Mum was a lover of afternoon tea, which on special occasions included Lemonade Scones and a nice cup of tea. Although in more recent years, a good cappuccino was more to her liking, however, scones would always be taken with tea.
One of the very first things I remember her teaching me to cook, was her grandmother’s Lemonade Scones. I remember with amusement, how intrigued I was that mum used her very special crystal champagne flutes to cut each scone into it’s perfect round shape!
The urgency was palpable as we dipped the crystal rim into the flour then into our scone mixture to cut them into shape and get them into the oven before the dough had lost it’s air!
These memories are so precious, and I will cherish them forever.
300g (2 cups) self-raising flour, sifted 55g (1/4 cup) caster sugar
125ml (1/2 cup) thick cream
125ml (1/2 cup) lemonade 40ml (2 tbsp) milk
Mum’s favourite jam, to serve Whipped cream, to serve

Preheat the oven to 220C.
Lightly grease a baking tray or line with baking paper.

Place the 300g (2 cups) self-raising flour, sifted, 55g (1/4 cup) caster sugar and 1/2 teaspoon salt in a large bowl.

Add the 125ml (1/2 cup) thick cream and 125ml (1/2 cup) lemonade and mix to form a soft dough
Turn out onto a lightly floured workbench and knead lightly until combined Press the dough with your hands to a thickness of about 2cm

Use a 6cm round cutter to cut out approximately 8 scones
Place on baking tray and brush the tops with some 40ml (2 tbsp) milk
Bake for 10-15 minutes until lightly browned
Serve warm with favourite jam or condiment and whipped Whipped cream

In France, Mother’s Day or Fête des Mères is celebrated on the last Sunday in May (unless Pentecost falls on the same day, then it is celebrated on the first Sunday in June). It is a day to make Mum (Maman) the centre of attention.
On this special Spring day, family’s often come together and celebrate with a special meal, flowers and cards. Children will often practice a poem to surprise their mother with, and at the conclusion of a special meal Mother’s are often presented with a beautiful cake that often resembles a bouquet of flowers.
In 1806, French Emperor Napoleon Bonapart, established a special day dedicated to the mothers of large families.
After WWI, in the city of Lyon (1918), this celebration was revived to honour the widows who lost their husbands and sons during the war. This day was officially recognised by the French government in 1929.
In 1941, the Vichy Regime chose the last Sunday of May as the official Mother’s Day date. In 1950, a law was passed ... “Every year, the French Republic pays an official tribute to Mothers during a special day dedicated to the celebration of Mother’s Day”.
