Back aches. Stiff joints. Sore leg muscles. No one is immune to the aches and pains of everyday life. They’re suffered by gym goers, the elderly, busy moms and anyone else who puts their body through its paces day in and day out. And who among us doesn’t? Pain, soreness and stiffness are all symptoms of inflammation, a natural bodily process kicked into gear whenever we sustain an injury. NSAIDs have their place in our medicine cabinets, but relying on them for pain relief too often can be a bad idea.This class of medicines can irritate the stomach lining and lead to ulcers. In fact, 10 to 20% of NSAID users are thought to experience indigestion, while the side effects of these drugs is estimated to cause over 100,000 hospitalizations and 16,500 deaths per year in the United States alone. A whopping

43% of ER visits are due to NSAIDs! Thankfully, there are several natural ways to relieve everyday aches, pains and muscle soreness. A workout partner will lift your spirits when you don’t feel like lacing up your running shoes. They will push you to bike that extra five miles. If you are lucky, they will even boost your confidence by telling you that your behind really doesn’t look fat in those pants! Now it is up to you to find the perfect workout partner . . . someone who has a lot of time on their hands and will not let you slack off, and thinks that walking, running and playing until they are ready to drop is fun. How about your dog? Unlike most people, dogs actually enjoy running themselves silly. To most dogs, a good day is one in which you rise with the sun, stretch thoroughly, drink plenty of water, take an invigorating romp, maybe chase a few sticks and finally collapse, dog-tired. In fact, your dog never has more important things to do than go outside and run around. Let’s say that you resolve to take your dog on a one mile walk each evening when you come home from work. You have just unwittingly made your dog the enforcer of your workout routine. The first time you decide to skip the workout, your dog will give you the guilt trip to end all. It may begin with a stare, and progress to whining, 16
barking, pacing, running from the door to you and back—whatever it takes to get you off of the couch and out on to the pavement. After all, it’s pretty difficult to disappoint someone who is so eager to keep you on track to a healthy lifestyle. Besides the obvious health benefits of exercising with your dog, think of the wonderful impact that it can have on the both of you mentally. Regular exercise boosts metabolism, fights depression and releases endorphins. And dog trainers are doing a booming business correcting habits such as constant barking or unruliness, when the root of problems such as these is very often, a lack of exercise. Before you and your pup jump headfirst into a workout routine, please take a few precautions. 1. K now your (and your dog’s) capabilities. Just like people, animals are individuals. Some dogs may be fine with a quick, 15 minute walk while others may need much more. 2. K eep your dog’s breed-type in mind when choosing the type of exercise in which to partake. Know that many bracheocephalic dogs with pushed in noses cannot handle exercise in hot temperatures. Giant breeds should not run on concrete as it may cause bone and joint problems. 3. B efore engaging in any exercise program with your dog, have a veterinarian assess his fitness level. 4. D ogs will usually try to keep up with their people even if they are exhausted. If your dog tries to stop, it may be time to slow it down. This is a clear message that he is pushed beyond capacity. No time for a dog of your own? Consider volunteering at a local animal shelter, where plenty of needy dogs are in need of walks and exercise each day. Studies show that 56% of American people and 40% of American pets are overweight, and the numbers are growing rapidly.

oll out the grill, blow off the dust and fire it up—it’s grilling season! Warm weather is synonymous with grilling and relaxing backyard barbecues filled with yummy (and sometimes not so healthy) food. Not only does grilling give food a unique and distinct flavor, but it can actually be quite nutritious.

Grilling is healthier than other forms of cooking for a few reasons. First of all, when grilling food, the fat on the meat drips off, automatically making the food healthier. Chefs also recommend trimming excess fat off of the meat before tossing it on the grill (too much fat drippings can cause grill flare ups, causing the meat to burn). To keep your grilling lean, it’s also important to choose foods that are low in fat, high in nutrients and full of flavor. Use

• For a healthier version of French fries, spray the inside of an old metal cake pan with a non-stick cooking spray. Cut a potato into thin strips and scatter on the bottom of the pan. Next, dust with your favorite herbs and seasonings and cook over a low flame until they are tender.

• For an effortless side dish, serve up grilled tomatoes. Cut out the stem, slice in half and place face down on the grill. Brush with olive oil and season with salt and pepper and your favorite spices. Grill them for about two minutes and immediately remove. Top with cheese, nuts, seasoned bread crumbs or whatever else you want.
• Sweet corn is a snap to prepare on the grill. Take a few ears of corn, pull back the husks and remove the silk tassels. Soak the ears of corn in water for about 20 minutes, then shake off any excess water and brush with some olive oil. Reposition the husks back over the kernels and grill for about 5-10 minutes. Pull back the husks and serve with a

A Fresh Start: Inspired to Serve
S
pring is the season of change and re-birth. And there’s no better way to celebrate the season than to volunteer your time and help improve the world. But where do you begin? Thankfully, you don’t have to solve the problems of the entire world—just start by tackling the issues in your own backyard. Working on a community project offers you a tangible way to make a difference. Need proof? Check out what these three community organizations are doing to improve their little part of the world. They inspired Mambo to make a difference in our area and we hope their stories provide you with the same motivation.
Weavers Way Co-Op What It Is: First established in 1972, Weavers Way Co-Op in Mt. Airy, Pennsylvania is one of over 5,000 food cooperatives in the U.S. Food Co-Ops are collectively owned grocery stores that are managed and run by the people who shop and work there. At Weavers Way, you’ll find fresh, locally-grown produce, delicious cheeses, dried fruits and nuts, coffee, artisan breads and much more, all at great prices for food of such high quality. And while you don’t have to work at Weavers Way in order to shop there (like you do at some co-ops), just six hours of volunteered labor each year goes a long way in keeping the costs of the store’s goods affordable. Why It’s Inspiring: Most of what is sold at Weavers Way is locally grown or made, which means spending your money there helps support local farmers and businesses. In addition to stimulating the local economy, shopping at the co-op also helps foster a sense of community. It’s easy to get to know other shoppers when you volunteer your time, or even while perusing the aisles—and how many of us can say we actually know many of our neighbors? Weavers Way brings together people who might not have otherwise met, uniting them for a common good. And one such common good is building a better community: Weavers Way helped revitalize its surrounding neighborhood and now a coffee shop, book store, dance studio and wellness and maternity center all call the area home. 24
Sustainable South Bronx What It Is: This community organization is working to “green the ghetto” by introducing innovative environmental solutions to the problems found in the South Bronx section of New York City. They develop economically sustainable green initiatives that not only save the environment, but also improve the health, safety and beauty of the community. Their major project is developing the South Bronx Greenway, a bike and pedestrian path along a blighted strip of waterfront. Why It’s Inspiring: Replacing pavement with parks and trees would do more than beautify this neglected area of the Bronx. Research shows that apartment buildings with high amounts of green space see less crime—a boon to dangerous areas like the South Bronx. The bike and pedestrian path would also help improve the health of an obese population that has limited access to safe places to exercise outdoors. Plants also help trap pollutants that can cause asthma and other respiratory problems. Finally, Sustainable South Bronx’s projects create plenty of green collar jobs for a community that has been affected by the downturn in the economy.
Relight NY What It Is: This non-profit encourages people to help the owners of New York City buildings into going green by exchanging incandescent light bulbs for energy efficient carbon fluorescents. Participants “adopt” a building they want to “relight,” then use educational information provided by RelightNY.com to help them convince the powers that be to make the switch to CFLs. Why It’s Inspiring: It’s such a simple step, but swapping old bulbs for CFLs can have a huge impact on the environment. So far, RelightNY participants have adopted 627 buildings, changed over 110,000 bulbs to CFLs and saved the city more than $5 million in energy costs. Just imagine how much energy could be saved if other cities adopted this campaign? Inspired yet? Stories like these invigorate and encourage us to get moving in our own neighborhoods—bringing small changes together to make big ones! Share your stories with us! Roasted Tomatoes with Brie
Gluten-free!

Ingredients: • 10 medium plum tomatoes • 2 tsp. of olive oil • 1 Tbsp. of pesto
• 4 oz. of ripe Brie cheese • Flat leaf parsley or basil • Salt and pepper to taste
Directions: 1. Preheat oven to 325°F. 2. Lightly oil a jelly roll pan. Cut the tomatoes lengthwise in ½. 3. Arrange the tomatoes cut-side up in the prepared pan. Sprinkle with salt and pepper then drizzle with olive oil. 4. Roast the tomatoes for about 50 minutes or until they are very soft. 5. Let the tomatoes rest until warm, then arrange them on a small platter. 6. Spoon a dab of pesto onto each tomato half with a small slice of Brie. Decorate with fresh herbs. Serve immediately.
Black Bean & Cilantro Burgers

Ingredients: • 1/4 cup finely chopped onion • 1/4 cup finely chopped green
bell pepper • 1 large garlic clove, minced • 1 Tbsp. butter • 1 19-z can black beans, rinsed
and drained (about 1 2/3 cups)
• 1/3 cup fine dry bread crumbs • 1 large egg, beaten lightly • 3 Tbsp. fresh cilantro leaves, chopped fine • 1/2 tsp. salt • 1/2 cup yellow cornmeal • Pure olive oil for frying
Directions: 1. In a small heavy skillet cook onion, bell pepper, and garlic in butter over moderately low heat, stirring occasionally, until softened. 2. In a bowl, mash one-third beans with a fork and stir in remaining beans, onion mixture, bread crumbs, egg, coriander, salt, and pepper to taste. 3. Form mixture into four 4-inch patties. (Mixture will be wet and soft.) Gently dredge patties in cornmeal and transfer to a large plate lined with plastic wrap. 4. In a heavy skillet heat 1/4 inch oil over moderate heat until hot but not smoking and cook patties in 2 batches 1 1/2 minutes on each side, transferring to paper towels to drain. Chef’s Note: Serve bean cakes with salsa. Can be prepared in 45 minutes or less.
Maple Cinnamon Snickerdoodles

1/2 cup butter 1/2 cup shortening 1 cup maple syrup 1 egg 1 Tbsp. flax seed meal 1 3/4 cup sweet white rice flour (a.k.a. glutinous rice flour)

2/3 cup potato starch 1/3 cup amaranth flour 2 tsp. xantham gum 2 tsp. cream of tartar 1 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. salt
Directions: 1. Cream the butter and shortening together. 2. With a whisk or hand blender, completely mix in the maple syrup, egg, and flax seed meal. 3. Stir in the rest of the ingredients until completely mixed. 4. Chill dough in fridge for an hour. 5. Preheat oven to 400 degrees. 6. Form the dough into balls with your hands, and place on a greased cookie sheet. Don’t flatten the balls, as they will spread while they bake. 7. Bake for 8-10 minutes, until the edges just barely begin to brown.

Ingredients:
• 1 yellow onion, chopped • 2 cloves garlic, minced • 1/2 tsp. curry powder • 1 Tbsp. olive oil • 1/2 lb. Yukon gold potatoes, peeled and diced • 3 cups vegetable broth • 1/2 cup frozen corn kernels

1/2 cup chopped yellow bell pepper 1 Tbsp. yellow mustard 1 cup Brown Cow Cream Top Plain Yogurt 1/2 tsp. Jane’s Krazy Mixedup Lemon Pepper 1/2 tsp. Jane’s Krazy Mixedup Salt 1/2 tsp. tsp. lemon zest Garnish- chopped chives and lemon twists
Directions: 1. Saute the onion, garlic, and curry powder in the oil in a soup pot for 3 minutes. 2. Add the potatoes and broth, corn and peppers. 3. Bring to a boil, reduce the heat and simmer 15 minutes or till the potatoes are soft. 4. Puree the soup adding the mustard, yogurt, lemon pepper, salt and zest. 5. Cover and chill. At serving time garnish each serving with chives and a lemon twist. Chef’s Note: An inexpensive cold soup that can be made ahead of time, thus saving time and money. A substantial soup but low in fat and calories, yet another savings.
