The history of the enormous variety of products, such as Liqueurs, Grappa, Amari, and Aperitifs is deeply connected to the unique characteristics of the Italian territory and lifestyle and has undoubtedly been a major factor for their success internationally.
Although traditionally enjoyed neat, Italian spirits are also becoming remarkable trend changers in the mixology/bartending world.
They represent the culture, tradition, attitude, pleasure, enjoyment, and a splash of art of the Italian lifestyle. Aperitivo: The word Aperitivo (Latin for “opener”) defines the ritual of drinking before a meal or it can refer to any pre-dinner beverage such as Vermouth, wine, a cocktail, or beer. The purpose of the Italian Aperitivo is to gather with family and friends, the loved ones with whom you are going to share a meal, and stimulate the appetite with a bitter-sweet light alcoholic drink.
Aperitivo liqueurs can be divided into two broad styles: “Aperitivo liqueur” and “Bitter liqueur”. Both are generically defined as red-hued, wine-based or spirit-based products infused with citrus, herbs, spices, and roots, then mixed with sweeteners to offset their intensity.
In general, the Aperitivo liqueur style is more soft, approachable, and lower in alcohol. The Bitter liqueur-style contains about double the alcohol and is often more bitter.
Digestivo: The word Digestivo (Italian for “Digest aid”) defines the ritual of drinking after a meal or it can refer to any after-dinner beverage such as Grappa, Amaro, dessert wine, liqueur, or a cocktail. Italians drink digestivos to linger with the meal experience and prolong the company of family and friends. 3

CATEGORIES
Italy has a wide variety of distinctive liqueurs. Their palpable quality, careful ingredient selection, strong passion, and centuries-old recipes, from North to South of the boot, tell a fascinating story.
DISTILLED SPIRITS
These products are usually a clear liquid and they are the highest in alcohol by volume. In this category, Italy has a unique traditional product protected by a geographic denomination, Grappa. Besides the Italian spirit par excellence, Italy also produces other “international drinks” like Gin and Vodka. Grappa: A fragrant and potent grape-based pomace brandy of Italian origin that contains 35 to 60 percent alcohol by volume. The flavor of grappa, like that of wine, depends on the type and quality of the grapes used, as well as the type of distillation process. Grappa is made by distilling the pomace (a blend of grape seeds, stalks, and stems) leftover from the wine-making process, and is the perfect example of a zero-waste product. Grappa is excellent served on its own in small glasses of about one to two ounces as an after-dinner drink (Digestivo). It is sometimes mixed with a steaming shot of espresso to create caffè corretto which means “corrected coffee.”
It is not uncommon in Italy to pour a few drops of the powerful liquor into your cup of finished espresso, swirl it around, and drink to cleanse your palate. Vodka: While Vodka is not a native spirit to Italy, in the past two decades, the country’s commitment to excellence has generated some great vodkas. Most of Italian Vodkas are produced with wheat/grain-based alcohol and benefit from pure water springs in the different regions of Italy. Some Vodkas are flavored with indigenous ingredients such as herbs, berries, and citruses. Vodka in the United States is at least 40%, which is the legal minimum content of alcohol for this category. 5

Gin: Gin is not a traditional Italian spirit, but the country provides wonderful juniper berries to many distillers across the world. Therefore, it was just a natural evolution for Italy to start producing some great examples of this distilled spirit. In addition to juniper, gin tends to be flavored with botanical/herbal, spice, floral, and fruit flavors, or oftentimes, a combination of them. Italy’s traditional use of botanicals in their liqueurs and amaros is taking the gin category to reach new horizons, including flavors of citrus from the Italian Coast, herbs from the Alps, flowers and even basil!
FORTIFIED WINE
Fortified Wine is a wine to which a distilled spirit, usually Brandy, is added to raise its alcohol content. Many different styles of fortified wine have been developed, including Port, Sherry, Madeira, Marsala, Commandaria wine, and the aromatized wine Vermouth. Vermouth: The best known aromatized fortified wine is flavored with various botanicals (roots, barks, flowers, seeds, herbs, and spices.) Each manufacturer adds a unique mixture of dry botanicals to the base wine, base wine plus spirit, or spirit only – which may be redistilled before adding to the wine or unfermented wine must. After the wine is aromatized and fortified, the vermouth is sweetened with either cane sugar or caramelized sugar, depending on the style.
The modern versions of the beverage were first produced in the mid to late 18th century in Turin. While Vermouth was traditionally used for medicinal purposes, its true claim to fame was as an Aperitif, with fashionable cafés in Turin serving it to guests around the clock. However, in the late 19th century it became popular with bartenders as a key ingredient in many classic cocktails such as the Martini, the Manhattan, the Rob Roy, and the Negroni.
Historically, there have been two main types of Vermouth: sweet and dry. Responding to demand and competition, Vermouth manufacturers have created additional styles, including extra-dry white, sweet white (bianco), amber (rosso), and rosé.

LIQUEURS AND CORDIALS
Liqueur/Cordial:
Alcoholic drink composed of distilled spirits and additional flavorings such as sugar, fruits, herbs, and spices. Often served before or after a meal, they are typically sweetened and un-aged beyond a resting period during production solely for their flavors to mingle. They can be divided according to the main ingredient: the macro-categories are fruit-based, plant/herbsbased, nut-based, and dairy & egg-based. Fruit-based Liqueurs:
A broad category of fruit Liqueurs that are made with a variety of different fruits. Popular Italian fruit liqueurs include Limoncello (flavored with lemons), Fragolino (made from tiny wild strawberries), and Peachello (Peach flavor). A variety of other fruits is used, including orange, blueberry and much more. These liqueurs are either served after-dinner or to spruce up a cocktail!
Limoncello: An Italian lemon liqueur mainly produced in Southern Italy, mainly in the area around Naples, Sorrento, Amalfi and the islands of Procida, Ischia, and Capri. It is made by steeping the zest or peel of lemons without the pith into grain alcohol until the oil is released. Limoncello is typically served on its own, ice-cold, as an after-dinner drink (Digestivo). It can also be used in cocktails to give a sweet citrus kick. Maraschino: A clear, relatively dry liqueur from Italy made from sour cherries known as Marasca. These cherries are found almost exclusively on the coast of Croatia.
The liqueur is made with the sour fruit and the crushed cherry pits, which give it a subtle bitter almond flavor. The cherries are processed and distilled much like Brandy, and later combined with a pure cane syrup before it's aged and filtered. 7

Maraschino liqueur provides a complexity of flavors and can completely transform a mediocre cocktail into a good one. It appears in many classic cocktails such as the Hemingway Daiquiri and the Aviation. Mirto: A popular Sardinian liqueur produced from the flourishing berries and leaves of the myrtle bush, a plant commonly found in Sardinia and Corsica.
There are three types of Mirto and they all taste different: Mirto rosso is a sweeter version made from the purple berries. Mirto bianco is a drier version from white berries and is great as an after-dinner Digestivo. Lastly, a variety of Mirto that comes from the leaves of the myrtle bush. Herb and Spice-based Liqueurs:
Very popular in mixology nowadays. Other than often being served on the rocks, herbal liqueurs in the past centuries were traditionally made by monks and used for natural therapeutic purposes. The category features very large subcategories such as Amaro and Sambuca, but there are also many standalone brands that have made a name for themselves throughout the years thanks to their unique mix of herbs and spices, now becoming staples of the industry. Amaro: An Italian herbal liqueur that is commonly enjoyed after-dinner, it is bitter-sweet in flavor and often syrupy. Their alcohol content can vary from 16% to 40%. Amaro is typically produced by macerating herbs, roots, flowers, bark, and/or citrus peels in alcohol, adding caramel followed by aging in casks or bottles. Amaro can be served on its own neat, or over ice as an after-dinner drink (Digestivo). It can also be used in cocktails to give bitter-sweet notes. Rosolio: An ancient style of Italian liqueur made with rose petals. It dates back to the 15th century and its name comes from a sundew herb (Ros solis in Latin). Rosolio used to be flavored exclusively with this plant, but today it is often the base for the preparation of liqueurs of various flavors.
Every region in Italy produces a Rosolio and the flavor will depend on the local 8

ingredient being added to the base. As an example, a Rosolio from the Campania region would typically feature their local lemons, whereas one from Tuscany would have juniper berries instead. Sambuca: An anise-based Italian liqueur frequently made from the elder bush plant and is generally, but not exclusively, colorless. It has a strong aroma and flavor of licorice. Sambuca is one of the best known after-dinner drinks and is served neat or with water, or sometimes as a shot with three coffee beans. This is known as “con la mosca”, which means “with the fly.” Nut-based Liqueurs:
Amaretto: A sweet almond-flavored liqueur invented in Saronno usually made with apricot kernels, even though the flavor can also come from almonds. Amaretto can be served on its own over ice as a delicious dessert drink. It is also the main component of a few classic cocktails such as the Godfather, the Godmother, and the Amaretto Sour. Nocino: A dark brown liqueur from the Emilia-Romagna region in Northern Italy. It is made from unripe green walnuts and has an aromatic bittersweet flavor. The walnuts and the liquor are handled using ceramic or wooden tools, to avoid oxidation, and placed in an alcoholic base. After steeping the spirit, the walnuts are removed, and the alcohol is mixed with simple syrup.
Nocino is often made at home with different alcohol content, but the commercially available ones are typically 40% alcohol by volume.
Nocino is traditionally sipped as a Digestivo on its own after a meal, but with the rise in popularity of Italian liqueurs, more bartenders are mixing it into modern concoctions.

Other Liqueurs:
Coffee Liqueur: Alcoholic liqueurs based around coffee. They are commonly sweet and syrupy and the base spirit can vary from Brandy to a neutral grain spirit and even Grappa. Liquori all'uovo: Sweet, energizing liqueurs made from eggs, sugar, and Brandy, with an alcoholic content between 15% and 18%. The same name is also commonly used for homemade Zabaglione liqueur. These are rich and creamy with a smooth, custard-like consistency.
They are often taken as a warm tonic and can be served at any moment in the day either cold or at room temperature. Two popular Italian brands include Vov and Zabov.
This category of liqueur is commonly used in the making of the Bombardino cocktail, an Italian version of the Eggnog, popular in Italy during the winter, especially in the ski resorts.

Italicus is produced at a family- owned distillery established in 1906 in Moncalieri, Torino. Bergamot from the UNESCO-protected area in the Calabrian region and cedro from Sicilia are infused in cold water to release their essential oils, in a time honored process called Sfumatura, before being blended with Italian neutral grain spirit. A delicate combination of Roman chamomile from Lazio, lavender, gentian, yellow roses and melissa balm from Northern Italy are then macerated together for several days before being married with the bergamot and cedro essential oils to create the ďŹ nal liquid.

Since 1898 the Poli family has been operating their artisanal grappa distillery located near Bassano del Grappa, in the heart of the Veneto. Today, fourth-generation Jacopo Poli has elevated grappa production to an art form. Selecting only the freshest grape pomace from some of the best winemakers in Italy, he uses a traditional copper pot still - in operation for more than a century! Strega means “witch” in Italian: the name comes from the legend that says that in Benevento witches from all over the world used to meet. The company is located in Benevento in the south of Italy and has been specializing in handcrafted liquor production since 1860.

In 1945 the brothers Giancarlo and Lanfranco Toschi had the idea of packaging the famous Vignola cherries in spirit to be able to taste them all year round. The “Frutta Spiritosa” was the beginning of the food & beverage family company Toschi Vignola, which grew during the years adding syrups, fruit liqueurs, candied Amarena cherries, ingredients for artisanal gelato and balsamic vinegar of Modena PGI to its portfolio. Distilleria Varnelli has been producing spirits since 1868 on the slopes of Monti Sibillini in the Marche region. The business started by the founder Girolamo Varnelli, a keen herbalist who applied his knowledge to create a natural remedy, Amaro Sibilla, awarded the Gold Medal in 1909 at the International Exhibition in Turin. At the beginning of the 20th Century, his son Antonio and the grandson Girolamo jr. launched Varnelli Anice Secco which rapidly became the agship of the ďŹ rm.
