Welcome to the July/August issue Summer loving, having a blast? It’s that time of year again to make the most of those long days and the wealth of events and attractions on offer at every turn. Made has collated some of the most intriguing and exciting destinations throughout North Notts, and it’s all going to happen so fast.

Sherwood Forest aspirations set for massive boost thanks to support from the National Lottery Heritage Fund Many of the long-held aspirations of the Trust and partners to recreate and reconnect key areas of Sherwood Forest habitat are

now set to be delivered thanks to a £2.4 million injection of cash from the National Lottery Heritage Fund.

District Council and Inspire, the Miner2Major project will deliver just short of £4 million of investment in a number of initiatives

ranging from the creation of habitat for species such as Leisler’s bats, nightjar and glow worms, to programmes celebrating the

area’s rich industrial heritage. The project will run from 2019 to 2023.

Nottinghamshire Wildlife Trust will lead on the delivery of two programmes focussed on enhancing existing areas of habitat

such as heathland and woodland to the creation of new habitat for target species.

Speaking about the funding boost, Nottinghamshire Wildlife Trust’s Head of Communications Erin McDaid said: “This project

will help secure the future of the county’s most iconic natural asset and will protect and restore habitats and species. Just as importantly, it will connect local communities to the forest."

Much of the work will focus on former pit tips in the heart of Sherwood Forest and enhancement work will be carried out on

Trust reserves such as Rainworth Heath, adjacent to the former

Rufford Colliery. Efforts to improve habitats will be guided by a new programme of surveys and there will be a range of opportunities for local people to get involved in surveying, monitoring and habitat management.

Chesterfield Canal Walking Festival Taking in three counties and 46 miles of tow paths over nine days, the Chesterfield Canal Walking Festival is billed as the biggest canal walking event in the country. Organised by the Chesterfield Canal Trust, the festival will run from 14 - 22 September, with a total of 53 guided walks - the majority of

which are free - ranging from a children’s walk of just two miles to the full 46-mile length of the canal in three days.

The Trust’s Walks Officer, David Blackburn, who has been researching and leading walks for over 20 years, said: “The canal is

an absolute delight at any time of year, but early autumn possibly sees it at its best. There are walks for all ages and abilities, including specialist interest walks and combined walks and boat trips for people who would like a more relaxing day out. We are very

grateful to everyone who has helped us to put this festival together and to our sponsors Bassetlaw District Council and the Canal & River Trust.”

There are special interest walks such as nature, history, architec-

ture, restoration, bird spotting, bat spotting and geocaching. Some walks will explore the attractive towns and villages in North Nottinghamshire. Dr Patrick Harding, one of the country’s leading experts in fungi, will be leading a ‘Tree, Mushroom and Toadstool’

walk. National Trust staff from Mr Straw’s House in Worksop will be leading a towpath trek.

There are opportunities to combine a walk from two miles up to

seven miles, with a cruise on one of the Trust’s trip boats. One walk gives the opportunity of a guided tour of Britain's last surviving working railway roundhouse at Barrow Hill, whilst another

includes a ‘Posh Picnic’. Several walks will investigate the section

of the Chesterfield Canal that has not yet been restored and will reveal plans on how this will take place.

Raising The Glass

In the picturesque Courtyard at Thoresby, sits a studio where you step into a world of heat and molten glass. Borne from this raging heat are the most exquisite and beautiful pieces of sculptural glass art. Organic in style, flowing curves and interconnecting pieces, all created by the mind and skilled hands of Ingrid Pears MBE. Made steps into the studio to discover more. 18

he three red-hot furnaces that sit inside Ingrid Pears’ studio make a noise like a small jet engine. Burning at a constant 1315 degrees celcius, when opened, you can feel the fierce heat straight way. The fire generated is used to melt blocks of pure glass to a watery, malleable, syrup-type consistency, for them to be transformed into a myriad beautiful designs, such as vases and dishes and a whole manner of elaborate designs and shapes. Made joined Ingrid Pears MBE at her studio at Thoresby Courtyard, which has been her base for the last 17 years – she was based at Welbeck Estate before that. The blazing furnaces are constantly running, only being turned off about twice a year for maintenance. They were all built by Ingrid and her father, who just happens to be an aero engineer, handy when you need to design something that will need a blast of red, hot heat. Although her love for glassblowing spans 20 years, it wasn’t something she originally wanted to pursue. “I wanted to be a dentist originally. So I studied all the sciences and the arts, but then decided I wanted a year out at art college and during that year I had a go at glass blowing and that changed everything,” said Ingrid. Ingrid undertook an BA(Hons) Degree in 3D Design, specialising in glass at Middlesex University, London. and from there won a Scholarship from the Worshipful Company of Glass Sellers of London, which allowed her to study postgraduate Glass Techniques and Technology at the International Glass Centre, West Midlands. “I did my post grad in furnace technology, so I could build my own equipment. My father’s an aero engineer, so we were able to adapt different ideas from jet engines into furnaces.” Ingrid starts the whole glassblowing process off by placing the blocks of glass into the raging furnace. The intense heat melts the glass, which then settles into a whirling mass, emitting enough heat to appear almost white hot, that hovers just above the furnace’s surface. The glass is then left to “fine out”, which allows the bubbles to rise out of the mass. “So the first thing I do is to gather the molten glass out of the furnace and dip it into the prepared coloured sand and then make the piece I’m working on. The colour melts into it and becomes part of it. It’s quite an exact science and if you get one per cent wrong in the mix then everything will just explode.” Ingrid uses a variety of different colours to produce the desired designs and effects. Using her artistic eye and skills, she is able to produce intricate and beautiful objects that go to clients around the world.

She produces pieces throughout the year. They include jewellery, vases, bowls and bespoke art pieces. She creates an array of sculptural glasswork for large overseas companies and has even produced specially commissioned pieces for award ceremonies. “The main ingredient in the glass is sand so that’s pure silica, but then you have lots of other ingredients to make it soft and workable. On these, all the colours have come from different oxide metals. So for instance if you drop copper in glass it will turn it green. Cobalt will give you blues, lots of silver will give you gold colours, while gold will give you reds, pinks and purple. Part of blowing glass is about learning the chemistry of glass so you can have recipes made up – so we’re always experimenting. The furnace temperature, at 1315 degrees celcius, has to be that precise to allow the glass to be the exact consistency to be worked properly. “It takes nearly a 12 hour cycle for the glass to melt, so the furnace is never switched off – it’s on twenty-four seven, all year round. We switch it off once or twice a year.”

As well as her work at her Thoresby studio, Ingrid takes her glassblowing skills overseas, visiting places including the Himalayas, where she has been to a number of times over the last decade. A piece of Ingrid Pears's glass that was commissioned by the British Government as a commemorative gift presented to the Dalai Lama in July 2008 on his official visit to the UK. Later that year Ingrid went out to work in the Himalayas close to the Dalai lamas place of exile Dharamasala. Ingrid now travels frequently to this part of the world. “I go a number of times annually, I’ve been out there quite a number of times - probably about 26 times now – building furnaces, working with a British doctor.” You can catch Ingrid working at her studio at Thoresby Courtyard in the Ingrid Pears Hot Glass Studio. money to support the type 1 diabetes charity, JDRF, which exists to find the cure for this

chronic, life-long condition. People with type 1 diabetes have to continuously monitor their

blood glucose levels because their bodies do not produce insulin. It is a constant challenge to keep

these levels within a healthy range, in order to Julie Byrne B.Ed. Bassetlaw Museum, Retford Cecil ‘Kip’ Combes (1924-2013) was born in Great Yarmouth in 1923 and attended the Great Yarmouth College of Art in his youth. He was evacuated to Retford with his family during the early stages of World War II. Being originally from Norfolk his work is very much influenced by the Norwich School of Painters. This can be seen in the atmospheric moody watercolour and oil renderings of his much loved local landscape. Richard Combes is a highly respected New York based artist who has exhibited internationally and has work in major private collections worldwide. He explores the relationship between architectural space and the human form in a way that evokes the work of the American artist Edward Hopper. Belvoir Castle Belvoir Castle, Vale of Belvoir, between Nottingham and Grantham. Rising over the Vale of Belvoir stands Belvoir Castle, the ancestral home of the Duke of Rutland, where the family have lived in an unbroken line for almost a thousand years. Robin Hood Festival Sherwood Forest, Edwinstowe 5-11 Aug Each year Sherwood Forest plays host to a week of fun and festivities in August, celebrating the life and legend of our most famous resident – Robin Hood. Newark Showground, Newark The EJC is the world’s largest juggling event, attracting between 2000 and 6000 people each year. It is held annually in a different European country and this is the first time for many years that it will be held in the UK. Daredevil motorbike riders performing gravity defying stunts and fierce Cossack warriors on horseback lead the actionpacked entertainment this year! Extreme non-stop action is on the cards from the UK’s leading motorcycle display team, the Bolddog Lings, appearing at Chatsworth Country Fair for the very first time. Not only have the team appeared in some of the largest shows in the world, but they have even featured in the superhero film Captain America. Their performance will see the best of British freestyle riding talent performing death defying tricks using the world’s largest landing ramp. The riders also go head to head in a true test of nerve to see who will throw down the biggest tricks to win over the crowd. The Ukrainian Cossacks Stunt Team are true masters of speed and agility, somersaulting and spinning under their horses’ bellies whilst spurring each other on with shouts and yelps. First formed in 1990 to resurrect the traditions of horse drill and mounted exercise, the hardy Cossack warriors have achieved worldwide acclaim for their spectacular daredevil show and return to Chatsworth after thrilling the crowds in 2015. Fair organiser Sarah Green said: “It’s another stellar line up for the country fair this year that we’re confident will please our regular visitors as well as those coming along for the first time. At the end of the summer holidays, there really is no better way to spend a weekend with friends and family with fantastic entertainment and lots to discover around the showground.”

Completing the Grand Ring programme will be all the show favourites including CJ's Birds of Prey; the Poppy Parachute Team; Global Stars Aerobatics Display; British Scurry and Trials Driving; Allcomers' Dog Racing; Vintage Cars; Pipe Bands and Pony Mounted Games. Mansfield's Finest Festival Mansfield's Garden & Craft Festival is back for a spectacular weekend on 31 August - 1 September

ow in itâ&#x20AC;&#x2122;s seventh year this extremely popular and loved horticultural show will be inviting both professional and amateur growers to come along to show the best of their produce. Attracting all age groups from the local area and neighbouring counties, the show is proud to say we attract several record-breaking growers of the biggest vegetables in the UK. Local schools are also invited to take part, which makes this Mansfield's biggest two-day community event. The festival is held in Mansfield town centre, on the Market Place in large marquees. There will be vegetable, fruit, flower and plant showing on Saturday 31 Aug and a Best in Baking competition on Sunday 1 Sept. Gardening is a very popular hobby with many gardeners having their own allotments growing many fruit and vegetables for their own use as well as showing. The event is always very busy and attracts visitors to the town from all over Nottinghamshire and nearby counties.

All classes are free to enter and all winners are presented with awards and cash prizes at a ceremony on the Sunday at 2pm. In addition to the competitions there will be stalls, entertainment, food and drink, and arts and crafts, as well as something for the children to get involved in too. Entrance to the Garden & Craft Festival on both Saturday and Sunday is free to the general public and the first visitors to the event on both days are given a goody bag of vegetables kindly donated by Troops, a local fruit and vegetable business based in Rock Valley, Mansfield. Mansfield BID is hoping to encourage more people to enter every year and more children as there are several classes open only to young people up to the age of 15 years. Butterflies & Bees Sarah Murch, at Ellicar Gardens, is a horticulturalist, garden designer and plant enthusiast. With experience from her own garden, which opens to the public in summer, she advises how we can make our gardens more enjoyable, diverse and sustainable for wildlife.

t’s mid-summer, time for al-fresco dining, butterfly watching and relaxing outdoors to the soporific drone of bumblebees.

That’s if you are lucky enough to have bees and butterflies in your garden. With the global decline in bees well documented, UK wild bee species have fallen by 30% in recent years. Butterflies have fared even worse, with 72% of UK species declining over the last 10 years. Bumblebees visit flowers to gather pollen and nectar. In doing so they pollinate our ornamental plants and vegetables. Commercially entire crops and orchards rely heavily on them. So it’s reassuring to know we can help reverse these declining numbers by making our gardens a little more pollinator friendly. Here are a few suggestions:

Choose the right flowers Only single flowers produce nectar and pollen, those frilly doubles and most bedding plants are sterile so won’t bring in a single bee.

Little and large Bees come in all shapes and sizes, visiting flowers to suit the length of their tongues. Plant species with different sized flowers, preferably in drifts, as bees prefer to work groups of the same flower.

Look at flower shapes Plants are classified by their flower shape, and bees prefer certain flower families. They love the lipped flowers of catmint, salvias, agastache, rosemary, all good for early summer colour. Try growing creeping thyme along pathways or lavender in a pot.

Iris Sibirica is great for bumblebees.

Tubular flower shapes work well too, like foxgloves. I enjoy seeing giant bumblebees crawl up into these stately flowers. These seed out gently around our garden, keeping bumblebees happy. Borage is a top bee plant, its electric blue flowers look fabulous tossed into salads or frozen in ice cubes for summer drinks.

Flowering time Choose plants to extend the flowering season in your garden as bees are out and about from late winter to autumn. Our earliest bumblebees feast on hellebores, winter heathers then pulmonarias and grape hyacinths.

Architectural and elegant If you are looking for architectural interest, giant cardoon is a must. Its huge silver leaves a foil for those towering artichokelike flowers. Or Echinops ritro, with silver/blue ball shaped flowers is crawling with bumblebees in our garden. Elegant spires of veronicastrums, lovely woven in drifts through borders, are fantastic bee plants, but my favourite of all is aromatic bergamot, aptly known as Bee Balm. Choose from hot red through to silver pink, plant in sun or shade. It flowers and feeds bees all summer- what more could you ask from a plant? If it's butterflies you are after, choose later flowers with a landing plate. Scabious, achillieas, echinaceas, rudbeckias, asters and the huge dinner plate flowers of eupatoriums, are magnets for butterflies. In our gravel garden a sea of purple verbena bonariensis attracts clouds of tiny white butterflies every summer, simply magical.

But the one plant I would never be without is Aster frikartii monch. Flowering from June to November, great for butterflies and bees, I think its lilac flowers adorned with a single burnt orange tortoiseshell butterfly one of the loveliest sights in any garden.

Pr Home, who have supplied retailers such as The Conran Shop, Bailey’s Home and Heal’s, as well as hotels such as Tresanton, Watergate Bay and Alexander House, have renovated their showrooms and gardens to showcase their product range. Pr Home began business in 1989 under the name Pavilion Rattan selling rattan furniture, handmade in the Philippines, to retail shops throughout the UK and Ireland. Production was moved to Indonesia in the early 90s where raw materials could be more readily sourced. Throughout the 1990s the company gradually started developing their own exclusive products designed in house by the founder Ray Poulston, utilising wood and synthetic rattan paired with aluminium for outdoor furniture. With the move away from natural rattan and the utilisation of other materials, the name change to Pr Home was a logical step reflecting the broader range of products now available for the house and garden. 90% of Pr Home’s furniture

and 50% of their lighting and home accessories are now designed in-house by Ray Poulston and Paul McMullan, who joined the company in 2002. Production is carried out in Indonesia, China, Vietnam, India, Poland, Spain and here in their own factory in Cuckney. The development of business with Indonesia has been a hugely satisfying experience for Ray, where long lasting partnerships have been nurtured utilising the tremendous skills of Indonesian craftsmen resulting in a great mutual respect. Products are designed and improved using sustainable wood from monitored plantations together with recyclable synthetic materials and aluminium. Problems are shared and solved together to create furniture and lighting that will stand the test of time both in their style and durability. The in-house upholstery workshop uses the best available materials assembled by a highly skilled workforce to produce long lasting furniture designed to be both stylish and comfortable. The naughties saw a change in Pr’s customer base with the closure of many retailers being replaced by interior designers, hotels, restaurants and pubs who demanded furniture robust enough

to stand up to the rigours of commercial use. As the company's philosophy has always been to produce products with lasting durability then the transition was pretty seamless. In 2004, Pr moved its warehouse from Pleasley Vale to within the Welbeck estate and its offices into the Ulvers Building, Cuckney, which had been its original warehouse since converted into its upholstery factory and trade showroom. At the same time the old showroom and gardens were renovated and new ones were incorporated with the offices. In 2009, Pr opened their showrooms to retail customers and also became a Farrow and Ball stockist. This was all done in a low key way as a sideline to the main trade business. So many people are astonished to find this oasis of contemporary design in such a rural and off the track location, so much so that the company has decided it is time to take its retail offer seriously. Many of the shops and establishments Pr now deals with are destination retailers where shopping has become a pleasurable alternative to internet sites and monochrome multiples and they intend to offer the same.

The showrooms and gardens, pictured here, have been spruced up ready for the relaunch on the 5 and 6 July, so customers can enjoy the beautiful views inside and out. Rebecca Berry has taken on the role of Showroom Manager to give the customers the attention they deserve, including a complete interior design service. The atmosphere throughout will be relaxed where customers are given time and space to consider their options. The showrooms reflect Pr’s passion for contemporary design with a tilt towards midcentury Scandi style. Visitors may recognise some of the products from holidays where Pr have supplied hotels such as Watergate Bay, restaurants like Rick Stein’s or National Trust cottages throughout England and Wales.

s it just me or do you find it annoying when you are asked an ambiguous question? Worse still is being met with a blank stare when you have made what you believe to be a perfectly simple request. Both scenarios are often the result of miscommunication. Are you communicating your message clearly enough? Clarity is the most important thing in all communication, whether that is written or verbal. When it comes to marketing, having a clear understanding of your services, especially the benefits for your customer, is vital. Make it easy for your audience to comprehend your message. If the benefits of your services or WIIFM (“What’s In It For Me?”) isn’t obvious to the reader, you will soon lose their interest. And don’t forget the call to action (CTA). Is it clear what you want the reader to do next, i.e., contact you?

Business owners often make the mistake of going into the minutiae, believing that the reader is interested in every minor detail. In fact, the reality is that the intricacies of your business are of no interest to your potential client or customer. They want to know why they should use your service or product and they want to know quickly.

This is more important now than ever before. Thanks to the advances in technology, the human attention span is at its lowest ever. According to a study by Microsoft, the average human being now has an attention span of eight seconds; less than that of a goldfish, which is apparently nine seconds! Think about the implications of this in your marketing campaign. Put simply: • People don’t have enough patience to read through your content • Even when people want to read your content, if it appears too comprehensive or ‘wordy’ they won’t bother reading it at all. • First impressions count. You don’t want your message to be saved to the “I’ll read later” folder, because often people don’t revisit that folder and you may have missed the opportunity of an enquiry or sale. • Be clear and get to the point. The purpose of your communication is to whet the appetite of the reader, so they are interested to find out more and buy your offering. If in doubt, remember the acronym K.I.S.S. (Keep It Simple, Stupid). Possibly a tad harsh, but you get the point.

nce upon a time, a holiday to the British coast or countryside was the main getaway for UK families. From Blackpool to Skegness, holiday makers would swarm for a stint in the sun and an ice cream in a deckchair. You might think that the golden era for holiday parks and campsites is over as overseas travel booms, and yet a groundbreaking report has revealed that UK-wide parks and sites generate an impressive £9.3bn in visitor spending and support over 170,000 jobs in the UK. The independent report ‘Pitching the Value’ found that England’s holiday park and campsite sector makes a substantial contribution to England’s tourism economy. £6.81bn is generated each year and over 126,000 jobs are supported across the sector which is great news for local areas. This report, from the UK Caravan and Camping Alliance, is the first time the economic value of holiday parks and campsites across the UK has been analysed, and it includes parks and sites of all sizes and types, including glamping sites, lodges and chalets and caravan holiday homes. In the East Midlands alone, there are a total of 39,000 pitches, which includes caravan sites, glamping spots and cottages. Interestingly, 96% of visitors come from within the UK, while 4% come

from outside the UK to enjoy a bit of British culture and heritage. Newark alone brings in thousands of visitors each year thanks to the wide range of activities that the town hosts. According to Newark and Sherwood District Council, the tourist economy is worth an incredible £260m per year to the local area, with each visitor spending on average £24. That’s money into the pockets of independent retailers and larger businesses that keep local people in employment and historical and heritage sites to sustain key parts of Newark’s past. Many operators have lots of activities for the whole family to enjoy during their holiday, such as swimming pools, tennis courts and cycling tracks. If last year was anything to go by, we’re set to have another scorcher this year - perfect for tourists and operators everywhere who have a solid business plan to support their operations year-round. After all, if campsites and holiday parks are to continue to strengthen the local economy, they need to thrive - not just survive. By their very nature, seasonal businesses have to work especially hard to take care of their finances. Unlike the majority of businesses that are able to draw in custom and make money throughout the year, seasonal operators only have a

window of time - usually between March and September - to make a year’s worth of revenue. Maintenance and upkeep, staff wages and building additional activities onsite are just a few financial considerations that operators have to take into account. The British summer is predictably unpredictable too, which can make it hard to forecast how well the high season will do. assage stimulates a variety of chemical responses in the brain that can result in lasting feelings of relaxation, lowered stress, mental alertness and improved mood. During a massage, your body increases its production of endorphins, your body’s natural “be happy” chemicals. Serotonin and dopamine are released, and the resulting feeling of calm relaxation can make habitual stress, as well as short-term stress, much easier to deal with. Massage also decreases the stress hormones cortisol and adrenaline, allowing your body to enter a relaxing ‘rest-and-recovery’ mode. This immediate stress relief can improve your wellbeing and state of mind, and massage also improves your overall health profile by keeping stress hormones at bay over the long-term. Managing your stress is a key factor in addressing a host of health issues.

Intense activity can cause micro-tears in muscle fibres, leading to inflammation, which is the body’s way of repairing the injured cells. Research has shown that massage reduces the production of compounds called cytokines, which play a critical role in inflammation. Massage also stimulates mitochondria, the tiny powerhouses inside cells that convert glucose into the energy essential for cell function and repair. This shows that massage can reduce proinflammatory cytokines, which may be involved in pain, and why massage has been proven to reduce the duration and intensity of delayed onset muscle soreness.

Be more active Muscle injuries are more common now than they were 50 years ago. That’s not because we’re exercising harder, it’s because we’re more sedentary. As we age our joints tend to tighten, making range of motion and flexibility even

more restricted. Massage therapy is a great way to maintain and improve flexibility and motion. ‘By working on muscles, connective tissues, tendons, ligaments, and joints, regular massage can improve your flexibility and range of motion, keeping your joints more fluid and making them less injury prone.’ So while a relaxing massage might be on the top of your pamper list, it also has the potential to help you take charge of your health and wellbeing. he best gift you can give yourself is sleep. Without sleep our brain is less efficient, so we get “brain fog” and have difficulty remembering those important things. Sleep helps keep our hormone levels in balance. A lack of sleep can lead to weight gain and food cravings. Sleep helps protect us from many illnesses, high blood pressure, anxiety and depression are just a few.

"The best gift you can give yourself is sleep." Ask a good sleeper what they do to get a good night’s sleep and they will likely shrug and say “go to bed”. Yet there are things we can do to help get a good night’s sleep. We can work with our natural sleep cycle and our ‘sleepy hormone’ melatonin to sleep well. Melatonin is produced and stored as light hits our eyes and released as the light dims. Making sure we get at least 30 minutes exposure to daylight, preferably in the morning, helps produce good levels of melatonin. Making sure we

aren’t exposed to blue light (television screens, tablets and phones) in the two hours before bedtime enables melatonin to be released, helping sleep. Our body temperature also needs to drop 1–2 degrees as we fall asleep, so making sure the bedroom isn’t too hot and not exercising or eating a large meal (which raises the body temperature as it is digested) in the two hours before bedtime lets our body temperature drop. A warm bath helps our temperature to drop afterwards, so can aid sleep. Alcohol might help you fall asleep, but it changes our sleep pattern, meaning sleep isn’t as restorative, so should be avoided right before bed. Caffeine stays in our body longer, so should be avoided for at least four hours, ideally no caffeine after midday. Following the tips above can help you get a good night sleep. But if sleep remains elusive, seek support to gain the many benefits of regular good sleep.

Floral & Flavoursome Flowers are a thing of beauty and can be admired in the garden or as a stunning addition to your home, but what about on your plate? Meet Rachel Petheram, experienced grower, florist and tutor at The School of Artisan Food, offering courses in the perfect petals to add to your dishes and the flowers that will make your appetite flourish.

raditional herbs are making room on the plate for garden flowers as more and more people are discovering that they are not just beautiful to look at, but also great to eat.

Florist and grower Rachel Petheram knows exactly which flowers to pick and add to the plate to get the best tasting combinations to tempt the taste buds and she’s spreading the word through her courses at The School of Artisan Food and her work from her beautiful cottage garden at Doddington Hall. “We all know about growing herbs in the garden, it’s not too difficult for us to think about growing mint and coriander etc, but the courses are all about considering how you can use flowers in cooking and also in drinks – infusing gin and vodka with beautiful things that you can grow in the garden.” Rachel works from her rented space at Doddington Hall, in what she describes as the idyllic setting of her very own piece of English country garden. A florist for over 12 years, Rachel combines her love of flowers with her love for food, exploring which flavours work best. And while we’re all used to eating herbs and spices, Rachel is adamant we should all be as happy with popping a rose leaf into our mouths, as we would be of a sprig of mint. “I’m a florist and I grow lots of cut flowers and I spend a lot of time teaching people how to grow things. I’m very lucky in that I rent space in a kitchen garden in Doddington Hall in Lincolnshire, and I grow in their kitchen garden. So I’m in this lovely position where I have this beautiful space.” The garden allows her to literally pick and choose from a wide variety of flowers, each bringing their own unique flavours and stamp on a dish. And we’re not talking exotic or rare species, it’s about the flowers that can grow in any typical British garden. “We’re talking things like roses, really beautiful English roses, that are highly scented,” says Rachel. “Also things like lavender and scented pinks, they are all edible." Rachel explains how lavender is really versatile, because it can be used in sweet and savoury cooking. For savoury dishes it can be used anywhere you would usually use rosemary. Lavender can be ‘blitzed’ up with sugar to make a lavender sugar, a lovely addition in baking, and milk can be infused with lavender heads, this can be used to make a cake, added to hot chocolate or even gin and vodka. “You can get a really beautiful gin by infusing lavender into a bottle for about six hours, and that’s all it takes. It doesn't have to be an expensive brand. You infuse the petals, cut the flower heads off, put them into the gin, leave it and then fish them out and it’s amazing”.

Rachel explains that one of the important elements of this process is to keep a very close eye on the period of time you leave the flowers to infuse for, as the flavours can often become overpowering and not pleasant, especially if left for a few days. Edible flowers can also be just sprinkled on to dishes. Rachel highlights the beautiful flavours of some of the flowers that she uses. “Things like nasturtium flowers for example and their leaves have a very strong flavour. It’s not just that they look beautiful they also have a very peppery flavour. And the other flower that has a really peppery flavour and enhances the flavour of salads is marigolds. “These flowers can be eaten straight off; you can pick off the petals and simply sprinkle them on a salad. But you would probably get even more out of them if you mixed them with sugar, or turned them into a jam or process them in some way – but it’s no so much cooking as more infusing so, one of the other things that is really beautiful is honeysuckle. You can use honeysuckle flowers infused in honey for example – it’s about using the beautiful fragrance of the flowers to enhance the flavours of other ingredients.” As well as enjoying the fruits of her labour, Rachel also shows others how to work with edible flowers in her courses, and her work is not just about their taste - it's about the whole growing process and its effect on the surroundings. “I spend a lot of time teaching people how to grow things. I want to encourage people to grow cut flowers because it’s so good for the wildlife, really fantastic for encouraging diversity in the garden. But I’m very aware not everyone has the luxury of this space. But I’m keen to say look, if you grow cut flowers, and herbs then you have a really multifunctional garden. You’ve got things you can use for flower arranging, flowers that will attract bees and butterflies, and also grow things you can eat as well.

“So it’s about encouraging people to grow things that they can of course use for flower arranging, which are beautiful, but also that help you do other things. It’s so you can have these lovely cut flowers and it will help bees and butterflies and you can make the best infused gin that you just can’t buy.” Somewhere else to look for edible flowers is on plants that we were already very familiar with, such as herbs. The flowers on herbs are not always used in everyday cooking and food preparation, something that Rachel says is a missed opportunity. “Obviously we know about eating herb foliage, but we should also use herb flowers like chive flowers and fennel flowers. We probably tend not to use the flowers as much because we don’t get so many – it’s easy for us to go and chop a big handful of thyme, but if you wanted to pick the flowers it’s a bit of a faff to pick them all off. But the flowers have a very beautiful flavour, and are different to the leaf flavour. They tend to be warmer and more subtle and perhaps a little bit sweeter. Generally they tend to be mellower than the flavour of the leaf, if that makes sense. With chives for instance, their stems are obviously lovely, I like them, but the flavour of the flowers to me is preferable to the flavour of the leaf.” According to Rachel, chive flowers can be infused into white wine vinegar, which can be put into dressings for salads. Although these edible flowers look beautiful and taste even better, Rachel is quick to point out that not all flowers can be eaten. “There are only a limited number of flowers that are edible – it’s worth making that point! If in doubt do not eat them, because there are so many flowers that smell delicious but are absolutely deadly poisonous! BBQ Bliss It's summer. Time to step into the great outdoors, fire up the BBQ and enjoy! Food demonstrator & home economist, Teresa Bovey, shows us what to throw on the flames this summer for perfect outdoor dining.

Teresa ‘s Caesar Salad Many countries have their own signature salad dishes. Caesar salad for example originated in Tijuana in Mexico. Below is my twist on an old favourite. Serve with barbequed or griddled chicken strips.

Mushroom & Bean Burgers This is a quick on trend recipe for vegans and vegetarians.

Ingredients

2 small romaine lettuce (or 1 large) 4 slices dry cured bacon, diced 50g parmesan shavings 2 slices, sourdough bread, crusts removed and cubed 2 tbsp olive oil. 2 avocado, peeled stoned and sliced Juice ½ lemon

1 red onion, very finely diced 1 tbsp rapeseed oil 1-2 cloves garlic ½ tsp each of ground cumin, coriander and turmeric 115g mixed mushrooms 400g can mixed beans, drained Salt and pepper Flour for shaping

Anchovy Dressing 4 anchovy fillets, 1 clove garlic, crushed 250mls good quality mayonnaise 2 tbsp lemon juice 1 tbsp Dijon mustard Dash Worcestershire sauce Pinch of sugar Salt and black pepper to taste Method 1. Tear or cut the romaine lettuce into bite size pieces and place into a serving bowl. 2. Fry the bacon and diced bread in the olive oil until golden and crisp. 3. Place all the anchovy dressing ingredients into a jug and blitz with a stick blender until smooth. 4. Peel the avocado, halve, remove the stone and toss in the lemon juice. 5. Arrange shaved parmesan and avocado overthe lettuce leaves, top with crispy bacon and bread cubes and serve with the dressing. Serves 4

Method 1. Fry the red onion in the oil. Once softened add the garlic, spices and mushrooms and cook until all the liquid has been cooked off. 2. Mash the beans with a fork and mix with the mushrooms alternatively place all the ingredients into a blender and whizz until mixed. Then using floured hands form into 4 burgers. 3. Brush with oil and barbeque or grill for 8-10 minutes. 4. Serve with pitta breads and a green salad. Serves 4

Italian Sausage Salad With Beans Ingredients 800g sausages 2 whole roasted red peppers, sliced 2 x 400g cans cannellini or mixed beans, drained 225g Italian salad leaf mix Salad Dressing: 4 tbsp balsamic vinegar 7 tbsp extra virgin olive oil 1 garlic clove, crushed 1 ½ tsp grainy mustard 3 tbsp chopped basil salt and black pepper

Italian Sausages Red - Lucale Primitivo Apassimento - £11.99 Rich red wine packed full of fruit and soft oaky tannins with layers of flavours. A supple and well balanced wine, this is a perfect complement to herby Italian sausages.

Rose – Albia Tuscany Rose - £12.99 Dry rose in the style of Provence with fresh red fruits on the palate and bright refreshing finish. Who needs the sausages!

Caesar Salad With Anchovy Dressing White - Cave Chaintre Macon Chaintre - £13.99 A nice lightly oaked chardonnay this wine is crisp, clean and fresh. With its mineral undertones it is a great pairing to stand up to the big creamy flavours and saltiness in a Caesar salad.

Rose - Grand Pre Cuvee Minotaur cotes de Provence Rose - £15.99 Super example of a classic Rosé from Provence. Full of raspberry and white peach, lovely and dry with a long, lingering finish.

Lemon & Orange Tiramisu Limoncello Evangelista Made using sun-ripened Sicilian lemons and no artificial colours or flavours; Limoncello as it should be. Add a bit of extra lemony punch to your dessert.

Method 1. Grill or bake or barbeque the sausages until browned and cooked through. Cut into 2 cm slices. 2. Place all the dressing ingredients into a small jug and whisk together with a fork. 3. Place all the ingredients into a salad bowl, toss in the salad dressing and serve. Serves 6

Quick Orange & Lemon Tiramisu A lighter, summery version of a tiramisu Ingredients Grated zest and juice 2 oranges Grated zest and juice of 1 lemon 4 tbsp Cointreau 225g mascarpone 300mls. whipping cream 3-4 tbsp caster sugar 18 Savoiardi or trifle sponge fingers To decorate: 50g grated chocolate and fresh orange and lemon slices Method 1. Mix together the orange and lemon juice and Cointreau. 2. Whisk the mascarpone with the orange and lemon zest, cream, and sugar. Be careful not to over mix this mixture.

3. Line a small loaf tin with cling film. 4. Dip the sponge fingers into the juice and arrange a layer in the bottom of the tin. 5. Top with a layer of mascarpone mixture. Repeat layers again with the dipped soaked sponge fingers and mascarpone mixture. Cover with cling film and refrigerate for 1 hour. 6. Turn the Tiramisu out onto a serving plate and sprinkle a layer of grated chocolate over the top. Cut into slices to serve. Serves 6 This recipe can also be made in small trifle dishes if preferred. Try using Limoncello instead of Cointreau as a nice alternative.

• Allow approximately 30 minutes to light and preheat a coal barbeque and 10 minutes to preheat a gas one. • Your barbeque is ready to use when the coals are coated in grey ash. Carefully hold the palm of your hand about 5 inches away from the coals - you should only be able to keep it there for 3-4 seconds! • Prepare everything before you start cooking so that you do not have to wander off and leave it unattended, especially if there are small children or animals around. Grilled and barbequed food is at its best served immediately. • Do not overcrowd the grilling rack as this causes the food to steam rather than grill. • Lightly brush the grill bar with oil before use – this helps prevent the grill from sticking. • Use tongs to turn the food, using forks lets the juices escape. • Steeping meat or brushing meat in a marinade adds flavour and moisture. Choose a mild olive oil or rapeseed oil add lemon juice, balsamic or white wine vinegar, crushed garlic and crushed pepper. Try using mint leaves in a marinade with halloumi cheese • Use a few woody branches of rosemary or thyme to act as a brush for the meat or poultry and to add a delicate flavour. • Start with room temperature meat – this way you don’t waste time trying to bring up it’s temperature and drying the meat out further. • To flavour barbeque meats try making a garlic and parsley butter - soften 250g butter then add 1 handful chopped fresh parsley, 1 tbsp lemon juice, 4-5 crushed garlic cloves and 1 tsp black pepper- combine the ingredients and wrap in a piece of foil or clingfilm to form a thin sausage shape. Freeze until quite firm, remove wrapping and cut into slices. Refrigerate until needed. • For spicy lamb chops – coat 4 lamb chops with 4 tsp harissa paste and leave to marinate for 20 minutes. Grill or barbeque for 4 minutes each side and serve with a fruity rice or couscous salad. • Try topping barbequed beef burgers with a sliced tomato, mozzarella slices and 2 strips of canned anchovies which have been cut in half lengthways to form a pizza burger.

Celebrate Summer At Ye Olde Bell Ye Olde Bell is set for a summer of fun with a whole host of activities planned from wacky family afternoons during the school break to alfresco garden parties. With so much on everyone is sure to be entertained.

holidays but Ye Olde Bell hope it can offer a helping hand with

its new ‘Wacky Wednesday’ family sessions.

The weekly themed ‘Wacky Wednesdays’ will be held in Ye Olde Bell’s beautiful gardens to ensure children get to play outside in the fresh air. Each afternoon will feature a tailored programme of games and entertainment plus delicious refreshments, which will be based around the theme. The varied themes mean that children will never tire of the sessions and could visit every week if they wanted. Little ones can explore the galaxy with the Out of this World session, budding film buffs will enjoy the afternoon of Movie Mayhem, mini sailors will be onboard with the Land Ahoy party, chocolate lovers can sink their teeth into Wonka Wonderland, mini Attenborough’s can venture into the wild during the Afternoon at the Zoo and the final session of the holidays will be based around all the Fun of the fair. After the afternoon sessions families can enjoy dinner at Ye Olde Bell’s St Leger Bistro-by-the-Bar. The relaxed restaurant offers a wide and varied menu and kids menu. Families can also enjoy the monthly Sunday sessions. The delicious Sunday menu at Ye Olde Bell always includes a speciality local roast sirloin of Nottinghamshire beef and an extensive range of deliciously tempting sweet treats from the bespoke dessert trolley. Children under eight eat for free and the monthly Family Sunday sessions provide themed events for the little ones, at no extra cost, which include fun party games, mini disco and other activities.

However it’s not just the little ones who can have fun in the sunshine. To celebrate the end of the working week Ye Olde Bell is offering Fizz Fridays throughout the summer.

Themed sessions are as follows: 24 July - Out of this World; 31 Jul - Movie Mayhem; Aug 7 - Land Ahoy; Aug 14 Wonka Wonderland; 21 Aug - Afternoon at the Zoo and 28 Aug - All the Fun of the Fair. The themed monthly Family Sundays will be held on 28 July will be based around 'Holidays' and 25 Aug around 'Wildlife Explorers'. The afternoon includes 3-course Sunday Lunch, wide menu choice plus coffee. Children's Entertainer plus party games, colouring and much more for the little ones. £30 per person. Under 8s eat free. The 1940s Garden Party on 14 July costs £25pp and starts at 3pm. Fizz Friday will be held every week throughout the summer, until the end of August. Served 5pm to 7pm, £35 for two, which includes pizza and a glass of prosecco. Guests can pay an extra £10 to finish the bottle. When she threatens to expose him, he tells her that no one would believe her. Shakespeare wrote this play in the early 1600s, yet it remains astonishingly resonant today. Artistic Director, Gregory Doran, directs this new production.

oin me on this beautiful Summer walk, and enjoy stunning panoramic views, rolling hills, and the peaceful tranquillity of the Chesterfield canal, as it gracefully meanders through the picturesque North Nottinghamshire countryside.

We begin our walk in the delightful village of Gringley-onthe-Hill, an area steeped in history. With settlements dating back to the Bronze Age, it has been suggested that Beacon Hill is the site of a small hillfort, or motte fortification, the views from which are breath-taking, and on a clear day, can see York Minster also Lincoln Cathedral, and far across the Trent Valley. This pretty hilltop village has an eclectic mixture of architecture, with quaint cottages, dovecotes, and an array of ancient barns and buildings. In 1252, King Henry III granted permission for a weekly market and an annual fair, and the stone remains of the medieval market cross, can be seen in the village, along the High Street. The parish church of St. Peter and St. Paul, towers impressively in the heart of the village. Exact early documentation of the church is scant, however there was mention of a place of worship in the village recorded in the Doomsday Book, which is indicative of Anglo-Saxon origins. Whilst there are no visible remains from that era,

the earliest surviving parts of the church are Norman, and a blocked arched doorway can clearly be seen. A visit to church is definitely worthwhile, as it’s open every day; look out for the four carved roof bosses (a decoration where the cross members of the roof or ceiling intersect); and the 13th century Pillar Piscina, which would have been used to cleanse ecclesiastical vessels after prayer. Next, we join the Chesterfield Canal, which runs by the village and is truly charming; the bank side is bursting with a variety of wildlife, flora and fauna, there’s a photo opportunity around every corner, so don’t forget to take a camera! As we follow this dreamy waterway, we approach Drakeholes Tunnel; the early tunnels were built without a towpath, and prior to the introduction of motorised vessels, the boats would have been ‘Legged’ through, men pushing the boat along with their feet. I imagine a very difficult and dangerous task! The area by the tunnel is also the perfect spot to picnic, chat to the boat dwellers. or just to stop and watch the world go by, before continuing along the pretty towpath to Wiseton, Clayworth and back to Gringley-on-the-Hill. Allow yourself plenty of extra time to really enjoy this beautiful part of North Nottinghamshire. Happy Ramblings!

Living Through The Legend

With the Robin Hood festival being a huge part of the event calendar for Sherwood, we thought it was an opportunity not to be missed when we had the chance to meet the man himself. Ade Andrews, Nottinghamshire's very own Robin Hood, tells us a little more about the importance of the unique and wonderful character and his passion in bringing him to life for others to meet.

de Andrews’ fascination with the world’s most famous outlaw, Robin Hood, began a quarter of a century ago.

Since then, taking on the role of Robin Hood has literally become a way of life. Whether it’s getting into character to become Robin Hood for the visiting tourists in and around the county, or going overseas to represent the county of Nottinghamshire, the character really has kept Ade both busy and enthralled. But far from being just a role, performing as Robin Hood has become an eye-opening journey for Ade that has seen him not only forge a successful career, but also given him a greater insight into the character and how he can be used in modern times to educate and inform.

“Essentially I’m an historian and I’m an actor, so these two interests have come together – I’ve woven them together over 25 years,” explains Ade. Made caught up with him at the Sherwood Forest Visitor Centre, a brand new building that opened 12 months ago. “I first came to Nottingham in 1994 to work on the medieval scene. So I’ve spent these years building the character, becoming Robin Hood, really crafting this character.” Today Ade is often called upon by groups, individuals and organisations to take on the character of the famous outlaw, to both entertain and educate. Something he is very passionate about. People can join Robin Hood on the regular Nottingham Robin Hood Town Tour and at various venues including Sherwood Forest Country Park and hear about the evolution of

the legend and also hear original medieval ballads performed. Schools can also join Robin Hood as he teaches children about the history and folklore of the area. “Through such work, Robin is a medium for social, economical, and cultural regeneration,” says Ade. “It’s about entertaining, inspiring and educating people and also flying the flag for Nottingham on a global scale.” He enjoys his work, finding it very fulfilling, from people’s reactions to Robin Hood and the tales he tells. Robin Hood and the Monk is a new project for Ade, bringing the tale of Robin Hood to a family audience, introducing them to new characters and tales. “Robin Hood and the Monk is a real family show, an hour long performance. It’s Robin Hood as a storyteller bringing the story of ‘Robin Hood and the Monk’ to life, sparking the kids’

imagination. It’s about getting the kids to think, and if they’re thinking it means I’ve activated their imagination more." Through his work, Ade has brought Robin Hood to a few more places on the globe. In 2014 he travelled to Germany to the Frankfurt Tourism Exhibition with Visit Nottinghamshire. More recently he travelled to MIPIM in Cannes, the world's largest real estate exhibition that focuses on building the cities of the future. Ade was there with the Midlands contingent, attracting media attention to the Midlands stand, (including Nottingham BID, Marketing NG, Nottingham Forest FC, key big businesses, Universities) and their Midlands counterparts. He quite regularly visits London at various tourism events, being an iconic inspiration for this region wherever he travels.
