You can see the whole content and appreciate the pasta’s specific features; …it cannot be confused with industrial pasta. The pasta’s rugged surface (bronze drawn), colour, consistency, and drying time (more than 9 hours) attest to its artisan quality. Custom-made packaging might be supplied upon request.

Parmigiano-Reggiano cheese PDO Parmigiano-Reggiano is a hard cheese made with cow milk. It is the most famous and imitated cheese in the world that is still produced with traditional method. The production area is strictly limited within the triangle formed by the provinces of Bologna, Parma and Mantua, and is protected by the Denominazione d’Origine Protetta (PDO-Protected Designation Origin). More than 600 litres of milk and lots of experience are needed to produce a wheel of Parmigiano-Reggiano. The aging ranges from a minimum of 13 months to a maximum of 30 months: the older the cheese is, the more valuable it becomes and it is appreciated by the finest palates and true connoisseurs.

Organic Parmigiano-Reggiano cheese PDO The Organic Parmigiano-Reggiano PDO cheese is produced thanks to a system which checks all the raw material used during the production chain: from fertilizers in the field to the forage feeding cows, selecting all the main products used during the production process. Chemical substances and OGM (Genetically Modified Organisms) are not allowed. All this guarantees the full natural aspect of the product. Growing organic agriculture means: not defiled soils, no use of chemical substances and “know how” in order to develop a production model, which avoids overexploitation of all natural resources.

Parmigiano-Reggiano Red Cows PDO It is a kind of Parmigiano-Reggiano cheese produced solely with the milk of Red Cows, which are only bred in the province of Reggio Emilia. Its origin dates back more than 8 centuries ago. It is a product of superior quality, extremely hard to find, and with different qualities than the traditional Parmigiano-Reggiano. This cheese is straw-coloured and not white, especially during the summer months. The internal mass is granulated and breaks into flakes. The aroma and taste are very particular. This cheese is sweet and flavourful without being spicy, even after having aged long (32-36 months), exactly as the original Parmigiano-Reggiano used to be. The minimum aging is 24 months, while for the traditional Parmigiano-Reggiano is 12 months.
