From the General Manager, Mark Reid 2020 is our year! It was amazing to see all of the people across the world who were pulling for our beloved Kansas City Chief ’s to win the Super Bowl. From the top to the bottom of the organization, the Chiefs are truly a class act. For those of you (us) reading this who were sitting in front of your 22” color console TV’s, 50 years ago, watching the Kansas City Chiefs defeat the Minnesota Vikings and win Super Bowl IV, the wait has been long; we have all been patient.
We never put grocery sacks over our heads, we always respected the National Anthem and we never stopped being loyal fans. And when we woke up on Monday morning and pinched ourselves to make sure it was actually real, that the Chiefs were the champions of the world, we began the process of savoring this moment with great pride that will last throughout 2020 and even through another 49 years, if that’s what it takes. That’s what makes mid-western fans so great. The Clubhouse is being readied for a very busy year. We have completed the makeover of the Banquet Room, and it is very nice. The Golf Shop remodel, along with the Head
Golf Professionals office and main hallway, are nearing completion. The parking lot will be milled and repaved as soon as temperatures are consistently warm enough to reopen the asphalt plants. With the additional good news provided by Punxsutawney Phil, we can all look forward to an early spring.

Wine has been produced in the area to the northwest of Madrid, Spain for centuries. Too often, the focus was on producing quantity, rather than quality. In recent years, vintners, encouraged by forward thinking wine merchants, have implemented modern viticulture and winemaking techniques. The winemakers’ efforts have yielded some of the best red wine values found anywhere. Zestos, “baske” in Spanish, represents a tremendous example of really good wine at a very good price. Their Garnacha, Grenache in France, the U.S. and elsewhere, is produced from hillside vines that are between 40 and 60 years old. Older vines produce less fruit, but the grapes fully ripen and are intensely flavored. Zestos “Old Vines” Garnacha has aromas of ripe raspberries with full flavors of raspberries and dark fruit, accented with hints of spice. It is medium-bodied with soft tannins. Enjoy Zestos Garnacha with cheeses, burgers and pizza at the Argyle. Cheers!

In the interest of maximizing the pride we all have in our golf course here at Lakewood, your Golf Committee is excited to launch a “Caring for the Course” program. The goal of this program is to add just a little extra TLC to the great work Steve and his crew already do on the course every day. We’ve all stood on any given hole and seen a smattering of broken tees laying on and around the tee box, a few fairway divots left unattended, or more, fresh ball marks on a green than are players in your group. While we all step up and address a few of those situations, it’s a daunting and pace-of-play-impacting task to think each of us can fix everything we see. So, the Golf Committee isn’t asking that you fix everything, but on top of your normal care, please give a special focus on just ONE HOLE assigned to you. The staff has assigned holes based on a member’s last name, and assigned an equal number of members to each hole. What can I do to assist in “Caring for the Course”? • • • • •
On your hole, clear the tee-box of broken tees and place them in the box (par 3s) or put them in the trash. Replace or tamp down divots on tee box or in fairway. Pick up any sticks you happen to walk by in the rough. Repair unattended ball marks on the green. Ensure yourself and players in your group are entering the sand bunkers from the low side and properly raking after playing. • Take note of anything on your hole that you think is array and bring it to the attention of Brian Bateman.

Ingredients Four 8-oz raw lobster tails in the shell, thawed if frozen 6 T unsalted butter One 10-oz package frozen, chopped spinach, thawed and squeezed dried 2 cloves garlic, finely chopped Zest of ½ lemon (about 1 tsp), plus wedges for serving

Directions 1. Preheat the oven to 425 degrees F. Position a wire rack on a baking sheet and set aside. Bring a small pot of water to a boil. 2. Put the lobster tails in a large heat-safe bowl, pour in boiling water to cover and let sit until the shells just begin to turn orange, about 4 minutes. 3. Use kitchen shears to cut the shells and remove them from the meat. Insert a wooden skewer lengthwise through each tail so that the lobster stays flat and does not curl up while cooking. Set the tails aside. 4. Microwave 4 tablespoons of the butter in a medium microwave-safe bowl in 30-second intervals until melted, about 1 minute. Stir in the spinach, garlic, lemon zest, a large pinch of salt and a few grinds of pepper; set aside. 5. Melt the remaining 2 tablespoons butter in a medium nonstick skillet over medium-high heat. Add the mushrooms, thyme, a pinch of salt and a few grinds of pepper and cook, stirring occasionally, until the mushrooms are soft and starting to turn brown in spots, about 5 minutes. 6. Roll each puff pastry sheet into an 11-inch square. Spread half of the spinach mixture on each sheet and sprinkle with half of the mushrooms. Cut each sheet in half, making 4 rectangles. Place a lobster tail at one end of each rectangle, parallel with the short side. Roll the pastry pieces around the lobster and transfer to the prepared baking sheet. Brush the pastry with the beaten egg. 7. Bake until deep golden brown, 20 to 25 minutes. Remove the skewers, slice widthwise into pieces and serve with lemon wedges. Serve with sweet spring mix and light vinaigrette dressing. Enjoy champagne beurre blanc with this elegant and tasting meal.

Directions 1. Preheat the oven to 425 degrees F. Position a wire rack on a baking sheet and set aside. Bring a small pot of water to a boil. 2. Put the lobster tails in a large heat-safe bowl, pour in boiling water to cover and let sit until the shells just begin to turn orange, about 4 minutes. 3. Use kitchen shears to cut the shells and remove them from the meat. Insert a wooden skewer lengthwise through each tail so that the lobster stays flat and does not curl up while cooking. Set the tails aside. 4. Microwave 4 tablespoons of the butter in a medium microwave-safe bowl in 30-second intervals until melted, about 1 minute. Stir in the spinach, garlic, lemon zest, a large pinch of salt and a few grinds of pepper; set aside. 5. Melt the remaining 2 tablespoons butter in a medium nonstick skillet over medium-high heat. Add the mushrooms, thyme, a pinch of salt and a few grinds of pepper and cook, stirring occasionally, until the mushrooms are soft and starting to turn brown in spots, about 5 minutes. 6. Roll each puff pastry sheet into an 11-inch square. Spread half of the spinach mixture on each sheet and sprinkle with half of the mushrooms. Cut each sheet in half, making 4 rectangles. Place a lobster tail at one end of each rectangle, parallel with the short side. Roll the pastry pieces around the lobster and transfer to the prepared baking sheet. Brush the pastry with the beaten egg. 7. Bake until deep golden brown, 20 to 25 minutes. Remove the skewers, slice widthwise into pieces and serve with lemon wedges. Serve with sweet spring mix and light vinaigrette dressing. Enjoy champagne beurre blanc with this elegant and tasting meal.
