Holidays are for Entertaining Story by Pat Brockenborough | Photography by William Carter

Ginny & Dr. Hilary Hunt

or Ginny and Dr. Hilary Hunt, the holidays are a season for entertaining family and friends. It begins at Thanksgiving, when 34 guests are seated for a typical seasonal dinner. From then until Christmas, the house is a warm and festive setting for at least three luncheons, a brunch and an extended family of 24 for dinner on Christmas Eve. In the meantime, the couple opens their home to visiting hunters in town for the hunting season. “Last year, we had three hunters for three nights,” Ginny said. Such a hectic season would be daunting to you and me, but for the Hunts, it’s just another reason to open their home to family and friends. And Ginny rises to the occasion by decorating each room appropriately. To do so requires organization, and if she is anything, Ginny Hunt is well organized. So much so, that she does most of the work herself. She has two efficient helpers, Sonia Travis and Cathy Coffelt, for this herculean effort, and she is so organized that by the time they arrive, the procedure is speedy and effortless. This has been achieved by storing the decorations in specially labeled boxes

stored in the attic and placed in specific rooms below. Thus, dining room ornaments are in a box appropriately marked and placed in the dining room, kitchen decorations in a box in the kitchen, and so on. “They come at eight and by two o’clock, everything is basically done,” Ginny said. The Hunts reside in a 16room house, but decorate only 12. Still, the work is challenging. The solution is two-fold:

organization and renewal. The decorations are organized in a box but are displayed in different ways each year. The result is that when visitors tour the house, they are convinced that the decorations are new. Actually, they are displayed differently each year, giving the feeling of newness. “You learn to deal with what you’ve got.” Ginny said. “You learn to improvise.” She has learned by her

professional experience, when she was a hospital nurse. “We try to be cost-effective in a hospital,” she explained. “That’s the way we do things here.” For example, she continued, “You can just change a ribbon and make it look new.” Seldom do you see anything new at Christmas. It just looks new, thanks to Ginny’s expertise at “freshening up” old decorations.

‘I’ve collected over the years,” she said. “Some things have been given by family and friends, so they have meaning.’” And that, she said, is preferable to “just going out and buying something.” Each holiday season, the Hunt’s decorations look new and refreshed. Achieving such a look comes easy to Ginny. “There’s really not anything expensive,” she said. “I like to be creative.” n

ince 1905 generations of travelers driving Highway 60 through Kevil have admired the house with three gables for its architectural stateliness; but the house took on new charm when Mark and Shelley Medlin became lords of the manor. “Mark bought the house in 1999 and was doing a remarkable job at decorating when we married in 2007. I felt I needed extra advice so I called on interior designer Bill Ford. He was great help. He offered help like ‘get

rid of this. Move that trunk over there,’” Shelley explained. Especially at Christmas, the house, dressed inside and out from roof to yard, stands as if posing for a Currier and Ives greeting card. Reaching picture-perfect heights is a big project for the Medlins. “We start decorating the weekend before Halloween,” they explain. “Mark does the outside, and I do the inside with the help of Jennifer Gish, former floral designer at Trees ‘n Trends,” Shelley said. “We use the same decora-

tions from year to year but change them around,” she added. With traditional themes, the Medlins use nostalgic decorations from their childhood. Like the turn-of-the-century house, the Medlin family is steeped in tradition. When a young sophomore in high school, Mark wrote a poem about Christmas, which is read every Christmas Eve as the family gathers to celebrate Christ’s birth. Through the years, he has written poems of tribute to Shelley, their adult children, and extended family members. Both of the Medlins are musicians, actively involved in their church music programs. Their home reflects their love of music with the piano as a focal point for decorating. Shelley’s mother’s carolers are assembled on the piano as if ready to join in when the Medlins gather around for carols. Whatever the season, passersby can expect to see the house decorated with an array of mums in fall to bright blue banners showing their Wildcat pride. Mark’s law firm is in La Center. Shelley is a financial service specialist at Regions Bank. n

« The Living Christmas Tree By Vicki Hunkler

Mayfield’s “Living Christmas Tree” Prepares for 25th Annual Performance In just a few weeks at First Baptist Church of Mayfield, some 70 vocalists will once again breathe life into “The Living Christmas Tree” as the 25th anniversary of this special music and pageantry is celebrated. John Davis will direct this year’s “Tree,” which will feature songs from the past 24 years and run Dec. 4-8. Davis is one of a few singers who has performed each year—Barry and Debbie Fowler and Terry and Yvonne Yates are others. Thousands of area residents have attended these inspirational performances since the ‘80s when Rev. David Whaley, former minister of music and youth and associate pastor, proposed the idea to First Baptist after seeing something similar at

18 • Posh | Nov. / Dec.

Bellevue Baptist Church in Memphis. “I was so moved by the tree, and I knew it would be a great outreach tool. First Baptist had the perfect setup and sanctuary for such an event,” Whaley said. The late C. T. “Teetum” Winslow, a pillar of the church for many years, was sold on the idea and agreed to raise the $30,000 needed to make it happen. He raised that and more from supportive church members. “We got a skeleton crew together and interest grew,” Whaley said. “People in the community who weren’t members even wanted to participate.” “We started with seven tiers and they now have 10. Each tier of the tree costs several thousand dollars and (the tree) will hold up to 90 people.”

“Years ago, people stood outside waiting to get in, so we expanded from four nights to five and then seven. This was our gift to the community and we never wanted to turn people away, so there was no charge. More than 4,000 attendees are on hand each year and although there is still no charge, donations are welcomed and help keep the tree going. Before the first song is sung, the work of tireless volunteers begins in the sum-

mer. It actually takes a village to put the tree together. Using 3,600 pounds of steel, wood and chicken wire to assemble the giant structure, the volunteers also place 300 pieces of greenery and 2,000 lights to complete the tree. Workers like Bill Burgie, an electrical engineer; Joe Poole; Faye and Charles Whitnell; and Martha Wynstra are just a few of the dozens of church members who contribute their time, talent, and elbow grease toward put-

ting the tree up and taking it down year after year. “We have so many members full of love and concern as they assist with the tree, the puppets, handbells, costumes and banners,” now says member John Davis. An EMT and a nurse are on hand at each performance in case anyone standing in the tree has a medical issue. Each robed singer must stand in a small boxed area for over an hour each night among the bright lights and greenery. Sherry Cope, who has sung in 17 performances, said, “In the first few years a church member in the audience was assigned an area to watch in case a singer became ill and had to be taken out. It was extremely hot in the tree, but the upgrades and improvement in lighting have made this less of an issue.” The sanctuary is kept at a cool 60 degrees during the performances for the benefit of the singers. She recalled one year

20 • Posh | Nov. / Dec.

when an earthquake along the New Madrid Fault was predicted for the first presentation night. “It didn’t deter the singers or the crowd!” “Right now I have 86 people signed up for this performance,” Davis said. “I make contact early on with singers and send a card to everyone who has ever been in the tree, about 125 invitations. We may not end up with all 86, but there are usually 65 or more participants.” Davis starts listening to music in April when publishers send seasonal music to churches. “I review the CDs and see what message is there and what type of music the choir can do. I go from 60 to 30 to 20 songs and then choose the final 12 depicting the birth, death, and resurrection of Jesus Christ in that order.” Singers receive their music at the end of August and must have it memorized by mid-November. They spend two and a half hours per week practicing. “They

can give of themselves spiritually once they know the music,” Whaley explained. Whaley’s daughter, Melody Wheat, sang “No Room” from the top of the tree one year, plus two Mayfield mayors, Arthur Byrn and Teresa Cantrell, have sung several times. Davis’ three children will be singing in the 25th performance. This year’s Living Christmas Tree music will feature songs of the season from past performances. One of the crowd favorites, “Wonderful Name,” will be directed by Whaley one evening. Other selections such as “Wise Men Still Seek Him,” “Mary, Did You Know?” and “Yahweh” are also on the agenda with “The Hallelujah Chorus” concluding the musical performance. The ladies’ handbell choir and puppets are incorporated into the program much to the delight of children of all ages. Last year, traditional Christmas music such as “I Can’t Believe

It’s Christmas, “Go, Tell It on the Mountain,” and “Silent Night” were part of the youth puppets and handbell choir segments. Near the end of the performance, spectacular banners are presented by men in beautifully adorned cloaks and crowns. The large banners represent the many names of Jesus included in the Scriptures and were made by church members. Bill Bryan orchestrates the banner ministry. “Everyone involved— from those who prepare meals for us to the parking attendants— are willing to devote so much time to the tree’s success, but the reward is great,” Davis said. “Celebrating the birth of our Savior is the reason for the season. Participating in the Living Christmas Tree presentation is, for me, an opportunity to share the good news with others,” Sherry Cope added. “I feel I have experienced the true meaning of Christmas.” n

Holiday Keepsakes Dick Holland keeps everything from Christmas cards to ornaments.

Story by Pat Brockenborough | Photography by William Carter

I

t’s a good thing that Richard Holland’s attic has lots of storage space because he hates to throw anything out. Not family treasures, not party invitations and not Christmas decorations. “I always have a big tree,” he said. “My favorite thing in the world is to decorate it.” The ornaments on the Christmas tree in his sitting room have been used year after year, and all have a history. Some are souvenirs from his many trips abroad - he blocks out time each summer to study at Oxford University in England - some are gifts from old friends, some are family treasures from

his childhood, and some were purchased at church holiday bazaars. Now that you know that Holland never throws tree ornaments away and is still collecting, you are probably wondering how his tree survives such a burden. Actually, one year it didn’t, and its branches overburdened, it fell over “with such an impact,” he said, “it shot over into the next room.” Also hanging on the tree’s branches are greeting cards from friends. “It’s fun to look at them and remember people,” he said. “I never throw them away.” He never throws party invitations away either. He was going through a

invitation-crammed drawer one day, and when they all fell in a heap on the floor, he decided to use them as a holiday display. So he tacked them to a hallway door. The door has turned out to be a conversation piece, as visitors see them and recall good times at wonderful parties of the past. “It’s history,” Holland said. Occasionally, he will hear a visitor’s disgruntled comment,” Hump! I wasn’t invited to that party!” Holland does not buy new Christmas decorations. He doesn’t have to, because there are so many family mementos that bring back happy memories. There are Nativity scenes, Santa Claus figures,

wood carvings, Christmas stockings, table top images, and his favorite, a tiny musical Christmas tree - all old and all treasured. There is lots of greenery in his house at Christmas, and it is all natural. He dislikes artificiality, preferring to gather material from his yard. The handmade Christmas wreaths and garlands feature evergreen branches, magnolia

leaves and nandina berries. Everything comes down December 26. Ornaments are packed away and the tree is dragged to a fence line in the back yard, providing shelter for wild life. One year, Holland discovered a bird’s nest made from the silver tinsel left on the tree. For 13 years, Holland invites fellow members of the Paducah Garden Club

to gather in his home for an afternoon holiday party. He provides the setting and they provide the edibles, which sounds like a pretty good plan to me. “The Garden Club didn’t have a Christmas gathering,” he said, “and it doesn’t meet in December, so I asked if I could have an informal party so everyone could get together. They said yes, and

I’ve been doing it ever since.” In keeping with the informal atmosphere of his holiday party, Holland serves the donated goodies in his kitchen. He never knows what will be brought in, so he makes chicken salad, ham salad, pimiento cheese and pumpkin bread. In the spirit of Christmas giving, he makes sure each guest leaves with a loaf of the bread. n

Recipes from the Holland Home

When Paducah Garden Club members arrive at Dick Holland’s home, they bring appetizers and desserts, although this is not a prerequisite. If everyone contributed, there would be way too much food! It’s all about informal camaraderie, and guests tend to congregate in Holland’s kitchen, where a table is laden with holiday goodies.

Celestes Hor D’oeuvres

Holiday Pumpkin Dip

Mary Dyer’s contribution was Judy Green’s “Celestes Hor oeuvres” from The Friends Are Cooking, a cookbook published by the Friends of the Yeiser Art Center.

Sally Michelson goes to the Paducah Charity League’s “Thyme to Entertain” cookbook for a popular pumpkin dip recipe.

You’ll need:

You’ll need:

Loaf of thin white bread

1⁄2 pound grated sharp cheese

6 slices of bacon, cooked crisp 1 small onion, chopped fine 1 package slivered almonds, medium size 1 cup mayonnaise 2 teaspoons Worcestershire sauce Salt and pepper to taste Divide slices of trimmed bread into quarters. Mix cheese, mayonnaise and seasoning. Add onions, almonds and bacon. Spread mixture on slices of bread with no crust. Bake at 400 degrees F. for 10 minutes or until cheese is melted.

1 (8-ounce) package cream cheese, softened 1⁄2 cup light brown sugar 1⁄2 cup canned pumpkin 2 teaspoons maple syrup 1⁄2 teaspoon cinnamon Combine cream cheese, brown sugar, pumpkin, maple syrup and cinnamon in a mixing bowl. Mix until smooth.

Serving Idea: Hollow out a small pumpkin or gourd. Line inside with plastic wrap and fill with dip. Sprinkle top with a dash of nutmeg and serve with apple slices or ginger snaps.

Pimiento Cheese Spread Dick Holland uses a recipe from “Cooking With Curtis Grace.”

You’ll need: 2 pounds sharp cheese 3 cloves garlic 1 7-ounce jar pimientos 1⁄2 bottle Durkee’s dressing 2 cups mayonnaise 2 tablespoons lemon juice 1⁄2 teaspoon Worcestershire sauce 1⁄2 teaspoon cayenne pepper 1 teaspoon dry mustard Cut cheese into 11⁄2-inch cubes and grate about 1⁄3 at a time in food processer using metal blade. cheese before adding the next. To the last third of grated cheese, add the garlic cloves and pimiento, juice and all. When well mixed, add the Durkee’s, mayonnaise, lemon juice, Worcestershire sauce, cayenne pepper and mustard. Add remainder of the grated cheese and mix well. Makes about two quarts and keeps in the refrigerator indefinitely. It is suggested you use Hellman’s or homemade mayonnaise.

Pink, aqua blue, purple, and a touch of yellow give one tree a festive, happy look that children enjoy. reindeer, sparkling red reindeer, and an assortment of beautifully gathered greenery and ribbons. The Hendrickson home proves that a variety of colors and themes can come together in one house with great results. Also on Bent Creek Drive, tour guests enter the Edwards’ French style house to the music “We Need a Little Christmas” sung by the cast of Glee. Garlands of greenery and wreaths with red bows frame the entrance. The stage is set for a candyland experience with a collection of Mark Roberts elves and fairies, and Christmas trees galore! The mantel is laden with tons of lime green and red sparkling ribbon, oversized ornaments, beaded garlands, and stockings. One of the Edwards’ trees is covered

with large faux lollipops, peppermints and other ornaments in polka dots and stripes. The bright green walls form the perfect backdrop for this special tree. A second tree in a room with salmon colored walls is fittingly decorated with peaches, pinks, blues, and rose colored accents. This tree is unique and stunning. The bedroom/playroom of sons Tage and Penn features a wall mural titled “The Greatest Boys on Earth” and a circus theme. Mary Kate Cary was the local artist. A third Christmas tree finds a home beneath the fort where the kids sleep. The fourth house on the Benton Women’s Club Tour of Homes belongs to the Scillians and is located on Fairway Drive. Two large urns holding berries and balls and ribbons and branches

frame the front doorway; a Santa head is nestled in the wreath hanging on the black front door. What a delightful home for children and guests alike to see a different side of tree decorating! Hand-made ornaments with special dates and names and construction paper chains adorn the tree in the kitchen. Popsicle sticks, crayons, and artwork by children were also used creatively to make ornaments. Wide burlap fabric wrapping around the tree completes the look. The small fireplace is decked out with brightly colored ribbons and sequin encrusted ornaments. Jessica placed family photos and framed Santas and snowmen within the arrangement. A tall bunch of lighted sticks, candles, and soldiers also stand on the mantel just above where the “Merry Christmas Y’all” banner
