Carrot & Coriander Soup Serves 6 families Delicious, cheap and healthy. 3kg organic carrots, sliced (*tip use juicing carrots) 2 medium sized onions, diced 100g butter 1 cup plain flour 4tsp coriander seeds, ground 2tbs coriander pesto or 1 bunch fresh coriander 2ltr stock (chicken or vegetable) Himalayan salt to taste You will need an 8 litre pot for this soup. 1. On a medium heat, melt your butter. Gently cook your onions while you are slicing your carrots 2. Add your onions, add the ground coriander. 3. Stir the flour into the pan and keep stirring for a minute, then gradually add your stock, keep stirring this so it doesn’t go lumpy. *(You can be a bit rough here and you always want to bring it back to boiling after each addition, it will help stop lumps forming. This is a basic thing to remember when you are making soups or sauces that require you to make a roux (flour and butter). 4. After you have added all the stock add your carrot slices into the pan and add two more litres of water. Cook on a medium heat for about half an hour stirring occasionally to make sure it doesn’t stick. When your carrot slices are tender add your coriander pesto/ or fresh coriander. 5. Whizz it up with a whizzy stick or in the blender (you may want to add up to one or more litres of water or stock to get your preferred consistency. 6. Season and it’s ready for your MamaBake families to enjoy. www.mamabake.com

*Special Pork, Apple and Cider Serves 6 families plus This is a MamaBake fave and it’s incredibly easy. Give it a try. 1.5kg pork cubed (I used backstrap and cubed it myself) 8-10 Apples, depending on the size, preferably green 1 large eggplant, cubed 2 leeks, sliced 1 large bottle of cider, original 1 fennel bulb, sliced 1/2 litre chicken stock 3 sprigs of rosemary, pull the leaves of the twig 1. In a large pan/stockpot heat oil. Add the pork, eggplant, leek, fennel and cook on a medium heat for 5 minutes. 2. Add apples, stock and rosemary. Cover and simmer for 30 minutes. 3. Add the big bottle of cider (after having a quick guzzle). 4. Cover again and leave for an hour. 5. Season and you are then ready to divvy up your delectable dinner how easy was that!

Pizza Muffins Makes 36 muffins This recipe is so easy and is perfect lunchbox grub. 500g self raising flour Pinch of salt 5 eggs 500g sour cream 100g melted butter 200g semi-dried tomatoes 200g pitted olives 250g grated tasty cheese 1 red onion 4 large mushrooms 1 large tablespoon Italian herb mix 1. Preheat the oven to 180. Sift your flour & salt into a large bowl. Stir in cheese. 2. Finely chop onion, olives semi-dried tomatoes and mushrooms (I used a blender because it’s easier.) 3. Add all the remaining ingredients, including the eggs, sour cream and melted butter (in the blender if using) and whizz/mix it all up. 4. Fold the flour into the mix. Spoon into the cupcake cases and put it in the oven for 15-20 minutes until golden brown. *Tip: You can vary your ingredients if you want to make different flavours. Leave out the semi-dried tomatoes, olives, mushrooms and herbs and just have cheese and onion or add ham, feta bacon or whatever you feel like.

Keep it simple. Don’t over think it. Start big batching with a meal you feel most confident with. Start with a small group e.g. with one other then build up to a couple more. Talk about food values e.g. vegetarian, organic etc from the outset.
