRUARY 2022

Forrest Holbert Exhibit on Display at Balch Library A new exhibit from Leesburg artist and graphic designer Forrest Holbert is available for viewing at Thomas Balch Library. Holbert’s portfolio comprises a wide range of media including drawings, paintings, trompe l’oeil, prints, and digital media. He studied at the Corcoran College of Art and Design and while there was a recipient of the Neil Jenney scholarship. The exhibit, presented by Friends of Leesburg Public Arts, will be available to view from January to March in the meeting room on the lower level and at the digital kiosk in the Divine Room on the main floor. FOLPA is a non-profit organization whose mission is to provide funding, advocacy, and volunteer services for a variety of projects, programs, and events that foster the growth of the arts and culture in Leesburg.
