RED, BLACK & GREENS From the KITCHEN of Stella’s and Mazie’s in Hartford CT
INGREDIENTS: 2 tablespoons olive or corn oil 2 cloves of garlic, chopped 2 tablespoons plant-based bacon, crumbles 2 cups red kidney beans, cooked 2 cups black beans, cooked 4 cups collards or kale, chopped ½ cup vegetable broth Salt and pepper to taste DIRECTIONS: Heat bacon crumbles and garlic in oil; when garlic and bacon begins to sizzle, add beans and kale, broth, salt and pepper. When it comes to a boil, reduce heat to simmer for 10 minutes. Remove from heat and let stand 5 minutes; stir and serve. 16 | EpicTricountyCT.com
Stella's and Mazie's is a Hartford-based African eatery that offers a fusion of West African, Afro-Caribbean and African-American cuisine. The eatery is located at 461 Capitol Ave. in Hartford, CT. and is open for lunch Tuesday through Saturday from 11a.m. to 2p.m. Shopping fresh daily allows for a different menu daily that includes a combination of meat, poultry, seafood and vegan entrées. Each Friday, there will be a fish/seafood dish available. Chefs Stella and Mazie both grew up in Hartford went to culinary schools in Hartford and Italy and opened an eatery and catering business to honor the women in their families who enjoyed preparing the very dishes served. The menu is primarily takeout, though patio seating is available.
