Celebrate the Holidays in Whatcom County

LYNDEN Breakfast with Sinterklaas LYNDEN — Join the Lynden Community/Senior Center for a festive pancake breakfast on Dec. 2 from 8– 10 a.m. Bring your camera to take a picture with Sinterklaas from 8 a.m. – noon. Breakfast is $10/ adults and $5/kids ages 5 and under and includes pancakes with optional candy cane dust, scrambled eggs, sausage and hot chocolate/coffee/OJ. The Center will also host its annual Christmas Market Dec. 1 from noon – 6 p.m. and Dec. 2 from 8 a.m. – 2 p.m. The Center is at 401 Grover St. For more information, call 360-354-2921 or email info@ lyndencommunitycenter.org. Elf on the Shelf Celebrate Christmas in Lynden on Dec. 2 with the Elf on the Shelf Scavenger Hunt. Join Downtown Lynden’s Elf on the Shelf Scavenger Hunt from 11 a.m. until 5 p.m. for fun and prizes. The elves are back and running wild, visiting businesses all over Lynden. Can you find all of the elves? Join in on the fun at the Elf on the Shelf Scavenger Hunt and win one of three prizes valued at more than $300 each. First 500 participants get free antlers. Pick up your card at Elf’s Headquarters, next to the big red mailbox at the corner of 5th and Front streets. NW Lighted Christmas Parade Come join us with for Lynden’s annual kick-off to Christmas holiday season celebration, the Northwest Lighted Christmas Parade, at 6 p.m. Saturday, Dec. 2, presented to the community by North Pacific Concrete Pumping. Visitors and locals will be treated to holiday carolers and a dazzling display of lighted trucks, cars, floats, wagons, farm equipment and more. The procession starts at the Fairway Center and travels along Front Street from 18th Street through downtown Lynden to 3rd Street, giving spectators an opportunity to enjoy an array of wonderful Christmas shopping

experiences in the stores of Lynden before the parade. Bring your lawn chairs, grab your blankets and mittens and dress for a cool winter’s evening chill while joining thousands of other families, friends, and soon-to-be friends in welcoming that most wonderful time of the year. Just a reminder that our local restaurants can be very busy that evening, both before and after the event, so give a call a day or so before to see if they are taking reservations. Front Street will closed to traffic in downtown at 3rd Street starting at 4:30, and closing at 19th Street at 5 p.m. On-street parking is best north of Grover Street, just please remember not to be a grinch and park in or block someone’s driveway, and be generous with your patience as folks from near and far seek parking space. FERNDALE Olde Fashioned Christmas There’s snow place like Pioneer Village that first weekend in December. Ferndale’s community tree lighting is at 5 p.m. Dec. 1 at Centennial Riverwalk Park on Main Street. Join us and Whatcom County Fire District 7 as we kick off the holiday season with Christmas carols, hot cocoa, cookies and a surprise visit from a special guest to help us light up our community Christmas tree. Visit https://ferndalechamber.com for more information or call 360-384-3042. At Pioneer Park in Ferndale, the log cabins will again glisten like fresh snowflakes. Costumed volunteers will open the log cabin doors to greet you, so you feel the holiday cheer as it drifts into the winter air. Guests stroll around the ADA compliant sidewalks while enjoying Christmas music and over 90,000 lights that light your path. Volunteers of the Ferndale Heritage Society host the 31st annual Olde Fashioned Christmas celebration for the public, Dec. 1-2.

After touring the cabins, visitors will venture into the Pioneer Pavilion where children can do hands-on crafts, and ice fishing. All visitors are served warm beverages, compliments of Whatcom Educational Credit Union, while they enjoy live music entertainment. Finish off your evening with a visit and a photo with Santa who will be taking those special Christmas time gift requests. Pioneer Village is home to 15 historic log cabins. Children can visit the one-room schoolhouse to write a personalized letter to Santa or prewrite your letter on our template prior to attending the event. Deliver those letters to the one-room post office for mailing to the North Pole. Shoppers of all ages find inexpensive trinkets for their loved ones at the Parker House cabin, which is now the general store. The Shields House has baking apple scents, and the Foster house will showcase a huge working model train display. The log church offers quiet reflection time. Gentle giants, known as the draft horses, greet visitors in the Barr Barn. Only certified service animals allowed within all the fenced areas (Pioneer Village), per City Municipal Code 12.26.010 C. 3. Olde Fashioned Christmas is open From 4-9 p.m. Dec. 1-2. Lighted Christmas Stroll Volunteers of the Ferndale Heritage Society will again host a Lighted Christmas Stroll through Pioneer Village. This free event is a giving back to our community labor of love. The second and third weekends in December, Pioneer Village will be open Friday and Saturday evenings. That’s from 5-8 p.m. Dec. 8-9 and Dec. 15-16. Thanks to those board stamped concrete sidewalks, you won’t even get your feet wet as you stroll around the cabins, see all the park lit up with over 90,000 lights, hear Christmas music and see costumed volunteers greet you as you feel the holiday cheer spill into the winter air. Young guests are encouraged to prewrite their letters to Santa and mail them in the Santa mailbox that will be located by the Barrett Post Office. Letter template is available on heritage website. The letters need to have their names and a legible mailing address to help Santa return them. Hot beverages will be provided onsite, compliments of Whatcom Educational Credit Union, to keep you warm as you stroll. A photo booth will be at the Barr Barn lean-to get those annual pictures. Santa hasn’t committed to making an appearance, but you just never know where he might be hiding. This year, there will be a seek and find the snowmen scavenger hunt challenge. BELLINGHAM • Nov. 25-Dec. 16: Fairhaven’s Winterfest at Historic Fairhaven Village, 1207 10th St., Bellingham. Fairhaven Route: Meet at Hillcrest Church (1400 Larrabee Ave) at 4:30 p.m., ride leaves at 5 p.m. Downtown Bellingham Route: Meet at Depot Market Square, 1100 Railroad Ave., at 4:30 p.m., ride leaves at 5 p.m. Both groups will meet at Boulevard Park for hot cocoa and festivities. EVERSON Christmas in the Park Christmas in the Park is from 5-7 p.m. Friday, Dec. 1 at Everson City Park, 201-205 Lincoln St. Free photos with Santa Claus. Also don’t forget the hot cocoa, hot dogs, and the Christmas lights.

SUMAS Sumas Christmas in the Park Sumas Christmas in the Park from 5-7 p.m. Dec. 4 featuring Santa, a photographer, treats for the kids, and hot beverages for everyone. Festivities start when Santa arrives on a fire truck to light the big Christmas tree. Sumas City Park is at 135 3rd St. Also join with Sumas businesses and bring out the Christmas Spirit this year by lighting up the city with holiday lights and decorations outside your homes. Let’s create a festive show throughout town for spectators to view as they drive or walk around.

Dipped Molasses Cookies Ingredients: 1 1/2 cups vegetable oil, 2 eggs, 1/2 cup molasses, 2 cups granulated sugar, 4 cups flour, 4 teaspoons baking soda, 1 tablespoon ground ginger, 2 tablespoons cinnamon, 1 teaspoon salt, granulated sugar for rolling cookies, 12 ounces white chocolate chips or white almond bark for dipping Directions: 1. Heat oven to 350 degrees. 2. In a large bowl, mix oil, eggs, molasses, and sugar. 3. In a separate bowl, mix flour, baking soda, ground ginger, cinnamon, and salt. 4. Slowly combine dry ingredients with molasses mixture. 5. Roll into small balls (about 1 1/2 tablespoons in size) and then roll the balls in more sugar to coat.

6. Place balls on parchment paper-lined baking sheets, and space out to give them room to expand. 7. Bake until golden brown, about 10 minutes. Transfer to a baking rack to cool. 8. Once cookies are cool, melt the white chocolate or almond bark in the microwave in 30-second intervals, until melted, or in a double boiler over simmering water. 9. Dip half of each cookie into the melted white chocolate. Place on wax paper or parchment paper to cool and harden. Recipe makes about 40 cookies. Recipe credit: www.sugar.org

Poffertjes (Dutch pancakes) Ingredients: 1 level teaspoon instant yeast, 1 tablespoon milk, 1 cup buckwheat flour, 1 cup white flour, 2 eggs, 1 teaspoon sugar, 1/2 teaspoon salt, 1 1/4 cups warm milk, 1 tablespoon butter Optional toppings: Powdered sugar, strawberries, or whipped cream Dissolve the yeast in 1 tablespoon milk in a small bowl. In a different bowl, combine the buckwheat flour, white flour, sugar, salt, eggs & half the warm milk (5/8 cup). Add the yeast and milk combination and whisk ingredients until mixture is smooth. Add the remaining warm milk and re-beat. Cover the bowl with plastic wrap and let rest for an hour. After resting, melt 1 tablespoon butter in a poffertjes pan (a skillet or frying pan also work). When the butter starts to sizzle, add teaspoonfuls of the batter in circular movements to form the mini pancakes. Turn them around as soon as the bottom has set, best done by using two forks. Serve the poffertjes with butter and sieved powdered sugar, along with optional toppings.

Start by filling your white sock with rice. You will need a hefty amount. Once you are happy with the amount (and size) of your sock snowman tie the top with the rubber band. Take another rubber band and place in the middle - more to the upper side - of the rice filled sock to form the head shape. Now glue the buttons to the bottom side by using a glue gun. Add a ribbon for the scarf. Cut the colored sock (the foot without the heel) and fold it to appear as a snow hat for the head of your snowman. You can leave it as it is or you can secure it with some glue. Use markers or paint with colors of your choice to draw eyes and a mouth on the face of the snowman.
