T H E V I N E YA R D Michael’s dream is to produce high-quality English sparkling wine utilising the varietals of Champagne: Pinot Noir, Pinot Meunier and Chardonnay. Vineyards, like dreams, take time to be transformed into reality, time for roots to penetrate deep down and become established, time for grapes to ripen, for wines to be made, for secondary fermentation, and for the complexity to develop that only comes from lengthy maturation on the lees in the bottle. In May 2018, the first stage of the dream was realised: 17,500 vines were planted in the red earth of Devon, basking in a special and protected microclimate that has been identified as one of the very best in the country. The first significant harvest will be in 2020 however in the meantime, Vineyard tours are conducted throughout the Summer with a Sommelier led English wine tasting.

O N T H E E S T U A RY In summer, the Exe Estuary is populated by leisure boats on moorings but come the winter, the boats and dingys are put away and the estuary belongs once again to one of the richest and most varied populations of birds found anywhere in the country. As a designated SSSI (Site of Special Scientific Interest), this unique habitat is made up of river and tidal estuary waters, foreshore, low-lying land, saltmarshes, mud flats, the rare and unusual double sand spit across the mouth of the estuary and the sand dunes of Dawlish Warren. This complex of coastal habitats supports internationally important numbers of wintering and migratory waterbirds.
