Some activities still happening, with changes LYNDEN Lynden’s Northwest Lighted Christmas Parade is a little different from normal in that the brightly decorated entries will be stationary along Front Street, and people can drive-by or walkby to see them. The hours are 5 and 8 p.m. on Saturday, Dec. 5, along Front Street from 17th to Third. This is the 30th annual version of this kick-off to Christmas in Lynden. While a lot of holiday gaity has been grinched by the coronavirus bug in 2020, there are still some fun things happening in our local communities!

FERNDALE In place of the usual OldeFashioned Christmas in Pioneer Park, the Ferndale Heritage Society is putting on a Lighted Christmas Stroll Through Pioneer Village instead. This happens from 5 to 8

p.m. each evening the weekends of Dec. 4-5, 11-12 and 18-19. It is free, but please wear masks and do social distancing, say the sponsors. There will be no access into buildings, except possibly the door of the church will be open with its metal grate in place. The outside of Pioneer Park’s log cabins will be decorated. Also, the Heritage Society is taking children’s letters to Santa. Deposit in the mailbox in front of the old post office. Be sure to make your address legible. Form available on page 13. BELLINGHAM The usual Holiday Port Festival, especially known for its amazing gingerbread creations on display, will not happen this year due to the COVID pandemic. However, the Bellingham Cruise Terminal is offering an outdoor viewing experience of lights, decorations and a “snow
globe” holiday scene as seen through the windows of the terminal’s dome room, all available Dec. 3-25. The terminal is on the south side of Bellingham in the Fairhaven district at 355 Harris Ave. Also, the Bellingham Yacht Club will have its traditional Lighted Boat Parade on Saturday, Dec. 5. Decorated boats will leave Squalicum Harbor at 6 p.m. and float by the Bellingham Cruise Terminal around 6:15. BLAINE The Holiday Market by the Sea continues on Saturdays (to 2 p.m.) and Sundays (to 4 p.m.) at 645 Peace Portal Dr. downtown. The Holiday Harbor Lights Community Tree Lighting will be on Saturday, Dec. 5, in the H Street Plaza.

Caramels Ingredients: 2 cups sugar, 1 1/3 cups light corn syrup, 3 cups light cream (one cup at a time for this recipe), 1 1/4 teaspoons vanilla Place sugar, syrup and 1 cup of the light cream in a cold electric skillet. Set temperature at 325 degrees and stir until all ingredients are combined. Continue stirring as mixture cooks. When light goes out, add 1 cup light cream slowly, stirring constantly. Light will go on again. Cook until light goes out. (Mixture will begin to thicken, so you MUST stir constantly). Add last cup of cream slowly and continue to stir. Light will go on again, continue cooking until light goes off. Add vanilla and pour into buttered 9 x 9 inch cake pan. DO NOT SCRAPE CANDY OUT OF SKILLET. Cool completely before cutting. Caramel squares should be wrapped individually in waxed paper.
Nanaimo Bars Put in double boiler: 1/4 cup sugar 5 tablespoons cocoa Stir these two together first to avoid the cocoa from lumping 1/2 cup butter 1 teaspoon vanilla 1 egg Stir until butter melts & mixture is like custard. Add by stirring in: 2 cups finely crushed graham crackers 1 cup fine coconut 1 cup nuts (walnut) Put into a 9 x 6 inch pan For second layer: Combine the following. 1/4 cup butter 3 tablespoons milk 2 tablespoons Jello Vanilla Instant Pudding then BLEND in 2 cups powdered sugar. Spread second layer mixture on top of chocolate mixture in pan. Let stand for 15 minutes to thicken. Frosting: Melt 4 squares of unsweetened chocolate with 1 tablespoon butter. Spread over custard. For larger recipe in 9 x 13 inch pan, just double all of the above.

Rudolph the Candy Cane Reindeer Candy canes Pipe cleaner (brown) One little small red pom pom Squiggly eyes Elmer's glue Take the pipe cleaners and cut in half, twist around the arch of the candy cane to make antlers by curling them up around a pencil or twisting them or by hand. Glue the eyes just down from the curve of the candy cane Add a red pom pom on end of hook of candy cane for Rudolph's red nose and hang on tree or ?

Salt Dough Ornaments • 2 Cups Flour • 1 Cup Salt • 2 Tbsp Cooking Oil Mix ingredients in a bowl. Slowly add between 1/2 to 2/3 cup water while mixing. Knead the dough until it is soft and smooth. Add food coloring. Use cookie cutters to cut out shapes. Punch a hole in the decoration. Bake in oven at 250 degrees for about 2 hours until dry and hard. Once cool you can add a bow or a ribbon to make an ornament or a decoration for gift boxes.

Spritz Cookies Pair a small tin of these with a nice box of tea for another great gift idea. 1 cup salted butter, softened 1 cup powdered sugar 1 egg ½ teaspoon vanilla 2 1/3 cup sifted flour ¼ teaspoon salt colored sugar crystals or sprinkles Preheat oven to 400ºF, set cookie sheet in a cool area or in fridge while preparing dough. Cream together butter and sugar. Add egg and vanilla, mix until fluffy. In a separate bowl, mix salt and flour. Add dry ingredients to wet and mix just until blended. Place dough in a cookie press and press onto chilled cookie sheet. Add sprinkles or colored sugar crystals. Bake for 6-8 minutes. Remove from oven and transfer from cookie sheet immediately. Makes 4 dozen.
Classic Candied Pecans Fill a mason jar with these for a great gift. 1 Tablespoon water ½ teaspoon vanilla 1 egg white ½ cup granulated sugar ½ cup brown sugar ½ teaspoon salt 1 teaspoon cinnamon 8 oz pecan halves Preheat oven to 250°F Whisk together water, egg white and vanilla. Add pecans and toss to coat. In a separate bowl, mix sugars, salt and cinnamon until thoroughly combined. Add coated pecans to dry mixture and toss to coat. Spread nuts onto a cookie sheet and bake until sugar has dried, approximately 45 minutes, stirring every 15 minutes.
