THE MOST WONDERFUL TIME OF THE YEAR It’s the most wonderful time of the year, or so the song tells us. The festive season is here once again. We feel like we blinked and another year flew by, though this could be because we spend around 4 months of it working on preparing this brochure just for you. LWC have had a busy old year: we’ve added Appleshed to our signature brands portfolio, as well as the very on-trend range of cans from Lucky Buddha, Dortmunder, Beer Lao & South West Orchards Cider. Our Old J Rum brand won Master status at the Rum Masters 2016! It’s the only spiced rum to have done so and now has the fastest rate of sale in the spiced rum category within the UK, so if you don’t already stock it, you’re missing out. We have brought another depot into the LWC family in Northampton, our Central and London depots have both moved to new purpose-built sites and we continue to grow and expand our customer base and product ranges. Keep an eye out for our new website launching very soon too. Our buying team have spent many, many hours (and we estimate at least 1,500 cups of tea and coffee) thinking about this time of year and trying to ensure that we have the best mix of offers to help you and your venue maximise the potential of the year’s busiest trading period. MONKEY 47 SLOE GIN

Distilled in small batches, this Schwarzwald sloe gin is a true Monkey 47, but nevertheless a whole different one. This masterfully handcrafted and unfiltered sloe gin is unique in its complexity whilst reflecting great British traditions and the wildness of the Black Forest. The quality of ingredients is fully brought to bear through a masterful and complex distillation process involving both steam extraction and distillation of the macerate. Monkey 47 is then matured for three months in traditional earthenware containers, in which the distillate develops greater balance as it reacts with oxygen. After maturing, the distillate is diluted with extremely soft Black Forest spring water to the drinkable strength of 47 per cent and is put through a sheet filter, but to preserve its full character it does not undergo cold-stabilisation.

MAKERS MARK 46

This West Coast style IPA has strong floral notes of lemongrass and mango. A generous amount of grapefruit added during the brewing process gives the beer a pungent, citrus kick.

Deep dark and decadent appearance, with aromas of peanut butter and chocolate. A big foamy head with medium body and good carbonation. Roasted peanut butter and chocolate ganache flavours, balanced by rich and toasty malts bringing a touch of bitterness on the finish to even out the sweetness. Rich, creamy, velvety, delicious.

MULLED WINE

Wines

Mulled Wine is always a good way to draw in passing trade and a great thing to offer customers on a cold day, who doesn’t love a warm drink full of festive spices and with just the right kick of alcohol. We have tried and tested a few recipes to find the right one to recommend to you, it is much tastier than a pre made bottle and well worth the effort. This will make 4-6 glasses but can be doubled or tripled up to get a great yield from batch.

CHRISTMAS TASTES OF WINE THAT’S MULLED, AS I SIP IT, DREAMS UNFOLD.

1 bottle of red wine – we recommend Chameleon Creek Pinotage ½ cup Old J Spiced Rum 1 cup water 2 large oranges, peeled and juiced 1 lemon, peeled and juiced 1 lime, peeled and juiced ½ cup agave syrup or soft brown sugar 5 – 6 whole cloves 1 nutmeg – about 10 gratings 1 cinnamon stick 1 vanilla bean halved 2 star anise METHOD: Peel large sections of the skin from the oranges, lemon and lime. Over a medium heat pour in the agave syrup and water, then add the peels and juices. Add the vanilla, cloves, star anise, cinnamon and nutmeg gratings. Bring to boil, and then simmer for about an hour. The liquid will reduce, so after around 30 minutes add ½ cup of wine, this allows the flavours to infuse and will create a syrup. When your syrup is ready turn the heat down to low and pour in the rest of the wine and rum. Bring back to a gentle simmer and heat for around another 5 minutes or depending on how much alcohol you want to burn off you can simmer for a little longer. Ladle into glasses & serve warm.

WINE BUYERS CHOICE HOW DID YOU GET INTO WINE BUYING? After graduating from university in 2012, I joined the graduate management scheme of a national wine retailer and achieved my Level 3 Award with the Wine & Spirit Education Trust (WSET) the following year. I came to LWC in 2015 and am currently studying for my WSET Level 4 Diploma, a two-year course covering wines and spirits from all over the globe. Through working in the wine trade, I have been lucky enough to visit vineyards in Bordeaux, Portugal, and even some a little closer to home in the south of England. HOW DO YOU CHOOSE THE BEST WINES TO MATCH YOUR MEAL? I always look for similar flavours in the wine and food that will complement one another – the dried fruit/raisin/nutty flavours of an aged PX sherry with Christmas pudding for example. As a general rule, wine and food from the same region also often pair well together, such as Loire Sauvignon Blanc with goat’s cheese, or a Chianti with traditional Italian pasta dishes.

A TOP BOXING DAY TIP: A GLASS OF SLIGHTLY CHILLED BEAUJOLAIS PAIRS PERFECTLY WITH COLD CUTS OF MEAT. WHAT DO YOU THINK WILL BE THE NEXT BIG THING IN WINE? As both wine producers and consumers in general have become more environmentally conscious over the years, organic viticulture has emerged, with a small percentage of vineyards in France, California, Italy and Spain all achieving organic certification. In simple terms, this means these vineyards are committed to a sustainable approach to vine growing. For example, the use of certain pesticides is prohibited as these may damage the natural ecosystem. It is a rapidly expanding market and wines produced organically can hold a high market premium. HOW DO YOU CELEBRATE CHRISTMAS WITH YOUR FAMILY? Christmas for me has always been very traditional and spent at home with family – opening presents in the morning then straight into the best part, the food and drink! And of course, the festivities aren’t complete without a cheeseboard and a bottle of Port to round off the day. A top tip if you have any leftovers on Boxing Day: a glass of slightly chilled Beaujolais pairs perfectly with cold cuts of meat and turkey sandwiches.

MATT HAS LISTED HIS FAVOURITE WINES AND PAIRINGS BELOW MY FAVOURITE – Bollinger NV – celebrate the holiday season with a glass of fizz! The Bollinger Special Cuvée is an excellent expression of their house style – complex, toasty and full bodied, owing to 60% of the blend coming from Pinot Noir grapes. The majority of the grapes used also come from Grand and Premier Cru sites in Champagne. MODERN CHOICE – Cloudy Bay Sauvignon Blanc – an iconic Marlborough Sauvignon, the Cloudy Bay name has become synonymous with premium New Zealand wines. Their Sauvignon Blanc packs an intense gooseberry and citrus punch! TRADITIONAL CHOICE – Chateauneuf du Pape, Reserve des Argentiers – arguably one of the world’s most famous wine regions, Chateauneuf du Pape was the first ever AOC established in France. This wine has a complex bouquet of fruits and spices. Bold and full bodied, it makes a great pairing for game, red meats and strong flavourful cheeses. WHAT TO DRINK WITH TURKEY – Waddling Duck Pinot Noir – this classic pairing works so well thanks to the redcurrant and cranberry flavours of the wine, almost acting as a cranberry sauce for your turkey! WHAT TO DRINK WITH BEEF – Bodegas Ramon Bilbao Rioja Reserva – this wine achieves a superb balance between ruit character and the spicy, vanilla notes from oak ageing. WHAT TO DRINK WITH PORK – Growers Gate Chardonnay – a new listing for LWC, the Growers Gate estate is owned by grape growers who carefully select their best fruit to showcase what the region has to offer. Their Chardonnay displays attractive stone-fruit and citrus aromas, with minimal use of oak to allow the fresh, ripe fruit flavours to really stand out. WHAT TO DRINK WITH SEAFOOD AND FISH Muscadet Sevre & Maine Sur Lie, La Sablette – a light, crisp and fresh white which complements the delicate flavours of seafood dishes. ‘Sur Lie’ refers to the extended period of lees contact after fermentation, providing greater complexity and flavour in the finished wine.

WINE: THE PERFECT SERVE We have all heard the phrase “Lights, Camera, Action” which is called by the film director when they are hoping to capture that moment on film which could result in the infamous Oscar adorning their mantelpiece. What does this have to do with wine? You ask. Each time a glass of wine is poured it also should be a creation of theatre worthy of an Oscar win. The actor spends time learning lines which is comparable to the creation of the wine list and staff training. Without those words being delivered with the appropriate reverence then the time spent preparing is wasted. Likewise having a fantastic wine list, staff trained and knowledge on the wines available is irrelevant if the delivery is poor. We have put together an easy to use table that at a glance you can check that you will be making that acceptance speech. (Keep the tissues handy). Sparkling wines suit low temperatures, which slow the release of carbon dioxide. Sparkling wines served too warm can be unpleasantly frothy. All glasses must be held by the stem “The top half of the glass belongs to the customer, the bottom half of the glass belongs to the bar tender”.

POURING Wine should be poured into the glass until it is no more than two-thirds full, or preferably less than half full. While this may appear mean or stingy, it allows room for the wine to be swirled and for the aromas to be collected in the upper part of the glass and channelled towards the drinker’s nose. DECANTING WINE This will also bring the wine up to room temperature and this allows it to breathe. STILL WINES should always be poured towards the centre of the wine glass. SPARKLING WINES should always be poured against the side of the glass to preserve the bubbles. ‘ROOM TEMPERATURE’ This expression was developed in the days when dining rooms were 5 to 6 degrees cooler than they are today due to the introduction of central heating. So err towards coolness! Simply drawing the cork and leaving the bottle to stand for an hour or two before drinking it - ‘allowing the wine to breathe’ does virtually nothing towards aerating the wine. REMEMBER: ICE WITH WATER IN AN ICE BUCKET CHILLS MORE EFFICIENTLY THAN JUST ICE ALONE. NO WINE SHOULD EVER BE SERVED OVER 20˚C. ALWAYS HAVE AN EXTRA CORKSCREW.

WHISKY BLENDED WHISKY is produced by blending whiskies from different barrels produced at different distilleries. There are 3 kinds of blended whisky: BLENDED MALT SCOTCH WHISKY:

Formerly called vatted malts, these are a blend of single malts from two or more distilleries. Companies such as Compass Box purchase whiskies and blend them to create new products with certain characteristics.

SINGLE MALT WHISKY is a whisky produced exclusively in pot stills at one distillery from only malted barley and water and is called a single malt. The single in this case refers to the distillery, not a grain type or barrel. While single malts are not blended with other whiskies made from various recipes, a bottle does contain a blend of the same Scotch recipe produced in different years and aged for various amount of time. This process is conducted by a master blender to insure a consistent flavour profile over years. The age statement on the bottle must reflect the youngest whisky used in the blend.

BLENDED GRAIN SCOTCH WHISKY:

A blend of single grains from two or more distilleries. Single grains are usually known for being light and mild, but some distilleries produce exceptional grain whiskies. BLENDED SCOTCH WHISKY:

What many consumers think of when they hear the word blend, blended scotches comprise 90% of the scotch category in sales. A blended scotch is a mix of both malt whiskies and grain whiskies, sourced from several different distilleries.

SCOTCH WHISKY MUST BE BOTH DISTILLED AND AGED IN OAK CASKS IN SCOTLAND FOR A MINIMUM OF 3 YEARS.

IRISH WHISKEYS are legally defined that they must be made and aged in Ireland. The resulting liquid must also be distilled from grains at a strength of no less than 94.8% ABV (189.6 proof) and aged in wooden barrels no larger than 185 gallons for a minimum of three years. One of the primary differences between Irish whiskey and Scotch is the types of grains that are used in the recipe. Both malted and un-malted barley are common in Irish whiskey. Corn, wheat and rye can be added to recipes as well.

WORLD WHISKEY AMERICAN WHISKIES like all other whiskeys are distillates of a cereal mash. In each type of whiskey the mash bill of cereals is different but the production process is similar.

RYE WHISKEY must be made from a minimum 51% rye.

The burgeoning whisky Japanese industry has been largely attributed to its two founding fathers: Shinjiro Torii and Masataka Taketsuru. Shinjiro established the Suntory brand, founding the first distillery in Japan in 1923, Yamazaki in the Vale of Yamazaki. Taketsuru founded Yoichi on Hokkaido eleven years later. Today, Japanese whiskies are becoming increasingly popular and in a style of their own.

WHEAT WHISKEY must be made from a minimum 51% wheat.

I was lucky enough earlier in 2016 to attend a tasting with Fred Noe of the Jim Beam family and we got to try Booker’s Bourbon. It is one of the only uncut, unfiltered, straight-from-the-barrel, bourbons available today. It’s bottled straight from the barrel without adding anything and is unfiltered. Aged for 7 years, it has notes of vanilla and mocha and if you get the chance to get your hands on some I would recommend it whole heartedly.

BOURBON must be made from a minimum 51% corn.

TENNESSEE WHISKEY must be made from a minimum

51% of one grain at less than 80% abv and distilled in Tennessee. It must go through the Lincoln County Process of filtration through sugar-maple charcoal. MUCH OF BOURBONS CHARACTER COMES FROM AGING IN HEAVILY CHARRED NEW AMERICAN OAK BARREL WHICH BY LAW CAN BE NO LARGER 200LTRS.

JAPANESE WHISKIES are crafted in the Scottish style. One regularly hears them described as being smooth, but that is doing them an injustice. Light sherry and floral notes, sometimes they have been peated for a smoky, quasi Islay style.

GIN Gin is made from the distillation of white grain spirit, botanicals and juniper berries, which provide its distinctive flavour. Gin production falls into two main camps – compounding and distilling: COMPOUNDED GIN is made by adding flavourings, either actual botanicals or natural extracts, to neutral spirit. Many cheaper gins are made using this method, but there are also a range of excellent gins within the category, produced by macerating whole botanicals to produce high-quality spirit. DISTILLED GIN is made by redistilling spirit that has had botanicals added to it. London Dry Gin is a stricter version, which also forbids the addition of anything but water after distillation. By law a London Dry Gin must be produced by re distilling neutral spirit in a pot still with juniper and other botanicals. Once re-distillation is complete no other flavourings can be added. THE BEST WAY TO TASTE GINS FOR COMPARISON IS AT ROOM TEMPERATURE, DILUTED WITH AN EQUAL MEASURE OF WATER. THIS REVEALS BOTH QUALITIES AND FLAWS.

While a spirit must have, according to most regulations around the world, a predominant flavour of juniper in order to be called gin, the rest of the ingredients are left up to the producer.

BRANDY, CALVADOS, ARMAGNAC & COGNAC BRANDY:

ARMAGNAC:

Laws vary by country, in German it is allowable to add not only sugar (2% of total volume) but also 1% of volume from ingredients such as fortified wine, plus, nuts and almond shells, a similar process is used in Greece. In Spain the solera system is used, this is a series of casks arranged in layers, each containing brandies of a different average age.

COGNAC:

Is any distilled spirit made from fruit juice. The fruit is crushed to remove its juice, which is then fermented to make a fruit wine. The wine is then distilled to make brandy. Some brandies are aged in wooden barrels; others are unaged.

When brandy is removed from the bottom the casks are replenished from the ones on the tier above, and so on back through the system. No more than 33% of the volume of each cask can be removed at any time some brandy may never leave the system. CALVADOS:

Brandy from a limited and strictly controlled area of Normandy in north-west France, where the temperate maritime climate has long been perfect for fruit orchards. It is made from apples and/or pears and aged in oak barrels for a minimum of two years.

A brandy from Gascony and like Cognac is a grape brandy. The climate here is hotter & the soil is very different, the result is that Armagnac tends to have a fuller flavour than Cognac and is often deeper in colour. Named after the town of Cognac in France, is a brandy, which is produced in the region surrounding the town. It must be made from at least 90 percent Ugni Blanc, Folle Blanche, or Colombard grapes. TO QUALIFY FOR THE LEGAL DESIGNATION OF COGNAC ALL DISTILLATION MUST HAVE TAKEN PLACE BY MIDNIGHT ON 31ST MARCH OF THE YEAR FOLLOWING THE HARVEST.

The rest of the cognac can consist of ten selected grapes. However, most cognac is made from Ugni Blanc only. It must be distilled twice in Charentais stills and aged at least 2 and 1/2 years in oak barrels in order to be called cognac.

RUM Rum is a distilled beverage made from sugarcane by-products such as molasses and sugarcane juice by a process of fermentation and distillation. By law to be called rum the spirit must be made from a sugar cane product. DISTILLERS ESTIMATE THAT 1 YEARS TROPICAL AGING IN THE CARIBBEAN IS THE EQUIVALENT OF 3 YEARS MATURING IN SCOTLAND.

Distillation can occur in a pot or column still which has a massive impact on the style of the rum. The distillate, a clear liquid, is then usually aged in oak and other casks. WHITE:

Clear and colourless often this has spent no time in wood, there are some brands that age in wood and then filter to remove the colour such as Diplomatico. While this is still the dominate subtype in the category white rum is in decline slightly as the others grow. GOLDEN: A rum that has spent some time aging in wood, often dry or off dry in style due to the complexity of oak ageing.

DARK: Usually a molasses rum that has been aged in a charred wooden barrel to give a fuller more caramel flavour. Caramel can be added to give a darker colour. SPICED: Golden or dark rum that has the addition of spices and flavourings. RHUM AGRICOLE:

This is the French style of rum and is distilled from sugar cane juice instead of molasses. BUYERS CHOICE

There is a theme with me of picking one of any spirit type is just too hard for me to do so with Rum I am going to pick two. At entry level I would recommend trying Captain Morgan’s White Rum, easy drinking even straight it is a great base for rum cocktails. Jumping up the scale somewhat there are 100’s of great sipping and mixing rums out there but a particular favourite for me is Diplomatico 12 YO, so good the first time I tried it my response was simply more please (I may have also said I would like to jump in the glass and swim in it). Rich sweet and fruity it is perfect to sip and just relax with.

CACHAÇA, PISCO & ABSINTHE CACHAÇA:

(Pronounced ka SHA sa) is the most popular distilled alcoholic beverage in Brazil, made from sugarcane juice. The legal definition of Cachaça says “Cachaça is the product of the distillation of the fermented sugarcane juice, with alcohol strength between 38% and 51% by volume. Up to 6 grams per litre of sugar can be added”. PISCO:

A spirit generally classified as a brandy because it is made from distilling grape wine. It is mainly produced in Chile and Peru, with Peruvian pisco being given numerous awards as one of the best liquors in the world. In its early days, Pisco was made with a wide variety of grapes, giving it too many different flavors to be exported internationally as the market would not accept the wide variety under the same name. For this reason, the Peruvian and Chilean governments set standards as to what kind of grapes could be used to make a brandy that could be labelled as a pisco. In Chile, there are only two regions allowed to make the brandy, but Peru only restricts the grapes that can be used.

ABSINTHE:

(Also absinth) is a distilled, highly alcoholic, anise-flavoured spirit derived from herbs including the flowers and leaves of the medicinal plant Artemisia absinthium, also called wormwood. Although it is sometimes incorrectly called a liqueur, absinthe is not bottled with added sugar and is therefore classified as a liquor or spirit. BUYERS CHOICE

I do have to also nod my hat to St Georges Absinthe from California, the first legal absinthe made in the USA since prohibition and Adnams Rouge Absinthe made to traditional methods in England, the colour comes from a final maceration with hibiscus flowers, adding in floral and fruity notes.

LIQUEURS Liqueurs have a rich and varies history originating as elixirs created for medicinal use. Herbs, roots, seeds plants and fruit noted for their beneficial properties and steeped in alcohol to aid ingestion. The word liqueur coming from the Latin word Liquefacere which means “to dissolve.” With the passing of time, liqueurs have become leisurely drinks that can be enjoyed at any time although due to their sweet nature have traditionally been consumed after dinner. Modern liqueurs have been created from almost every flavour known to man and the category continues to grow at a fast pace. COCKTAIL BITTERS:

An alcoholic beverage prepared with herbs and citrus dissolved in alcohol. Bitters were first used as a herbal medicinal treatment; they didn’t start out as something associated with alcohol. Bitters were added to alcoholic beverages to provide depth and improve the taste of alcohol because good-quality spirits were not widely available in the 19th century. People soon realized that these bitters added flavour and complexity and many classic cocktail recipe’s call for bitters.

The official definition of a Cocktail according to the modern Merriam-Webster Dictionary is “an iced drink of wine or distilled liquor mixed with flavouring ingredients.” That’s a broad definition, but reflects the modern practice of referring to any drink with 3 or more parts as a Cocktail. The first published definition of the Cocktail appeared in an editorial response in The Balance and Columbian Repository of 1806. This read: “Cocktail is a stimulating liquor, composed of spirits of any kind, sugar, water and bitters.” Having a resurgence in popularity in recent years there are now an amazing array of flavours available to bar tenders, enabling them to create truly interesting & amazing drinks using everything from the classic Crème de Cassis to Liqueur de Coquelicot de Nemours (Poppy). VODKA VODKA:

Vodka is typically a colourless liquor, usually distilled from fermented grain but also from other raw materials. The word is a diminutive of the Slavic word “voda” for “water”. Perhaps most popular of the spirits due to its variety of uses, it is often used as the base in cocktails. Vodka can be made from many different kinds of agricultural produce that have a high concentration of starch or natural sugars, including grain, molasses, potatoes, sugar beet or grapes. THERE ARE 11M VODKA DRINKERS IN THE UK AND IT IS THE LARGEST SPIRITS CATEGORY WITH 32.4% OF THE VALUE SHARE.

To make vodka, a neutral spirit of the appropriate quality is either re-distilled to produce a pure and flavourless spirit or filtered through activated charcoal which removes any residual impurities and odours. Filtration is done by pumping vodka through columns of activated charcoal or, in the case of cheaper vodkas simply immersing it into tanks containing charcoal. No maturation period is required for vodka.

By law it must be distilled to the high strength of 96% abv. This can only be achieved by using a column still, although some producers will use a pot still in part of the production, The final strength is achieved by the addition of water to bottling strength to give the legal EU minimum ABV strength of at least 37.5 percent; it is not unusual to have vodkas of up to 50 percent ABV. Flavourings may be introduced into the spirit by either adding natural essences or by steeping fruits or herbs in the vodka for several days. BUYERS CHOICE

TEQUILA To be called tequila the spirit must be produced from at least 51% blue agave & made within the delimited Tequila region of Mexico. The agave a succulent related to the amaryllis (not a cactus) grows for between 7 - 10 years before it is ready to be harvested.

THERE ARE 4 STYLES OF TEQUILA:

Usually younger agave is used to make mixto (min 51%) tequila with the older agave used to make the more premium 100% agave tequilas. The outer leaves are removed (as these give a bitter taste to spirit) and the central core the Pina is then halved and cooked to create fermentable sugars. These are extracted, fermented and typically double pot distilled to make tequila.

GOLD:

There are 2 types of tequila mixto which must be minimum 51% agave spirit mixed with up to 49% of other fermentable sugars during fermentation and 100% agave which is exactly that 100% fermented from the agave plant.

BLANCO/SILVER/PLATO:

White and un-aged, or briefly aged and charcoal filtered to remove the colour. As Blanco but with caramel added for colour. RESPOSADO:

Aged for 3-6 months in oak. ANEJO:

Aged for a minimum of 1 year in barrels with a maximum capacity of 600 ltrs.

MEZCAL Mezcal is a distilled alcoholic beverage made from any type of agave plant native to Mexico. The word mezcal comes from Nahuatl mexcalli which means “oven-cooked agave”. Agave based spirits are made all over Mexico and are known as Mezcal. Unlike tequila Mezcal can be made from any variety of the agave plant. The only exception is Sotol that can only be made in Chihuahua from the agave of the same name. Raicilla is different still, offering a sweeter, softer take on Mezcal but still that roasted-agave robustness. Produced for over 500 years in the Mexican state of Jalisco, Raicilla is a Mezcal that adopted a new name in the 1780’s to avoid a tax levied by the Spanish Crown. Mezcal is made in 8 specific regions of Mexico: Oaxaca, Durango, Guanajuato, Guerrero, San Luis Potosi, Tamaulipas, Zacatecas, and the recently approved Michoacan. Oaxaca is the center of the mezcal world, as 80-90% of mezcals are made in Oaxaca. Mezcal is mostly a small scale artisanal industry that in the last few years has seen its popularity soar. The Pinas are first roasted in puts or clay ovens, then crushed in a mill and put in fermenters. Because natural yeasts are commonly used

fermentation can take up to 30 days, distillation takes place in copper, clay or porcelain stills. Mexico has about 330,000 hectares cultivating agave for Mezcal, owned by 9,000 producers. Over 6 million litres are produced in Mexico annually, with more than 150 brand names. Contrary to popular belief Mezcal does not have to have a worm in the bottle nor does the worm have hallucinatory properties. BUYERS CHOICE

1lb Light Brown Sugar ½lb Unsalted Butter 2 tsp Ground Cinnamon 2 tsp Ground Nutmeg ½tsp Ground Allspice 2 tsp Vanilla Extract To Serve Hot Water 25ml per serving of Old J Spiced Rum or Old J Tiki Fire if you really want a kick to it Cinnamon Stick to garnish

25ml Gin 50ml Cranberry Juice 10ml Grand Marnier 10ml Fresh Lemon Juice Frozen cranberries or pomegranate to garnish METHOD

Shake the gin, cranberry juice, Grand Marnier and lemon juice over ice and strain into a martini glass. Float a few frozen cranberries or pomegranate seeds on the top.

METHOD

In a mixing bowl beat together softened butter, brown sugar, vanilla extract and spices until well combined. Refrigerate in an airtight container for up to a month. Spoon 1 tablespoon into a mug, add boiling water and stir well until dissolved. Add 25ml Old J Spiced rum and garnish with a cinnamon stick.

CHRISTMAS MOJITO INGREDIENTS 65ml Old J Spiced ½ fresh lime 12 fresh mint leaves 2 heaped bar spoons of caster sugar 25ml of cranberry Cubed ice Crushed ice To garnish: sprig of fresh mint HOW TO MIX Put the four lime wedges into a glass, then add the sugar and muddle (squish everything together) to release the lime juice. Put the mint leaves on one hand and clap. This bruises the leaves and releases the aroma. Rub the mint leaves around the rim of the glass and drop them in. Use a muddler, to gently push the mint down into the lime juice. Half fill the glass with crushed ice and pour in the Old J Spiced Rum. Stir the mix together until the sugar dissolves.

There’s been a movement away from buying cheap and in bulk towards a more quality driven experience and occasions. People are prioritising taste above price. They are prepared to trade up and pay more but their expectations of experience and brands that offer them something different are rising the more obvious (or traditional) choices entry level to most expensive (Source Miller Brands On Trade Behaviours 2015 and CGA Peach Brand Pulse). According to Kantar’s Alcovision, matching Super Premium Beer with Food (£34.18) delivers a combined spend per occasion greater than the average for total wine and food (£33.29) and over £10 more than the average for total beer and food (£24.01). Our extensive attitudinal research has shown us that staff knowledge and advocacy is very important, as well as dedicated beer sections on menus and drinks lists with food pairing recommendations. Again, the focus should be on Super Premium Beer: when a lot of effort goes into the plate, it should be matched by what goes into the glass.

It is important for retailers to engage staff to inspire excellence in serve and consumer experience with consumers seeking recommendations and perfectly served drink. A premium price is happily paid for these products as long as they taste great, have authentic heritage and genuine provenance. DORTMUNDER HERITAGE:

Dortmunder owes part of its history to the German Beer Purity Law or The Reinheitsgebot. It helped to shape beer production in Germany and led to the birth of Dortmunder Union and the brewery’s history to date. The Reinheitsgebot, literally “purity order”, is the collective name for a series of regulations limiting the ingredients in beer in Germany. The most well-known version of the law was adopted in Bavaria in 1516. Amendments have been made over the years due to improvements in technology and knowledge. According to the 1516 Bavarian law, the only ingredients that could be used in the production of beer were water, barley and hops. The Bavarian order of 1516 was introduced in part to prevent price competition with bakers for wheat and rye. The restriction of grains to barley was meant to ensure the availability of affordable bread, as wheat and rye were reserved for use by bakers.

The barley go through a process known as mashing, in which they are steeped in hot, but not boiling, water for about an hour, like making tea. This activates enzymes in the grains that cause it to break down and release its sugars. Once this is all done the water is drained from the mash which is now full of sugar from the grains. This sticky, sweet liquid is called wort. It’s basically unmade beer. The wort is boiled for about an hour while hops are added. Hops are the small, green cone-like fruit of a vine plant. They provide bitterness to balance out all the sugar in the wort and provide flavour. They also act as a natural preservative, which is what they were first used for. Once the hour long boil is over the wort is cooled, strained and filtered. It’s then put in a fermenting vessel and yeast is added to it. At this point the brewing is complete and the fermentation begins. The beer is stored for a couple of weeks at room temperature (in the case of ales) or many many weeks at cold temperatures (in the case of lagers) while the yeast works its fermentation magic. Lager beer which is what Dortmunder Union Pils is uses a process of cool fermentation, followed by maturation in cold storage. The German word “Lager” means storeroom or warehouse.

Fritz Brinkhoff himself retired in 1923, but his company blossomed on the strength of “his” brew, surpassing the million-hectolitre mark in 1929. A volume, which the company was not to reach again until 1956, when it was beginning to recover from the destruction left behind by World War II. By the time the Dortmunder Union brewery marked it centenary in 1973; annual output had doubled to two million hectolitres. In 1995, DUB was merged with the Dortmunder Ritter brewery, and, in 2002, DUB was renamed the Brauerei Brinkhoff, in honour of its first brew master Fritz Brinkhoff. The Brewery has now moved but the original building remains and is now a museum, a cinema , exhibition space the University of Applied Sciences, restaurants, clubs, a roof terrace - yes even in the summer a beer garden and a beach: Metro Tower is unique!

In 1887, somebody in the brew house, however, made a mistake and mashed-in a brew of nothing but pale malt. Worse yet, this brew was shipped accidentally to a pub customer in Aachen near the Belgian border. But, as sometimes happens with unintended consequences, the “mistake” turned out to be a sensation in that pub. Thus was born, a new Dortmunder Union beer, a pale Pils-like brew, was soon to become the signature brew of Fritz Brinkhoff. By the turn of the century, DUB made 194,000 hectolitres of the “mistake,” which was about ten times the total output that company had made when it was founded a few years earlier.

In 1887 nothing but pale malt, Hallertau hops and Dortmunder water were mashed, brewed and fermented to create the signature pils of Fritz Brinkhoff the master brewer. The only thing that has changed since are the people drinking it right now.

When the Struck brewery was acquired in 1870 by two investors, they were looking for a competent manager, which is how Fritz Brinkhoff entered the scene. As an accomplished brewer young Fritz worked out a contract that accorded him not only a monthly wage of 100 Taler plus a free room, but also a 25Pfenning commission on every hectolitre of beer that would be made under his direction. This small bonus was to lay the foundation of Fritz’ fortune. The Struck enterprise was so successful that, within two years, it had to be moved to a larger plot outside the city. To raise the needed capital, on January 30, 1873, the brewery was turned into a stockholders company and given a new name: “Dortmunder Union-Brauerei Actiengesellschaft” (DUB). The staple brew at the time was a deep golden brew, now known as Dortmunder Export.

HOT SPICED RASPBERRY CIDER Make a traditional winter drink with the sweet addition of fresh raspberries. The aroma will fill your kitchen and the cider will keep everyone warm. Give it a kick by adding a touch of Old J Spiced Rum. 125ml Old J Spiced Rum (per serving) 1 carton of raspberries (set aside 2-4 raspberries per serving for garnish) 2 x 500ml bottles of South West Orchards Raspberry Cider 4 dashes ground cinnamon Lemon twists, to garnish METHOD Place the South West Orchards, raspberries (don’t forget to leave some for the garnish) and ground cinnamon in a pan, bring to the boil.
