Northwest Lighted Christmas Parade
Come join us with for Lynden’s annual kickoff to Christmas holiday season celebration, the Northwest Lighted Christmas Parade, on Saturday, Dec. 2 at 6 p.m., presented to the community by Edaleen Dairy.
Visitors and locals alike will be treated to holiday carolers and a dazzling display of lighted trucks, cars, floats, wagons and farm equipment.
The procession starts at the Fairway Center and travels along Front Street through downtown Lynden, giving spectators an opportunity to enjoy an array of wonderful Christmas shopping experiences in the stores of Lynden before the parade.
Bring your lawn chairs, grab your blankets and mittens, and dress for a cool winter’s evening chill while joining thousands of other families, friends, and soon-to-be friends in welcoming that most wonderful time of the year.
Just a reminder that our local restaurants can be very busy that evening, both before and after the event. So give a call a day or so before to see if they maybe taking reservations.
On-street parking is best north of Grover Street, just please remember not to be a grinch and park in or block someone’s driveway, and be generous with your patience as folks from near and far seek parking space.

In addition to growing produce and flowers, several farms in North Whatcom County also offer agritourism by opening for special events to the public including tasting rooms and farm stands.
Barbie’s Berries
The Barbie’s Berries farmstand at 7655 Melody Lane in Ferndale, has been in business since 1996 under the same ownership of Randy and Barb Kraght, with Manager Julie Vander Meulen.
From September through May, Barbie’s Berries offers frozen berries by appointment. Strawberry season starts off in June. Raspberry harvest follows with blueberries and
blackberries after that. With different varieties harvest concludes Labor Day weekend in September.
Barbie’s focuses on hand-picked, and offers fresh: strawberries, raspberries, blackberries and blueberries. During summer harvest, fresh berries are available. Otherwise frozen berries are offered year round in three pound bags or 30 pound boxes of all four fruits.
“The Pacific Northwest, and Whatcom County in particular, is renowned for its ability to grow consistently delicious berries,” the Barbie’s Berries team says. “We would like to say it is our hand picking and washing that ensures every berry you eat will be succulent, but we must give credit to prime conditions the

Bellewood works 62 acres of farmland with 25,000 trees: the Lynden orchard includes 31 acres of high-density semi-dwarf trees featuring 22 varieties of apples and a second orchard in Ferndale has 15 acres of Honeycrisp apples and pears.

U-pick apples and U-pick pumpkins. Bellewood reports harvesting more than 1.7 million pounds of apples each year.
The apples are also used in making award-winning Brandy, Vodka and Gin as well as apple butter, apple chips, apple pie and cider.
Stoney Ridge Farm
Stoney Ridge Farm, at 2092 Van Dyk Road in Everson, is a family-run farm that focuses on fall harvest and Christmas trees with invitations on its social media.
Open Christmas season for U-cut and pre-cut trees, Stoney Ridge has a selection of Nordmann, Noble and Frazier fir trees. The farm also has homemade wreaths, garland, cider and donuts. Pumpkins offered during the fall along with farm side family-friendly activities.
Triple Wren Farms
Triple Wren Farms, on 20 acres at 2424 Zell Road in Ferndale, was founded in 2012 by Sarah and Steve Pabody.
After operating a wedding floral business as a separate entity and selling cut flowers in different marketplaces, the operation now primarily focuses on selling dahlia tubers, a hybridizer legacy program, and creating an online community for like-minded flower farmers.
The dahlias are selected for home cut flower gardens in a modern palette. The community, known as The Garden, is the learning and connecting space. Familyfriendly U-pick events and workshops are also offered during summer and fall blooming.

Raspberry growers get proactive in developing products
Innovation helps promote Lynden signature crop in bakeries and grocery shelves
In various ways, Lynden’s commercial raspberry growers have become proactive in developing marketable products using their raspberries.
These unique products could show up in the grocery stores you visit, whether already now or at a future point. And the industry keeps working at more of this type of visibility.
The great majority of 50 million pounds of red raspberries produced in Whatcom County each year ends up not so visible at the retail endpoint. That’s because the raspberry ingredient is tucked into baked goods, in dairy product flavors, in frozen treats and beverages.
The 20 miles surrounding Lynden is certainly North America’s capital of red raspberries grown
for processing. That means the raspberry flavor gets frozen very soon after harvesting, whether in a high-value IQF (Individually Quick Frozen) form, as a puree or as stock for making juice.
Still, the Lynden-based Washington Red Raspberry Commission is working hard to get the Washington Red Raspberries logo on the label of as many products as possible.
The credit to Washington-grown raspberries is on the Whatcom Red smoothie drink that fourth-generation grower Jon Maberry developed a few years ago with friend David Lukens of local Grace Harbor Farms. “There’s a half pound of raspberries in that one (pint) bottle” -- for sure a healthy dose for anyone’s day, Maberry said.
Under the TruFru label is a frozen treat of raspberries covered in white and milk chocolate. It is produced at the facilities of Enfield Farms of Lynden, even though the distributor shows as out-of-state. “It’s a neat product,” says Andy Enfield, and one that can be found in Haggen, Target and Fred Meyer frozen-food aisles.

This process involves coating frozen whole raspberries individually in a warm sweet chocolate and then getting the concoction quickly back to cold temperature again. Bags of “raspberry clusters” of these delights are available at local Edaleen outlets.
Enfield Farms also contributes raspberries to a Seal the Seasons pack of different blends of Washington and Oregon fruit, and sometimes Andy will be the featured grower pictured on the bag in the Lynden Safeway store.
Still in final development, heading toward release in 2023, is a retail one-pound bag of sweetened raspberry puree, said Rolf Haugen, manager of the Northwest Berry Co-op on Pole Road south of Lynden. For now, the pack can be frozen or refrigerated, but the goal is to have it be shelf-stable at room temperature.
“It’s a fantastic product, and everyone we give it to loves it,” Haugen said. It can be a syrup on ice cream,

There’s a motivation for the local industry, so suited to Whatcom County’s climate, to be doing such innovation and experimentation: “We’re doing whatever we can to compete because Mexico is importing fruit cheaply below the costs of production,” Haugen said.
Another market being pursued is school food service. The commission has launched a new toolkit and supporting webpages that help school chefs and culinary professionals to use frozen raspberries in recipes designed specifically for K-12 schools.
Growers foster partnerships through WRRC with bakeries such as Macrina and Rubicon -- think cupcakes -- and baking labs to keep Washington red raspberries in sharp focus for
recipes, trainings, tastings and media coverage.
It’s all to boost the flavor and nutrition contained in Whatcom County-grown raspberries.

Steensma Creamery sisters move farming forward
Drawing on their upbringing, sisters Kate and Ellie bring a new yogurt product to market.
Already when they were girls in local 4-H, Kate and Ellie Steensma learned from their dad, John, how to make yogurt.
They also learned the ways of dairy farming, the work of it but also the love of it. Kate and Ellie represent a fourth generation on the Axling Road family farm west of Lynden.
They forged their way into careers. Kate for seven years helped DeLaval sell and support new robotic milking systems. Ellie is a high school FFA adviser/agriculture teacher and also
does outreach for the Whatcom Family Farmers organization.
But they are back close to home again, and in 2020 an idea for the farm, and for their future, began to take shape.
Kate had been to Iceland where she learned about the thick and creamy yogurt called skyr (technically it is a cheese). She now began to make skyr at home, “batch after batch,” she recalls, testing, experimenting. By the end of the year, she was making 20-gallon batches.
She registered the name Steensma Creamery and got a creamery license from the Washington State Department of Agriculture. She also developed a cooperative relationship with Grace Harbor Farms a few miles away to lease its processing facilities to make at least one 40-gallon batch of yogurt per week.

“We just see it that we are going to learn from each other,” Kate says of the bond with other local small niche processors, who may share equipment and supplies. “We’re making different products. “It’s a good collaborative community.”
In October 2021 the sisters sold their first product under the Steensma Creamery label. At The Green Barn of Lynden, an outlet from the start, the unique skyr yogurt is joined on the cooler shelves by the milk and dairy products of other local labelers Edaleen, Twin Brook and Grace Harbor.
The skyr yogurt is available now in plain, maple, raspberry and mango flavors. It appears at the Community Food Co-op of Bellingham, farmers markets Bellingham and south, and is marketed via a wholesale distributor.
This enterprise owned by Kate uses up only a small portion of the milk produced by the mix of 200 Holstein and Jersey cows on the Steensma farm. The rest goes to regional processor Darigold. So “we have room to grow this little thing of ours,” Kate says, as the siblings (including two brothers) look to relieve mom and dad of their decades of running things.
They speak a testimony of appreciation for the ecologically responsible approach to dairy farming that parents John and Karen instilled all along.
“Sustainability is a huge part of how we farm. We really want to focus on keeping our Earth healthy,” says Ellie in a video on the Steensma Creamery website. And this ethic extends right down to reusing pint and quart glass bottles for the skyr.
“It’s really rewarding to be a farmer,” says Kate. “It’s a lot of work, but the beautiful part is how closely connected everything is, from the
sun to the grass to the soil, to the cows, to the milk. That’s all happening right on our farm.”
The sisters are buoyed by consumers saying, “this is the best yogurt I’ve ever tasted,” comments that keep them motivated to keep making more.

If Steensma Creamery is the start-up, Edaleen Dairy is the name that has been around for almost 50 years, the first bold venture into farm-to-market creativity.

Dairygold
The operation that has been around the longest is Darigold. The Lynden processing plant of the Pacific Northwest cooperative does only milk drying in tall evaporation towers. The created powder products go all over the world.
Regional dairy farms supply the milk that can be whole, low-fat or lactose-free. In fact, Darigold FIT milk is the latest high-protein, low-sugar version. At your supermarket dairy counter, you can find the array of products Darigold has perfected in 100-plus years: cheese, butter, sour cream, ice cream, coffee creamers.
The policy of high quality and stewardship carries over to the environmental practices and community partnerships Darigold tries to build.
Grace Harbor Farms
Grace Harbor Farms is the host site for Steensma processing on Birch Bay-Lynden Road west of Lynden. Since 1999 the Lukens family has been making goat and cow’s milk products without using artificial flavors or gums. Whole milk keeps its natural high butterfat, and it is not homogenized -- the cream rises to the top of the bottle.
A unique product is kefir, thick and creamy, in plain, vanilla and raspberry flavors. Yogurts are European style, cream on top with full fat. Grace Harbor promises that its goat milk is “the best you will ever try.” And the Whatcom
Red Raspberry Smoothie is a treat recently launched with local raspberry growers.
A separate division is skincare products.
Twin Brook Creamery
Twin Brook Creamery is today’s version of the dairying that has been in the Stap family since 1910. Milk and cream are produced from Jersey cows -- higher protein, higher butterfat -- raised right on the Double Ditch Road farm.
Over the last 22 years of building Twin Brook, Larry Stap has been able to bring the brand to hundreds of grocery stores throughout western Washington. He is the face and voice of the farmer building trust directly with consumers.

Appel Farms
Cheese only is the specialty at Appel Farms, but what a selection. A cheeselovers’ monthly tray with Appel would include the gouda in up to five flavors, feta in two flavors and Farmstead Swiss (massdammer). Other types available are the quark curd cheese, Norwegian nokkelost, Danish Havarti and non-aged paneer.
What began as one man’s dream -- Jack Appel, an immigrant from the Netherlands -is now the artisan cheese-making business of his sons Rich and John and their families. Along Northwest Road between Lynden and Ferndale, the Cheese Shop for sales and small group hosting was built in 2014. Then the new cheesemaking plant, which gives tours, followed in 2016.

There has been a lot of change to Lynden’s population, climate and home price in the past few years.
In the latest census count the Lynden population came in as 15,749. That is a 3,798 person increase from the census taken in 2010.
